Eden Valley is Dandelion's Riesling wonderland, a unique fusion of terroir and vine, season and grower. Wonderland of the Eden Valley is made entirely from vines planted in 1912 which still thrive to this day. Vigneron Colin Kroehn is the custodian of these precious old vines and has tended them for sixty six of his eighty eight years. With a bit of bottle age, Wonderland will evolve exciting toast and custard characters. Nothing short of exquisite as aperitif, superb with seafood, a sensation alongside sultry soufflés.

Although the vineyard team see the devil in every weed, they encourage the humble dandelion to grow amongst vines as they supress winter weeds and provide mulch in summer. Their wishing clocks chime in spring to make the dream of ultra fine Riesling come true. Whole bunches are hand picked and destemmed into small batches without crushing grapes to comfortably fill the wine press. Free run juices are vinified in small fermenters at temperatures between 11C and 14C, to bone dry, preserving a high level of natural acidity. Wonderland is bottled directly without fining or filtration to capture the essence of the vineyard, a looking glass if you will.
 
Pristine pale straw hue. Lights on in this Wonderland, jasmine, mandarin leaf and even lychee juice bursting fruit freshness, invigorating, intense smells of lime skin, citrus blossom, green apple, ripe guavas and cinnamon spice. An extraordinary precise and clean fruit spectrum of crunch lime and other citrus fruit flavours, stonefruit, apricot and mandarin, morphing into rich lemon meringue tart flavours, over steely minerality, balanced by racy, slate acidity.

The Eden Valley is cool and wet, soils tend to be skeletal and minerally, a major determinant to growing Riesling. Care is taken in every step of the vine cycle, hand pruning, careful selection of picking time and many hours of nurturing throughout the year all contribute to the wonderful results found in the bottle. Grapes are predominantly sourced from the Storton Vineyard, located just outside the township of Eden Valley. Quick separation of the juice from the skins gives the purest juice possible. A long cool ferment and prompt separation from the yeast lees has given a truly vibrant Riesling of classical style. Bottled very early to capture all the fresh citrus/lime characters and to hold the crisp finish.
 
Pale straw hues. A bouquet of citrus, passionfruit and lavender. A profuse palate of limes and mineral on a precise acid line. Tight, dry and zingy, spectrums of bright citrus florals with green pear and quartz. Palate is creamy and textural, showing classical, stylish refinement in the middle, balancing as it closes on a dry, refined finish. A wonderful aperitif, the wine of choice alongside tempura battered flathead fillets.

Grant Burge 5th Generation Chardonnay

The history of the Burge family and their long association with winemaking in Barossa Valley can be traced back to March 1855, when bespoke tailor John Burge immigrated with his wife and two sons. A fifth generation of the Burge dynasty now brings together the exquisite elegance of Eden Valley with the soft velvetine textures of Barossa, into a remarkable Chardonnay wine. Fashioned to be enjoyed youthful and vibrant alongside seared tuna, salade nicoise or your favourite chicken recipe.

Grapes are crushed, chilled and pressed, juices are settled for two days before inoculation through the action of eight choice strains of yeast, the majority of components are treated to three weeks of cooler temperatures vinification in controlled fermenters, a third of the wine is sent to seasoned French oak for a course of rich barrel ferments, malolactic and maturation. Upon completion, batches are held for a few months on yeast lees to build texture and infuse richness, followed by a gentle racking and the final assemblage, aimed at retaining maximum flavour, preserving freshness and highlighting the richness of sur lie.
 
Lemon green hue. An elegant nose dominated by white peach, apricot and hints of honeydew melon. The palate is packed with citrus fruit character, nectarines and cream are balanced by a crisp, lemon rind acidity. A rich and complex contemporary style of Chardonnay that's bound to please. Perfect alongside chicken tikka masala or a sage and pinenut gnocchi.
Grant Burge 5th Generation Semillon Sauvignon

Semillon and Sauvignon Blanc complement each other and coalesce into a delightful accord when made just right. A component of 5th Generation is sourced from two of the oldest plantings in Barossa Valley, vines up to a hundred years of age, these wonderful old sites yield a quality of Semillon endowed with exceptional intensity and charm. The supple richness of Semillon's delicate perfume mingles alluringly with the piquancy of Sauvignon Blanc. Treated to an extravagant mix of vinification techniques, the finished wine shows exquisite balance.

The Grant Burge team have selected harvests of Sauvignon Blanc from splendid Eden Valley vineyards on the basis of vibrancy and retention classic fruit profile. Sauvignon Blanc is crushed and de stemmed, Semillon is de stemmed and pressed, a portion as whole bunches. Components of Semillon are barrel fermented in seasoned French oak while treated to a course of lees stirring battonage. The balance of Semillon Sauvignon Blanc are vinfied for two months at low temperatures in fermenters to maximise the retention of fresh varietal flavours. The barrel ferments are matured on sedimentery lees, to impart additional texture and richness.
 
Lemon green hue. Lifted aromas of citrus and melon, delicately interwoven with subtle herbaceous notes. The palate is fresh and lively, ripe tropical fruit flavours, zesty lime and a soft creamy lemon curd finish. The time spent by Semillon on lees has rounded the palate, adding an extra dimension to the wine. 5th Generation is best enjoyed young, the perfect match to crustacea and fresh fishes.
Grant Burge Summers Chardonnay

Grant Burge is a fifth generation vigneron and one of Australia's most industry respected winemakers. He retains an intimate knowledge of Barossa vineyards and is well positioned to select the pick of Chardonnay from the choicest cool climate sites. A large portion is sourced from Burge's own Summers property in Eden Valley, a further component is picked off vines planted to higher altitudes in Adelaide Hills. Subtle oak treatments play a role, imparting depth and framing the fruit while supporting the fine palate structure.

Chardonnay grapes are chilled and whole bunch pressed before a combination of cultured and natural indigenous yeast ferments ensue in a mix of seasoned and French oak hogsheads with solids to assist the mouthfeel. Smaller components are treated to vinification in controlled fermenters and a course of malolactic. Components are matured for eight months with regular stirring of lees to infuse complexity and build creamy palate texture.
 
Bright golden hues. Delicate aromas of citrus, white peaches and spice. The palate exhibits incredible balance, fruit flavours are fully integrated with lime acidity and a hint of creaminess provided by lees stirring. The balance creates a wine with superb length and refinement. Food matches such as spiced quail, roasted pork loin with fennel or seafood gumbo allow Summers Vineyard to fully express itself.
Heggies Botrytis Riesling

Heggies is an exquisite, though difficult to manage, single vineyard site. The undulating slopes, high in Valley Eden, prevent frosts from settling, such that the unique terroir is encouraged to produce remarkable wines. Fruit is harvested in small, hard won lots, the narrower sections and rows demand to be picked exclusively by hand. A scrupulous sorting is essential, Botrytis affects each bunch of grapes in different ways. The integrity of each parcel is maintained throughout the vinification, ensuring that almost every planting is afforded the opportunity to have a say in the final wine.
