Ingoldby Cabernet Sauvignon 2010

The Ingoldby family has been associated with McLaren Vale grapegrowing for more than a century. Their skill at managing vines which they have husbanded for generations yields harvests of the most splendid fruit bursting with intense flavours. Ingoldby's Cabernet Sauvignon is highly valued and still sought by some of the nation's most popular brands. A highly flavoursome table red, the essential McLaren Vale Cabernet, exuding ripe aromas, sweet and savoury expressions of plum, berries and oak, to pair off with juicy meats and robust cheese.

Since inaugural release Ingoldby have enjoyed a stunning run of success at national wine shows. Their fruit has been the secret ingredient in many of Australia's most esteemed wines. Cabernet Sauvignon in particular has attracted wide critical acclaim with every release. Grapes are destemmed and crushed, the must is fermented warm in ten and twenty tonne static and rotary fermenters to extract the rich colour from the skins, to give added palate weight and soften the tannins. The wine is then pressed off, some components are matured in a combination of American and French oak hogsheads for a year, an unoaked portion was retained to keep the wine's vibrant fruit focus.
 
Deep red with purple hues. Aromas of dried plums and black cherry with subtle integrated oak. The palate of this rich, well balanced, full bodied red wine is long and captivating, offering blackcurrant flavours, liquorice all sorts and spice. The finish shows lovely length with savoury tannins. Magic with ribeye or lamb cutlets under red wine jus.

The Ingoldby name has been associated with McLaren Vale for over a century, however it was not until the late 1960s that Jim Ingoldby put the family name on a wine label. Since that time, Ingoldby has handcrafted a succession of award winning wines that always remain true to their McLaren Vale heritage. McLaren Vale boasts fruit growing conditions which deliver optimal ripeness. Ingoldby Chardonnay is sourced from premium low yielding vineyards. Following harvest and the press, juices are fermented in a combination of tanks and a selection of French oak barrels. Aged for six months, some components are treated to malolatic in barrel, adding a creamy complexity to the finished wine.
 
Pale straw in colour. Wonderful citrus aromas with fresh honey butter legs around the rim of the glass. Lifted white peach and stonefruit bouquet marries well with subtle, spicy oak. The smell of McLaren's spring fruit is present on the nose, peach tart and lemon sherbet, vanilla and caramel. The fresh, lively palate demonstrates lime and fresh herbal flavours, a welcome acidity and real length. With just a faintest touch of oak, the focus is on clean citrus fruit flavours, with nice texture and length of flavour on the back of the palate. The citrus, nectarine and soft creamy buttery finish makes Ingoldby the perfect Chardonnay to accompany the freshest fish, which we should all be eating twice weekly.

The Ingoldby name has been an essential part of McLaren Vale viticulture for over a century. Choice parcels of Shiraz are sourced from premium McLaren Vale sites, including the Ingoldby family property at McLaren Flat. Fruit is earmarked on the basis of intense flavour and fine tannins. Parcels are vinified separately in a mix of fermenters and pressed off skins upon completion. Some components are matured in seasoned oak barrels to derive complexity, the balance remain in tank to preserve freshness. Prior to assemblage, each component is assessed to strike the perfect balance of lifted fruit and gentle tannins, supple oak and fine complexity.
 
Deep purple/ red colour. An enticing nose redolent of dark summer berry compote with hints of chocolate. Subtle oak lets the fruit do the talking and plays a supportive, integrated role. The palate is rich and round with purple fruits, dense but supple tannins contributing power with finesse, balance and good length.

From the outset Jim and his Ingoldby wines were unashamedly proud of their McLaren Vale heritage. The region is often referred to as the middle palate of the Australian wine industry. The outstanding fruit driven flavours of the 2004 Chardonnay wowed judges at the Bendigo Bank Royal Queensland Wine Show securing the highest accolade in its class winning Top Gold and 2 further trophies. Proudly crafted in the traditional McLaren Vale style, the 2004 possesses an intensely flavoured fruit palate derived from a long and dry vintage.
