Eden Valley is Dandelion's Riesling wonderland, a unique fusion of terroir and vine, season and grower. Wonderland of the Eden Valley is made entirely from vines planted in 1912 which still thrive to this day. Vigneron Colin Kroehn is the custodian of these precious old vines and has tended them for sixty six of his eighty eight years. With a bit of bottle age, Wonderland will evolve exciting toast and custard characters. Nothing short of exquisite as aperitif, superb with seafood, a sensation alongside sultry soufflés.

Although the vineyard team see the devil in every weed, they encourage the humble dandelion to grow amongst vines as they supress winter weeds and provide mulch in summer. Their wishing clocks chime in spring to make the dream of ultra fine Riesling come true. Whole bunches are hand picked and destemmed into small batches without crushing grapes to comfortably fill the wine press. Free run juices are vinified in small fermenters at temperatures between 11°C and 14°C, to bone dry, preserving a high level of natural acidity. Wonderland is bottled directly without fining or filtration to capture the essence of the vineyard, a looking glass if you will.
 
Pristine pale straw hue. Lights on in this Wonderland, jasmine, mandarin leaf and even lychee juice bursting fruit freshness, invigorating, intense smells of lime skin, citrus blossom, green apple, ripe guavas and cinnamon spice. An extraordinary precise and clean fruit spectrum of crunch lime and other citrus fruit flavours, stonefruit, apricot and mandarin, morphing into rich lemon meringue tart flavours, over steely minerality, balanced by racy, slate acidity.

The Eden Valley is cool and wet, soils tend to be skeletal and minerally, a major determinant to growing Riesling. Care is taken in every step of the vine cycle, hand pruning, careful selection of picking time and many hours of nurturing throughout the year all contribute to the wonderful results found in the bottle. Grapes are predominantly sourced from the Storton Vineyard, located just outside the township of Eden Valley. Quick separation of the juice from the skins gives the purest juice possible. A long cool ferment and prompt separation from the yeast lees has given a truly vibrant Riesling of classical style. Bottled very early to capture all the fresh citrus/lime characters and to hold the crisp finish.
 
Pale straw hues. A bouquet of citrus, passionfruit and lavender. A profuse palate of limes and mineral on a precise acid line. Tight, dry and zingy, spectrums of bright citrus florals with green pear and quartz. Palate is creamy and textural, showing classical, stylish refinement in the middle, balancing as it closes on a dry, refined finish. A wonderful aperitif, the wine of choice alongside tempura battered flathead fillets.
Grant Burge 5th Generation Chardonnay

The history of the Burge family and their long association with winemaking in Barossa Valley can be traced back to March 1855, when bespoke tailor John Burge immigrated with his wife and two sons. A fifth generation of the Burge dynasty now brings together the exquisite elegance of Eden Valley with the soft velvetine textures of Barossa, into a remarkable Chardonnay wine. Fashioned to be enjoyed youthful and vibrant alongside seared tuna, salade nicoise or your favourite chicken recipe.

Grapes are crushed, chilled and pressed, juices are settled for two days before inoculation through the action of eight choice strains of yeast, the majority of components are treated to three weeks of cooler temperatures vinification in controlled fermenters, a third of the wine is sent to seasoned French oak for a course of rich barrel ferments, malolactic and maturation. Upon completion, batches are held for a few months on yeast lees to build texture and infuse richness, followed by a gentle racking and the final assemblage, aimed at retaining maximum flavour, preserving freshness and highlighting the richness of sur lie.
 
Lemon green hue. An elegant nose dominated by white peach, apricot and hints of honeydew melon. The palate is packed with citrus fruit character, nectarines and cream are balanced by a crisp, lemon rind acidity. A rich and complex contemporary style of Chardonnay that's bound to please. Perfect alongside chicken tikka masala or a sage and pinenut gnocchi.
Grant Burge 5th Generation Semillon Sauvignon

Semillon and Sauvignon Blanc complement each other and coalesce into a delightful accord when made just right. A component of 5th Generation is sourced from two of the oldest plantings in Barossa Valley, vines up to a hundred years of age, these wonderful old sites yield a quality of Semillon endowed with exceptional intensity and charm. The supple richness of Semillon's delicate perfume mingles alluringly with the piquancy of Sauvignon Blanc. Treated to an extravagant mix of vinification techniques, the finished wine shows exquisite balance.

