An assemblage of fruit grown to the Balgownie property in Bendigo with choice components from good vineyards in central Victoria and Yarra Valley. Influenced by the Mediterranean climes and temperate nights, Bendigo Sauvignon Blanc is characterised by warmer weather passionfruit and lychee. Slower ripening parcels from the cooler, lower latitudes and elevated aspects of Yarra Valley bring vital grass and mineral notes. An identifiable expression of Victorian Sauvignon Blanc, exhibiting good fruit, herbaceousness and immense drinkability factor.

The long and cool ripening conditions of Yarra Valley yield Sauvignon Blanc wines which are enjoyed across Australia for their vital, elegant palate structures, requisite vegetative characters and well balanced natural acidity. Parcels grown to warmer sites in Bendigo and central Victoria contribute richer tropical characters. Two unique clones of Sauvignon Blanc are harvested in separate passes through the vineyards to optimumly capture the vibrant fresh characters of early harvested fruit just as the grapes achieve full physiological ripeness. Following the press, the purest free run juices are treated to a cool fermentation over a course of six weeks, lightly fined, filtered and bottled promptly after vinification.
 
Light straw in colour. Bright, fresh tropical and grassy fruit notes leap from the glass. Palate exhibits lovely passionfruit flavours, grapefruits and asparagus, a touch of lemongrass and quartz character are completed by a crisp acid finish. The perfect wine to accompany Vietnamese rice paper rolls, seafood dumplings or Thai sweet chilli prawns.

Fruit is sourced from upper reaches of the cool climate Yarra Valley, Strathbogie and Goulburn. The Chandon team are focused on sourcing parcels off vineyards that are planted to soils which are ideal for Sauvignon Blanc. Vines are meticulously maintained to achieve dappled light throughout the canopy, ensuring the retention of pristine flavours. Grapes are harvested throughout the cool hours of morning as they can best begin to display optimum intensity and acid balance. Fruit is pressed and the juices held in contact with lees for a short time to liberate complex flavours and add texture. Batches are racked to fermenters and inoculated by a strain of yeast that's highly complementery of Sauvignon Blanc.

The scale of operations for most Yarra Valley vineyards borders on the boutique, making impracticable the automation which other regions enjoy. Yarra Valley Chardonnay is a distinctive Australian style of wine, complex, fruit driven and food friendly. Crafted by devoted winemakers and growers who utilize organic methods in their vineyards and practise traditional as well as modern techniques throughout the vinification. A number of tasks are still done by hand, cultivation, pruning and picking, hand pressing, plunging and racking. The care and attention as well as the foibles that are part of the winemaking process, give good wines their personality. Through good viticultural practices the fruit is made to ripen to great levels of concentration, translating into a finished Chardonnay of good complexity and fine balance.
 
Pale straw hue. A fine bouquet of peaches and melon, limes and nuttyness. This elegant Chardonnay has a creamy palate brimming with citrus, vanillan and delicate butter character. A bright and zesty, medium bodied wine with a rich front palate that continues smoothly with great length and power to finish on supple hints of hawthorn and toast. A Chardonnay that's well ahead in it's class, drinking beautifully on release.
Coldstream Hills Chardonnay

With well in excess of a hundred hectares under vine, completely estate owned and operated, Coldstream Hills can exercise their options to source grapes from a litany of Upper Yarra as well as Lower Yarra Valley vineyards, ensuring that only the best quality fruit is included into their profound Chardonnays. In lesser years, Coldstream does not release a Reserve, directing all their finest parcels into this very wine. The classically cool climate style of Chardonnay, with excellent intensity of fruit, rejuvenating acids and tightly reined in, well controlled oak.

The Yarra Valley's cooler, slow ripening climes yield the most distinctive wines. Chardonnay typifies the Coldstream Hills style, with good varietal expression foremost on the bouquet and palate. There is an emphasis placed on showcasing the fruit and deriving length of flavour. The aim is to construct a wine characterised by elegance and finesse, enhanced by subtle oak complexity. Grapes are selected on the basis of heightened flavour profiles, good balance between natural sugar and acid. Barrel fermented and matured in a combination of new and seasoned French oak barriques, puncheons and vats with occasional lees stirring, completed without any malolactic to remain an essentially fruit driven style.
 
Pale straw green in colour. The nose shows attractive characters of citrus, nectarine and quince with underlying toasty oak. White peach, nectarine and lemon characters dominate the palate, nougat and cashew nut barrel ferment characters, toasty French oak and slatey minerality providing additional complexity.

Coldstream Hills Reserve Chardonnay 2011

The pinnacle of cool climate viticulture, made from a very strict selection of the finest parcels, with a component from the low yielding House Block. Produced only in years where the quality is deemed to be exceptional, from a selection of mature, low yielding blocks. Stylistically, Coldstream Reserve displays attractive cool climate characters of stonefruit and citrus. Oak plays an important role, but does not dominate. Secondary characters of barrel ferments and soil/ grape solids derived minerality, adding further layers of complexity.

The culmination of a strict selection process, where the quality of wine is without peer. In addition to the twenty year old House and G Blocks, Briarston Vineyard provides an outstanding resource of French Bernard clone, which adds elegance and length. Gentle handling practices, including whole bunch pressings are carried out, every parcel is treated to a course of barrel ferments which adds richness, texture and layers of complexity. Upon completion, components are matured ten months in a selection of seasoned and new French oak barrels, without any malolactic to maintain natural acidity, before assembling into the finished wine. Alcohol 13.0%
 
Pale straw, green hue. The nose shows attractive white peach, quince and citrus notes with underlying toasty oak and minerality. A tightly structured wine with fine acid line and good length. The palate exhibits attractive stonefruit and citrus combined with cashew nut barrel ferment characters. Flinty, minerally notes are evident in the background and will continue to develop as the wine ages.
Coldstream Hills Sauvignon Blanc

Situated amongst the scenic, cool ripening climes of Yarra Valley, the steep aspects and closely planted Coldstream Hills vines yield harvests of the finest Sauvignon Blanc. The wines here are quite literally hand made, not withstanding the skill of the winemakers, there has been no significant change in the art of vinification. The aim is to produce a definitive Yarra Valley Sauvignon Blanc, characterised by elegance and finesse, by silky supple texture, length of flavour and the ability to offer sophistication and complexity, within a forward drinking fruit driven style.

