Established 1983 in the McLaren Vale, the Andrew Garrett label has long been regarded as an honest and unpretentious marque that delivers excellent value wines, approachable and reliable from year to year. Parcels of fruit from good vineyards, showing exemplary varietal defintion and the perfect acid tannin balance, which can best define the sparkling Shiraz style, are harvested at full physiological ripeness. Following the crush and inoculation, components are vinified in a combination of temperature controlled fermenters. The base wines are racked and aged before a regimen of trials to determine the assemblage. A secondary fermentation is induced in bottle to infuse the wine with it's characteristic mousse.
 
Deep purple red with a persistent creamy mousse. Bouquets of violet, cherry and spiced, peppery plum. A fine textural mouthfeel, soft and elegant, supported by solid tannins, controlled background oak and refreshing acidity. A long, lingering finish on a lip smacking note of dark berry fruits, licorice and plum. Enjoy Andrew Garrett with turkey or ham, a sauced chocolate pudding or cheese.

In their pursuit of excellence, to grow the highest quality grapes and create the finest Sparkling Syrah, Aramis decided to ask the best winemaker to handle their fruit. McLaren Vale born and bred, he knows every acre of soil and every coastal breeze. Most importantly, he develops a kinship with each and every vine. Aramis won't say who this reputable man is, but his brilliance as a winemaker is evident from the moment a bottle of Aramis is opened. That was the arrangement made with the evasive artisan, to allow the Syrah to speak for itself.

The spectacular success of Aramis can be traced back to the terroir of a unique site. Vines are all low yielding and planted on their own rootstock, to some of the world's oldest mineral rich soils, under the most temperate of Mediterranean climes. Only the choicest parcels of fruit are considered for vinification under the Aramis label and the most exacting principles are employed throughout the winemaking process. An uncompromising attention to detail amongst the vines during the growing season, thinning and plucking by hand, is followed by fastidious sorting of berries at vintage. A selection of the finest oak barrels are utilized to mellow and integrate the firm McLaren Vale Syrah tannins. Alcohol 14.5%
 
Deep purple with a refined bead. Dark chocolate, anise and vanilla/ cedar bouquet with hints of blackberries and spice. A solid palate with chewy tannins, densely packed with ripe dark cherry fruit flavours, mocha and complex spice. The sweetness of the fruit is balanced by ripe acids which bring the wine to a long and lingering finish.

Making outstanding Shiraz has been somewhat of a specialty at Balgownie ever since vines were established. The winemaking team's commitment to sustainable vineyard management practices, limited irrigation, compost and mulching regimens continue to yield harvest of the healthiest, small but intensely flavoured grapes. Batches of Shiraz are treated to a term of maceration for the extraction of colour, tannins and flavour. A controlled vinfication is followed by twelve months maturation in a combination of new and seasoned French oak barrels before assembling into the final wine, to be initiated for secondary fermentation in bottle in the manner of Methode traditionelle. Alcohol 14.5%
 
A brilliant deep ruby red with creamy purple/ pink mousse. Attractive rich raspberry and spice aromas. The palate offers delicious flavours of red and black berries, currants, cherries and plum supported by French cocoa vanilla oak, lively tannins and elegant spice. The rich beautiful dark fruit characters are balanced by excellent acidity which keeps the palate fresh, it finishes pleasingly long and dry. Great Western is renowned for Sparkling Shiraz (previously labelled as Burgundy) and has produced these terrific wines since the early 1900s. Sparkling Shiraz is synonymous with Great Western, and contemporary tastes have presented a great opportunity for Great Western to refine the style. The winemaking team discovered that certain blocks yielded fruit which would lend themselves exceptionally well to sparkling Shiraz, forming a wine that spoke of place and was characteristic of Great Western. Grapes are picked early, inoculated and vinified in traditional fermenting vats, without receiving any oak treatment whatsoeverl, achieving a wine with medium body which retains freshness and intensity even as it ages. The goal is to ensure that the finished wine defines Great Western, retains good balance, elegance and refinement. Alcohol 14.5%

A richly flavoured sparkler, the poly-vintage Bleasdale, derived from base wines through several years and topped up with a strong liqueur to initiate a secondary fermentation. The magnificence of barrel aged Shiraz characteristics are balanced by the sweetness from the doseage liqueur. The historic cellars constructed from red gum and limestone house a massive red gum lever press which fifth generation winemaker Michael Potts still uses once a year to make a very limited release wine. While the Bleasdale wineworks are steeped in history, the estate has installed the latest technology, still maintaining the founding philosophy of producing honest, consistent and reliable wines. Colour is very dark and purple, an anxious, persistent effervescence. Nose is quite busy, awash with developed fruit characters and complex liqueur nuances. There is nothing subdued about this wine. It comes on like an ebullient, cream and froth driven chocolate torte, heavy on the maraschino cherry. There's deep rancio qualities and a fine balancing act by virtue of a cleansing acidic backdrop that makes this red sparkler perfectly rounded and just too easy to guzzle. Vibrant in appearance, rich in flavour and aromatics, its colourful bead leads to a sweet berry and confection palate before culminating in a lingering aftertaste. A wine to be enjoyed with christmas pudding or duck, roast meats or just on its own.

Buller Sparkling Burgundy NV
Rutherglen
Buller of Rutherglen holds amazing stocks of aged red in barrel which it calls upon from time to time, to blend into superlative and extremely limited releases. Inspiration and the high art of blending are the catalysts for this stalwart winery's precious little specials, and in this instance they've brought together an uncompromising cuvee of 15% 1972, 37% 1988 and 48% 1996 vintages which have been topped up with a liqueur doseage to undergo a second fermentation. A currant jelly-like colour and mousse bordering on whipped strawberry leads to a magnificently round and contented palate of dry and sweet ju-jube-like flavours.

