Throughout the ripening period and harvest, vines are closely managed to yield grapes exhibiting a concentration of flavours, good colour and lovely ripe tannins. Fruit is sourced from vines up to twenty five years of age and de-stemmed into open fermenters. Parcels are inoculated and vinified at temperatures between 26˚C and 30˚C, treated to a careful plunging for the gentlest extraction of colour, flavour and tannins. Pressed and fermented to dryness before transfer to barrel for malolactic. Components are matured in exclusively French oak barriques for over a year, before being racked, assembled and lightly fined.
 
Dark crimson red with scarlet hue. Aromas of blackcurrant and mulberry spice are complemented by hints of classic Margaret River bay leaf and dried herbs. A rich, supple red wine displaying flavours of cassis and mulberry fruit with an underlying sweet oak spice. The palate persists with its great length of fruit characters, generous and completely integrated, finishing beautifully rounded with fine, powdery tannins.

The Evans & Tate team have called upon a harvest of Cabernet Sauvignon from a special block of vine at Wilyabrup. Grapes are all hand picked, crushed and destemmed for several days of cold soak. Batches are inoculated and thoroughly aerated over the course of ten days to optimize colour and ensure softness. The musts are pressed for completion of ferments, racked off lees into a selection of seasoned and new French oak barriques and hogsheads for malolactic and sixteen months maturation. Alcohol 14.5%
 
Deep garnet/ purple colour. Lovely bright red strawberry fruit followed by a hint of vanilla showing through on the nose, a balance of bramble/cassis and cherry/plum over supple influence of oak that seems just right. Juicy blood plum and pomegranate flavours, supported by the solid Cabernet structure. Medium bodied, the smooth yet rich, lingering finish is complimented by a length of stylish, firm and judicious tannins.
Brookland Valley Reserve Cabernet 2012

It was in 1881 that a fine gentleman by the name of Daniel McGregor paid 62 pounds and 2 shillings for a Crown Grant of a hundred acres. The yearly rent for Sussex Location 165 on the fertile banks of Willyabrup Brook was a single peppercorn paid each year on the 25th March, or soon thereafter as demanded. In the 1980s it was replanted to vines and today is one of the Margaret River's most inestimable sites for first growth Margaret River Cabernet Sauvignon. A long lived wine of luxury and complexity, drinking superbly upon release.

The estate operates fifty two hectares of vineyard at the heart of Margaret River, much of it is planted to Cabernet. Brookland Valley has been recognised for producing wines of exceptional quality, claiming numerous trophies and medals on the wine show circuit. Cabernet Sauvignon demonstrates the absolute commitment and focus of the viticultural and winemaking teams to achieve excellence. Grapes are harvested at optimal maturity, de-stemmed and put to small open fermenters. After daily plunging and an extended maceration, the ferment is pressed off to fine French oak for the completion of malolactic, racked several times during the maturation and given a light egg white fine before filtration.
 
Deep, concentrated red in colour. Displays blackcurrant, mulberry leaf and cassis, plum skin fruit aromas, whilst hints of black olive, mint and savoury oak lead into an enticing and complex bouquet. The varietal flavours envelop the palate, dark fruits and tobacco notes prevail. The cabernet expressions are sustained and lengthy, with soft, top shelf tannins and exemplary acid balance.

Brookland Valley is the only company that controls vineyards over the length and breadth of Margaret River. Harvets from the north are invariably sweeter and fuller in flavour, particularly the Merlot and Cabernet Sauvignon. Parcels are sourced from good vineyards in the northern districts, grapes are destemmed into static fermenters and inoculated with choice yeast isolates. The active ferments are routinely pumped over to extract optimal levels of rich colour, fine flavour and judicious tannin. After vinification to complete dryness, batches are treated to malolactic and ten months maturation in a selection of seasoned and new French oak barrels, followed by assemblage and minimal fining. Deep plum colour with a brick red hue. Ripe and intense cassis and spice aromas over hints of tobacco leaf and leather, a light leafiness balanced out by fine French oak. Distinguished by fine acid and tannin structure, the palate is softly textured and approachable, a high intensity of fruit flavour, mulberries and blackberry. The subtle oak contributes complexity while achieving balance.

Verse 1 are fashioned to express true regionality with elegance and intensity, eminently drinkable upon release. Shiraz is sourced from the most superlative vineyards operated by Margaret River's most experienced growers. After harvesting, bunches are destemmed into static fermenters, inoculated for vinification and routinely worked to extract flavours, colour and tannin, followed by a pressing at dryness. Cape Mentelle's Rob Mann is grandson to one of Australia's legend winemakers, West Australian pioneer Jack Mann. The father to son skills, handed down and embellished throughout the vintages, translate into some of the country's most distinguished Cabernet wines. The vineyards lie in undulating country surrounding the major water courses that flow west to the Indian Ocean; the Boodjidup Brook, Margaret River and Willyabrup Brook. The climate is categorised as west coast mediterranean the prime features being mild to wet winters and warm to hot, dry summers. The winery's cellar door looks through to the barrel hall, home to over several hundred oak barriques of quietly maturing Cabernet.