Forming an integral part of the Coldstream Hills varietal range, in some years, a percentage of Semillon is included to add texture. There is an emphasis here on clarity of varietal fruit and length of flavour. Sourced predominantly from hillside vineyards in the cool Upper Yarra, grapes are gently pressed, approximately a third of the juices are barrel fermented and matured in a selection of older French oak barriques and puncheons. The balance is treated to a course of vinification in controlled fermenters and stored on fine lees with occasional stirring. A small percentage of Semillon from the prestigious Rising Vineyard is included into the final wine to add complexity and texture. Alcohol 13.0%
 
Pale straw with light green hues. Clean and fresh nose with attractive notes of lemon rind, lychees and passionfruit. Underlying nougat barrel fermentation characters are present adding further complexity. An elegant style offering flavours of passionfruit, lychees and lemon citrus. Subtle oak underpins the wine's texture and length. The palate is finely balanced, finishing with chalky lemon acidity.

De Bortoli work to the belief that sustainable vineyard practices deliver exceptional quality wines as well as providing real benefits to the environment. Vibrant characters are preserved throughout vinification with gentle, low intervention techniques, creating a wine with varietal definition and purity. Parcels of Chardonnay are selected from four estate properties, hand picked off mature, low yielding vines which consistently produce the finest quality fruit. Grapes are whole bunch crushed and pressed to extract good phenolics for texture and minerality. Juices are settled overnight before racking to a collection of seasoned French oak casks for a course of lees stirring and wild, indigenous fermentation. Alcohol 12.5%
 
Light straw with green hues. Refreshing citrus lift with background notes of hazelnuts and slight, toasty aromas. Tight lean citrus like fruit. A textured palate which shows savoury characters of hazelnuts wound together with some balanced phenolics to give length and longevity. De Bortoli PHI Chardonnay

Lusatia Park is one of the most distinguished vineyards in Yarra Valley, choice clones of closely spaced vines were planted to the north facing Block A in 1995, they yield a spectacular harvest of intense, finely structured Chardonnay with each vintage. Fruit is hand sorted and whole bunch pressed, racked to barrel for a wild yeast ferment and completion of malolactic, followed by a course of intermittent lees stirring until the spring. A minerally, highly nuanced style of Chardonnay, creamy textured with a gentle acidity, mouthfilling and briny in the old world way, delicious.

Fashioned from the pick of fruit on Section A5 at Dixons Creek, an extraordinary Chardonnay of prominent peach, melon and fig characters, a wine of focus, power and restraint.

Vines are planted north to south, soils are highly mineral siltstones which produce a most interesting wine. Blocks which can enjoy less exposure contribute the greatest detail to the final wine. When optimum flavour in the ripening berries is achieved, grapes are hand picked, whole bunch crushed and pressed to extract some good phenolics for texture and minerality. Juices are cold settled for clarity, racked to a selection of seasoned French oak casks and treated to a wild indigenous yeast fermentation. Lees are stirred regularly from the late autumn until early spring. Components are matured for up to a year in a selection of prior use 225 Litres French oak barriques.
 
Light straw with green hues. White flowers and hazelnut, complex mineral notes, citrus and fig, flintyness and peach. Gently textured, slightly savoury palate of refined phenolics, hazel nuttynesss and crisp nervy acid, good drive and length. Long flavoured, textural, a bliss with John Dory or gnocchi and creamy sage sauce.
De Bortoli Section A7 Riesling

A wonderfully auspicious site for Riesling, Block A7 was planted to a propitious stretch of calcarous Humevale siltstone soils at Dixons Creek vineyard in 1987. Crafted to the timeless old world styling of its siblings along the Mosel and Valley Rhine, the fruit of Block 7 is all hand picked and treated to a long cool ferment, followed by a term on sediment lees to build delicate structure and infuse complexities. Elegant and fine, with a flourish of orange blossom and floral notes, its lithe, tightly focused palate is laden with mineral, defined by its balance and gentle lime acidity.

A collation of parcels sourced from a qabal of De Bortoli client growers, the eminent Viggers vineyard, Abbey and Lusatia Park, Martins and Emu, assembled around a solid backbone of sections A7, B2 and B4, estate grown Chardonnay. The Martins property is planted to French clones Bernard 96 and 76. Lusatia Park at Woori Yallock, yields a quality of Chardonnay that's always steely, chilled and superfine. All fruit is hand picked, whole bunch crushed, pressed and settled overnight. The clear juices are racked to French oak casks for a wild indigenous yeast fermentation and full malolactic. Lees are stirred in the late autumn and winter, to be followed by a spell of rest and assemblage in spring. Alcohol 12.7%
 
Light straw hue with a green edge. Citrus florals, struck match and nutty oak, minerality and distinctly fine Chardonnay character. Gently textured palate, savoury and chalky phenolics, hints of raw and grilled nuts, expressions of wilderness and white game. An evolving finish with lees complexity and vanilla char, making Villages a suitable accompaniement to a well prepared, freshly grilled octopus.
