Lustau Dry Amontillado Los Arcos

This is a classic Amontillado, having undergone years of racking and cellaring to attain the electrifying dry through to medium flavours. Amber coloured and with a touch of sweetness, well-balanced and showing great character with pleasant maturity. A seriously versatile wine is the Lustay Centenary Amontillado Bodega Vieja, which mates beautifully with any game dish and rare roasted meat, but is also the tried and true aperitif and accompaniement to social occasions. This is a charming and quenching Sherry, the traditional companion to consommé, game soups, foie gras or highly spiced cuisine.

The secret of the Lustau Centenary Amontillado lies in its ageing and blending. This very special old Sherry consists of many different wines taken from butts containing wines of different ages. The work of blending is an art, practised by the winemakers who use all their five senses, but especially the sense of smell. In the laboratory, small quantities of wines from different butts are blended, before an amount of wine alcohol required to fortify the Amontillado is decided for each individual batch. Serve at a cooler room temperature. Alcohol 18.5%
 
Amber, golden hues with perfect clarity. Aromas of ripe fruit. A text book Amontillado of great maturity, the medium dry Centenary offers good body as well as a heady personality. A huge nose with great balance intensity and acidity on the palate, as well as a scorched earth/roasted nut character, it is stunning flavourful yet light crisp. Not completely dry but with titillating nuances of ripe orchard fruit, temperate and soft, its palate gives a hint of wood and smoky raisins. A powerful and distinctive nutty bouquet. A better Amontillado would be difficult to find.

Aged for many years in American oak casks in Lustau's bodegas in Jerez and matured in the traditional Solera system. Sherry wine has a unique property in that it takes on the characteristics of the older wine once blended. The ageing wine is taken from the bottom row of barrels, and is filled with wines from younger criaderas (or sherry nurseries as they are known). At each stage about a third of wine is taken out and replaced with wine from the one above until the new wine of the year goes in. Alcohol 17.
 
Deep, dark brown and viscous, almost black in colour. Redolent of ripe fruit with the distinct varietal aroma of the Pedro Ximénez. A pronounced and delicious bouquet of the essence of sweet raisins. Rich, sweet, velvety and soft in the mouth, well balanced, with a long finish showing the wine's great age. The taste is very sweet, smooth, pronounced and delicous just like dried raisins or sweet grape juice. Serve at cool room temperature with rich desserts, cakes and pastries, or pour a little over the best quality vanilla ice cream. This wine can also accompany a cheese course, or simply serve as a digestif for the sweet toothed.

Pale straw colour, fresh and aromatic. This is a grand Fino, dry and crisp on the palate, yet rich and with a full finish. “Brilliant light straw colour, earthy-mineral nose, subtle and lightly spiced flavors. Dry and soft with a very good texture, full finish with length.
