Flametree Embers Cabernet Sauvignon 2011

The essential Margaret River style of Cabernet, crafted from the pick of the crop grown to the Karridale, Wallcliffe and Wilyabrup districts. Margaret River delivers much of Australia's most distinctive varietal wines, there are unique sub regions and Wilyabrup makes the best Cabernet. After fifteen vintages, the Flametree team have established a pretty good understanding of what works and what doesn't. Assembling the finest parcels means that they can construct a penetrating Cabernet wine with alluring bramble aromas, firm tannins and soft fleshy palate.

Flametree know that if you get the right varieties planted on the right sites you're well on your way to making fantastic wines. A collation of the chocest fruit from good vineyards is assembled to realize more complex and interesting wines. Cabernet Sauvignon is sourced from vineyards at the northern end of Margaret River. All care is taken throughout a very gentle handling and vinification to preserve the vigorous Margaret River fruit character. Soft extractions and cool fermentation temperatures achieve a soft, fleshy wine with lovely aromatics. The finished wine is treated to twelve months maturation in a selection of new and seasoned French oak barrels. Alcohol 14.0%
 
Bright scarlet colour. Blackberry and briar fruits aromas all combine with subtle vanillin oak. Blackberries, plums and dark cherry fruits extend on to the palate where the rich fruit characters merge with subtle oak and gentle tannins to form a lovely medium bodied Cabernet wine, fashioned to a soft, unpretentious and easy drinking style. Match embers with crumbed cotoletta or smoked boudin of veal and lamb.
Flametree Embers Sauvignon Semillon 2012

Flametree maintain a close working relationship with the most dedicated Margaret River growers. The driving philosophy is to craft wines which express the quality of fruit and uniqueness of provenance, while striking the balance between early approachability, generous flavour and sound structure. Embers is a mostly Semillon wine, it's drying, slatey mineral palate and bouquet is vitalized by a third of Sauvignon Blanc, which adds ripe tropical fruit with a measure of herbaceousness. Drink now alongside papardelle primavera or fresh crustacea.

Selecting the right fruit from good vineyards is a science and an art, the Flametree team aim to isolate and capture those unique characters and flavours from each vineyard block which are most essential to the ultimate style. Each component has its own expression, contributing flavours and personality into the finished wine. Flametree command the quality of fruit to craft two distinct accords of Semillon and Sauvignon Blanc. Embers is slightly dominated by Semillon, the components are treated to a brisk vinification in fermenters and held on yeast lees, infusing the palate with textural richness and contributing greater texture. Light pale straw colour. Aromatic vegetable and freshly cut fruit bouquet with a touch of floral. Fruit salad and some herbal notes on a fuller style of palate exhibiting grapefruit and citrus flavours, stonefruits and guava in the ripe tropical spectrum add texture and a touch of richness. A flavoursome aperitif style with clean crisp finish that mates well to good seafood.

A salient expression of Frankland River Shiraz by a rising star among West Australia's most conspicuous new winemaking operations. The secrets to Flametree's success are access to the best possible fruit and innate skill of the team to create beautifully crafted wines which capture the flavour of the region whence they originate. Choice grapes from exceptional sites have been vinified into a profound Shiraz wine with fresh and clean spice, liquorice and plum fruit characters over a framework of crisp tannins and delicately integrated quality oak.

Flametree is a highly meritorious winemaking estate that works very closely with the most dedicated growers. A commitment to excellence is the driving force which sees the quality of wine gain stature with every vintage. The aim is to make wines that express the high quality of fruit and which strike the balance between flavour and structure. Grapes are vinified in a combination of fermenters, treated to gentle pumpovers and a judicious spell of maceration. A cool, temperature controlled fermentation is followed by two weeks on skins to aid in extraction and integration of tannin. Matured twelve months in a combination of new and older French and American oak barrels before an egg white fining. Alcohol 14.0%
 
Deep ruby colour. Wonderfully fragrant with a bouquet of plum, cherry and spiced blueberry. Flavours in the plum, cherry, liquorice and spice spectrum. Ripe, generous, fruit driven palate of berries and liquorice follows soft velvety tannins.

The Flametree wineworks are located on the picturesque shores of Geographe Bay, whence some of the new world's finest Cabernet wines originate. Flametree can lay claim to retaining some of the Margaret River's finest parcels of fruit, which the devoted winemaking team handcraft into beautiful wines with unique flavours, solid structure and good palate weight. Grapes are vinified in static upright fermenters with gentle pumpovers. Fourteen months maturation in a selection of new and older French oak barrels has softened the tannins and contributed wonderful structure.

