Located towards the northern reaches of Margaret River, where the invigorating ocean breezes form a unique microclime, Amberley produces wines with elegant flavours, solid structure and fine balance. Throughout the ripening period and harvest, vines are closely managed to yield grapes exhibiting a concentration of flavours, good colour and lovely ripe tannins. Fruit is sourced from vines up to twenty five years of age and de-stemmed into open fermenters. Parcels are inoculated and vinified at temperatures between 26ËšC and 30ËšC, treated to a careful plunging for the gentlest extraction of colour, flavour and tannins. Pressed and fermented to dryness before transfer to barrel for malolactic. Components are matured in exclusively French oak barriques for over a year, before being racked, assembled and lightly fined.
 
Dark crimson red with scarlet hue. Aromas of blackcurrant and mulberry spice are complemented by hints of classic Margaret River bay leaf and dried herbs. A rich, supple red wine displaying flavours of cassis and mulberry fruit with an underlying sweet oak spice. The palate persists with its great length of fruit characters, generous and completely integrated, finishing beautifully rounded with fine, powdery tannins.

Three quarters Wilyabrup Old Cab and Young Cab clones, transplanted from the original Houghton Source Block in Valley Swan, the balance of Merlot, Petit Verdot and Cabernet Franc. Selectively hand picked at vintage over the course of a month, gently plunged in open fermenters and matured two years in French oak barriques. A fully ripe red berry bouquet, cherry plum fruit leather and hints of cassis saturate the palate, fine grained tannins in support of a succulent, velvety mouthfeel, super premium oak imparts elegance, complexity and fragrant spice.

Predominantly old vines Old Houghton clone Cabernet Sauvignon, hand picked off the original 1976 estate block at Wilyabrup. Bursting with red and black currant notes, vivid dark cherries and plum, leatheryness and violet, its comely perfumes of anise and cigar box precede a flood of fruit on the elegantly spiced oak palate, all supported by silky smooth, fine grained tannins. A wine of amazingly disciplined power and astonishing length, a measure of Merlot, Petit Verdot and Cabernet Franc introduces wonderful complexity.

One of the first established vineyards on Margaret River, the balmy maritime climes at Wilyabrup just the north of the township are a bliss for the realization of Rhône styled Shiraz. Bunches are hand picked over the course of a fortnight as grapes achieve complete ripeness, fruit is gently plunged and treated to the extravagance of two years maturation in French oak barriques. A burst of currants and raspberry, cherries and plum, fine tannins, succulence and tremendous depth of flavour, Ashbrook drinks magnificently on release alongside all good fare.

The Evans & Tate team have called upon a harvest of Cabernet Sauvignon from a special block of vine at Wilyabrup. Grapes are all hand picked, crushed and destemmed for several days of cold soak. Batches are inoculated and thoroughly aerated over the course of ten days to optimize colour and ensure softness. The musts are pressed for completion of ferments, racked off lees into a selection of seasoned and new French oak barriques and hogsheads for malolactic and sixteen months maturation.
 
Deep garnet/ purple colour. Lovely bright red strawberry fruit followed by a hint of vanilla showing through on the nose, a balance of bramble/cassis and cherry/plum over supple influence of oak that seems just right. Juicy blood plum and pomegranate flavours, supported by the solid Cabernet structure. Medium bodied, the smooth yet rich, lingering finish is complimented by a length of stylish, firm and judicious tannins.

Brookland Valley is the only company that controls vineyards over the length and breadth of Margaret River. Harvets from the north are invariably sweeter and fuller in flavour, particularly the Merlot and Cabernet Sauvignon. Grapes are all hand picked and sorted into open top fermenters for vinification through wild indigenous yeast over the course of ten days. Batches are gently pressed off and basket pressed for completion of malolactic, followed by a year's maturation in a selection of new and seasoned French oak.
 
Deep plum colour. Ripe and intense cassis and spice aromas over hints of tobacco leaf and leather, a light leafiness balanced out by fine French oak. Classic Margaret River characters of cassis, ripe plum and dried fruit flavours are complemented by hints of dark chocolate. Structure, fine tannins and oak spice provide structure, complexity and length to the palate.

It was in 1881 that a fine gentleman by the name of Daniel McGregor paid 62 pounds and 2 shillings for a Crown Grant of a hundred acres. The yearly rent for Sussex Location 165 on the fertile banks of Willyabrup Brook was a single peppercorn paid each year on the 25th March, or soon thereafter as demanded. In the 1980s it was replanted to vines and today is one of the Margaret River's most inestimable sites for first growth Margaret River Cabernet Sauvignon. A long lived wine of luxury and complexity, drinking superbly upon release.

The estate operates fifty two hectares of vineyard at the heart of Margaret River, much of it is planted to Cabernet. Brookland Valley has been recognised for producing wines of exceptional quality, claiming numerous trophies and medals on the wine show circuit. Cabernet Sauvignon demonstrates the absolute commitment and focus of the viticultural and winemaking teams to achieve excellence. Grapes are harvested at optimal maturity, de-stemmed and put to small open fermenters. After daily plunging and an extended maceration, the ferment is pressed off to fine French oak for the completion of malolactic, racked several times during the maturation and given a light egg white fine before filtration.
 
