Batches are inoculated and thoroughly aerated over the course of ten days to optimize colour and ensure softness. The musts are pressed for completion of ferments, racked off lees into a selection of seasoned and new French oak barriques and hogsheads for malolactic and sixteen months maturation.

While relatively cool, the greater Margaret River region experiences an earlier vintage and can support red grape varieties which would not ripen so well elsewhere. The cooling influence of the Indian Ocean permits complex flavours to develop while warm days ripen the tannins. Picked at optimum ripeness, all vines are closely husbanded, harvest is carried out to healthy levels of baume. Fruit is destemmed but not crushed and each batch is handled separately. Treated to a cold maceratation and moderate ferment, yeasts are introduced to increase texture and aromatics. Following vinification and extended maceration, the wine is matured in a selection seasoned and new French oak barriques.

Vibrant red with purple hues. Mulberry, cassis and capsicum nose, multi black fruit characters, fragrant with blueberry and cassis. Mulberries, cassis and plum flavoured palate, supported by chocolate oak notes and exquisite licorice tannins. Extensive experience making wine in the Margaret River region and time working in France have shaped the approach at Celestial Bay. Crafted in the tradtional manner utilising small open pot fermenters and intensive maceration techniques. Each ferment is treated to a rigorous course of hand plunging and pumpover daily, where the fermenting juices are pumped from the bottom of the tank to be percolated through the skin cap, ensuring that extraction from skins is maximised. Pumping over also introduces oxygen to the process, stabilising and softening the polyphenol components. Matured in French oak barriques for twenty months, good colour and a finely integrated tannin structure is achieved.

Deep purple hues. Blackcurrant, spearmint fruit aromas lead before scents of cassis, black olives and earthiness with coffee/ dark chocolate oak. An elegant, stylish wine with mouthfilling palate, ripe berry flavours, firm tannins and good acid balance followed by a clean, lingering finish. Drinking beautifully upon release while offering excellent potential for development. Simply sublime with a roast leg of lamb under the traditional mint sauce.