The Grant Burge team have selected harvests of Sauvignon Blanc from splendid Eden Valley vineyards on the basis of vibrancy and retention classic fruit profile. Sauvignon Blanc is crushed and de stemmed, Semillon is de stemmed and pressed, a portion as whole bunches. Components of Semillon are barrel fermented in seasoned French oak while treated to a course of lees stirring battonage. The balance of Semillon Sauvignon Blanc are vinfied for two months at low temperatures in fermenters to maximise the retention of fresh varietal flavours. The barrel ferments are matured on sedimentery lees, to impart additional texture and richness.
 
Lemon green hue. Lifted aromas of citrus and melon, delicately interwoven with subtle herbaceous notes. The palate is fresh and lively, ripe tropical fruit flavours, zesty lime and a soft creamy lemon curd finish. The time spent by Semillon on lees has rounded the palate, adding an extra dimension to the wine. 5th Generation is best enjoyed young, the perfect match to crustacea and fresh fishes.
Grant Burge Summers Chardonnay

Grant Burge is a fifth generation vigneron and one of Australia's most industry respected winemakers. He retains an intimate knowledge of Barossa vineyards and is well positioned to select the pick of Chardonnay from the choicest cool climate sites. A large portion is sourced from Burge's own Summers property in Eden Valley, a further component is picked off vines planted to higher altitudes in Adelaide Hills. Subtle oak treatments play a role, imparting depth and framing the fruit while supporting the fine palate structure.

The history of the Burge family and their long association with winemaking in the region can be traced back to March 1855% Throughout his career, Burge has been one of the most respected and innovative forces in the Australian wine industry. Chardonnay grapes are chilled and whole bunch pressed before a combination of cultured and natural indigenous yeast ferments ensue in a mix of seasoned and French oak hogsheads with solids to assist the mouthfeel. Smaller components are treated to vinification in controlled fermenters and a course of malolactic. Components are matured for eight months with regular stirring of lees to infuse complexity and build creamy palate texture.
 
Bright golden hues. Delicate aromas of citrus, white peaches and spice. The palate exhibits incredible balance, fruit flavours are fully integrated with lime acidity and a hint of creaminess provided by lees stirring. The balance creates a wine with superb length and refinement. Food matches such as spiced quail, roasted pork loin with fennel or seafood gumbo allow Summers Vineyard to fully express itself.
Heggies Vineyard Chardonnay 2015

Chardonnay is the Heggies Vineyard flagship, a wine that truly bears the stamp of an exceptional Eden Valley site. Closely planted Burgundian clones form the backbone of the Heggies style and create an extremely low yielding viticultural environment which requires careful management but rewards with an outstanding quality of fruit. Natural fermentation in French oak and the use of indigenous yeasts, oxidative handling and partial malolactic fermentations add to the individuality of the wine, an excellent minerality that contributes to the length and finesse.

Heggies could be called viticultural struggle country. The vines are shy bearing for grapes of intense flavour. There are seven different Chardonnay clones, with three favoured French Bernard variants comprising the majority of the wine. Younger plantings are trained to a vertically shoot positioned canopy and the older vines are on a two wire vertical framework, thus achieving a range of flavour opportunities. Hand picking and gentle whole bunch pressing minimises the extractions and preserves natural fruit aromas, for a fine juice with light solids, inoculated by wild vineyard yeasts. Fermented and matured for up to a year in a high proportion of new French oak barriques. Alcohol 13.0%
 
Pale straw with green hues. The nose is full of perfumed, vibrant aromas, nectarines and white peach, brioche and white flowers are complemented by a hint of funk thanks to the indigenous yeast. The vibrant palate offers melons and white peach flavours, with beautiful line and length from the wonderfully mouth watering acid, integrated oak complements a fine, elegant palate. The finish is long and persistent with a fresh zestiness.

