Clover Hill Blanc de Blanc 2005
Pipers Brook
Clover Hill's been producing pure varietal sparkling Chardonnay for many years. Assembled from a selection of elite Cuvées, matured on yeast lees for four years, followed by twelve months of ageing under cork prior to release. Disgorged with an addition of reserve wine, the doseage is prepared from components of Clover Hill reposing in oaken foudres.

Located along the Pipers River of northeast Tasmania, Clover Hill was established in the eighties as a dedicated sparkling wine estate, planted solely to the traditional varietals, Chardonnay, Pinot Noir and Pinot Meunier. The sixty six hectare property overlooking Bass Strait has a similar climate to the Champagne region of France. Vines are close spaced and planted on deep, red volcanic soil in a frost-free amphitheatre, orientated north/south to maximise sunlight exposure. Clover Hill's commitment to creating Australia's finest sparkling wines has been recognized as Tasmanian Vineyard of the Year, and on more than one occasion as Winestate's Australasian Sparkling Wine of the Year.
 
Vibrant light straw in colour with a persistent fine bead and gentle foaming mousse. An assortment of fresh summer fruits, melon and citrus, pawpaw and pear. Instances of warm nutty yeast and developed almond/ toast characters, complex and elegant yet remarkably integrated. Slight savouriness. Fresh citrus to the palate with layers of toasted characters, tastes of melon, almond and bread dough flavours. Clover Hill is the essential Australian Blanc de Blanc sparkling with a crisp profile of fruit, exceptional length and lasting flavours. Half Chardonnay with a third of Pinot Noir and the balance Pinot Meunier. A true Methode Traditionalle from the holy trinity of classic sparkling varietals, Clover Hill is a composition of selected reserve wines aged in French oak foudres, a process which ensures the unique personality of the Clover Hill house style. Taltarni boast of the fact that their average yields are less than half those in Champagne, resulting in a more concentrated juice. Clover Hill is topped up and treated to a minimum of three years on lees with a subsequent ageing under cork for a minimum of several months. Attractive pale straw colour with green hue, a persistent, fine bead and gentle, foaming mousse. Bouquet displays complex layers of lemon, white peach and honey, toasty yeast characters derived from time on lees and inclusion of aged reserves. The palate displays an elegant integration of tropical fruit flavours and freshly baked characters, an underlying creamy complexity with exceptional length. Rich autolysis and wonderful biscuit characters. A highlight is it's structure and finesse, creamy layers of Chardonnay fruit are integrated beautifully with the sherbet, bread and cherry Pinot characters.

A multi vintage cuvée of Chardonnay, Pinot Noir and Meunier, assembled exclusively from parcels picked off Clover Hill's estate vineyards at Pipers Brook. Fermented in it's own bottle and aged on yeast lees for at least two years, infusing the intensity of an extravagant élevage while capturing the vivacity of Pipers River fruit, a masterful construct of remarkable structure and finesse. Subtly complex, Cuvee Tasmania is characterised by rich, creamy layers of Chardonnay opulence, integrating beautifully with the cherry sherbet chic of Pinot Noir.

Since inaugural vintage, Clover Hill has been crafted to full Méthode traditionnelle, a highly specialised process which demands considerable patience and expertise. Grapes are gently whole bunch pressed and fermented in separate batches, followed by a preliminary bottling with active yeasts and a small amount of sugar (tirage). Clover Hill is then matured on lees while being treated to a course of bottle riddling, gradually rotated until the lees eventually settle in the neck of the bottle. The neck is then frozen and dégorged before a dosage of liqueur d'expédition and reserve wines aged in French oak foudres to define the excellence and style which is Clover Hill. Alcohol 12.5%
 
Soft, pale lemon colour, a lively, persistent bead and gentle, creamy mousse. Attractive, zesty lemon and citrus nose complemented by ripe melon and white peach characters. The palate displays a long acid line and soft, aged almond kernel over bread crust flavours which create fullness. An elegant sparkling exhibiting all the hallmarks of of a grand Tasmanian cuvée, resolving on a finish of ripe fruit flavours and fresh, crisp acid.