Deep red in colour with a bright purple rim. Classic Cabernet nose of cassis and blackberry with notes of freshly dusted cocoa and subtle spice. The palate is beautifully concentrated, packed with dark fruits and bitter chocolate characters. A juicy, almost sweet mouthfeel with fine tannins and a savoury finish. Aged in tight grained, quality French barrels, the oak has pulled the fruit into line and provided the framework for a classic Margaret River Cabernet Merlot.

Two thirds Sauvignon Blanc, the balance of Semillon, are sourced from good vineyards in the Wilyabrup and Karridale subregions of Margaret River. Parcels are selected on the basis of the desirable characteristics that they can bring to the final wine. Wilyabrup contibutes lovely lifted tropical aromatics whilst Karridale makes for a fine and elegant palate structure. An invigorating, light style of white that's refreshingly unwooded and unoaked, with a touch of sweetness to achieve a lovely gentle finish, food friendly and ideal for all occasions.

Sauvignon Blanc and Semillon are fermented to cultured yeast strains in tank and bottled immediately to preserve the wine's vibrant fruit. Pale straw colour with a green hue. Fresh, tropic fruit salad with lifted grassy notes on the bouquet. Lemon blossom, stone fruit and herbs are the dominant characters. The palate is enhanced by a touch of spicy barrel ferment. Fine, long and crisp the palate also shows citrus, nectarine and gooseberry flavours. Extended lees contact has given the wine some added texture and a long finish. Fine fruit flavours and fresh acidity are the hallmark.

The length of Margaret River's coastline hosts a tapestry of terroirs, each expressing a subtle variation on the profoundly aromatic and intense regional style. Flametree have assembled a collation of fruit from five choice vineyards in the premier viticultural precincts of Wallcliffe, Wilyabrup and Yallingup. A well proportioned wine with seamless integration that's greater than the sum of parts, Wallcliffe brings a measure of pepper and spice complexity, vineyards further to the north add rich dark berry characters and a concentration of flavour.

Flametree's dedicated team work very closely with Margaret River's best growers. Shiraz is harvested off vines planted to propitious gravel soils on select sites with a history of yielding moderate crops of the most intensely flavoured fruit. Grapes are given a seven day cold soak before inoculation to specialized strains of Rhone yeast. Ferments are given plenty of air throughout the course of vinification in a mix of open and static fermenters. Batches are inoculated for malolactic, pressed off and transferred to a selection of seasoned French and American oak barrels for twelve months maturation. Alcohol 14.0%
 
Bright, deep scarlet colour. Lifted blueberry and plums, liquorice and spice combine to create a soft fruit driven Shiraz perfume. Soft extraction techniques and open ferments have achieved a wine of ripe fruit flavours and fine tannin structure. The palate shows plenty of sweet dark fruits and spicy oak flavours. Ageing in older barrels has kept oak in the back ground and ensured that fruit flavours are star of the show. Match with venison bangers, prosciuto or a red wine truffle risotto.

The Flametree philosophy is an elegant yet laid back approach to wine, ensuring that whenever you enjoy a bottle of Flametree it is a relaxed and enjoyable experience. The Flametree Cellar Door has been designed to capture the essence of the beautiful beachside locale. A selection of Flametree wines are available for tasting each day and all of the range including new vintage releases and a selection of limited release wines can be enjoyed over a bottle of wine in beautiful landscaped gardens.

A new state-of-the-art winery was completed in 2007. The winery is a reflection of a commitment to excellence, the design ensures minimal fruit handling and a significant investment has been made in acquiring equipment and technology that maintains the integrity and purity of fruit. A selection of French oak barrels are used to mature the wines, with a little American thrown in to add diversity as required.

Given the favourable climate conditions of the southwest, night cooling is employed to keep the barrel room temperature controlled. The system kicks in when the external temperature reaches 18 degrees Celsius or less. Any warmer internal air is sucked out and the cool night air is allowed to flow into the building. This system minimises refrigeration requirements and environmental impact. A custom designed environmental waste water treatment system means that all of the water used in the winemaking process is recycled and used to irrigate vines and surrounding landscape.

Flametree is home of the 2008 Jimmy Watson Memorial Trophy, Australia's most highly prized accolade for wine. Flametree was honored with Trophies for best red and best blended red (as well as gold) for the very same Jimmy Watson winning wine at the 2008 Qantas Wine Show. Flametree also beat hundreds of entries to win the best dry table red wine in a David and Goliath-style battle at the IGA Perth Royal Show awards.