Deep, concentrated red in colour. Displays blackcurrant, mulberry leaf and cassis, plum skin fruit aromas, whilst hints of black olive, mint and savoury oak lead into an enticing and complex bouquet. The varietal flavours envelop the palate, dark fruits and tobacco notes prevail. The cabernet expressions are sustained and lengthy, with soft, top shelf tannins and exemplary acid balance.

Expressions of spiced peppery fruit on the nose and palate, notes of berries and plum are enhanced by subtle nuances of cedar and French vanilla oak, the perfect accompaniement to osso bucco and lamb.

Brookland Valley is the only estate which controls vineyards over the entire length and breadth of Margaret River. Verse 1 are fashioned to express true regionality with elegance and intensity, eminently drinkable upon release. Shiraz is sourced from the most superlative vineyards operated by Margaret River's most experienced growers. After harvesting, bunches are destemmed into static fermenters, inoculated for vinification and routinely worked to extract flavours, colour and tannin, followed by a pressing at dryness. Components are seeded and treated to a malolactic fermentation before being matured for up to a year under a mix of new and prior use French oaks. Alcohol 13.5%
 
Deep red with youthful purple hues. Nicely fragrant spicey black fruits, combined with hints of licorice, black pepper and cloves, all supported by subtle oak aromas. Classy, elegant ribena and violet perfumes, dusty dried herb and leafy complexity held firmly together by lashings of nutmeg oak. A Shiraz that sits softer on the palate than most, abetted by firm tannins and persistence of flavour.

Cape Mentelle Vineyard was planted in 1970 and 1972 on a ridge of free draining, lateritic gravel, at an east west row orientation to minimise the affects of strong westerly sea breezes. Cabernet Sauvignon is harvested by hand and individually sorted, berry by berry. Fruit is destemmed and lightly crushed. Individual batches are fermented on skins for up to a month. At the desired balance of extraction, each batch is gently basket pressed, harder pressings are put aside and wines are racked to a high selection of new Bordeaux coopered oak barriques for malolactic. Regular rackings over the course of eighteen months ensure all components are worthy of inclusion into the final assemblage. Alcohol 13.5%
 
Dark red colour. Classic blackcurrant, bay leaf and tar bouquet amidst hints of lavender bush, elderflower and black mulberries. Finely textured palate, full flavoured and abundant with blackcurrants, hints of cocoa and graphite. The finish is tight and minerally with long and harmonious tannins. Ideally suited to rare roasted saddle of venison, dressed with the finest red wine jus.

Cape Mentelle's Rob Mann is grandson to one of Australia's legend winemakers, West Australian pioneer Jack Mann. The father to son skills, handed down and embellished throughout the vintages, translate into some of the country's most distinguished Cabernet wines. The vineyards lie in undulating country surrounding the major water courses that flow west to the Indian Ocean; the Boodjidup Brook, Margaret River and Willyabrup Brook. The climate is categorised as west coast mediterranean the prime features being mild to wet winters and warm to hot, dry summers. The winery's cellar door looks through to the barrel hall, home to over several hundred oak barriques of quietly maturing Cabernet.

The Hohnen brothers established sixteen hectares of vine on the Cape Mentelle property in 1970, the focus was on red wines, mainly Shiraz. The special attributes of the terroir played the most significant role in the evolution of style. Soils are derived from decomposed granite and consist of gravelly loam over deep clay subsoil. All vines are vertically shoot positioned and managed to ensure balanced growth throughout the season. Shiraz is harvested and painstakingly berry sorted into a combination of open and static fermenters. Batches are treated to a course of plunging and pumpovers, basket pressed and transferred to large oak vats for completion of malolactic and a year's maturation.
 
Dark mulberry hue. Fragrant black pepper and star anise combine with juicy blackberry, ripe plums and blueberry over hints of chocolate. Vibrant, juicy ripe mulberry palate, fresh currants, a touch of Chinese five spice balances the fruit and leads to a savoury bright and expressive finish. Rich and intense, Marmaduke is savoury and long, at its best alongside your favourite recipe of wood fired pizza.

Cape Mentelle Shiraz

An assemblage of Shiraz from the estate Foxcliffe and Kayella vineyards, fashioned into a style which draws inspiration from the timeless classics of la Vallee Rhône. The wine is treated to the most extravagant techniques, a complete destemming, cold soaking, and a traditional vinification. Aged in a mix of large oak vats and small barriques to retain the refined fruit and floral characters along with the more savoury, spicy elements derived from the vineyard. The result is a highly concentrated Shiraz with great richness and depth.

Soils are predominantly deep sandy loams with high lateritic gravel content over clay. Shoot and leaf removal techniques are employed to ensure a balance between exposure and protection from midday sun. Grapes are selectively harvested based on flavour and tannin maturity. Berries are sorted and destemmed, parcels are kept separate and vinified on skins for a fortnight. Upon achieving a balance of fruit and tannin extraction, each batch is gently basket pressed, harder pressings are put aside. Components are racked to Burgundy coopered barriques and large oak vats for malolactic. Regular rackings over a course of fourteen months are followed by a final assemblage into the final wine.
 
Dark red with crimson hues. Vibrant red and black fruits including beetroots and blueberry, along with aromatic ground spices and dark chocolate. Plush ripe fruit of wild berries and plums balanced by black pepper and aniseed, the flavours combine with a firm yet savoury tannin structure that provides the framework for a long and satisfying finish.