Cape Mentelle Vineyard was planted in 1970 and 1972 on a ridge of free draining, lateritic gravel, at an east west row orientation to minimise the affects of strong westerly sea breezes. Cabernet Sauvignon is harvested by hand and individually sorted, berry by berry. Fruit is destemmed and lightly crushed. Individual batches are fermented on skins for up to a month. At the desired balance of extraction, each batch is gently basket pressed, harder pressings are put aside and wines are racked to a high selection of new Bordeaux coopered oak barriques for malolactic. Regular rackings over the course of eighteen months ensure all components are worthy of inclusion into the final assemblage. Alcohol 13.5%
 
Dark red colour. Classic blackcurrant, bay leaf and tar bouquet amidst hints of lavender bush, elderflower and black mulberries. Finely textured palate, full flavoured and abundant with blackcurrants, hints of cocoa and graphite. The finish is tight and minerally with long and harmonious tannins. Ideally suited to rare roasted saddle of venison, dressed with the finest red wine jus.

The Hohnen brothers established sixteen hectares of vine on the Cape Mentelle property in 1970, the focus was on red wines, mainly Shiraz. The special attributes of the terroir played the most significant role in the evolution of style. Soils are derived from decomposed granite and consist of gravelly loam over deep clay subsoil. All vines are vertically shoot positioned and managed to ensure balanced growth throughout the season. Shiraz is harvested and painstakingly berry sorted into a combination of open and static fermenters. Batches are treated to a course of plunging and pumpovers, basket pressed and transferred to large oak vats for completion of malolactic and a year's maturation. Alcohol 13.5%

Cape Mentelle draws inspiration from the tasty red styles of Vallée du Rhône. Fruit is treated to an old world style of vinification, aimed at retaining all the well defined Margaret River fruit characters, along with the more savoury, spicy elements of the vineyard. Growing season 2008 was quickly recognized by industry pundits as a great vintage year, yielding red wines of excellent tannin structure and exquisite length. The archetypal Margaret River Shiraz, endowed with alluring bouquets, a dense palate and ripe, gripping tannins.

Soils are predominantly deep sandy loams with high lateritic gravel content over clay. Shoot and leaf removal techniques are employed, ensuring a balance between fruit exposure to light whilst providing protection from the midday sun. Grapes are vinified in a combination of open and static fermenters, managed by regular plunging and pumpovers. All batches are basket pressed and transferred to large oak vats for malolactic. The finished wine was matured fourteen months in a selection of new and seasoned, predominantly Burgundy coopered French oak barriques. Alcohol 13.5%
 
Dark red with crimson hues. Blueberry, dark cherry and ripe plum, cinnamon and anise. Fragrant violet and lightly roasted coffee bean formulate a complex and expressive nose. A vibrant core of blueberry, mulberry and hints of raspberry, are well balanced by savoury, cocoa oak. The palate is fine, elegant and focussed, finishing with gravelly, structural tannins.

An assemblage of Shiraz from the estate Foxcliffe and Kayella vineyards, fashioned into a style which draws inspiration from the timeless classics of la Vallee Rhône. The wine is treated to the most extravagant techniques, a complete destemming, cold soaking, and a traditional vinification. Aged in a mix of large oak vats and small barriques to retain the refined fruit and floral characters along with the more savoury, spicy elements derived from the vineyard. The result is a highly concentrated Shiraz with great richness and depth.

The majority of fruit is harvested from the elite Estate and Kyella, Chapman Brook and Crossroads vineyards. Smaller amounts come from a number of long term growers located within the eminent Wallcliffe and Karridale sub districts. Trinders seeks to capture the charm of the noble Bordeaux varietal mix, grown to the salubrious microclimes along Margaret River, to craft enduring, muscular wines in a fully approachable, modern styling.

Cape Mentelle Zinfandel 2012
Margaret River
Zinfandel is a particularly challenging variety to manage in the vineyard and winery. Introduced to Cape Mentelle via cuttings from California, vines were planted in 1974 to a ridge of free draining lateritic gravel on an east west orientation to minimise the affects of strong westerly sea breezes. This capricious, low density bush vine site requires fastidious attention to detail. A rich, hedonistically dimensional effort makes all the hard work worthwhile and as such has developed something of a cult following among enthusiasts of bold red wines.

Predominantly sourced off Cape Mentelle estate vines, grown to a combination of ironstone gravel soils, old bush vines and vertically shoot positioned canopies. Vines are shoot thinned and in some cases leaf plucked to ensure the perfect balance between ensuring fruit exposure to light, along with protection from the midday sun. Grapes are hand picked and destemmed, the musts are cold soaked for several days prior to vinification, softening up the raisined berries before being inoculated to a vigorous strain of yeast. Fruit is steadily fermented to dryness before being basket pressed directy into a selection of large oak vats and French barriques for malolactic and sixteen months maturation. Alcohol 14.5%
 
Deep, dark crimson red. Nose of ripe blackberry, fresh prunes, cinnamon and chocolate, anise and fruit cake. Layers of juicy plums and ripe currants enclosed in a full, creamy and textural palate enhanced by hints of allspice and vanilla. The robust, plushly fruit driven mouthfeel is concentrated, savoury and complex. The finish is long and fresh on a length of velvety tannins.
