The Adelaide Hills are making finer and more conspicuous editions of Sauvignon Blanc every year, a sampling of the fresh crisp whites from this region tells you why. Some of the most highly prized vintages of Sauvignon Blanc are coming right out of Adelaide Hills, new local wineries and small batch makers are blitzing the competitions. We've discovered an early drinking cleanskin that offers clean and racy varietal fruit, is extremely well balanced with distinctive regionality and zesty acidity, while displaying fine length and a well rounded finish.

Originally destined to be labelled and branded by a notable Adelaide Hills estate, Sauvignon Blanc is sourced from good vineyards at Woodside. Grapes are hand selected and picked throughout the early hours of morning to enhance flavour and minimise oxidation. Whole bunches are destemmed in small batches, without crushing and gently pressed. The free run juices are fermented to dry, individual parcels are trialled and tested for suitability, those most worthy for inclusion are assembled into the finished wine, to be bottled immediately after vinification, unfined and with minimal filtration to capture and retain the essence of Adelaide Hills.
 
Bright straw with distinct green edges. Intense bouquet, snow pea and green bean, a lively herbaceousness, guava, citrus and sherbet fragrances. The clean and pure succulent fruit and vegetable qualities continue, as crisp apple acids, gooseberries and bean provide complexity. Lemongrass and a touch of mineral, greenery and herbaceousness over a core of luscious tropical fruit flavours. Seamlessness between the tang of acidity and tightly knit fruit, well structured in the definable style of Adelaide Hills. This fresh and vibrant wine offers rich textures and long flavours, finishing pleasant, persistent and clean. A good choice with grilled seafood or chicken caesar.

A beauty of a wine that was crafted to the highest standards and never meant to be distributed without a label. A solid Shiraz with a backbone of fruit from distinguished Barossa sites, already exhibiting the endowments of bottle age and development, showing the complexity achieved from maturation in a selection of the finest French oak barriques. A long palate by virtue of the quality fruit from choice vineyards. The bouquet is rich, sweet and complex with a hint of spiced coconut oak, a palate that fully delivers with smooth soft tannins that seem to go on forever.

No ordinary cleanskin, the winemaking team spent much time in the vineyards working closely with the growers to nurture the vines. A rich Shiraz, traditionally vinifed from parcels of select, superior vineyard fruit, earmarked on the basis of strong varietal definition, fine aromatics and generous tannins, to be fashioned into a stately Barossa wine. Following harvest and the crush, the must is treated to a period of maceration before a no expenses spared vinification which includes painstaking traditional handling techniques to ensure that only the softest of tannins are extracted. After years of maturation under the estate cellars, tannins, oak and fruit have integrated fully and the wine is drinking beautifully.
 
An intense, deep brick red colour with dark robes. Bouquet of rich satsuma plum with raspberry overtones balanced by spice, clove and smoky vanillin oak. Many splendid layers of concentrated and complex fruit, accentuated by sweetness and earthy qualities are the wine's signature. The palate of this powerful Shiraz wine is long and complex, tightly knit and persistent, with a finish of fine and seductive, lingering earthy tannins. The structure and concentration presage longevity, greatly rewarding those who appreciate cellared wine. This is an immensely satisfying drink today, but enthusiasts should avail themselves of quantity, as the structure and intensity indicate potential to develop beautifully.

Select parcels grown to good vineyards around the Polish Hill River districts of Valley Clare form the backbone of fruit. Growing seasons are long and cool, greatly enhancing the aromaticness of white varietals, concentrating flavours and developing fine natural acidity. Riesling flourishes here and yields world class vintages. Grapes are lightly crushed and destemmed before seeding with pure yeast cultures for the cool vinification of a delicate wine, preserving the remarkable Clare Valley Riesling characters. A combination of traditional and modern winemaking techniques are employed, the aim being to achieve an articulate white wine of balance, texture and complexity.

Grapes are sourced from choice vineyards and treated to a skilled, minimalist handling of fruit, to realize a solidly structured Cabernet wine with a finely balanced, full flavoured palate, framed by assertive tannins and well integrated oak. Ready for enjoyment right now, after a spell of maturation under a combination of fine oak barrels, the signature style of Coonawarra Cabernet, a worthy accompaniement to choice cuts of beef and all robust cuisine.
 
Dark red purple colour. Rich plum and blackcurrant bouquets with intense blueberry scents and red fruit characters, violets and mint. A persistence of parched berry flavours on the palate, a firm yet pliant tannin backbone serves to support and embellish the fruit. Oak has added vanillan and cocoa characters, a garnish of five spice and soft, pencilled cedar dwell on the lingering finish. Highly regional, it may be a cleanskin but the quality and provenance distinguishes this wine and places it squarely in the best value category.
Cleanskin Coonawarra Sparkling Cabernet NV
Coonawarra remains unassailable in it's production of Australia's most praiseworthy Cabernet Sauvignon. Stocks from choice vineyards across several vintages are assembled to form the ideal base for this luscious, creamy wine. From a dedicated winemaker operating in the heart of Coonawarra. His team have managed collation of fruit, vinification, bottling and maturation, to a combination of modern and traditional winemaking techniques. Cabernet Sauvignon is harvested, sorted and crushed. Following inoculation and a temperature controlled vinification, parcels are transferred to a large pressure tank where they are topped up by a dose of liqueur and treated to a secondary fermentation. Batches are then racked to oak for an extended maturation. Upon completion, barrels are all sampled and trialled, the final assemblage is determined and the finished wine is transferred under pressure into it's own bottle.
 