Clover Hill is one of Australia's most eminent wines. In 1986, on the site of an old dairy farm in northeast Tasmania, the magnificent Clover Hill Vineyard was established by the Goelet family. Their aim was and still is, to produce superb sparkling wine using traditional French methodology. Since its debut vintage in 1991, Clover Hill has gained a reputation for its uncompromising quality, elegance, finesse and distinguishable Tasmanian style. Fruit is sourced entirely from the Clover Hill vineyard on Pipers River, the premier location for sparkling wine in Australia. A limited release, Brut Rosé is crafted via controlled maceration of Pinot Noir grapes to extract a soft, pink colour and reveal a highly expressive bouquet of rose petal and red strawberries. A small amount of Pinot Meunier is included prior to bottling, adding fragrance and middle palate weight. Made according to true Methode Traditionelle, fermented in its own bottle and aged on yeast lees for at least three years, ensuring the complexity and intensity that is the hallmark of Clover Hill. Taltarni is renowned for its wines, having placed Victoria on the map as the source of premium sparklers. A cépage of Chardonnay, Pinot Noir and Meunier, finished with parcels of fruit from the Clover Hill vineyard in Tasmania, a vintage sparkling with splendid length and generosity of flavour. Since inaugural release in 1978, each bottle of Taltarni Brut has been fermented and matured on yeast lees according to Methode traditionelle. Elegant and refined, Cuvée Brut expresses the charm and character which has come to be recognized as the Taltarni house style.

Taltarni was one of the founding wineries in the new age of the Pyrenees. The original sixty acres of vines were planted by David Hohnen, who later went on to found Cape Mentelle. John Goelet selected Taltarni Vineyards after a worldwide search of the finest winegrowing regions. The chosen site, with its red clay, quartz and sandy loam soils and cool continental climate is idyllic for the production of premium quality sparkling wines. The aim within the vineyard is to increase fruit concentration and flavour intensity whilst retaining superb length and balance of natural acidity. Taché is a French word meaning stained, the rare method used by Taltarni to fashion their sparkling Rosé. Her handsome salmon pink hue and elegant complexity are achieved by adding a dash of red liqueur to the tirage wine at disgorgement.

The 500 million year old volcanic soil that makes up Heathcote's unique topography has long been regarded as the reason for such exceptional shiraz. Known as Cambrian earth, the red soil of Heathcote, like the Terra Rossa soil of Coonawarra, is noted for producing wines hallmarked by intense fruit characters and peppery tones. It is the striking geological profile of Heathcote, two narrow bands of red Cambrian soils that run along the fault line which inspired the vibrant colours and abstract representation upon the label. Sourced from a single vineyard, Taltarni Heathcote Shiraz is partially barrel fermented and matured two years in a selection of the finest American oak barriques.

A beautiful assortment of chocolate and vanilla aromas supported by big sweet berry red berries and fresh ripe plums, reminiscent of grandma's tasty home made jam. Taltarni's great legacy is deeply rooted in the unique combination of low yielding gravelly loam soils of its vineyards and the temperate climate of the Pyrenees, producing wines hallmarked by distinctive regional characteristics. Crafted exclusively with estate grown fruit, from a part of Victoria where the vines are old and ruddy, precious and parched. Traditional red winemaking techniques - fruit parcels are basket pressed, cold soaked, vinified in small open top fermenters. After pressing, components complete malolactic and are aged in a selection of seasoned and new French oak barriques. The final wine is racked and assembled with a small amount of Merlot to add depth and palate weight.

Identifying the right proportions for each wine, assembling and blending the finest parcels are a labour of love for the Taltarni team. The final wine represents flawless balance and impeccable structure while delivering the requisite voluptuous, rich and full bodied profile that is distinctly Pyrenees. Grapes were harvested with maximum fruit flavours and balanced, ripe tannins. The batches are kept separate, destemmed and crushed to a range of fermenters where they are vinified on skins over a period of fourteen to twenty days then basket pressed directly to new French oak barriques. After completion of malolactic the wines are racked, assembled and returned to barrel for twenty months prior to bottling. Alcohol 14.1%

Victoria's scenic Pyrennees Ranges offer a long and cool ripening season which encourages grapes to develop a full spectrum of varietal flavours, whilst retaining excellent natural acidity. Well renowned for the quality of their stylish white wines grown to some of Victoria's most splendid sites, Taltarni have looked to the parched local vineyards for harvests of Sauvignon Blanc and Semillon to assemble into a dynamic wine whose whole is greater than the sum of parts.

