Bay of Fires vineyards normally experience a growing season quite similar to Reims, Burgundy and Alsace. Roughly equal parcels of Pinot Noir and Chardonnay with a smaller component of Pinot Meunier are hand picked and whole bunch pressed, to ensure freshness and elegance of structure. After fining, the individual batches are vinified on light grape solids and treated to malolactic on primary ferment lees. Once clarified, the wines are assembled to style and prepared for triage. Extended maturation on yeast lees builds additional complexity and depth of character, while the expedition liqueur and inclusion of aged reserve wines contributes to the overall depth and dimension of palate. Billecart Salmon is one of the last familial Houses of Champagne, all the wines are marked by the seal of excellence. The story begins with the wedding of Nicolas François Billecart and Elisabeth Salmon. The marriage lead to the founding of the distinguished Champagne House of Billecart-Salmon, established in 1818 at Mareuil-sur-Aÿ. Two centuries later, the seventh generation of the family still manages the Champagne company and oversees the crafting of each individual bottle, maintaining the legend of the Spirit of Champagne. The original love of the founders, lives on through the devoted viticulture, and passionate winecraft, a philosophy which has been cultivated around three principal values, finesse, balance and elegance.
 
Honeyed in colour and bouquet, distinct for the finesse of it's slowly rising bubbles, and persistent mousse. Maturation has not robbed it of an amazing floral freshness, it exhibits lovely aromas of ripe pear. Champagne Billecart Salmon fashions the most exquisite wines from choice parcels of fruit grown to twenty five acres of distinguished sites around its headquarters in the village of Mareuil-sur-Ay. Unlike many better known marques, the noble House of Billecart Salmon has elected to remain small in size and limit their production, focussing on quality and consistency over quantity. A cooler, temperature controlled fermentation, inoculated to finely aromatic yeasts, serves to preserve the freshness in the final wine and infuse the bouquet with the most exquisite expressions. Various components are treated to lees batonnage, malolactic fermentation and a spell in Burgundian oak barrels.

The first fermentation is done Cru by Cru, individual batches are kept separate, preserving the unique characters of the source vineyards. Bollinger is one of the very few Houses of Champagne to do some first fermentation in oak barrels. Bollinger uses small tanks to ferment its wines, improving the control of the fermentation process, enhancing the quality of wines in the Special Cuvée. Bollinger spends an exceptionally long time resting on it's sedimentery lees, contributing to the complexity. On average, the blend comprises 60% Pinot Noir, 25% Chardonnay and 15% Pinot Meunier. A further component of 5% to 10% reserve wines, from several different origins, all Grand and Premier Crus, all stored under cork.
 
Aromas of honey and biscuit, an immensely fine bead, a colour like platinum straw, pale amber gold. There is richnes and unparalleled complexity to the bouquet, there is both sweet fruit and astringency. Peach and praline, sweet smelling warm yeasty brioche, butter and almonds, citrus and soft pear. There is an intricate balance to the palate, a finesse that comes from inimitable blending and cellaring at the ancient cellars. The distinct chalkiness of Champagne is set against the alchemy of fruit compote flavours, refreshingly acidic, apricot and tropical fruit, butter and semolina cake. The climate at Whitlands is ideal for retaining the type of acidity so essential to this style of wine. The property sits at eight hundred metres above sea level in the sub alpine area at the top end of the King Valley. Fruit is hand picked and whole bunch pressed through an air bag. Grapes are treated gently to yield a scant five hundred litres of juice per tonne, minimising the impact of harsher compounds from skins. Base wines are treated to full malolactic for complexity. The secondary ferments are deliberately extended to produce a fine bead, then rested an extravagant five years on lees to develop further complexity. Patricia is then disgorged and liqueured, at an alcohol of 12.5%
 
Light straw colour with fine persistent bead. Llifted nose with a rich yeast autolysis character and hints of citrus and apple. The palate is full bodied, complex and rich with prominent lemon/ lime flavours and a bready character which lingers. The mouthfeel is creamy and elegant before a crisp, dry finish and with refreshing acidity. This complex and rich sparkling wine deserves to be accompanied by the finest faire, hors d'oeuvres or scallops, soufflé or brie.