Deep red/ purple in colour with a fine bead and persistent mousse. Some plum, cherry and chocolate aromas along with regional leather and earth character. Aromatic oak is present in the background, a presence of florals, rose petal and violets are followed by the savouryness of oyster and soy. A rich, medium bodied wine with soft tannins and exquisite balance, the flavours of cherry and cassis, liqueured plums and chocolated fruits being dominant. An abundance of luscious complexity provides interest and persistence. This fine, effervescent Cabernet Sauvignon is an engaging and satisfying experience that would beautifully accompany roast game or fowl, fruits and dessert or your favourite cheese.
Cleanskin Hunter Valley Chardonnay 2007

A well balanced Chardonnay wine with ample palate texture, crisp grapefruit acidity and soft varietal stonefruit characters by one of the most distinguished winemakers in Hunter Valley. The vines were planted to soils and aspects where the excellent growing seasons and favourable ripening conditions yield grapes exhibiting splendid concentration. Nature has played a big part in contributing to the flavour profile of this generously proportioned Chardonnay, decidedly fruit driven with richly textured palate and lovely, lingering clean finish.

Chardonnay is sourced from some of the most idyllically positioned vineyards in Hunter Valley. Fully ripe grapes are picked throughout the cooler temperatures of night, whole bunch pressed to retain freshness and preserve expression of the vineyard. The must is chilled and transferred to drainers, inoculated by aromatic yeast and fermented at cold temperatures to maximise varietal fruit character. Vinifications are finished off in French oak hogsheads, followed by a regimen of lees stirring throughout several months maturation to enrich the mid palate and add creamy texture. A portion is treated ta course of malolactic.
 
Pale straw colour. Peach, nectarine and fresh apricot notes on the bouquet with hints of rockmelon and nutty oak spice. Rich tropical fruits with red apple acidity and lingering spicy oak to the palate. Fine, delicate and persistent, the ripe, fleshy nectarine and melon expressions fill out the juicy, fleshy mouthfeel. Essential Chardonnay attributes of stonefruits and citrus dominate the flavour spectrum while hints of vanilla, lessy creamyness and lemon curd tantalize the taste buds. Drinking beautifully now alongside rack of pork, cinnamon apple and parsnip shards.
Cleanskin King Valley Merlot 2003
King Valley
The higher altitudes of the King Valley yield some of the finest, slowly ripened wine grapes. Spring runoffs and retentive soils nourish the vines and stimulate the fruit to achieve maximum flavour profiles. Good canopy management is essential to defend the fruit against native fauna and extremes in weather. The fully ripened grapes are quite often the secret ingredient in many of Victoria's most cherished wines. Here's a bottle aged, fully aproachable Merlot wine that never quite made it to labelling, superb value and drinking beautifully.

The King Valley made the transition from tobacco farming to producing world class vintages, and the nuances of sweet tobacco leaves are sometimes still present on the nose and palate of the finished wine. Fruit picking is carried out on different days to a schedule determined by the vines as the separate parcels ripen. Grapes are picked when fully physiologically ripe to obtain peak varietal expressions and regionality in terms of flavour profiles and tannins, natural sugars and balanced acidity. Following the crush, the must is inoculated and vinified in a combination of traditional and modern fermenters before being treated to maturation in a mix of fine grain oak barrels.
 
Brick red in colour. Displays complex berry fruit on the nose and palate, cherry and currant, figs and date, strawberry and plum with hints of sweet and supple, aromatic vanilla/ spice oak. The nose is dominated by the riper characters of juicy berry fruit while the tongue is coated by darker, chocolate and coffee, sticky date pudding, bramble and licorice winegum expressions. A handsomely developed Merlot wine, a touch herbaceous with mint and sweet tobacco, leather and pepper. The wine has a supple mouthfeel and great length, delivering excellent balance between the ripe, complimentery tannins, creamy spiced oak, divine plummy fruit and light, cleansing acids.

King Valley
Here's an exciting King Valley red that offers a spectrum of fragrances and flavour over lively tannins, a mouthfilling assembly of Merlot and Sangiovese grown to cool climate, high country vines. An engaging red with a seamless palate and distinctive Italianate stylishness to savour with all good food, exhibiting many of the meaty spice and plum characters of the lofty Tuscans. A nose and palate of dark fruits and pepper, wrapped in subtle toasty oak, the tannins are brisk, the flavours are long, fully integrated yet complex, the acids invigorating and dry.

