Hollick Coonawarra Cabernet Sauvignon

A solid Cabernet Sauvignon with profound structure and vigorous fruit, the essential Coonawarra style, exuding rich bramble, berries and cassis aromas characters over soft, elegant tannins. Extended maturation in the finest French oak contributes to the wine's overall balance and drinkability. Driven by quality and a hands on approach, representing almost a third of total Hollick production, it's predecessors have won numerous awards at national competitions, including the highly coveted Jimmy Watson, Robert Bryce and Arthur Kelman Trophies.

The long and cool, dry growing seasons that prevail in Coonawarra provide ideal conditions for grapes to accumulate intense flavours and colours. Vinified from a selection of fruit grown to older vine Cabernet Sauvignon planted in the shallow Terra rossa soils of Neilson's Block, replanted by Ian and Wendy Hollick circa 1975, with a contribution from the Wilgha vineyard, acquired in 1987. Hollick know that great wines are made on the land, to this end, grapes are handled carefully to retain the exquisite fruit flavours of the vineyard. A measure of barrel ferments, followed by twenty months maturation in a selection of new and seasoned French oak, achieves elegance and builds sound structure.
 
Bright crimson with purple hues. An elegant mix of mulberry, red currant and plum aromas, alluring floral notes. A round and plush wine with red currant, blackberry and cherry fruit flavours. Despite their enviable international reputation and formidable list of awards, Hollick are a small family vineyard winery at the southern end of the Coonawarra Terra Rossa strip. Since inaugural release, Hollick have received resounding critical acclaim for their innovative Sparkling Merlot. Bottled under crown seal to retain the powerful fruit and richness of mousse, serve chilled at every occasion, or as the Hollick team suggest, alongside smoked salmon and eggs benedict over grilled brioche Ouefs Hollique for a wickedly indulgent brunch.

Merlot lends itself ideally to wines of this style, intense fruit flavours and soft structure carry through to the finished wine following its secondary fermentation. Grapes are sourced from the Wilgha vineyard, a site which continually produces fruit with highly perfumed qualities, excellent structure and generous, fully ripe tannins. Fruit is picked at ripe Baumes, crushed and vinified on skins for six days in Potter fermenters. This base wine is then matured in a mixture of French and American oaks of varying ages for eighteen months. Secondary fermentation is induced by the addition of yeast and sugar, infusing a fine persistent bead, integrated toasty qualities and generous mouthfeel.

It is said that the gloriously sweet, concentrated wines which result from grapes infected by Noble Rot Botrytis Cinerea are indeed a nectar of the gods. Ever since crafting their first botrytised wines, Hollick have developed quite a reputation for this rich style, fashioned exclusively from Coonawarra Riesling grapes grown to the Hollick Wilgha Vineyard. The nose exudes a complex array of fragrances, the luscious palate displays honey, mandarin peel and apricot flavours, moving slowly towards an everlasting finish and cleansing drying acidity.

Coonawarra (via the Mildara wineworks) was one of the pioneering districts for the making of this style. Botrytis wines are made in extremely small quantities, and only in years when the Noble Rot or Botrytis cinerea appears. Each year the Hollick team's patience is tested, waiting for Botrytis to develop naturally in the vineyard. In years of low infection, cordon cutting is practised to dehydrate the grapes and concentrate the flavours. Once harvested and pressed, the juice is cold settled for several days then seeded with yeast and fermented until the desired balance between sweetness and acidity is attained. Gentle pressing and a long cool fermentation retain the vibrancy and freshness of flavour.
 
Bright golden straw colour. Clean and fresh aromas of dried apricot and honey with hints of grapefruit and orange peel. A rich and luscious palate of concentrated apricot, lemon and mandarin fruit flavours, a mouth coating wine to be appreciated as much for its fruit, as for the complexity and balance between sweetness and delicate acidity, to achieve a refreshing, lingering after taste. Serve chilled with pâté de foie or dried fruits and ripe soft cheese.

Hollick Ravenswood Cabernet Sauvignon

Ravenswood Lane is the link between the Hollick Coonawarra Vineyards, namely the Neilson's Block. First vintaged in 1988, Ravenswood is only released when the wine satisfies the very exacting quality parameters set by the Hollick team. The best parcels of Cabernet Sauvignon from the Hollick vineyards are earmarked for Ravenswood, typically the fruit comes from the oldest vines growing in very shallow Terra rossa soil. Released in extremely limited quantities, it stands as an icon Coonawarra Cabernet Sauvignon of great significance.

The twelve hectare Neilson's Block was one of the original John Riddoch selections, in true Coonawarra fashion it was exploited as a dairy farm until the planting of rootstock in 1975. Extensive canopy renovation has envigorated the vines and revitalised the quality of harvest. Consistently producing some of Coonawarra's best Cabernet, the cream of crop is earmarked for Ravenswood. Once in the winery the utmost care is taken to preserve the unique and exquisite fruit characters which are its raison d'être. The fruit begins vinification in fermenters before being filled to completely new Tarandsaud & Seguin Moreau French oak barriques for completion and eighteen months maturation.
 
