The 3 Tales are about the De Bortoli family story, the Marris family story, and the narrative of two families coming together to produce a unique wine from fruit grown to estate vineyards on the slopes of the Wairau Valley and the river flats of the Waihopai. Whilst being a joint venture, the wine is distinctively New Zealand in its look and feel. The idyllic microclimes around the choice vineyard sites have provided a near perfect environment to encourage the development of the intense and traditional regional characters. It is this vibrancy of fruit that is the hallmark of 3 Tales, fully tank tank femented at 12°C to15°C with choice strains of yeast to retain the most vibrant expressions of Marlborough Sauvignon Blanc.
 
Mid straw colour with a lovely green hue. Freshly cut grass and nettle mingle with classic tropical aromas of passionfruit and gooseberry. Lovely bright citrus green flavours follow through to a fresh herbaces palate. Vivid minerality coupled with gooseberry/ lime adds structure and poise to create an exciting Sauvignon Blanc. Layers of flavour, balanced with beautiful bright fruit texture ensure the taste lingers forever. Crisp acidity makes the ripe herbaceousness come alive.

Frogmore Creek is one of Tasmania's most awarded wineries. Fruit is sourced from a diversity of viticultural precincts across the apple isle, each offering a unique clime that's most suitable to different grapes. 42°S is the central latitude of the island state, the team use it as a reference point whence to focus their search for the ultimate Tasmanian Pinot Grigio. Parcels grown to fine vineyards at Relbia in the north are assembled with a component from Cambridge in the south, into a juicy Grigio wine of exuberant fruit character and fine, textural richness.

Frogmore Creek work to nurture a biologically diverse environment for health of the soil and Tasmania's fauna. Since the first Frogmore Creek vines were planted and dams established, four species of frogs have made the Frogmore Creek Vineyard their home. White Pinot grapes are crushed and dejuiced without the inclusion of any pressings cut, limiting the phenolics and contributing to the structure. Batches are treated to an overnight cold settle and racked clean into fermenters for inoculation and a controlled vinification at 18°C. Ferment remain on lees for a month to enhance structure before being heat and cold stabilised for bottling.
 
Light peach straw hue. Bright aromas of fresh strawberries and raspberries. The berry characters continue on to the full flavoured, juicy palate where they coalesce with mixed tree fruit characters. A succulent cool climate acid balances the fruit and brings the wine to a clean, mineral finish.

Frogmore Creek was established with a priority on sustainable farming practises. The site was chosen for it's suitability to achieve harvests of the finest fruit whilst returning to the environment, a bounty of natural endowments. Sauvignon Blanc grows beautifully here, the crisp berries are rich with grassy lychee flavours and low phenolics. 42 Degrees South is a vigorous Sauvignon Blanc, laden with slowly ripened tropical fruit characters, a touch of mineral and ample herbaceousness, to match with the freshest seafood and gourmandise Vietnamese faire.

The long ripening period of Frogmore estate vineyard at Campania in Coal River Valley translates into softer acids in the Sauvignon Blanc. All fruit is picked by hand off vines yielding two to three tonnes per hectare. Grapes are de stemmed and crushed into the press for four hours of skin contact. Batches are de-juiced with only slight pressure prior to an overnight cold soak. Components are racked to fermenters and inoculated for a controlled vinification at at 18˚C to 20˚C. Ferments remain on lees for eight weeks to fill palate structure before being hot and cold stabilised. A passage to cross flow filtration preserves freshness and fruit character.
 
Light colour, straw green hue. Vibrant grassy and gooseberry aromas continue through to the palate. Fresh, zippy acid holds the animated fruit structure together, giving considerable length. A splendid accompaniement to wide noodles, lasagnette or mafaldine with a light tossing of okra, seafood or vegetables.
Airstrip Marsanne Rousanne Viognier 2010

Half Marsanne, the balance of Rousanne and Viognier, sourced exclusively from the Mitchelton estate vineyard. Airstrip is a lively but tight blend of vigorous white fruit. Modest crop levels ranging from 2 to 3˝ tonnes per acre give this wine its core intensity. Each individual block is managed and vinified separately to allow the different qualities of each variety, shaped by the unique vineyard site and soil profiles, to shine through. The individual parcels of fruit are moulded together during blending to produce the unique Airstrip style.

