Frogmore Creek work to nurture a biologically diverse environment for health of the soil and Tasmania's fauna. Since the first Frogmore Creek vines were planted and dams established, four species of frogs have made the Frogmore Creek Vineyard their home. White Pinot grapes are all hand picked, parcels are crushed and dejuiced without the inclusion of any pressings cut, limiting the phenolics and contributing to the structure. Batches are treated to an overnight cold settle, racked clean into fermenters for inoculation and treated to a controlled vinification at 18°C. The completed ferments remain on lees for a month to enhance structure before being heat and cold stabilised for bottling.

The long ripening period of Frogmore estate vineyard at Campania in Coal River Valley translates into softer acids in the Sauvignon Blanc. All fruit is picked by hand off vines yielding two to three tonnes per hectare. Grapes are de stemmed and crushed into the press for four hours of skin contact, extracting optimal flavour and textures while minimizing phenolics. Batches are de-juiced with only slight pressure prior to an overnight cold soak. Components are racked to fermenters and inoculated for a controlled vinification at at 18˚C to 20˚C. Ferments remain on lees for several weeks to fill palate structure before being stabilised. A passage to cross flow filtration preserves freshness and exemplary varietal fruit character.

Light colour, straw green hue. Vibrant grassy and gooseberry aromas continue through to the palate. Fresh, zippy acid holds the animated fruit structure together, giving considerable length. Harvests are all hand picked, normally around early September, off vines averaging thirty years of age, trained to Guyot trellis on limestone clay soils, planted to southwest facing slopes in the Monferrato hills of Asti, at splendid scenic altitudes, 250 to 400 metres above the sea. Fruit is sent to pressurized fermenters, inoculated by R2 yeasts and treated to a temperature controlled vinification. Ferments are arrested by chilling and filtration, to retain the vital fruit characters and dulcet sweetness that are so essential to Moscato d'Asti. Alcohol 5.0%
