Lindauer Sparkling Brut N.V
Marlborough Gisborne Hawkes
A prominent NZ dry style sparkling wine that can be served as an aperitif, Lindauer is not completely dry, but close enough to be refreshing. It offers aromas of hot baked brioche, light fresh fruit, and similar flavours to lay aside its brightly foaming texture. Cool and delicious, this is the epitome of celebratory wine.

The cuvee stays on lees an average of 15 months and when the cuvee is considered to have aged on lees sufficiently, the yeast is removed and the wine sweetened. The blended base cuvee has sugar and yeast added and is then bottled. The bottles are laid on their sides in bins, inside temperature controlled cellars to undergo a secondary fermentation in the bottle. The fermentation lasts six to eight weeks, during which time the sugar is converted to alcohol and CO2. The CO2 pressurises the bottle and gives the Lindauer its bubbles. Alcohol 11.5% Acidity 7.3 g/L Sugar 12.0 g/L Winemaker Julia O'Connell.
 
This wine is full on the palate with a pleasant, steady mousse and elegant aroma. Yeasty and toasty bouquet show excellent maturity from prolonged bottle maturation on lees. The palate is crisp, complex and well balanced, with a full flavour and lasting taste.

A small proportion of the Pinot Noir grapes are given extended time on skins to give the rose colour, then are blended back with the Chardonnay after primary fermentation. The cuvee stays on lees an average of 15 months and when the cuvee is considered to have aged sufficiently, the yeast is removed and the natural strawberry essence infused. Alcohol 11.5% Acidity 7.3 g/L Sugar: 24.0 g/l Winemaker Jane De Witt.
 
A pinky gold salmon. A subtle strawberry aroma is intermingled with an underlying yeasty toasty bouquet. A careful blending of the base wines has resulted in a full palate with an elegant finesse.
