Dunes is assembled from Chardonnay and Pinot Noir grapes that are born to sparkle, nothing is left to chance and there is geat attention to detail throughout the vinification. Sites that are capable of producing fruit with the desired sugar and acid levels, whilst being generous with heightened flavour profiles are selected for Dune. Gentle handling in the winery ensures the maximisation of varietal characters whilst achieving harmony and delicacy in the final Cuvee. A period of rest on sedimentery yeast lees to infuse Dunes with enticing autolysis characters, to add rich textures, and to enhance the mouthfeel and palate weight. A rich effervescence and persistent bead. A lifted delicate nose with strawberries and cream from the Pinot Noir and fresh lemon zest from the Chardonnay. The palate is fruit driven and fresh, with added layers of cream and a lithe softness derived from the secondary fermentations. Dunes is brightly balanced and fresh with an excellent mouthfeel, a long lingering finish to flavours of citron, white cherry and biscuit.

Crafted entirely from parcels of the red and pink Muscat, a Petite Grain varietal which develops extraordinary richness if grown to grand old vineyards in Rutherglen. The base wines are regularly racked and topped off as the angels take their share, to perpetuate the marvelous complexity of the style from year to year. Museum Reserve is fortified with neutral grape spirit after a brief fermentation, to encourage the evolution of rich raisined fruit characters in the finished wine. A joy alongside cheeses, chocolates and coffee, fruits and desserts.

Yalumba have been making this very style of wine since the 1850s and retain much of the nation's most precious stocks. The old and mature, dry grown vineyards of Rutherglen are ideally suited for producing harvests of the richest fruit. The grapes ripen with considerable raisining of the berries, regularly achieving over twenty degrees of baume. After many years of maturation, a selection of older and younger wines are judiciously assembled to produce a complexity and balance of fruit and aged rancio characters. An average of seven years maturation in casks of seasoned French oak imparts wonderful liqueured fruit sweetness in the final wine.
 
Deep amber to tawny colour. The classic perfumed aromas of Muscat grapes, rose petal and rancio, licorice and chocolates, tobacco leaf, ginger and orange peel. Soft, luscious textures, richly flavoured, displaying a balance of freshness and aged richness. The finish is full and edifying, raisined friuts and spice lingering long on the aftertaste.

Christobel Hill Smith was an integral part of the personality around the Yalumba household and wineworks for over sixty years, her vitality and charm bewitched all those around her. Her eponymous wine is equally charismatic, two thirds Semillon and a third of Sauvignon Blanc, fashioned into a well structured Barossa white supported by exquisite mineral slateyness. The aromaticnes and pungency of Sauvignon Blanc adorn the beautiful fresh flavours and lithe natural acidity.

Harvests of Semillon and Sauvignon Blanc are sourced from loyal Barossa growers, some have been supplying Yalumba for generations. Great care is taken to pick the grapes early to ensure maximum freshness and delicacy. Christobel's Semillon is always picked early to retain freshness and capture the classic varietal lemon sorbet flavour. Grapes are gently pressed to extract clean free run juices, minimally handled to protect fresh fruit characters. Parcels are inoculated to neutral yeasts and vinified at cooler temperatures to maximise the varietal expression and retain essential Sauvignon Blanc aromatic complexity. The finished components are left on light lees until assemblage.
 
Bright green hue. Aromas of lemon verbena, orange blossom and lantana, each variety of grape contributing its own charm. Semillon defines the palate, giving it light body with citrus blossom flavours, Sauvignon Blanc gives the palate zest and crunch. A wonderfully fruit driven wine for current drinking alongside fresh seafood, salads and Asian style faire.
Yalumba Cigar Cabernet Sauvignon

Yalumba planted the Menzies Vineyard in 1975 and 1994, with a view to establishing an elite marque of Coonawarra. Named after the unique cigar shaped strip of rich Terra rossa soils, Cigar is sourced mostly from the younger blocks at Menzies North and Menzies South. The wines from these superlative sites have a style of their own, as vines are influenced by a diverse range of elements to yield the most eloquently flavoured fruit. The Cigar is a fully engrossing Cabernet Sauvignon with intense, dark berry characters and the most equitable tannins.

Crafted in similar fashion to the flagship Menzies Cabernet, Cigar is vinified to small batch winemaking techniques. The defining character of the source vineyards comes from the soils, classic full bodied red dirt. The grapes are crushed to small static fermenters, temperatures are allowed to peak early at 30C, then given more control around 20C. This ensures good extraction of colour and tannin. Grapes remain on skins for a week, some components are treated to an extended contact. After pressing, the wine completes malolactic, followed by twenty two months maturation in a combination of new and prior use French, American and Hungarian oak hogsheads and barriques.
 
Crimson red colour. A bouquet that fills the senses, floral high tones of violets and lavender underscored by bass notes of cherries and dark chocolate. The wine is bright with fresh red fruits such as cherries and currants sweeping the palate followed by a melted chocolate texture of soft tannins in complete harmony with the fruit, all the way to a long and lingering finish. The cabernet of choice to accompany charcouterie, antipasto or roast duck.

Yalumba have nurtured the finest Eden Valley vineyards for decades, Distinguished Sites are a family of exceptional wines. Yalumba now boast some of the most significant Viognier plantings in the world. Shiraz from two choice sites stood out for their elegance and style, to be vinified with small volumes of Viognier for the construct of a highly perfumed red wine in the style of a Cote Rôtie. Viognier adds an extra dimension and a wonderful fragrance to the bouquet. Assembled from the finest barrels, unique in style and rich in concentrated fruit.

