Pure Tasmanian Pinot Noir, crafted from the choice of hand picked fruit, a harvest from Relbia on the island's north is vinified alongside parcels from the Frogmore Creek property and Richmond in the Coal River Valley to the south. 42˚S is the common latitiude which divides two slightly different mesoclimes of the apple isle, the highly accomplished team at Frogmore Creek literally source the pick of the crop. The fickle Pinot Noir is very much at home here, where prevailing westerlies slowly ripen grapes to achieve a graceful, old world style of wine.

The Tasmanian terroir loves to grow Pinot Noir and Pinot Noir loves the growing season of Frogmore Creek's Campania property. The hand picked grapes are given a forty eight hour cold soak before being inoculated for vinification in a combination of small one tonne and 1½ tonnes open fermenters. Batches are hand plunged three times daily and pressed off skins for completion of primary ferments, followed by transfer to oak for malolactic before racking off lees. The finished wine is treated to extended maturation in a selection of new and seasoned French oak barriques, followed by a cross flow filtration before bottling, to preserve freshness and vitality of fruit.
 
Medium scarlet red. Pure red cherry and blackcurrant aromas. A palate brimming with currant and cherry, followed by a complex mix of red berry flavours. The fresh fruit characters linger, all supported by a soft, elegant tannin structure. A superb Pinot wine to mate with all good faire, innately suited to Italian pork salciccia and truffled polenta.

A boldly Pinot Noir and Meunier dominant Cuvée with just a soupçon Chardonnay, all hand picked off vines grown to a site made famous as one of the first sightings of a Tasmanian tiger Thylacinus cynocephalus. Frogmore Creek at Campania in Coal River Valley yields the finest sparkling wine grapes on the apple Isle. 42° South is given the full luxury treatment, an extended ageing on lees extracts exceptional richness from sediments, to be followed by disgorgement and doseage in true Methode traditionelle.

The Campania property has over a hundred acres are under vine, all are planted to blocks purposely selected for the suitability to each grape variety. There are twenty seven individual blocks, each situated on very different altitudes. All were established with northerly aspects, allowing vines to receive the greatest possible sunlight. Chardonnay, Pinot Noir and Meunier are whole bunch pressed to retain delicacy. Fruit is treated to a clean primary ferment prior to racking off lees, followed by stabilisation and clarification. Base wines are assembled and bottle aged for a minimum eighteen months on lees before disgorge and tirage with minimal dosage to retain complexity yet revitalise the palate.

Hand picked Pinot Noir clone MV6, an earlier ripener with softer tannins, from a single vineyard on the northeast Adelaide Hills. Fruit is treated to a cold soak, gently drawing colour from skins, pressed and vinified to choice yeasts infusing wonderful aromatics, texture and mouthfeel. One part of the ferments are drained into French oak for completion, malolactic and lees stirring. A gorgeous pink wine of expressive aromatics, mouth filling textures in support of an exquisite balance between complex fresh fruit flavours, juiciness and savoury, light tannin characters.

Hand picked fruit and a measure of whole bunch clusters, barely crushed and cold soaked for a wild indigenous yeast ferment, gently plunged and delicately pumped over, to extract gross solids while preserving textural integrity, followed by an extended soak up of optimal tannins and ten months maturation in good French oak. Youthful aromatic expressions of sweet red cherries, mulberries and plum, a fully complex and lingering palate, the oak is light and subtle to complement the fine grained tannins, juicy winegum flavours and savoury, morello acidity.

Grown to the the Waenga silty loam soils of Amisfield's lower terraces on the parched, chilly mesoclimes of Central Otago, the challenging aspects yield a comely harvest of Pinot Noir which translates into a piquant Rosé of juicy berry flavours and light tannin profile. Grapes are all hand picked and cold soaked for a day or two, extracting rakish hues and a measure of savouryness. Vibrant pomegranate and watermelon nose, a palate of fresh red berry sorbet characters before crisp lingeringly dry finish, a portion of seasoned French oak ferments adds notes of caramel.

Grapes are all hand picked, some whole bunches are included and a component of the wine begins its ferment amongst the vines. A month of cold macerations and natural indigenous yeast vinification is followed by a gentle press into a selection of seasoned and new French oak barriques for completion of malolactic, a judicious term of age, rack and return, before bottling, unfiltered and unfined.
 
Deep dark beetrot red. Complex bouquets, layers of dark berries and red fruit intertwine with delicate spice. The palate exhibits marvelous power and restraint, a lineal backbone of vibrant acidity in support of a broad mouthfilling, textural canopy of savoury varietal fruits, fine black velvet tannins in support, simply an action packed palate before a lengthy, undulating finish.

Parcels of Chardonnay grapes with a slightly larger component of Pinot Noir are hand picked from the most prestigious vineyards within the comprehensive Hardy viticultural portfolio in Tasmania. Following a gentle whole bunch press and fining, individual batches are vinified on light grape solids before the completion of malolactic on primary ferment lees. Once clarified, the base wines are judiciously assembled to style and prepared for secondary fermentation in bottle. Extended maturation on yeast lees builds further complexity and depth of character into the wine. A traditional expedition dosage completes the process, adding the last components of complexity and ensuring precise palate balance. Alcohol 12.4%
 
Crystal clear with an extremely fine bead and persistent mousse, delicate colour of fresh straw with a bright green/ gold hue. On the nose, the wine has an unmistakably inviting and complex melange of aromas with influences of fresh oyster, sour dough yeast as well as the aromas of exotic spices, vanilla bean and nougat. An elegant, mineral palate structure with flavours evolving in the glass around lychee, truffle, cinnamon and lanolin. Crystal clear with a fine and persistent bead, deep straw in colour with a bright yellow gold hue. The nose shows intense mushroom/ butter/ toast characters with lanolin and oyster nuances. On the palate, the wine is rich and flavoursome, whilst very complex and intense. Multi layered flavours of truffle, toast and sea brine combine with a great length of flavour and brightness. After a term of cold settling, the individual batches are vinified on light grape solids, followed by a course of malolactic on primary ferment lees. Once clarified, the wines are judiciously assembled to style and prepared for tirage. Six years maturation on yeast lees has built additional complexity and depth. Degorgement and introduction of expedition liqueur completes the Methode traditionelle.
 
Straw gold hue, crystal clear with fine bead and persistent mousse. Bouquets of orange peel and clove, a sea brine influence, complexed by fresh brioche and pastry yeast aroma. Like the bouquet, lively flavours of sea brine, citrus peel and sweet jasmine flower are complemented on the palate with truffle and butter/ mushroom characters.
