Deep purple with a refined bead. Dark chocolate, anise and vanilla/ cedar bouquet with hints of blackberries and spice. A solid palate with chewy tannins, densely packed with ripe dark cherry fruit flavours, mocha and complex spice. The sweetness of the fruit is balanced by ripe acids which bring the wine to a long and lingering finish.

The final word in purple hued, effervescent opulence, crafted from the Shiraz of some distinguished old plantings on the illustrious Wendouree estate vineyard in Valley Clare. Grapes are traditionally open air vinified and plunged by hand, treated to an extravagant term of five years in well seasoned oak vats, followed by a year of secondary ferment on sedimernt lees in own bottle before disgorgement and reseal. Redolent of rosehip, dark cherries and liquorice allsort, its spectacular mouuse unravelling layers of oak influenced complexities, olive, pepper and bay, over a flourish of flowing chiffon tannins.

Bendigo's Maiden Gully has been producing outstanding and memorable Shiraz wines for over forty years. Balgownie have matched parcels of their most predisposed fruit with harvests of correspondingly amicable Shiraz grapes from splendid vineyards in Victoria's central districts and the Yarra Valley. A singularly generous, effervescent Shiraz wine with chewy tannins, full flavoured palate and engagingly spiced aromas. Making outstanding Shiraz has been somewhat of a specialty at Balgownie ever since vines were established. The winemaking team's commitment to sustainable vineyard management practices, limited irrigation, compost and mulching regimens continue to yield harvest of the healthiest, small but intensely flavoured grapes. Batches of Shiraz are treated to a term of maceration for the extraction of colour, tannins and flavour. A controlled vinfication is followed by twelve months maturation in a combination of new and seasoned French oak barrels before assembling into the final wine, to be initiated for secondary fermentation in bottle in the manner of Methode traditionelle.
 
A brilliant deep ruby red with creamy purple/ pink mousse. Attractive rich raspberry and spice aromas. The palate offers delicious flavours of red and black berries, currants, cherries and plum supported by French cocoa vanilla oak, lively tannins and elegant spice. The rich beautiful dark fruit characters are balanced by excellent acidity which keeps the palate fresh, it finishes pleasingly long and dry. Outstanding as an aperitif, alongside tapas or the classic festive lunch of turkey and roast ham.

Assembled from wines across several vintages, a selection of well aged stocks matured in seasoned casks, topped up and rotated according to the ancient Solera system. Fermented in own bottle and tiraged for optimal effervescence before release, an immensely satisfying style of redolent red sparkling, decidedly rich and complex, proffering cassis, blackberry and violet fruits. Balnave practice the high art of Coonawarra Cabernet Sauvignon, its ribald pink mousse, blooming with moreish wine jube characters within a cosset of smooth milk chocolate tannins.

It was the superlative richness of McLaren Vale fruit that give sire to the uniquely Australian style of Sparkling Shiraz. Beresford set aside those parcels which show the greatest character and charm, for creation of a ripe, redolent effervescent style of Shiraz. Batches are slowly vinified at cooler temperatures and filled to a mix of seasoned French and American oak barrels for completion of ferments and eighteen months maturation. Sparkling Shiraz is synonymous with Great Western, and contemporary tastes have presented a great opportunity for Great Western to refine the style. The winemaking team discovered that certain blocks yielded fruit which would lend themselves exceptionally well to sparkling Shiraz, forming a wine that spoke of place and was characteristic of Great Western. Grapes are picked early, inoculated and vinified in traditional fermenting vats, without receiving any oak treatment whatsoeverl, achieving a wine with medium body which retains freshness and intensity even as it ages. The goal is to ensure that the finished wine defines Great Western, retains good balance, elegance and refinement.

