Sandpiper Cabernet Sauvignon 2011

Labelled for a remarkable migratory bird, which can be seen fossicking around the Thorn Clarke vineyards as it prepares to fly north, sometimes as far as Siberia, before the chill of winter shrouds the valley. Is the Barossa really that cold? Sandpiper represents a highly regional expression, showing the greener, slightly more vegetative qualities of temperate clime Cabernet Sauvignon. A long spell under a selection of tightly grained French oak barrels imparts liquorice characters over the essential Barossa dark chocolate and blackberry flavours.

Thorn-Clarke are one of the Barossa's baronial winegrowing estates and have been supplying fruit to Australia's most cherished labels for generations. Cabernet grapes from splendid vineyards are crushed and destemmed into fermenters. Yeast is immediately added and the ferments are pumped over twice daily to maximise colour, tannin and flavour extraction. Cooling is employed to ensure temperatures remain between 22°C and 25°C, allowing time for the tannins and fruit to develop fully. The batches are pressed upon completion, a week after the crush, followed by transfer to a combination of new and prior use, predominantly French oak barrels for a year's maturation.
 
Medium to deep red colour. Great lift and intensity to the nose, a complex mix of cherry ripe and blackberries, liquorice, currant and wild rose. A solidly structured medium weight palate offering rich ripe fruit, blackcurrant and strawberry yogurt/oak characters, nicely balanced by notes of coffee, nutmeg and dried herbs. Sandpiper finishes on a length of fine silky tannins and lingering sweet black fruit flavours.

The Thorn-Clarke family can be proud of a long history growing the Barossa's finest Chardonnay, the best batches are retained for their own labels. Sandpiper sits lightly oaked, retaining a refreshing fruit character as it undergoes extended yeast maturation. A delicious Chardonnay dominated by nuances of white peach and tropical fruits over a nutty, lengthy palate. Sandpiper makes a stylish aperitif and is exquisite alongside good food, a personable wine of classic Eden Valley charm, creamy with a touch of mineral before a crisp, cleansing finish.

Thorn-Clarke's Mount Crawford Vineyard, in the higher altitudes of Eden Valley, yields an exceptional quality of Chardonnay, translating into outstanding wines endowed with exciting regionality. The favourable ripening seasons stimulate vines, accumulating vibrant varietal flavours in the fruit, infusing grapes with perfect natural acidity. Fruit is crushed, destemmed and treated to a membrane press, discarding the must. Parcels are fermented through the action of French yeasts at 12°C to 15°C, kept slow and cool to retain all the vital flavours. Sandpiper is then racked, filtered and immediately bottled to retain the inimitable expression of Eden Valley Chardonnay. Alcohol 13.7%
 
Pale straw colour. Clean and elegant nose offering white peach and blossom notes. A nimble, medium weight Chardonnay wine with peach, pear and citrus notes. The palate is well textured and mouthfilling after partial fermentations on French oak and a term of ageing on lees. Hints of nutty oak and roasted hazel characters before a finish of good length with lingering citrus and mineral characters.

Sandpiper is named after the migratory bird which visits Thorn-Clarke's vineyards annually from the northern hemisphere. A succession of inspiring vintage releases have claimed impressive accolades on the national wine show circuit.

Thorn-Clarke are one of the largest Barossa growers with over twenty hectares of Merlot vines. Most of the crop is destined for other wineries, but the best fruit is retained for the estate's own label, an indication of the quality of their wines. Merlot grapes are crushed and destemmed into fermenters. Yeast is added immediately and the ferments are pumped over twice daily to maximise colour, tannin and flavour extraction. Fermentations are maintained at controlled temperatures of 22°C to 25°C thereby maximising fruit expression. Pressing occurs about a week after the crush, the wine is then put into a mix of tight grain French and American oak to mature for twelve months.
 
Medium red in colour. Lifted nose of clean ripe blackcurrant fruit with nuances of liquorice and spice, chocolates and mint. Medium weight but full bodied palate with an abundance of rich, sweet fruit. Blueberry, raspberry and chocolate pudding fill the mouth with complexity and depth. Balanced and integrated, the mid weight tannins providing length.
Sandpiper Pinot Chardonnay N.V

A handmade Methode Traditionelle sparkling from the Mt Crawford parcel, named after the migratory bird which visits the Thorn-Clarke vineyard. This site was specially selected as it is so ideal to grow the two grape varieties which respond to cold climate. 60% Pinot Noir and 40% Chardonnay grapes were picked at night and barrel aged for six months on lees to infuse the great depth of Pinot flavour. The result of the Thorn-Clarke's careful site selection and superb winecraft is a deep, guava coloured, full and yeasty Soth Australian sparkler brimming with body and hints of stonefruit.

