Paxton AAA Shiraz Grenache

For decades the Paxton family have nurtured their prized McLaren Vale vineyards, some are over a hundred years old. David Paxton believes that the science of viticulture is just as critical as the fine art of vinification. It's this level of care and passion for the soil that has produced extraordinary fruit and stellar wines. Harvested at the optimum ripeness for this wine style, Shiraz from five premium parcels, the Grenache from three, all fermented separately and assembled into a deep red wine of vigorous flavours and sleek, velvetine tannins.

Gateway Vineyard is the source of the Shiraz component, grown to an inhospitable mixture of limestone and mudstone rubble. The vines are restricted in their growth and produce tiny yields of intensely concentrated fruit. Vines on the Jones Block are an average age of forty five years. Hand pruning and thinning of individual bunches combined with minimal irrigation ensures the low and uniform yield required for the production of super premium Shiraz. Quandong Farm, Nineteenth and Landcross Farm Vineyard are the sources of Grenache, from carefully hand tended bush vines. Paxton was matured eighteen months in a combination of new and used American and French 225 litres oak barriques.
 
Medium intensity ruby red with purple hues. Attractive complex aromatics, lifted red berry fragrances including spiced mulberry. Beautifully perfumed, it leads on to a palate of peppery berries, prunes, firm smooth tannins and smokey anise flavours. Enjoy young while young and fruit forward, alongside lamb shanks braised in good red wine, AAA of course.

From a single row of the Iberian Graciano, grafted on to mature Chardonnay rootstock on the auspicious Paxton Thomas Block at McLaren Vale. Fruit is treated to a fortnight of cool ferments, plunging and pumpovers, followed by a gentle press into French oak barriques for nine months maturation. A deliciously food friendly wine of lithe spice and herb aromatics, raspberries and lavender, gently seasoned with a touch of white pepper. Adorably elegant tannins lie in support of juicy raspberry fruits, its supple savouryness making the perfect accompaniement to cutlets and all Mediterranean fare.

The Paxton team are focused on making wines of intensity, but also with layers of texture, good flavour and genuine interest. Paxton focus on soil health, bio-diversity and nonchemical weed control. Bee hives on the property contribute to diversity, aid pollination and maximise seed production of the inter-row pastures. Natural composts enrich the soils and are the basis for healthy vine growth. Each vineyard parcel is separately handled, destemmed and vinified in a mix of open and static fermenters, plunged and pumped over each twice daily over the course of a fortnight for optimal extraction of colour, flavour and tannin. Batches are pressed into a selection of seasoned and new French and American oak barriques for completion of ferments and a year's maturation.
 
Deep mulberry, purple hues. Powerful, lifted ripe berry fruit, vanilla and chocolate, French cocoa and American vanilla oak notes. Rich, juicy fruit, spiced berries and currant, dark chocolates and licorice, flavoursome, textural mouthfeel and a lingering savoury back palate. Mouthfilling, yet lingering, elegant flavours, drinking very well immediately upon release.

Those who surround themselves in the art and science of viticulture make the greatest contribution to the quality of wine. Paxton remains on skins just long enough to be blushed with a chic lipstick hue and infused with a light dose of quenching tannins.

Located southwest of McLaren Vale township, the coastal, relatively cool hilltop Shiraz site consists of predominantly deep alluvial clays layered with seams of river bed gravel and stone. Slightly closer to the coast, the Maslin Beach property is the source of an early ripening Shiraz component. Grapes are harvested as they begin to show the bright, light berry fruit flavours which are just right for Rose. Fruit is crushed and held in contact on skins for several hours. After settling, juices are fermented at cool temperatures as you would for a white wine. A small proportion is vinified in new French oak barrels. The final mix is filtered and bottled early to capture the piquancy of Shiraz Rose.
 
Medium rose petal red. Fragrant, floral, sweet raspberries, cream and Turkish delight. Bursting with ripe red berries on the palate, lusciously full and fruity, with a clean, lingering back. During the winemaking process, ferments were brought to a stop by the addition of sugars to enhance the fruit driven qualities and enhance complexity. Paxton should be enjoyed while fresh and young.

From the closely coddled, fully bio dynamic Thomas Block at Landcross Farm, McLaren Vale Grenache can trace its legacy back to some of the most historically significant rootstock in the world. Grapes are all hand picked and destemmed, a measure are included as whole bunches and treated to a fortnight of ferments, pumpovers and plunge, before pressing into a selection of pre loved French oak barriques for a spell of age. Grenache's distinctive nose of pepper, brambles and lifted strawberry spice, before a wonderful palate of soft, silky textures, winegums, jelly jube and fine fleshy plum.

David Paxton has been growing grapes in McLaren Vale for almost 30 years. In this time he has developed and managed vineyards in the Adelaide Hills, Coonawarra, Yarra Valley, regions of Western Australia and has consulted to growers across the country. David's company Paxton Vineyards owns approximately 200 acres of premium McLaren Vale vineyards and manages over 500 acres in the region as well as over 25 on Kangaroo Island. Whilst the majority of the grapes grown by Paxton are sold to wine companies, a small portion is utilised for the Paxton label.

In Paxton's home of McLaren Vale South Australia, their vineyards are spread across a number of sites and soil types which are managed without compromise from planting to harvest. The Paxton winemaker's mission is to produce and showcase the region's fruit quality, varietal expression and natural diversity, particularly with Shiraz, which is now well recognised as the region's top performing variety.

Paxton call the approach back to the future

It involves combining traditional, hands-on management, integrated and complimented with modern technology. The Paxton winemakers choose to propagate vines from old pre-clonal selection vineyards to benefit from stock with a history of low-yield and high quality. The vineyard site characteristics that the Paxton winemaking team target have soil profiles that allow perfect control of soil moisture content via irrigation, maximising fruit quality and intensity.

Here the winemakers work with the concept of terroir, although they make nothing of the mystery that is often attached to the word. It can be complex but it is not magic. Paxton considers terroir as the interaction between a vine, its environment and the impact of man's management with the moisture balance of the soil being possibly the major influence. Management techniques are varied to suit variety and style.

The Paxton name is known within the Australian wine industry for growing and supplying grapes to wineries, and only a small portion is utilised for the Paxton label. Utilisation of techniques such as shoot thinning, leaf plucking and fruit thinning are employed to attain superior quality. Targeted crop levels for Shiraz are 6 - 8 Tonnes per hectare.

Trialling of bio-dynamics and non-chemical weed control is ongoing. It is impossible to develop intimate knowledge of a vineyard in one or two years which is why the Paxton commitment to optimum quality is reflected by their long term staff and management.

In his youth, before becoming one of Australia’s leading viticulturists, David Paxton worked briefly as a wool presser and learnt of the AAA wool classing stencil that reflects superior quality. So too does the Paxton AAA, selected from the Gateway and Jones Block vineyards, renowned for producing some of the best fruit in the region. These select parcels were blended with complementary Grenache to create a wine that is engaging to a wide range of palates.