Mitchelton's vines are rigorously husbanded, careful monitoring of fruit ripening ensures harvesting occurs at the time of the fruit's optimum maturity. The juice is cold settled, racked and warmed before innoculation with selected yeasts. Some of the lime green yoghurty textured juice lees is retained when racking the juice, adding complexity to the final Airstrip blend. Marsanne and Roussanne are barrel fermented in 20% new french oak while the Viognier is barrel fermented in four year old french barrels to retain purity of fruit expression. All barrel fermented wines are individually barrel selected to ensure the harmony of oak and texture in the final blend. Alcohol 13.0%
 
Intense aromatics of jasmine, ripe peach, lemon thyme and mango. A textured, full and generous palate framed by balanced acidity. Flavour notes of poached pear, honey, bran and hints of lemon zest meld to produce a complex, full bodied wine. Marsanne is the rare specialty of Central Victoria - this region boasts the largest plantings outside France - but Viognier and Roussanne are even rarer in Australia. The Marsanne develops body and character, Viognier typically develops distinctive perfume and spice. Roussanne is prized for its ability to give stone fruit flavours and texture. Intense, well defined and impeccably balanced, the three grapes have been brought together into a very fine food orientated wine.

The cool climate and gravelly loam soils of Frankland River region are well suited to the production of intense white wines. Alkoomi Vineyard is located just eighty kilometers inland from the Southern Ocean, where vines are nourished by good winter rains and stimulated by dry ripening months. Summer days and evenings are cooled by fresh sea breezes, enabling ideal slow ripening of grapes. Alkoomi fully expresses the endowments of a superb microclime, suitably fashioned to enjoy while young. Exclusively estate grown fruit is picked between 12.5° and 13.5 ° baumé to build complexity and heighten flavour profile, tank fermented and bottled within two months to capture the vitality of fruit. Alcohol 11.5%
 
Pale straw with light green hues. Lifted bouquet of sugar snap peas and freshly cut grass over a sweet core of vanilla. Elegant and fine, displays rich guava and passionfruit flavours associated with Sauvignon Blanc, supported by lingering lemon curd, bright acidity and a creamy textural mouthfeel from the barrel ferment Semillon.

Alkoomi make use of water supplied from on site dams efficiently to prevent vine stress during extended dry periods without sacrificing the naturally low yields that produce concentrated flavours. The vines are all pruned by hand, harvesting occurs in the cool of the morning, usually starting at 2.00 am, to ensure that grapes arrive at the winery in top condition. The winery is completely self-contained, including bottling, labelling and packaging. Chardonnay grapes are picked in the second week of February having achieved the perfect baumes and pH levels for this style of wine. Alkoomi was tank fermented and bottled immediately after vinification to retain freshness. Alcohol 13.3%
 
Brilliant pale straw with light green hues. Aroma of peaches and cream with subtle savoury notes. The balanced palate is rich with creamy length flavours of rockmelon and peach are complemented by underlying citrus notes and supported by nutty complexity, leading to a lingering, full flavoured finish. The McWilliams winemaking team are blessed with access to some of the most splendid Sauvignon Blanc vineyards in Marlborough. Parcels of fruit from the Awatere Valley provide a steely and racy acidity, while grapes from the Wairau Valley display powerful and intense varietal expressions with lovely lifted passionfruit characters. A further component from the delta in upper Wairau contributes ripe and refined melon citrus flavours. Crafted to the post modern, early drinking, lighter in alcohol style, a smart choice alongside grilled fishes and chicken caesar.

