A slightly Chardonnay dominant cuvée with the balance in Pinot Noir, all hand picked off vines grown to a site made famous as one of the first sightings of a tasmanian tiger Thylacinus cynocephalus. Tigers are long gone but the Frogmore Creek property at Campania in Coal River Valley yields some of the finest sparkling wine grapes of the district. 42° South is given the full luxury treatment, an extended ageing on lees extracts exceptional richness from sediments, to be followed by disgorgement and doseage in true Methode traditionelle.

The Campania property has over a hundred acres are under vine, all are planted to blocks purposely selected for the suitability to each grape variety. There are twenty seven individual blocks, each situated on very different altitudes. All were established with northerly aspects, allowing vines to receive the greatest possible sunlight. Chardonnay and Pinot Noir grapes are whole bunch pressed to retain delicacy. Fruit is treated to a clean primary ferment prior to racking off lees, followed by stabilisation and clarification. Base wines are assembled and bottle aged for a minimum eighteen months on lees before disgorge and tirage with minimal dosage to retain complexity yet revitalise the palate. Alcohol 12.5%
 
Pale golden hue, delicate effervescence. Aromas of toasty brioche and delicate citrus subtly emerge from the fine beads. Full and crisp flavours of strawberries and apple linger on the refined acid structure. A treat with natural oysters, canapes and fruit desserts.

Following a gentle whole bunch press and fining, individual batches are vinified on light grape solids before the completion of malolactic on primary ferment lees. Once clarified, the base wines are judiciously assembled to style and prepared for secondary fermentation in bottle. Extended maturation on yeast lees builds further complexity and depth of character into the wine. Once clarified, the wines are judiciously assembled to style and prepared for tirage. Extended maturation on yeast lees has built additional complexity and depth of character. Balgownie's Yarra Valley vineyards were planted in 2003 to Chardonnay and Pinot Noir, with a view to exploiting the slow ripening temperate climes and rich soils of the region for the creation of exquisite and stylish sparkling wines. Vinified to a combination of new and old world winemaking techniques, the tradtional cépage of Chardonnay and Pinot Noir is partially barrel fermented in seasoned oak before being treated to a term of extended lees contact, infusing the palate with rich yeasty brioche characters and refined textural creaminess.

The emergence of Balgownie Estate as a preminent winemaker in the 1970s led to the rapid expansion of the central goldfields wine growing region and was a significant player in the rebirth of the Victorian wine industry as a whole. In 1999, fine wine enthusiasts Des and Rod Forrester assumed proprietorship of Balgownie and set about updating the vineyards and winery. The Forresters embarked on a search for the idyllic Chardonnay and Pinot Noir site, eventually identifying a property in the Yarra Valley where they established seven hectares of closely managed vines. Crafted to Methode traditionelle, Balgownie Brut is rested on sediments before completing secondary fermentation in bottle. Alcohol 12.5%

The story begins with the wedding of Nicolas François Billecart and Elisabeth Salmon. The marriage lead to the founding of the distinguished Champagne House of Billecart-Salmon, established in 1818 at Mareuil-sur-Aÿ. Two centuries later, the seventh generation of the family still manages the Champagne company and oversees the crafting of each individual bottle, maintaining the legend of the Spirit of Champagne. Champagne Billecart Salmon fashions the most exquisite wines from choice parcels of fruit grown to twenty five acres of distinguished sites around its headquarters in the village of Mareuil-sur-Ay. Unlike many better known marques, the noble House of Billecart Salmon has elected to remain small in size and limit their production, focussing on quality and consistency over quantity. A cooler, temperature controlled fermentation, inoculated to finely aromatic yeasts, serves to preserve the freshness in the final wine and infuse the bouquet with the most exquisite expressions. Various components are treated to lees batonnage, malolactic fermentation and a spell in Burgundian oak barrels.

Billecart-Salmon evokes the cult of the grape, the noblesse of Champagne, pleasure, finesse, and the notion of splendour. Billecart-Salmon aims for excellence, it manifests itself through the harmonious balance of impressions, and of flavours. On the strength of it's traditions, Billecart-Salmon has chosen to ferment the Grande crus selected by the cellar master Francois Domi, in small Burgundy casks that have already seen several wines. The bottles are then aged in an extensive network of cellars hewn deep into the chalk, dating from the 17th to 19th centuries. Here the temperature is constant, relatively low at around 12°C, encouraging the production of fine effervescence.

Blue Pyrenees Estate is the realisation of a desire to create a unique vineyard of superior quality. It was in the early 1960s that the Pyrenees region became recognised for its potential, by virtue of a unique combination of deep gravely soils and cool climate conditions. Blue Pyrenees Estate is the coolest site within the Pyrenees region, with a diversity of microclimes enabling each clone to be planted in the best situation. A mostly Chardonnay Cuvée with a smaller portion of Pinot Noir. The inclusion of components of mature wines has the effect of reducing the time of ageing on secondary bottle fermentation lees to achieve the desirable complex flavours. This keeps the finished wine, ever more fresh, and vital. Approx 13.0%