Milawa is the birth place of the Brown Brothers company, whence the first Brown Brothers wines were released in 1889. It is also the current site of the Brown Brothers winemaking facilities where grapes are received and vinified. All grapes are gently whole bunch pressed to minimise contact between the juice, the skins, and the seeds. 100% of the fruit underwent malolactic, following vinification, the component wines are assessed and a final Cuvée is determined. The assembled wine is then treated to a secondary fermentation in the bottle. Brown Brothers Milawa is then rested on sedimentery lees to add complexity and to allow greater time for the merging of aged and yeast autolysis characters. Approx 13.0%

An uncommon voyage of the senses .
 
Colour is unmatchable to any other wine, it posseses an unforgettable lustre, a tint that is golden straw-yellow and deep. An entrancing bead that persists, each burst emanates with the bouquets of this famous wine. The nose is delicate but fresh. In the beginning floral notes with violet, irises and lilac. On the palate there is a rush of giggly yeast, great swathes of of fresh from the oven hot baked brioche flavours, golden buttery thick with candy like oils. There are hints of citrus peel closely followed by fruity notes of fresh fig, greengage plums and stewed rhubarb.

A true Methode Traditionalle from the holy trinity of classic sparkling varietals, Clover Hill is a composition of selected reserve wines aged in French oak foudres, a process which ensures the unique personality of the Clover Hill house style. Taltarni boast of the fact that their average yields are less than half those in Champagne, resulting in a more concentrated juice. Clover Hill is topped up and treated to a minimum of three years on lees with a subsequent ageing under cork for a minimum of several months. The liqueur doseage is prepared from a selection of base wines, set aside for ageing in oak foudres. Alcohol 12.4%

Fruit is sourced entirely from the Clover Hill vineyard on Pipers River, the premier location for sparkling wine in Australia. A limited release, Brut Rosé is crafted via controlled maceration of Pinot Noir grapes to extract a soft, pink colour and reveal a highly expressive bouquet of rose petal and red strawberries. A small amount of Pinot Meunier is included prior to bottling, adding fragrance and middle palate weight. Made according to true Methode Traditionelle, fermented in its own bottle and aged on yeast lees for at least three years, ensuring the complexity and intensity that is the hallmark of Clover Hill. Cuvée Eleanora draws grapes from the august inventory of estate vineyards, the winemakers have turned out small parcels of generously flavoured grapes and created an exciting wine that fuses the holy trinity of Chardonnay with Pinot Meunier, as dominated by the masculinity of Pinot Noir.

Cockatoo Ridge went to the Adelaide Hills and the King Valley for fruit that would best suit the stylish Cuvée Eleanora. A non vintage assemblage of elite wines, the Chardonnay largely drawn from the King Valley, the Pinot Noir material largely from the Adelaide Hills. A small component of Pinot Meuniere, at around ten percent, from the King Valley has been folded into the blend to enhance the complexity of fruit, and to bring the wine closer still to it's flavoursome continental siblings. The wine was kept on tirage for over a year, prior to disgorging and final bottling. The result is an elegant sparkling Cuvée displaying fine fruit, superb mouth feel and refreshing tang of good acidity. Alcohol 12.9%
 
Appearance is a pale straw with light apple green highlights, a fine effervescence and a persistent bead. Aromas of biscuit and fruit, caramel, cherry and grapefruit. The palate displays whisps of strawberry, toastyness and creamy textures, peach and sour morello cherry, vanillan and marzipan. A judiciously fruit-driven sparkling wine, with underlying yeast complexity, a grapefruit-like acidity, long and persistent. The Pinot Noir component contributes cherry-like expressions and structure, the Chardonnay drives the palate with tropical characters and elegance, while the Pinot Meuniere adds brightness and fruit. Cuvée Eleanora is unique and stylish, flavourful and refreshing, squeaking clean and satisfying.