The grapes were crushed after picking and de-stemmed immediately to ensure minimum skin contact and phenolic extraction. The Chardonnay and Pinot Noir were fermented separately under cool conditions to ensure delicacy of the base wine, these base wines were then blended to obtain the desired characters. The base wine was re-fermented and left on lees for six months to maximise mouthfeel and complexity of the wine. Alcohol II% Sugar 10.5 pH 3.2.
 
Visibly a finer quality sparkling in it's clas with a distinguished bead and warm velvety hues. Very pale pink / salmon colour. The nose is showing some interesting nutty and yeasty characters with underlying strawberry fruit. On the palate this wine is a light bodied but full flavoured sparkling with some great kiwi fruit and guava characters. Serve on any occasion chilled or closer to room temperature for added zest.

Thorn-Clarke are one of the Barossa's largest and most highly awarded wine grape growers. Their Mount Crawford Vineyard up in the Eden Valley holds five hectares of choice Pinot Grigio vines. Mount Crawford was specially selected as an acquisition by Thorn-Clark for it's idyllic growing conditions. The north facing aspect provides much needed warmth in spring through to autumn. Tough mountain soils make the vines work hard to achieve excellent flavour and acid levels. Fruit is crushed, destemmed and treated to the actions of a membrane press. Pressings are discarded and the pure free run juices are inoculated to French yeasts. Ferments are kept slow and cool at 12°C to 15°C to retain all the complex varietal characters. Following vinification, the wine is racked and filtered before an early bottling to capture and retain the true expression of Pinot Grigio and the terroir whence it comes.
 
Mid straw colour. The nose is lifted with lots of herbal notes, strawberries and pear. The palate is medium to full bodied with dried apples and citrus fruit, rich, complex and mouthfilling with ample flavour and fine structure, finishing with splendid length, elegance and poise.
Sandpiper Shiraz 2011
Barossa

From the warmer St Kitts and Milton Park vineyards, Sandpiper is made in the traditional way, by an award winning team with access to the Barossa's best Shiraz. Thorn-Clarke are highly specialised at maximising the quality of fruit off the healthiest vines, achieving wines with vibrant character. Ageing under fine oak has enhanced the palate and softened the tannins.

Deep inky purple colour. The nose is a complex mixture of ripe blackberry and plum fruit with a dash of creamy vanillin oak. The palate is medium to full bodied, starts with sweet plummy fruit, the flavour builds on the palate to deliver an explosion of raspberry flavours. Lovely mouth coating tannins which combine with dark chocolate oak and fruit to provide a great depth and length of flavour.

Eden Valley
A delicately oaked Eden Valley Chardonnay, produced in small quantities by one of the Barossa'a great winemaking dynasties. Barrel aged, it sees an extended period on lees to give a more savoury flavour, achieving a round, voluptuous body.

Eden Valley has become synonymous with white wines of exceptional quality and elegance. The high altitude Mount Crawford Vineyard towards the south of the valley yields parcels of outstanding Chardonnay. Grapes are hand picked for optimum quality, crushed, destemmed and treated to a membrane press, the pressings are all discarded. Settled juices are racked to oak for a slow, natural fermentation by wild yeasts, retaining all the natural flavours of the Chardonnay fruit. The wine was left in lees in completely new French oak or ten months, stirred weekly to increase complexity and mouthfeel. A portion of the wine completed malolactic. The wine was then racked, filtered and bottled. Alcohol 13.0%
 
Colour is a mid deep straw. The rich nose has displays peach and nectarine, the oak provides creamy notes and complexing barrel ferment characters. Palate is rich and sweet with a medium to full body, exhibiting richness of stone fruit, balanced by a lovely creamy mouth feel derived from malolactic. The fruit is complemented by the well integrated nutty French oak and richness provided from the wine being left on lees for many months. Shotfire finishes long with cleansing acidity.

Eden Valley
Thorn-Clark nurture some of the Eden Valley's best Pinot Gris vines. Barrel fermented, richer and fuller than most Pinot Gris, currently only produced in very small quantities, an extended period on lees has brought savouryness and round, mouth filling body.