Dense crimson with purple hues at the rim. Lifted, penetrating aromas of blackcurrant and plums, cassis and black olive. A wine of genuine class with intense flavours of dark berry fruits and hints of dried herbs, menthol and chocolate oak, over integrated and soft, fine grained tannins that ensure the wine is approachable in its youth, the track suggests it cellars exceptionally well. Complex and concentrated, best enjoyed with fine gourmandise.
Hollick Tannery Block Cabernet Merlot

A mostly Cabernet wine with a tenth of Merlot, a jot of Cabernet Franc and Petit Verdot, representing almost a third of Hollick's annual production. Previous vintages of Tannery Block have won numerous prestigious awards, including the pre-eminent Jimmy Watson, Robert Bryce and Arthur Kelman Trophies. This uniquely Australian style is fashioned in the tradition of the great Cabernet Merlot accords which have made Coonawarra renowned for red wine throughout the world. So named after the leather tanning pits on the original Hollick property in Coonawarra.

The combination of old vines, relatively cool climate and unique Terra rossa soils underneath the Hollick vineyard produce intense Cabernet and Merlot fruit, the grapes showing good ripeness, excellent colours and a soft tannin profile. The long and cool, dry growing seasons that prevail in the cigar shaped Coonawarra provide the ideal conditions for grapes to accumulate intense flavours and fine tannins. Following the harvest, bunches are minimally handled to retain the intense fruit flavours of the vineyard. Partial barrel fermentation, followed by eighteen months maturation in a combination of French and American oak barrels, infuses elegance, structure and a long finish to the stately palate.
 
Bright ruby red with purple hues. Varietal Cabernet aromas of blackcurrant and mulberry are complimented by the softer Merlot notes of violet, dark chocolates and plum. A seamless and complex Coonawarra, showing blackberry and cassis, choc mint and plums woven with finely integrated oak. The finish is long with a soft texture and silky tannin structure. A fabulous wine to accompany roast lamb and crisp rosemary potato.

The Hollick vineyard and winery is located on the Neilson's Block, one of the original John Riddoch sites in the Coonawarra

Driven by quality and a hands-on approach, Hollick wines are made from three core vineyards. Neilson's Block, re-planted by Ian and Wendy Hollick in 1975, the nearby Wilgha vineyard, purchased in 1987 and the Red Ridge vineyard developed in 1998 at Wrattonbully, giving Hollick over 200 acres of vineyard in total. Eighty percent is planted to red varieties, including Cabernet Sauvignon, Merlot, Cabernet Franc, Shiraz, Pinot Noir, Sangiovese and Petit Verdot. The balance of the vineyards are planted to the white varieties of Chardonnay, Riesling, Sauvignon Blanc and Semillon.

Hollick

The first commercial wine under the Hollick label, the Cabernet Sauvignon, was released in 1983. Successful vintages followed, with wines across the Hollick range winning numerous trophies and medals at National Wine Shows, including the 1985 Jimmy Watson Trophy. Consistently producing exemplary fruit, much of its production is generally earmarked for inclusion in the Ravenswood and Neilson's Block Merlot wines. Extensive canopy renovation of the original 1975 Cabernet Sauvignon plantings was commenced in 2002.

A historic cottage, which was restored by Ian and Wendy in 1983 is a feature of the entrance to the winery. Heritage listed and built in 1860, it was the birthplace of famous lyric poet John Shaw Neilson and was the original cellar door. This 12 hectare vineyard was one of the original John Riddoch selections in Coonawarra and prior to the commencement of planting in 1975 was a dairy farm. The vineyard is largely planted to Cabernet Sauvignon and Merlot, with a small area planted to Pinot Noir.

The 80 plus hectare Wilgha property was purchased by Ian and Wendy in 1987. The property featured established, dry grown Cabernet Sauvignon and Shiraz vineyards with the Shiraz today forming the backbone of the Wilgha Shiraz. The vineyard was developed steadily with the bulk of the planting occurring in 1993 and 1994. The total area under vine is 45 hectares today. This vineyard also features the Italian Block where varieties such as Sangiovese, Barbera and Nebbiolo have been trialled for their suitability in Coonawarra.

The Red Ridge vineyard is located near the town of Naracoorte in the GI of Wrattonbully, which is approximately 50kms north of the Coonawarra winery. The vineyard features similar soils to Coonawarra with shallow Terra Rossa over limestone. The climate is marginally warmer than Coonawarra, facilitating grapes to ripen on average 2 weeks earlier.

Ian was adamant that the climate at Red Ridge would be ideally suited to Shiraz, and with this belief planted 20 hectares of this variety in 1998. In 2000 a further 4 hectares of Cabernet Sauvignon and a hectare each of Tempranillo and Sangiovese were planted.

Hollick welcomes visitors to its cellar door facility. The historic building, constructed in the 1870's from local stone and timber slabs was once the home of Australian lyric poet, John Shaw Neilson. The Upstairs at Hollick winery restaurant, was the first winery restaurant in the Coonawarra.

Upstairs at Hollick is part of a development at Hollick Wines that includes new bottled wine storage and extensions to the barrel cellar. The restaurant features floor to ceiling windows that ensure uninterrupted views over the Hollick Neilson's Block vineyard and beyond to the broader Coonawarra region. Diners also enjoy views into the barrel store where they may catch a glimpse of the winemaker plying his craft.