In few other places are the chapters of each season written as eloquently as they are in New Zealand, as snow heralds winter and stitch birds announce spring. Made to a lighter style, the wines of All Hallow's Eve have been specially created to welcome your new season. Sauvignon Blanc is harvested at various levels of ripeness to ensure a mixture of blending options from sites throughout the Wairau and Awatere Valleys. Crushed and pressed, the juices are naturally cold settled for several days before being racked clean to a slow, cool fermentation. The vinification is aimed at retaining aromatics and freshness before determining the best parcels for inclusion to create the lower alcohol style. Alcohol 8.0%
 
Bright and vibrant pale green. Fresh honeydew and rockmelon bouquet with varietal passionfruit and grassy undertones. A zesty palate bursting with a wide array of flavours. Alta had a clear vision from day one, to showcase the Adelaide Hills as Australia's premiere cool climate wine region. Emphasis was placed on a careful selection of site, grape variety and controlled yields of the highest quality hand picked fruit. Alta was adamant that the Adelaide Hills would make a very good Pinot Grigio wine and have now made sure there's no doubt about it. Alta is fashioned to the Italian style, relying heavily on the varietal characters and naturally high acid levels in the grapes at harvest to provide aromatics and structure.

Regular vineyard assessments leading up to harvest ensure that fruit is harvested when the flavours are at their optimal intensity. Grapes are hand picked just prior to any decline of natural acid levels and treated to a whole bunch press ensuring the retention of soft juices that are vibrant in colour and low in phenolics. A complimentary strain of yeast is selected for its ability to highlight primary fruit flavours while enhancing palate structure. A cool tank vinification achieves a pristine wine with great depth of flavour. In keeping with the true Grigio style, Alta is filtered and retained in fermenters until the final assemblage, completely unwooded and unoaked.
 
Vibrant pale yellow hue. Highly aromatic with spring blossom and fresh corella pear fragrances, spiced grapefruit and citrus blossom. A tightly structured palate expressing an excellent purity of fruit. Rich lemon and spiced pear flavours concentrate through the mid palate and linger through to a dry savoury finish. Exhibits great structure and will suit everything from white meats to Al fresco, a fine match to chilli infused and Asian inspired crustacea.

Regular assessments leading up to vintage ensure that grapes are picked when flavours are most intense and the balance ideal. Sauvignon Blanc is harvested during the cool of the night and crushed with open rollers to minimise phenolic and colour extraction. The biggest challenge is to ensure that the fresh flavours and remarkable structure of juices are retained throughout the winemaking. Several yeast strains are used based on their ability to highlight varietal flavours and enhance palate structure. Free run and pressings are vinified, some on skins, in a combination of tank and large French oak casks. Wines are racked on lees after the completion of ferment and stored cool prior to assembling.

By employing a fine balance of contemporary and traditionalist winemaking techniques, Amberley Estate has remained true to it's original aim of making wines solely from fruit grown to the Margaret River. A selection of cultured yeasts and the use of clean tank ferments produce a soft yet complex, elegant fruit driven Chenin Blanc designed to complement today's eclectic cuisines. Following the crush, grapes are pressed and the juices are inoculated. In order to enhance the varietal aromas, Chimney Brush is vinified in fermenters under strict temperature controls. The emphasis at all stages of handling is to preserve the natural qualities of elegant Chenin Blanc.
 
A bright, light straw colour. Varietal characters are prominent on the bouquet, aromas reminiscent of fresh fruit salad comprised of red apples, pineapple, and tropical Asian fruits. Rich, soft, pretty bergamot flowers. Lovely balanced bright nose with a carry through of melon and then a hint of sweetness. Red apple, lychee and light herbal flavours continue on the palate balanced by the zesty acidity. A lovely fruit forward Chenin Blanc, the slight sweetness goes well with spicier dishes such as a caraway saffron gnocchi or chermoula prawns and Thai vegetable.
