A vital expression of Sauvignon Blanc grown to high altitude vineyards from Kuitpo through to Kersbrook. Alta captures the wondrous cool climate charm of Adelaide Hills, an area so very renowned for stylish white wine. Alta initially debuted onto the market with the aim of producing the single best effort possible, exclusively Sauvignon Blanc. Individual parcels are chosen for their strong varietal intensity and regional eloquence, each contributes its own character to the finished wine. Made to drink now, generous with fruit flavours and crisp palate structure.

Sauvignon Blanc is harvested throughout the cool of night, when flavours are most intense and the balance ideal, grapes are crushed with open rollers to minimise phenolic and colour extraction. The biggest challenge is to ensure that the fresh flavours and finesse of juices are retained throughout the winemaking. Several yeast strains are used based on their ability to highlight varietal flavours and enhance palate structure. Free run and pressings are vinified, some on skins, in a combination of fermenters and large 4000 litre French oak casks. Batches are racked on lees after the completion of ferment and stored cool prior to assemblage.
 
Pale, icy green hue. Fragrant citrus blossom, passionfruit and spicy guava. Instantly mouth filling with rich pear, fleshy lime and spicy lemongrass penetrating the mid palate. Crisp acid adds exuberance and persistence whilst providing balance and freshness. Alta offers the solid backbone of fruit character to accompany bolder flavours, goujons almandine, chillied muscles or thyme and garilc chicken.

Fashioned to a style so evocative of southern France, crafted with a view to retaining natural perfumes, employing a regimen of extended macerations, whole bunches and small, open vessel ferments, to achieve a supple palate offering great depth of fruit, seamless tannin structure and persistence. Finely structured, elegant and defined, Alta brings the excellence of Adelaide Hills Shiraz to a place of old world eloquence.

Regular vineyard assessments leading up to harvest ensure that Shiraz is harvested when the flavours are at their optimal intensity. Fruit is all hand picked and treated to ten days of cold soak, a parcel is included as whole bunches. A course of daily hand plunges in a small, open fermenter release the tannins and infuse flavour. Upon completion, the ferments are filled to a well seasoned, larger format, four tonnes oak cask for a judicious term of maturation.
 
Deep purple. Vibrant rose petal and white pepper perfumes, earthyness and cacao. Supple tannins in support of a seamless palate, a sensory adventure of fresh raspberry fruit characters, the savouryness of black pepper, chocolate chips and mint, a balance of freshness and acidity, persistence, elegance and sound structure through to the finish.

Hand picked Pinot Noir clone MV6, an earlier ripener with softer tannins, from a single vineyard on the northeast Adelaide Hills. Fruit is treated to a cold soak, gently drawing colour from skins, pressed and vinified to choice yeasts infusing wonderful aromatics, texture and mouthfeel. One part of the ferments are drained into French oak for completion, malolactic and lees stirring. A gorgeous pink wine of expressive aromatics, mouth filling textures in support of an exquisite balance between complex fresh fruit flavours, juiciness and savoury, light tannin characters.

Apart from winning many accolades and awards, Nine Vines has become popular around the world. Mostly Grenache, the secret to it's allure, with about a third of Shiraz, harvested off the finest vineyards. Grapes are kept cool on the journey to the winery, where they are filled to vessels for cold settling. The individual parcels are separately crushed into rotary fermenters and cooled to 10¬įC. After twenty four hours on skins, batches are gently pressed, clarifiedand inoculated with yeasts which have been isolated for their capacity to enhance fruit characters. Juices are cool fermented until almost dry, leaving very little resisdual sugar. Components are then stabilised, clarified and assembled into the finished wine.
 
Brightly pink in colour. Vibrant raspberry, strawberry and cherry aromas combine with fresh fruit salad and lovely crispness on the palate. A dry finish lends the wine to a variety of foods. Nine Vines embodies the Australian sunshine, and recalls warm days by the beach. Enjoy well chilled as the sun slowly sets with grilled fish or Thai chicken curry.

Ray and Patrik Jones first venture into wine culture was a proposal for a film featuring industry savant James Halliday as anchorman. Set near the juncture of Kangarilla and Tatachilla Roads at McLaren Vale, the father and son operation release small amounts of hand made wine. Arakoon are somewhat more elegant and understated, a stylistic objective achieved through extended post ferment maceration and supple new French oak. Sellicks Beach conjures violet and spiced plums over a heady touch of bourbon barrel and creamy, mocha tannins.

Arakoon is the aboriginal name of a forest that was known to the indigenous people for it's proximity to water. Jones & Son are upfront about their penchant for Burgundy but what they do is completely McLaren Vale. They collate hand chosen parcels of Shiraz from good growers in the Sellicks Beach and Willunga districts, grapes are painstakingly handled and sorted. Foot crushing, boots on, is the practice, and for the most part all wines are bottled unfined and unfiltered. Parcels are inoculated and vinified in traditional open vats, treated to an extended maceration and gentle transfer through a hand operated basket press before maturation in a combination of French and American oaks.
 
Deep red colour. Aromas of chocolate and plum, lifted baking spice, mullberry and ground black pepper. An array of black berry and cherry flavours kept vital by bright morello acidity. Seamless integration between good fruit, velvet tannins and fine oak, a smoky depth and lick of vanilla spice linger right through to the savoury finish.
