The emergence of Balgownie Estate as a preminent winemaker in the 1970s led to the rapid expansion of the central goldfields wine growing region and was a significant player in the rebirth of the Victorian wine industry as a whole. In 1999, fine wine enthusiasts Des and Rod Forrester assumed proprietorship of Balgownie and set about updating the vineyards and winery. The Forresters embarked on a search for the idyllic Chardonnay and Pinot Noir site, eventually identifying a property in the Yarra Valley where they established seven hectares of closely managed vines. Crafted to Methode traditionelle, Balgownie Brut is rested on sediments before completing secondary fermentation in bottle.

Making outstanding Shiraz has been somewhat of a specialty at Balgownie ever since vines were established. The winemaking team's commitment to sustainable vineyard management practices, limited irrigation, compost and mulching regimens continue to yield harvest of the healthiest, small but intensely flavoured grapes. Batches of Shiraz are treated to a term of maceration for the extraction of colour, tannins and flavour. A controlled vinfication is followed by twelve months maturation in a combination of new and seasoned French oak barrels before assembling into the final wine, to be initiated for secondary fermentation in bottle in the manner of Methode traditionelle.

Sparkling Shiraz is synonymous with Great Western, and contemporary tastes have presented a great opportunity for Great Western to refine the style. The winemaking team discovered that certain blocks yielded fruit which would lend themselves exceptionally well to sparkling Shiraz, forming a wine that spoke of place and was characteristic of Great Western. Grapes are picked early, inoculated and vinified in traditional fermenting vats, without receiving any oak treatment whatsoeverl, achieving a wine with medium body which retains freshness and intensity even as it ages. The goal is to ensure that the finished wine defines Great Western, retains good balance, elegance and refinement.

Red fruits and spice on the palate, a well integrated medium bodied Shiraz, balance and texture are the endearing qualities of this essential Aussie style. Blue Pyrenees Midnight Cuvee
Pyrenees
Available by the dozen
The production of Methode traditionelle has been an essential part of the winemaking at Blue Pyrenees for many years, the original raison d'être. Established 1963 by the Champagne houses of Charles Heidsieck and Krug, an adherence to the transcendent French influence of the founders is central. In 1992, the Blue Pyrenees team decided to experiment with hand picking their fruit, under floodlights, in the middle of the night. The results were amazing, a most memorable vintage of outstanding quality, Midnight Cuvée was born.

Although hand picked fruit is often most desirable for the production of premium quality juices, day time temperatures in Australia can mean that the grapes will often be quite warm when received into the press after a day's picking. Nowadays the Blue Pyrenees team select the best fruit parcels, whilst still on the vine, to be separated out from the rest and picked at night by hand to generate the juices which will become Midnight Cuvee. Although very laborious and time consuming, the rewards are evident in the glass. Midnight Cuvée is made entirely from estate grown fruit, predominantly Chardonnay for elegance and refinement, with a touch of Pinot Noir. Alcohol 12.5%

Brilliant pale straw hues, a fine gentle bead. The aroma is delicate and complex, yeast autolysis characters of freshly baked bread complimented by citrus fruits and hazelnut. The climate at Whitlands is ideal for retaining the type of acidity so essential to this style of wine. The property sits at eight hundred metres above sea level in the sub alpine area at the top end of the King Valley. Fruit is hand picked and whole bunch pressed through an air bag. Grapes are treated gently to yield a scant five hundred litres of juice per tonne, minimising the impact of harsher compounds from skins. Base wines are treated to full malolactic for complexity. The secondary ferments are deliberately extended to produce a fine bead, then rested an extravagant five years on lees to develop further complexity. Patricia is then disgorged and liqueured, to true Methode traditionelle.

Light straw colour with fine persistent bead. Llifted nose with a rich yeast autolysis character and hints of citrus and apple. The palate is full bodied, complex and rich with prominent lemon/ lime flavours and a bready character which lingers. The mouthfeel is creamy and elegant before a crisp, dry finish and with refreshing acidity. This complex and rich sparkling wine deserves to be accompanied by the finest faire, hors d'oeuvres or scallops, souffle or brie.