Sourced exclusively from Valley Eden, select parcels of hand picked Shiraz and Viognier have been crushed and co-vinified together in open fermenters, utilising the Yalumba designed cap plunger to control colour and tannin extraction. Natural indigenous yeast ferments have added a degree of wild complexity. The big difference with this wine is the handling of Viognier skins. By separating the juices from skins and fermenting with select parcels, the skins have provided more powerful aromas and texture, contributing another dimension of flavour and complexity to the finished wine. Matured twenty months in a combination of seasoned and new French and Hungarian oak hogsheads and barriques.
 
Deeply red in colour with purple hues. A warm bouquet showing florals and bright blueberry, coffee and cedar, anise and a subtle aromatic sweetness from the Viognier. A wine of purity, fineness and texture, the palate is medium to full bodied and beautifully weighted, packed with dark fleshy cherry fruits and anise notes, finishing on a length of powdery tannins.

Back in 1980 when the Viognier grape was all but extinct, Yalumba began a journey which has made them the most influential producer of Viognier in the world. Yalumba began their love affair with this exotic Rhone varietal when they realized that the slightly elevated slopes of Eden Valley were ideal for aromatic whites. The site was to become Australia's first significant Viognier vineyard. After many vintages, Yalumba have determined that the best results are achieved when they intervene as little as possible in the fermentation and the ageing.

Following harvest, two thirds of the fruit is gently pressed directly to a mix of older French oak puncheons and barriques, the balance is pressed into fermenters. Juices are handled with passive oxidation, allowing the wine to ferment with indigenous yeasts, natural to the vineyard. Batches are kept on sedimentery yeast lees and treated to regular batonnage for ten months to increase complexity, infuse creaminess and further contribute to palate weight. Barrel fermentation has contributed to creating a truly intriguing wine. Natural indigenous vineyard yeasts play a key role in allowing the flavours and textures to express themselves to the full.
 
Pale gold with green highlights. A nose of pure aromas displaying apricot nectar, lifted honeysuckle and orange oil perfume. The palate is long, rich and luscious, with intense stone fruit, particularly white peach and apricot flavours, finishing with an aromatic citrus freshness. Yalumba will continue to evolve, revealing enhanced apricot and spice, followed by honey and toast.

Yalumba, Australia's oldest family owned and operated winery, has a wealth of history and tradition

Yalumba was founded in 1849 by Samuel Smith, British migrant and English brewer, who had brought his family to Angaston seeking a new life. After purchasing a 30-acre parcel of land just beyond the southern-eastern boundary of Angaston, Smith and his son began planting the first vines by moonlight. Samuel named his patch Yalumba, aboriginal for 'all the land around'.

The Yalumba philosophy quietly encourages innovation, experimentation and a visionary outlook in the quest to make great wine. There are literally thousands of rare, eclectic and idiosyncratic grape varieties used to make wine around the world. Yalumba's Vine Propagation Nursery is able to source many of these varieties, performing clonal and varietal selection, which ultimately provides small batches of fruit for Yalumba's Vinnovations label. In order to sustain the formulation of some of Australia's most compelling wines, Yalumba implements an environmental improvement programme that reflects credible environmental stewardship and due diligence.

At Yalumba, no aspect of winegrowing or winemaking is left to chance. For the past 30 years, Yalumba has been able to influence grape quality at its earliest stage. In the 1970s, the winery made a far-sighted decision to establish its own vine nursery. Today the Yalumba Vine Nursery is one of Australia's largest viticultural nurseries, supplying high quality vines to winemakers throughout Australia. Not only does the Nursery provide safe, quality rootstock for established varieties such as Cabernet Sauvignon and Shiraz, it is also a leading supplier of specialised clones such as the Burgundian Pinot Noir and Chardonnay clones in heavy demand by the country's leading winemakers.

In a wine market largely obsessed with single-varietal wines, Yalumba has remained steadfast in its commitment to that most Australian of wine styles, the Cabernet Shiraz blend. Cabernet Shiraz is taken so seriously by Yalumba, that Brian Walsh, Yalumba's Director of Winemaking persuaded the committee of the Adelaide Wine Show to introduce a separate judging class for the style. It's a wine style that is unique to Australia, he says, and plays such an important part in Australia's winemaking history.

As a wine business operating in the rural environment for over 150 years, Yalumba recognises the impact of its activities on its natural surrounds. Yalumba is committed to integrating best environmental practice into its everyday activities to ensure long-term sustainability. In 1999, Yalumba became the first Australian winery to sign up for the Greenhouse Challenge - an initiative dedicated to reducing greenhouse gas emissions. Yalumba's aim is to be recognised as Australia's finest independent wine company. A wine produced by means of environmentally-friendly sustainable processes is increasingly being recognised as being an intrinsic aspect of quality.

The crafting of oak barrels is a proud tradition at Yalumba with a coopering history dating back to the turn of the 20th century. With its own on-site cooperage, Yalumba is the only winery in Australia, and one of a small and select group of wineries in the world, to enjoy this privilege. Oak plays an important part in the winemaking process and Yalumba have the advantage of being able to have full control of the quality of oak used to age their wines. Yalumba imports oak staves from the world's best oak forests in France and America, and then air-dries the oak for many Barossan summers and winters to leach any sappy, bitter characters from the wood. This extended seasoning (as opposed to the more common practice of seasoning the oak for between 18 months and 2 years) imparts rich chocolate mocha characters and adds yet another layer of texture to the wine without masking the fruit flavours.