The Eden Valley's unique contribution to Australian Riesling is monumental. Heggies is a tremendously challenging vineyard, not an easy one to manage for the growers but the completed wine is a most splendid Riesling. Each grape variety has it's own programme of care according to its position in the vineyard. Working with the natural surroundings rather than against them is the driving force. Every factor is taken into consideration, to grow the most perfect fruit and to ultimately capture the flavour and balance of the grapes in their purest essence.

Through the use of innovative viticultural practices, working to capture the unique terroir of this challenging single site vineyard, the Heggies viticultural team have produced a wine that is fine and balanced, with enduring minerality and strong regional expressiveness. At Heggies there are a number of blocks of Riesling available, ensuring that the finished wine is of consistently excellent quality each year. Grapes are picked throughout the cool of night and swiftly transported to the winery. There is minimal handling of the juice and only the free run portion is selected. Juices are vinified at cool temperatures to aromatic yeasts and assembled promptly after completion of ferments.
 
Pale straw with green tints. Notes of orange blossom, citrus, fresh lime juice and a hint of stone flint. The wine shows great length, drive and complexity, flavours of citrus, grapefruits and lime. An outstanding wine in its youth, Heggies finishes with a hint of spice and mouth watering acidity. Vegan friendly and perfect with tempura king george whiting.

Heggies is a very challenging Vineyard to manage but the site yields exceptional quality Viognier. Good rains at the beginning of the growing season augured well for vintage. By mid January the skies had cleared, and no subsequent rain combined with balmy temperatures for the remainder of the season meant that flavours ripened during a long even late summer and early autumn. After being hand harvested and whole bunch pressed, the juice was then barrels fermented by native or wild yeasts. These yeasts, along with the lees stirring, have given the wine wonderful depth with final selection. Fermented and matured nine months in a selection of older, prior use French oak hogsheads and barriques. Alcohol 14.5%
 
A pale straw colour with green tints. The nose is deliciously intense with the typical stone fruit flavours of Viognier, reminiscent of white fleshed peaches and apricots. The palate is round and luscious with the distinctive Heggies Vineyard mineral texture. A relaxed and refreshing wine with a myriad flavours, it's a tad more steely and aromatic than most.
Henschke Eleanors Cottage Sauvignon Semillon 2015

Two thirds Semillon grown to Henschke vineyards on Eden Valley, vinified around a solid backbone of topical Adelaide Hills Sauvignon Blanc from the distinguished Henschke property at Lenswood. Named for Eleanor Hill who married George Crossman Thyer in 1848, the grower who pioneered and developed Henschke's original Eden Valley site. Rich, spicy citrus flavours line the palate, crisp acidity, fine length and exquisite balance, take Eleanor out for the freshest fish or lightly spiced Asian faire.

The Henschke Eden Valley vineyard is located at an altitude of 500m and a rainfall of 700mm. Cyril Henschke purchased the property from Kenneth Crossman Thyer in 1966, and established a large planting of riesling at a time when Riesling was scarce and bonuses were being paid by the large wineries. The vineyard is effectively dry grown, although the soil moisture is monitored and in drier years drip irrigation is used to keep the vines physiologically active. The closely husbanded vines are planted to a northerly aspect on well drained deep sandy loam and silts. Eleanor is treated to a brisk vinification and bottled promptly after vintage, young and unoaked, to retain vital fruit character.
 
