Basil Hayden Bourbon 700ml
The recipe of this remarkable bourbon dates back to 1796, when Basil Hayden himself was a master distiller. Hayden was born and raised in Maryland, where he learned to make whiskey from rye. When he came to Kentucky, Hayden began making whiskey from a base of corn, but added a higher percentage of rye than other distillers, resulting in a smooth, mild bourbon that was distinctly his own. Basil Hayden's is unique in that it utilizes twice as much rye in it as the other bourbons in the Jim Beam Small Batch Collection. This abundance of rye gives it a slightly peppery taste and aroma, perfect for sipping on the rocks.

The legend begins in New Orleans, where the Bulleit family emigrated from France in the 1700s. Around 1830, Augustus Bulleit moved from New Orleans to Louisville, Ky., taking with him his talent for brandy making. As a tavern keeper in Louisville, he began producing small batches of bourbon. Relentless in his pursuit of perfection, he experimented with different recipes. When he found one that consistently met his expectations, the inspiration for Bulleit Bourbon was born. Sour Mash is not the designation of a special type of whiskey, as most people think. Instead, the name refers to the similarities between making whiskey and making sourdough bread. In both processes, a portion of the previous batch is used to start the next batch in order to promote consistency. Every bourbon and Tennessee whiskey is made using the sour mash process. As the whiskey ages, the whiskey barrels breathe. Because of this phenomenon, somewhere between eight to ten percent of the alcohol volume will be lost to evaporation in the first year. Evaporation continues over subsequent years at a rate of four to five percent per barrel. A good whiskey is likely to lose approximately thirty percent of its original volume by the time it is ready for bottling.
 
Whiskey barrels are assembled from American White Oak, a wood which carries the right combination of compounds to create the tastiest whiskey. These compounds are exposed when the insides of the barrels are charred by open flame. As the whiskey ages inside the barrel, the wood contracts and expands with changes in the surrounding climate. The whiskey is allowed to move in and out of the wood as this happens, and the exposed compounds mix with the whiskey. The mixing gives the whiskey a smoky flavor and an amber tint.

Made to the exacting standards of Old No. 7, Single Barrel is charcoal mellowed and matured in charred white oak barrels. Single Barrel however is aged in a special place within the barrelhouse. Casks showing potential are rested in the upper reaches, known as the Angel's Roost. Here summer temperatures can easily reach over 100 degrees fahrenheit, and in winter dip below freezing. Year after year, the seasonal changes affect the Whiskey, as Single Barrel acquires it's many complex flavours, like the caramelized sugars from the cask's charred interior.
