The finest parcels of estate grown fruit, planted to four superior rows of Pinot Noir on the Hoddles Creek property at Gembrook. A holistic management of the vineyard is central to the realization of exceptional fruit, respect for local fauna and a focus on traditonal hands on viticulture are essential to the integrity of harvest. Rows 22 to 26 always yield something spectacular with each new vintage, the mix of Burgundian and new world clones are hand picked and separately vinified for release as an exquisite limited edition, only made in the finest vintage years.

Hoddles Creek was established with a view to selecting the most challenging terrains, to plant the type of vineyard which serves Pinot Noir best. The auspicious single block of original estate vines are characterized by moderate shoot length and small precious berries, they produce a mere 1.3 kilograms per planting. Fruit is all hand picked and crushed into fermenters for cold soak, a fifth are included as whole bunches for added structure and finer tannins. Batches are pumped over for optimal extraction. Upon completion, components are filled to a high proportion of new French oak barrels to begin a course of eighteen months maturation, bottled without any stabilization, unfiltered and unfined. Alcohol 13.2%
 
Dark raspberry hues. Potpourri and floral spice, sen sen and lamb over compotes and cherry ripe, whole bunch complexity and curls of rosey oak. Layered yet seamless palate of defined fraises de bois characters, dark jube and affable cherry acidity supported by a veneer of French cocoa oak and lingering length of plush velvet tannins.

Pure Tasmanian Pinot Noir, crafted from the choice of hand picked fruit, a harvest from Relbia on the island's north is vinified alongside parcels from the Frogmore Creek property and Richmond in the Coal River Valley to the south. 42˚S is the common latitiude which divides two slightly different mesoclimes of the apple isle, the highly accomplished team at Frogmore Creek literally source the pick of the crop. The fickle Pinot Noir is very much at home here, where prevailing westerlies slowly ripen grapes to achieve a graceful, old world style of wine.

The Tasmanian terroir loves to grow Pinot Noir and Pinot Noir loves the growing season of Frogmore Creek's Campania property. The hand picked grapes are given a forty eight hour cold soak before being inoculated for vinification in a combination of small one tonne and 1┬Ż tonnes open fermenters. Batches are hand plunged three times daily and pressed off skins for completion of primary ferments, followed by transfer to oak for malolactic before racking off lees. The finished wine is treated to extended maturation in a selection of new and seasoned French oak barriques, followed by a cross flow filtration before bottling, to preserve freshness and vitality of fruit.
 
Medium scarlet red. Pure red cherry and blackcurrant aromas. A palate brimming with currant and cherry, followed by a complex mix of red berry flavours. The fresh fruit characters linger, all supported by a soft, elegant tannin structure. A superb Pinot wine to mate with all good faire, innately suited to Italian pork salciccia and truffled polenta.

Frogmore Creek at Campania in Coal River Valley yields the finest sparkling wine grapes on the apple Isle. 42┬░ South is given the full luxury treatment, an extended ageing on lees extracts exceptional richness from sediments, to be followed by disgorgement and doseage in true Methode traditionelle.

The Campania property has over a hundred acres are under vine, all are planted to blocks purposely selected for the suitability to each grape variety. There are twenty seven individual blocks, each situated on very different altitudes. All were established with northerly aspects, allowing vines to receive the greatest possible sunlight. Chardonnay, Pinot Noir and Meunier are whole bunch pressed to retain delicacy. Fruit is treated to a clean primary ferment prior to racking off lees, followed by stabilisation and clarification. Base wines are assembled and bottle aged for a minimum eighteen months on lees before disgorge and tirage with minimal dosage to retain complexity yet revitalise the palate.

Hand picked Pinot Noir clone MV6, an earlier ripener with softer tannins, from a single vineyard on the northeast Adelaide Hills. Fruit is treated to a cold soak, gently drawing colour from skins, pressed and vinified to choice yeasts infusing wonderful aromatics, texture and mouthfeel. One part of the ferments are drained into French oak for completion, malolactic and lees stirring. A gorgeous pink wine of expressive aromatics, mouth filling textures in support of an exquisite balance between complex fresh fruit flavours, juiciness and savoury, light tannin characters.

Lemony pale, a honey gold in colour with a creamy straw yellow mousse. Established 1982, Scotchmans Hill host a tally of the most superior blocks of vine on the Bellarine. A splendid single vineyard Pinot Noir, only ever made in extremely limited quantities, grapes are all hand picked and painstakingly destemmed into small three tonnes fermenters for several days of cold soak, as the wild indigenous yeasts begin to weave their magic. Batches are hand plunged over the course of a fortnight, followed by a gentle press into a high proportion of new Troncais French oak barriques for sixteen months maturation.

Parcels of Chardonnay grapes with a slightly larger component of Pinot Noir are hand picked from the most prestigious vineyards within the comprehensive Hardy viticultural portfolio in Tasmania. Following a gentle whole bunch press and fining, individual batches are vinified on light grape solids before the completion of malolactic on primary ferment lees. Once clarified, the base wines are judiciously assembled to style and prepared for secondary fermentation in bottle. Extended maturation on yeast lees builds further complexity and depth of character into the wine. A traditional expedition dosage completes the process, adding the last components of complexity and ensuring precise palate balance. Alcohol 12.4%

On the nose, the wine has an unmistakably inviting and complex melange of aromas with influences of fresh oyster, sour dough yeast as well as the aromas of exotic spices, vanilla bean and nougat. An elegant, mineral palate structure with flavours evolving in the glass around lychee, truffle, cinnamon and lanolin. Exhibits fantastic persistence of flavour, the natural acidity and subtle quality oak tannins are the backbone of this textural wine. Crystal clear with a fine and persistent bead, deep straw in colour with a bright yellow gold hue. The nose shows intense mushroom/ butter/ toast characters with lanolin and oyster nuances. On the palate, the wine is rich and flavoursome, whilst very complex and intense. Multi layered flavours of truffle, toast and sea brine combine with a great length of flavour and brightness. A dry style with a refreshing, natural acid finish.