Vibrant pale straw with lime hues. Lifted, fragrant aromas of citrus, cumquats and kaffir lime with richer notes of ripe stonefruits, custard apple and white currant. Layered and focused, the palate shows generous ripe citrus, green apple and nectarine flavours, with a beautiful line of minerality balanced with fine acidity, leading to a long, crisp finish.
Henschke Julius Eden Valley Riesling 2016

Cyril Henschke developed a reputation for premium Riesling wines as early as the 1950s, after a series of memorable vintages fashioned from fruit grown to splendid Eden Valley vineyards. The dry, food oriented styles of Springton and Keyneton are naturally endowed with a capacity to evolve delicious toasty marmalade flavours. The mesoclimes are blessed with ideal ripening conditions which form intensely flavoured esters in the grapes. Julius has been named for a Henschke ancestor, a highly acclaimed artist and sculptor.

George Crossman Thyer purchased a property at the top of the range overlooking the Eden Valley in 1877, from a tract of land granted to George Fife Angas, in a fertile area called Flaxmans Valley. It was transferred in 1912 to Joseph Hill Thyer, who pioneered the first vines on this property. Cyril Henschke purchased the property from his son Kenneth Crossman Thyer in 1966, and established a large planting of predominantly Riesling at a time when it was scarce and bonuses were being paid by large wineries. The vineyard is planted on sandy loam over gravel and bedrock, with patches of clay. Julius is vinified in controlled fermenters, bottled unwooded and unaged, to capture and express the quality of fruit.
 
Pale straw with green hues. Intense lemon and lime zest, green peppercorns and distinct minerality behind lifted floral notes. Concentrated lime flavours accented by cardamom spice. The textured palate shows concentrated pure sweet lime flavours; beautifully balanced with crisp acidity and minerality for a long, focused finish.

Henschke Peggys Hills Eden Valley Riesling 2013
Eden Valley
Yes, there really is a Peggy's Hill and she's a local landmark atop the range between Eden Valley and Keyneton. Peggy's Hill Riesling is vinified from fruit grown by a qabal of traditional growers, Henschke paladins whose vines are up to fifty years old, planted to low vigor ancient Cambrian soils at 500 metres altitude. Eden Valley Riesling is well known for its exceptional varietal and regional characteristics. Peggy's Hill is crafted to be primarily fruit driven, bottled immediately after fermentation to retain all the essential Eden Valley Riesling expressions.

The far seeing visionary Cyril Henschke purchased property on the Eden Valley in 1966 where he established a large planting of vines at a time when Riesling was fashionable and bonuses were being paid by the large wine companies. Many of the Eden Valley's original pioneering families are still tending vineyards today, Peggy's Hill is an assemblage of fruit grown to some of the choicest blocks. Following harvest and the crush, inoculation and a cool vinification in controlled fermenters, the final wine is bottled immediately post vintage, completely unwooded and unoaked without any maturation whatsoever, to preserve the delicacy of Peggy Hill's appealing fruit characters. This adroitly, hand chosen kaleidoscope of parcels is fashioned into a seamless wine, of stunning bouquets and engaging palate, named in honour of great aunt Ottilie Mathilde Henschke. Like the many remarkable women of an era when daily life was a far cry from the ease of today, she grew her own produce while raising a large family.

The Henschke Eden Valley vineyard is located in the cooler part of Mount Lofty Ranges, at an altitude of 500m and average rainfall of 700mm. The vines are effectively dry grown, planted on their own rootstock to a contour, the intention being to conserve soil moisture and reduce erosion. Planted in the middle of apple growing country, just northeast of Mount Lofty, right at the top of a long, picturesque valley at a cool ripening 550m, fruit grown to the Lenswood property imparts fragrance, minerality and racy acidity to the finished wine. Upon completion of ferments, components are assembled and bottled very promptly after vintage to preserve Lilly’s fragrant character and clean fruit.
 
Pale straw hues. A sweet, fragrant nose of lemon grass and gooseberry, clover blossom and ripe, soft peaches with lifted pear and citrus aromas. The palate is sweet and juicy with tropical notes, fresh crunchy fruit, and an attractive long, crisp finish. Drinking beautifully upon release and known to develop admirably, try Tillys Vineyard with a smoked pork and prune terrine.