The Galvanized Wine Group's collective approach to strategic viticulture, stratification of style and triangulated approach to vinification, includes the highly successful Woop Woop (out there from out there) and its sibling Black Chook label, all are wines of charm and character. The multi vintage Black Chook sparkles to the tune of an effusive, opulent persona, predominantly three to five year old Shiraz wines, aged in a combination of seasoned French oak barrels, where they develop layers of smooth integrated fruit and a rich weighty texture across the palate. These are assembled with a touch of younger Shiraz wines contributing ripe juicy fruit characters. Alcohol 13.0%

A richly flavoured sparkler, the poly vintage Bleasdale is assembled from barrels of maturing Shiraz across several years, topped up with liqueur de tirage and treated to a secondary ferment in own bottle. An evocative palate and nose, fruits steeped in liqueur, mint and ribena, supported by a length of luscious coconut/ carob oak and toothsome, cherry ripe tannins.

The historic Bleasdale cellars, constructed from eucalyptus beams and limestone blocks, house a massive red gum lever press, which fifth generation winemaker Michael Potts still uses once a year to make a very limited release wine. While the Bleasdale wineworks are steeped in tradition and local folklore, the estate has installed the latest technology, still maintaining the founding philosophy of producing honest, consistent and reliable wines. From time to time, the Bleasdale team draw on stocks of maturing wines with the requisite qualities to construct a luscious Sparkling Shiraz. The complete course of methode traditionelle is followed by a term of bottle age beneath the Bleasdale cellars.
 
Dark purple red, a persistent mousse. Complex cherry liqueur perfume, maraschino and chocolate torte, rancio, cocoa oak and pepper notes. Rich bramble berries on the highly textural palate, red fruits, cherries and vibrantly spiced plum, chocolatety oak and supple tannins lead to a long, memorable finish. A suoerb aperitif wine, easily matched with seasoned kebabs, duckling and pork or chocolate desserts.

Cofield Sparkling Shiraz

Crafted to a traditional Methode champenoise, Cofield is treated to an ancient process called tirage, where sugar and yeast are added to the base wine, initiating a second fermentation in bottle. This is what creates the sparkle, infuses complexity and introduces texture.

Cofield practice careful hand picking of fruit and rigorous barrel selection to enhance the ultimate quality in the final wine. The careful culling of fruit and barrels also leads to smaller production levels, limiting quantities of each wine from between 100 to 600 dozen dependent on vintage quantities and quality. To maintain the unique qualities in their Sparkling Shiraz, Cofield have chosen to create a more complex and complete wine by blending small amounts of older vintages. Cofield take aim at assembling one of Australia's most essential sparkling red wines each year, based on the best stocks from selected vintages, rather than being restricted to the quality of a single season. Dark ruby with crimson edges and a creamy mousse. Bouquet exhibits sweet red fruit and chocolate with hints of nutmeg. The palate reflects the nose and shows rich red fruit with dark chocolate and spice. It is mouthfilling with great length and complexity.

From parcels of Chambourcin grapes, hand picked off a block of vine that's surrounded by a growth of peppermint gum trees. Traditionally, Peppermint Paddock has always been difficult to cultivate and vines have struggled. Unfazed by the challenging microclime, Chambourcin has thrived. A unique hybrid grape that's known for its robustness, the Chambourcin vines of Peppermint Paddock are often left unirrigated, quite happy to perform on their own, dry grown rootstock. An astonishing amount of flavour, exquisitely balanced, a truly mesmerising effervescent red wine.

Looking out from d’Arry’s Verandah Restaurant, Peppermint Paddock slopes south down the hillside. Chester d'Arenberg thought that Chambourcin, would work well on the lean soils and replanted the site in 1989. Each batch of fruit is gently crushed to retain as many whole berries as possible. The musts are transferred to open fermenters where the skins are permanently submerged. Batches are vinified for up to a fortnight without any plunging or pumpovers. Ferments are treated to a session of foot treading and basket pressed. A portion of vintage fortified Shiraz is included in the final assemblage to add richness, to infuse the palate with plum chocolate complexity and contribute a measure of pepper spice.
 
Deep vibrant crimson purple mousse, a fine persistent bead. Freshly crushed grape nose, lifted aromas are dominated by a full range of summer pudding notes, sarsaparilla, blackcurrant leaf and boysenberry jam. Refreshing medium bodied palate, juicy raspberry and mulberry flavours. A wine of extraordinary length, rich sweet flavours and gorgeous, chewy tannins.