The estate's Mount Crawford Vineyard, within the higher altitudes of the Eden Valley, holds five hectares of choice Pinot Gris vines. Following a long and mild ripening season which favoured the accumulation of good sugar levels and heightened flavour profiles, the fruit was hand picked, crushed, destemmed and treated to a membrane press. The settled juice was racked to oak where it underwent natural fermentation by wild indigeneous yeast. The ferment was slow and hence retained all the natural flavours of the grape. The wine was left on it's sedimentery lees in oak barrel for eight months, and stirred once a week to increase the complexity and mouthfeel. Approx alcohol 14.0%
 
The colour is mid straw. There is an intense nose of pears, dried herbs and a hint of buttered toast. Floral and peach notes, a hint of butter and lanolin, luscious biscuitty characters, milk bottle and vanilla. The palate is medium bodied with nice rich pear, freshly cut apples and some citrus fruits. Due to the lees contact the wine is very viscous, creamy and mouth filling. The rich pear, apples and herb flavours combine with the oak ferment influence to produce a white of complexity and depth.

The 2004 vintage varied from warm to quite hot resulting in a good size crop of outstanding quality fruit. The grapes were ripe but quite small, yielding wines of intense colours and flavours. Harvested April to May, the bunches of grapes were crushed and destemmed into fermenters. Yeast was added immediately to the fermenter, pumped over twice daily to maximise colour, tannin and flavour extraction. Ferments were purposefully kept to a cool 22 to 25°C which encourages the wine to display maximum vateietal expressions. Pressed on the seventh day after crushing, transferred for twelve months maturation into a combination of tight grain French (85%) and American oak (15%) Alcohol 14.1%
 
Colour is a deep inky purple. An intense and lifted nose, a perfume of great complexity. The predominant aromas are of berry and liquorice fruit support by spicy French oak. The palate is full bodied and complex, all five varietals contribute fruit. The Cabernet Sauvignon and Cabernet Franc provide wonderful upfront berries, the Malbec and Petit Verdot bring great depth of flavour and intensity, while the Merlot gives the palate a wonderful suppleness. The grainy tannins add to the rich mouthfeel of the wine. There is awesome length, the berry fruit and spicey oak lingering long, an omnipresent aftertaste. Drinking well now after a spell of ageing at the Thorn Clarke cellars, and will continue to develop.

A fully developed and complex Bordeaux styled red wine, out of a great vintage year.

Barossa
At a time when the government was paying growers to pull vines in an attempt to curtail the oversupply of wine grapes, David Clarke was working against trend, testing soils and buying land (under car headlights to avoid local farmer suspicion) with the intention of establishing the finest Barossa vineyards. Thorn-Clarke Quartage is a complex yet seamless cépage, Cabernet Sauvignon and Franc provide wonderful upfront berry fruit characters, Malbec contributes great depth of flavour and intensity, a tenth of good Merlot adds suppleness.

Deep inky purple hue. Lifted dark fruits on the bouquet, blackcurrants and cedar, spices and subtle violet. Medium to full bodied palate with a good weight of cassis fruit flavours over long silky tannins, very much in a Cru Bourgeoise styling. Chocolate and vanilla characters from the supporting oak, Quartage exhibits great vibrancy and poise, resolving in fine balance on a long seamless finish. The wine of choice to accompany grilled ribs or meatball pappardelle.

The family can be proud of six successive generations in the Barossa Valley, supplying grapes for many of the nation's most memorable vintages. The best parcels are selected from the estate's Kabininge Vineyard to form the backbone of fruit for Shotfire. The essential Australian Shiraz, offering a generous palate of ripe blackberry and plum flavours, seasoned by spice and vanillan oak, supported by a structure of fine and pliant tannins.

Kabininge vineyard is true Barossa Valley floor terroir, predominantly Shiraz and planted to Bay of Biscay soils, red wine grapes ripen easily here. Grapes are crushed and destemmed, the juices run into open vats for vinification, pumped over twice daily to maximise colour, tannin and flavour extraction. A fastidious cooling regime is employed to ensure the ferments remain in the 22°C to 25°C range, preserving maximum expressiveness of the fruit. Pressing is conducted seven days after crush, the wine is then transferred into a combination of new and prior use American and French oak hogsheads for an extended maturation of up to sixteen months.
 
