An assemblage of fruit grown to the Balgownie property in Bendigo with choice components from good vineyards in central Victoria and Yarra Valley. Influenced by the Mediterranean climes and temperate nights, Bendigo Sauvignon Blanc is characterised by warmer weather passionfruit and lychee. Slower ripening parcels from the cooler, lower latitudes and elevated aspects of Yarra Valley bring vital grass and mineral notes. An identifiable expression of Victorian Sauvignon Blanc, exhibiting good fruit, herbaceousness and immense drinkability factor.

The long and cool ripening conditions of Yarra Valley yield Sauvignon Blanc wines which are enjoyed across Australia for their vital, elegant palate structures, requisite vegetative characters and well balanced natural acidity. Parcels grown to warmer sites in Bendigo and central Victoria contribute richer tropical characters. Two unique clones of Sauvignon Blanc are harvested in separate passes through the vineyards to optimumly capture the vibrant fresh characters of early harvested fruit just as the grapes achieve full physiological ripeness. Following the press, the purest free run juices are treated to a cool fermentation over a course of six weeks, lightly fined, filtered and bottled promptly after vinification.
 
Light straw in colour. Bright, fresh tropical and grassy fruit notes leap from the glass. Palate exhibits lovely passionfruit flavours, grapefruits and asparagus, a touch of lemongrass and quartz character are completed by a crisp acid finish. The perfect wine to accompany Vietnamese rice paper rolls, seafood dumplings or Thai sweet chilli prawns.

The Domaine Chandon and Green Point operations are located amongst some of the most superlative Chardonnay vineyards of the Yarra Valley. Moet & Chandon first purchased the Green Point property with the intention of establishing a leading Australian brand. Vines were planted to soils made rich after many decades of mixed farming. Fruit is sourced primarily from the cooler, elevated sites of the Upper Yarra Valley, off vines planted to red volcanic soils. Vineyards in this region are renowned for producing Chardonnay with citrus flavours and high natural acidity at moderate sugar levels. Parcels of fruit from the lower reaches of the Valley floor contribute lovely soft stone fruit characters.
 
Pale straw with lustrous shades of green. The aroma expresses pristine varietal characters of white nectarine, ripe citrus and stone fruit as well as a subtle flavour profile of sweet, exotic spice. The palate is complex, structured and layered showing excellent balance between the expression of vibrant fruit and the secondary characters of roasted spice, soft cheese and toasty characters derived from fermentation, aging and lees stirring in French oak.

Fruit is sourced from upper reaches of the cool climate Yarra Valley, grown to a variety of soil types ideal for Sauvignon Blanc. Vineyards are meticulously maintained to achieve dappled light throughout the canopy, ensuring the retention of pristine flavours. Grapes are harvested when they can best display optimum intensity and acid balance. Bunches are pressed in the coolest part of the early morning, juices are held in contact with lees for a short time to liberate complex flavours and add texture. Ferments are racked and inoculated to a strain of yeast which complements the fruit. Vinified under strict controls at cool temperatures in tank, followed by clarification, assembling and bottling. Alcohol 12.0%

Yarra Valley Chardonnay is a distinctive Australian style of wine, complex, fruit driven and food friendly. Crafted by devoted winemakers and growers who utilize organic methods in their vineyards and practise traditional as well as modern techniques throughout the vinification. A number of tasks are still done by hand, cultivation, pruning and picking, hand pressing, plunging and racking. The care and attention as well as the foibles that are part of the winemaking process, give good wines their personality. Through good viticultural practices the fruit is made to ripen to great levels of concentration, translating into a finished Chardonnay of good complexity and fine balance.
 
Colour is a pale straw. A fine bouquet of peaches and melon, limes and nuttyness. This elegant Chardonnay has a creamy palate brimming with citrus, vanillan and delicate butter character. A bright and zesty, medium bodied wine with a rich front palate that continues smoothly with great length and power to finish on supple hints of hawthorn and toast. The Yarra Valley's cooler, slow ripening climes yield the most distinctive wines. Chardonnay typifies the Coldstream Hills style, with good varietal expression foremost on the bouquet and palate. There is an emphasis placed on showcasing the fruit and deriving length of flavour. The aim is to construct a Chardonnay wine characterised by elegance and finesse, enhanced by subtle oak complexity. Grapes are selected on the basis of heightened flavour profiles, good balance between natural sugar and acid. Barrel fermented and matured in a combination of new and seasoned French oak barriques with occasional lees stirring, the wine is vinified without any malolactic treatment to remain an essentially fruit driven style.
 
Pale straw green in colour. The nose shows attractive characters of citrus, nectarine and quince with underlying toasty oak. White peach, nectarine and lemon characters dominate the palate, with cashew nut barrel ferment characters, toasty French oak and slatey minerality providing additional complexity. The pinnacle of cool climate winemaking and viticulture, made from a very strict selection of the best grapes, with a component from the low yielding House Block. Produced only in years where the quality is deemed to be exceptional, from a selection of mature, low yielding vineyards. Stylistically, the wine display attractive cool climate fruit characters of stone fruit and citrus. Oak plays an important role, but does not dominate. Secondary characters of barrel fermentation and soil/ grape solids derived minerality add further layers of complexity.