This wine is crafted in honour of Reginald Langdon Buller, the founder of the family company, which now spans four generations over eighty years. For the third release of this superb sparkling red Andrew Buller has selected three back vintages from the family's reserves of red table wines. From these old vintages, a traditional method of sparkling winemaking was followed to make a finished wine showing genuine aged character. This unique wine offers not only a piece of Buller history but a chance to enjoy a rare taste experience – a mature red sparkling wine. Alcohol 13.0%
 
Colour is a bright ruby. A full creamy mousse, very quick to acquire volume, with a fine bead that's viscous and ebbs slowly. Bouquet shows cassis character with a dusty overlay. Intriguing complexity in the nose includes violets, tarry liquorice, strawberry jams and persimmon. There are light nuances of praline, almond biscuit and slight traces of five spice. A refreshing palate, redolent with mature flavours of ripe berry fruits. Hints of blackcurrant and complex mature red wine flavours. Delicious elegant aftertaste that brings harmonies of violet crumble, coffee and vanilla. Ready to enjoy on release, serve chilled.

Charles Melton Sparkling Shiraz

The fruit is mostly hand harvested in the 13 – 14º baume range to give richness but with a degree of freshness and acidity in the base wine. Grapes are fully destemmed at the crusher into tank. Fermentation proceeds on skins at 18-23 deg C for seven to ten days with pumpovers twice daily. At close to dryness the wine was drained and pressed, all pressings added back to the free run. The wine was transferred to a mixture of predominantly French (Never and Vosge) and then American oak barriques, followed by maturation for twelve months on gross lees. The wine was then tirage bottled and left on its lees for twenty months before being disgorged and treated to an addition of expedition liqueur.
 
An elegant but complex bouquet leads to a rich spicy / mint palate. As with all traditional sparkling red styles the wine retains some sweetness that will help mellow and richen the wine over its cellaring life. Charles Melton can be enjoyed as an appertif style whilst in it's youth, but as it ages and richens it will become ideally suited to the finest game and rich gourmandise.
Cleanskin Coonawarra Sparkling Cabernet NV
Coonawarra remains unassailable in it's production of Australia's most praiseworthy Cabernet Sauvignon. Stocks from choice vineyards across several vintages are assembled to form the ideal base for this luscious, creamy wine. A generous and mouth filling sparkler, exhibiting a palate of persistent red and black bramble flavours, cherry ripe and festive spice, garnished by notes of winegum, dark chocolate and cassis. From a dedicated winemaker operating in the heart of Coonawarra. His team have managed collation of fruit, vinification, bottling and maturation, to a combination of modern and traditional winemaking techniques. Cabernet Sauvignon is harvested, sorted and crushed. Following inoculation and a temperature controlled vinification, parcels are transferred to a large pressure tank where they are topped up by a dose of liqueur and treated to a secondary fermentation. Batches are then racked to oak for an extended maturation. Upon completion, barrels are all sampled and trialled, the final assemblage is determined and the finished wine is transferred under pressure into it's own bottle.
 
Deep red/ purple in colour with a fine bead and persistent mousse. Some plum, cherry and chocolate aromas along with regional leather and earth character. Aromatic oak is present in the background, a presence of florals, rose petal and violets are followed by the savouryness of oyster and soy. A rich, medium bodied wine with soft tannins and exquisite balance, the flavours of cherry and cassis, liqueured plums and chocolated fruits being dominant. An abundance of luscious complexity provides interest and persistence. This fine, effervescent Cabernet Sauvignon is an engaging and satisfying experience that would beautifully accompany roast game or fowl, fruits and dessert or your favourite cheese.

Cockatoo Ridge regularly identify sources of premium fruit, as part of their standard operating procedures, one of the key factors which makes most everything from this estate always so attractive. The Cuvée was crafted to specifications which required a sophisticted and rigorous collation of grapes, for the express purpose of fashioning a sparkling Burg, and no other wine. A vigorous testing and trialling regimen, to arrive at the the perfect pitch of fruit, tannin and varietal definition, was applied before determining the finished wine.
 
An amazingly resilient mousse, the effervescence of this handsome wine clings to the glass. Purpley and gamey, it exudes heady odours of chocolate and cassis, cherry and vanillan, swirls of creamy anise & strawberry parfaits, absolutely awash with big fruits and chocolateyness, it moves rapidly along the palate towards a violet and cherry-ripe richness. The tang of the refreshing ribena-like acidity makes this bubbly burgundy a sensational all weather wine, soothing around wintery feasts, crisp and refreshing to accompany an outdoor summery barbeque, perfectly suited to good roast beef sandwhiches, brilliant with luscious chocolate and berry- based desserts, and absolutely vital with that festive occasion get-together.

Crafted to a traditional Methode champenoise, Cofield is treated to an ancient process called tirage, where sugar and yeast are added to the base wine, initiating a second fermentation in bottle. This is what creates the sparkle, infuses complexity and introduces texture.

Cofield practice careful hand picking of fruit and rigorous barrel selection to enhance the ultimate quality in the final wine. The careful culling of fruit and barrels also leads to smaller production levels, limiting quantities of each wine from between 100 to 600 dozen dependent on vintage quantities and quality. To maintain the unique qualities in their Sparkling Shiraz, Cofield have chosen to create a more complex and complete wine by blending small amounts of older vintages. Cofield take aim at assembling one of Australia's most essential sparkling red wines each year, based on the best stocks from selected vintages, rather than being restricted to the quality of a single season.