Grapes are harvested from good vineyards which enjoy the nourishing spring rain runoffs of the high country, carefully tended by the most dedicated growers. The King Valley is generally classified as a cool climate, slow ripening region, the vignerons often call on their continental heritage to adapt the alpine vineyard management techniques to husband some of Australia's healthiest vines. Soils are replenished by spring rains, the grapes are encouraged by slow ripening conditions to develop intense characters of plum and spice, supported by healthy tannins and an equitable balance between natural fruit sugars and refreshing acidity.
 
Deep, bright red with a dark centre. Rich, complex aromas of scented fruit, the sweetness of raspberry and savoury of soy, fruit driven, alluring and poised, with a central core of plum, mocha and spice, underpinned by hints of bouquet garni over dusty cedar. Whiffs of cherry and stonefruit, offset by compotes and lifted berry characters, ground black pepper and supple oak. On the palate are notes of mint and herb, pepper, blood plum and black cherry, fruit driven and distinctively King Valley. An excellent partner to braised dishes or barbequed meats, gourmet sausages and lasagna.

The descendants of Italian migrants seem to have retained their traditional flair and intimate understanding of this splendid style of pure varietal wine. Here we have a generously flavoured Grigio crafted by one of the King Valley's more auspicious winemaking estates, recently assigned a breathtaking five star rating by gentleman James Halliday. One of the best values in fine Pinot Grigio wines to be found anywhere, it's defined cool climate King Valley regionality and vivacity of fruit make it as personable as the cheerful winemaking team who husbanded the vines and affected the vinification. Minimalist handling techniques and exacting standards of viticulture have achieved a fully integrated Grigio wine with distinctive varietal fruit, ample complexity and cleansing finish. Pinot Grigio is particularly well suited to the mesoclimes of King Valley. The varietal was originally discovered by monks in France, its popularity soon spread to Italy, where it continues to be crafted into the stylish fruit forward wines of the Friuli region.

Cabernet Sauvignon from these beatified soils makes a world class wine, eerily similar to it's varietal siblings from Bordeaux. Cabernet Sauvignon is harvested throughout the cool of night and early morning before being promptly delivered to the wineworks for immediate transfer into controlled fermenters. A course of cold soak and vinification is followed by a spell of maceration to soften the palate and tame the firm Margaret River tannins. Upon completion, components are drained and filled to a selection of seasoned and new fine oak barrels for a term of maturation before assembling into the final wine.
 
Dark ruby hue. Complex fruit characters on the bouquet, brambleberry, cassis and scents of festive fruitcake, the savouryness of suet and curls of dark chocolate. Ripe tannins, a palate exhibiting intense concentration of flavour, layered with raspberry, liquorice and tobacco oak characters, before resolving on an engaging, dusty herb finish.

Unlabelled Sauvignon Blanc by one of Marlborough's most reputable estates. In a unique and distinctively recognizable growing region such as Marlborough, the most critical work to produce beautiful wine must be done in the vineyard. There is no substitute for well balanced fruit and the maker here has clearly spent time amongst the vines applying the most exacting standards of viticulture right up until harvest. Portions were treated to a luxurious fermentation in oak barriques and puncheons, which contributes a supple undertone of smoky savouriness.

Summer in Marlborough started early and finished just before harvest, providing ideal growing conditions from flowering right through to the ripening of fruit. This achieved a wide variety of flavour profiles in the individual parcels, affording the winemaker a fortuitous opportunity to construct an engaging and complex Sauvignon Blanc. Numerous batches were fermented cold to preserve freshness and assembled to realize a well balanced, intense and textural wine. A number of portions were aged on lees and stirred to add richness and weight, others were racked early and filtered to accentuate the clean citrus. Treated to a small portion of barrel fermentation in a selection of new French oak barriques. Alcohol 12.5%
 
Pale straw colour. Rich tropical fruit aromas with a hint of white peach and pink grapefruit. Luscious palate with summer flavours of tropical fruits, white peach and grapefruit filling the palate with a lovely intensity. Exhibits layers of flavour ranging from the distinctive grass characters of Marlborough, right through to citrus, lemons and lime to tropical and grass at the other end of the spectrum. A wine of good acid balance, and great length, the palate is textural and complex, with a pleasant, finely textured mouthfeel, finishing long, revitalising and clean. A vivacious Marlborough Sauvignon Blanc to accompany summer seafood salad, the freshest grilled fishes, newly shucked oysters and scallops.

An assemblage of Chardonnay grown to choice McLaren Vale vineyards which are the source to some of the region's most distinguished wines. Classic and traditional vinification techniques were employed to retain the character of the superior quality fruit and to achieve elegance in the final wine. Whole bunches were transferred through an air bag press which gently breaks the grapes, allowing the juices to run freely, while harsh tannins are not released. Treated to inoculation and fermentation in a combination of French oak barriques and enriched by a regular lees stirring, leading to a full flavoured wine of great depth, a luxurious mouthfeel and abundant complexity.
 
Pale straw colour with green hues. Lifted fragrant aromas of ripe melons and peach, custard cream, lemons and spicy oak. A soft and rich palate showcases full flavours of rock melon, guava and white peach. A fresh, clean, lemon acid structure combines with underlying oak characters, leading to a smooth and rounded finish. The perfect match to spatchcock under garlic cloves, or ripe, runny cheeses.
