Clairault Cabernet Merlot 2010
Margaret River

A generously flavoured cépage of roughly equal amounts Cabernet Sauvignon and Merlot with a portion of Cabernet Franc. Clairault Vineyard yields parcels of small but intensely flavoured Merlot berries with fragrant herbal characters. A solid backbone of Cabernet Sauvignon exhibits sweet varietal fruit characters, dark cherry flavours and ripe tannins.

Clairault is situated approximately ten kilometres south of Yallingup within the Wilyabrup locality of Margaret River. The property contains four dams, eighty hectares of remnant bushland, forty of grazing land and the upper reaches of the Gunyalgup, Quininup and Big Brooks, which join up with Wilyabrup Brook. The remnant bushland comprises jarrah, marri and banksia open forest with small areas of peppermint closed forest. Cabernet, Merlot and Franc are fermented in small four tonnes vessels and pumped over twice daily. The Merlot is taken off skins after a week, the Cabernet is treated to ten days. Components are matured a year to eighteen months in seasoned French oak barriques.
 
Bright garnet colour. A compelling bouquet of vibrant cherry and dark berry characters with touches of mintiness, dried herb, dark chocolates and vanilla, all well integrated, balanced and gentle. Supple, silky yet distinctly tangy flavours, the palate is medium bodied with upfront plummy sweetness followed by a herbal savoury length. The tannins are fine grained, almost silky in texture. Overall the wine shows good fruit purity, balance and typicity. Would suit lamb, steak or eggplant recipes, a superb accompaniement to rare duck.

Clairault Vineyard was the sixth estate to plant vines and remains one of the oldest privately owned winemaking operations within the premier Wilyabrup sub-appellation of Margaret River. The pristine, undulating property, situated less than four kilometres inland from Cape Clairault peninsula and 120 meters above sea level, is endowed with bountiful creeks, natural springs and some of the oldest native forests in the southwest.

Biological farming is a passion at Clairault, incorporating a mix of organic and conventional farming techniques which place a strong emphasis on soil biology. The achievement is high quality Chardonnay, such low intervention techniques ensure that only the healthiest grapes are grown, achieving optimum flavour for in the final wine. Fruit is picked early morning and pressed straight away at cool temperatures to retain freshness and vibrancy. A component is barrel fermented in a combination of new and prior use French oak barriques. The wine stays on lees in barrel for the first ten months, stirred and topped fortnightly. Stirring drops back to monthly until the final wine is assembled. Alcohol 13.5%
 
Pale yellow in colour. The bouquet offers ripe fruit characters of cumquat, fig and tropical fruits over secondary oak derived aromas of toast, roasted cashews and vanilla. The palate shows sweet melon fruit surrounded by a fine mesh of oak tannins. The palate is rounded with a soft acidity, good length of flavour and a clean finish. A match with guinea fowl or king george whiting.
Clairault Semillon Sauvignon Blanc 2011

Clairault is one of the pioneer vineyard wineries in Margaret River. Their aim is to create balanced, well structured wines which reflect a unique terroir and the outstanding quality of fruit from a fully mature site. Semillon in particular is a stand out performer, vinified alongside parcels of intensely aromatic Sauvignon Blanc, into a crisp, clean wine with crunchy flavours, the classic dry Margaret River white with immense drink now appeal.

Clairault implements a non interventional approach to winemaking, focusing on aromatics, picking on the basis of flavour rather than fruit sugar. This achieves wines with a superb array of flavours and a seamless mouthfeel, good natural acidity and strong varietal character. Fruit picking occurs over several days as each block achieves optimum ripening, harvested throughout the cool of night and chilled. Only the free run juice and very light pressings are utilized, eliminating the need for corrective finings of extracted press wines. Following settling and racking, ferments ware initiated with select aromatic yeast strains. Upon completion, the wine is assembled, stabilised and filtered without delay. Alcohol 12.5%
 
Pale straw in colour. Bouquet is bright and fresh, newly cut grass aromas, guava and orange blossom. Pleasingly dry with a gentle and well balanced acidity, the long, tightly focused palate is delicate and refined, showing clean flavours of citrus, lime and honeydew melon. Lemon, lemongrass and mineral flavours running through to the crisp finish, a very natural expression of Semillon and Sauvignon Blanc exhibiting great purity.