The culmination of a strict selection process, where the quality of the final wine is paramount. In addition to the twenty year old House and G Blocks,the Briarston Vineyard provides an outstanding resource of French Bernard clone which adds elegance and length. Gentle handling practices, including whole bunch pressing are carried out, with each batch undergoing barrel fermentation in new and used French oak. Wines remain on yeast lees post fermentation for approximately ten months until assembling. In order to maintain natural acidity, malolactic fermentation is not encouraged. Matured in a combination of new and one year old French oak barriques.
 
Pale straw with a tint of green. The nose shows attractive white peach, quince and citrus notes with underlying toasty oak and minerality. A tightly structured wine with good acid line and length. The palate exhibits attractive stonefruit and citrus combined with cashew nut barrel ferment characters. Flinty, minerally notes are evident in the background and will continue to develop as the wine ages. Completely barrel fermented in French oak, an exemplary cool climate Chardonnay, with exquisite complexity and fine length.
Coldstream Hills Sauvignon Blanc 2012

Situated in the scenic, cool ripening climes of Yarra Valley, the steep aspects and closely planted Coldstream Hills vines yield harvests of the finest Sauvignon Blanc. The wines here are quite literally hand made, not withstanding the skill of the winemakers, there has been no significant change in the art of vinification. The aim is to produce a definitive Yarra Valley Sauvignon Blanc, characterised by elegance and finesse, by silky supple texture, length of flavour and the ability to offer sophistication and complexity, within a forward drinking fruit driven style.

Forming an integral part of the Coldstream Hills varietal range, in some years, a percentage of Semillon is included to add texture. There is an emphasis here on clarity of varietal fruit and length of flavour. Sourced predominantly from hillside vineyards in the cool Upper Yarra, grapes are gently pressed, approximately a third of the juices are barrel fermented and matured in a selection of older French oak barriques and puncheons. The balance is treated to a course of vinification ion fermenters and stored on fine lees with occasional stirring. A small percentage of Semillon from Rising Vineyard is included into the final wine to add complexity and texture. Alcohol 12.0%
 
Pale straw with a tinge of green. Clean and fresh nose with attractive notes of lemon rind, lychees and passionfruit. Underlying nougat barrel fermentation characters are present adding further complexity. An elegant style offering flavours of passionfruit, lychees and lemon citrus. Subtle oak underpins the wine's texture and length. The palate is finely balanced, finishing with chalky lemon acidity. Excellent with pastas, seafood and vegetarian.

Grapes are whole bunch crushed and pressed to extract good phenolics for texture and minerality. De Bortoli Yarra Valley Estate Sauvignon 2010

From the illustrious De Bortoli property at Dixon's Creek in the cool climes of the Yarra Valley. Sauvignon Blanc is selected from four distinct sections of the De Bortoli estate vineyard at Dixons Creek. The influence of hand tended vines, hand picking and sorting, a little roughing up with a crusher and the use of older casks, achieves a style of Sauvignon Blanc with unique qualities.

The mature, low yielding Dixon's Creek vines, cane pruned, shoot thinned and hand picked, yield exceptional quality fruit. Grapes are whole bunch crushed and pressed until there is nothing left in the skins, the phenolics being an important textural component. Juices are roughly racked to older casks with lots of solids. The wine is allowed to ferment naturally, some components are allowed to complete their malolactic while being treated to lots of battonage over a five month period. The phenolics extracted during partial crushing and subsequent pressing are vital to producing wines with texture and minerality.
 
Pale straw with hints of green. Subtle Sauvignon fruit, quite expressive and minerally. A palate that's creamy and elegant, fine, slate flavours with good length and texture, a wine of varietal detail and purity.

Two splendid plots of vine established in 1981 and 1990 yield harvests of the most exquisite Yarra Valley Chardonnay, to be fashioned into a textural, generous wine by the talented De Bortoli team.

Vines are planted north to south, soils are highly mineral siltstones which produce a most interesting wine. Blocks which can enjoy less exposure contribute the greatest detail to the final wine. When optimum flavour in the ripening berries is achieved, grapes are hand picked, whole bunch crushed and pressed to extract some good phenolics for texture and minerality. Juices are allowed to ferment naturally in older French oak casks. Lees are stirred regularly until spring. The finished wine is treated to a term of ten months in a selection of older 225 Litres French oak barriques. Alcohol 12.0%
 
Pale yellow with green tinges. Complex nutty mineral nose, smooth citrus notes, flintyness and peach. Tight lean citrus fruit with hazelnut undertones, a long mineral/ fruit palate showing complexity and balance. Long flavoured, textural, a bliss with gnocchi and sage.

Dominique Portet has brought flair and French styling to harvests of the most splendid Yarra Valley Sauvignon Blanc. Parcels are collated from the family vineyard at Coldstream, a unique terroir which achieves a Sauvignon Blanc that's a bit unique. Firstly, grapes are left on the vine a little longer, picked by hand and pressed at cooler temperatures for a different kind of flavour. Regular lees stirring adds aromatics and infuses a gentle creaminess.