Deep red colour. Lifted and intense nose of blackberry fruit, sweet spice and dark chocolate. Rich and flavoursome palate with blackberry and plum fruit flavours, plenty of complexity mixed with spice and earthy notes. Mouth filling flavours are complemented by chalky tannins, a lovely Barossa Shiraz characterized by it's great length of fruit. A rich and voluptuous wine filled with matching spice, drinking brilliantly now alongside roasts and succulently braised meats.
The Thorn-Clarke family has a long history in the Barossa, six generations of involvement in the region's world famous wine industry

The Barossa Valley was settled in the early 1840s by small farmers and artisans seeking religious freedom from their native Silesia. The warm, fertile valley was ideal for ripening winegrapes and Australia's largest wineries made their headquarters amongst the vineyards. In the cooler ranges above the Barossa, known as Eden Valley, English settlers created large pastoral runs for sheep and cattle, but also planted vineyards to ensure a supply of table wine.

Thorn-Clarke

In the early 1990s Australia created a Geographic Indication for each wine region so that they were recognised under international law. The Barossa was proclaimed a wine zone and within it, the two regions of Barossa Valley and Eden Valley. Over two centuries the Barossa has become the headquarters of the Australian wine industry and the most famous Australian zone internationally. Thorn-Clarke take a long-term view of the future and their goal is unashamedly to be still growing grapes and making wine for another six generations. They recognise and value the role that their suppliers, distributors, retailers and customers play in this goal and seek to develop sustainable partnerships based on loyalty, trust and quality.

The name Thorn-Clarke derives literally from the relationship between two long time Barossa families. The winery owners are David and Cheryl Clarke (nee Thorn) and their son Sam is manager of the winery. Cheryl's brother, David Thorn manages the Mount Crawford and Kabininge vineyards for Thorn-Clarke Wines. Her father Ron Thorn has one of the oldest Shiraz vineyards in Australia and possibly the world on the Thorn family property 'Clifton' outside of Angaston. Earliest records show this old vineyard was in existence in 1854.

Husband and wife, David and Cheryl Clarke both have deep family roots in the Barossa. Cheryl Clarke's family, the Thorn's, have been grape growers in the Barossa since the 1870s. David Clarke's family were pioneers in the Barossa as well but most famously in the mining of gold from the Barossa Goldfields. One of his ancestors was James Goddard who was the responsible for opening the Lady Alice gold mine in the Barossa goldfields and which was the largest gold mine in South Australia at the time. It has been David's love of the wine industry that saw the planting of the Kabininge vineyard outside of Tanunda in 1987. The planting of the Kabininge vineyard represented the start of a deeper involvement by the family in the Barossa wine industry.

The team at Thorn-Clarke share a quality objective, to be a premium wine producer for a very long time, producing quality high value wines. Right from the time when their first vineyards were established Thorn-Clarke have been extremely thorough in ensuring all elements were just right. All four of the Thorn-Clarke vineyards have been selected to ensure they can provide the ideal growing conditions for each variety. The release of wines is never rushed. Thorn-Clarke await for the optimal vine age to ensure top quality fruit. The attention to detail carries through from the grapegrowing to the winemaking side, ensuring that the wines over deliver in quality across a number of different price points.

Thorn-Clarke today are accumulating a terrific run of achievements on the back of some fantastic awards and accolades. It seemed to all start with the 2004 Shotfire Ridge Quartage being awarded the top wine of the Adelaide Wine Show and has progressed from there with trophys and gold medals at other wine shows, high scores from Parker and Wine Spectator in the USA and a resultant increase in interest in all the Thorn-Clarke wines from all over the world. Quality means showcasing the best that the Barossa has to offer and this has been achieved through a strategic vineyard development plan.

The Thorn-Clarke vineyard development plan was started more than twenty years ago and will continue into the future. The four Thorn-Clarke vineyards highlight the individual micro-climates of the Barossa with four quite different terroirs which are brought to the fore in single vineyard wines, or taken in parcels for cross-terroir blending to achieve complexity and interest.

St Kitts and Truro are cooler vineyards. With lower rainfall, these northern Barossa sites totalling 103 hectares, are at an elevation of between 380 and 410 metres. Mt Crawford is a late ripening vineyard, enjoying high rainfall. With elevations as high as 475 metres above sea level, this 37 hectare Eden Valley site can easily be confused with the Adelaide Hills, which is after all just across the range. Kabininge in stark contrast, is 33 hectares of true Barossa Valley floor terroir. At just 270 metres above sea level, red winegrape varietals ripen easily here. Milton Park is located in classic Eden Valley country, between Angaston and Keyneton, sitting at an elevation of between 330 and 400 metres above sea level.