At a latitude of 37˚, the Pyrenees ranges lie in a perfect climatic band for growing white varietal grapes. Semillon and Sauvignon Blanc are harvested at night to maximize freshness, in two separate pickings, early for fresh, zesty citrus characters and slightly later for blackcurrant and passionfruit flavours. Grapes are de-stemmed, crushed and membrane pressed. Juices are cold settled and racked, the components are tank fermented separately through two yeast strains working in conjunction to maximize the highly desirable passionfruit characters. The wine is kept on light lees and stirred fortnightly over a period of four months. Parcels are then assembled, stabilized and filtered prior to bottling.
 
Pale straw with bright green tints. Fresh and lively nose with lemon and passion fruit notes from the Sauvignon Blanc, complemented by nice straw and guava flavours of the Semillon. The refreshingly zesty natural acidity is perfectly accompanied by persistent, sweet fruit and a textural mid-palate from lees contact. Taltarni has included a component of fruit from it's property in Heathcote, a singular region recognized internationally for world class Shiraz. Warm days and cool nights mean Taltarni's Pyrenees vineyards enjoy a rare confluence of climatic conditions which enable production of robust reds, most notably the Shiraz. Grapes are gently crushed to expose the fresh flavours and to release the softer tannins, the must is then treated to a cold soaking prior to fermentation. Taltarni undergoes a further period of maceration on skins following the fermentation before a course of maturation in a selection of seasoned French and American oak barrels. Alcohol 14.0%

Taltarni is one of the earliest vineyard sites in the Pyrenees, originally planted to the classic varietals, immediately establishing a reputation for impressive robust reds and premium quality sparkling wines

The rebirth of Taltarni Vineyards in 1972 was something of a renaissance for the Pyrenees, a winegrowing region that had slipped into a nadir after a vticultural history which dates back to the mid nineteenth century. Today, the Taltarni Estate's fundamental philosophy is to produce distinctive, well-balanced premium varietal wines with recognizable regionality and estate styling.

Taltarni

Founding father, Yorkshireman Edwin Makereth, a farmer and miner, first planted vines around Avoca in 1887. His adviser was an Italian viticultural expert, Romeo Bragato, who claimed that Avoca was better suited to winegrowing than most other districts in the colony. He particularly noted the area's good drainage, and advised the planting of shiraz, pinot noir, mataro and verdelho. Romeo Bragato endeavoured to encourage other farmers to establish vineyards in the area.

The depression of the thirties, World War II and the wool boom of the forties eventually saw the demise of the fledgling local wine industry, and Avoca almost lost its viticultural heritage. In the early 1960s, ex-schoolteacher turned earth moving contractor, Walter Henning combined forces with some Ballarat businessmen and began the search for land to plant a vineyard. They hired a plane and flew all around the Pyrenees, looking for a suitable site. Finally they settled on the Moonambel area.

The current 1700 acre site, which Walter Henning was to baptize Taltarni, became one of the founding wineries of the new age of the Pyrenees. The original sixty acres of vines were developed by David Hohnen, who later went on to found Cape Mentelle in Margaret River. After seeing Taltarni through it's natal period, Walter Henning passed the estate onto John Goelet (and Red Earth Nominees Pty Ltd) shortly thereafter in 1972.

John Goelet selected Taltarni Vineyards after a worldwide search of the finest wine growing regions. The chosen site, with its red clay, quartz and sandy loam soils and cool Continental climate, was destined to produce premium quality, internationally acclaimed wines. In 1976, viticulturalist David Hohnen handed the reins to Dominique Portet, whose brother, Bernard helped find the vineyard on behalf of John Goelet. Bernard Portet had previously operated John Goelet's Napa Valley vineyard, Clos du Val. The dedication and energy of this formidable team carved Taltarni's early growth and international success.

From the outset there was a strong French influence, no more evident than in the vineyards which were planted to the classic Franco grapes. Taltarni has consolidated on a strong international reputation for its portfolio of premium wines, especially the long-living red wines, sensational Methode Champenoise styles and varietal sauvignon blanc (originally labelled as Fume Blanc).

There are now 326 acres of cabernet sauvignon, cabernet franc, merlot, pinot noir, shiraz and sauvignon blanc under vine at the Taltarni Estate, with additional plantings of chardonnay, malbec and most recently, sangiovese. The current portfolio features two superb sparklings, Taltarni Brut and Brut Tache, a range of mature vine premium estate grown reds, as well as the refreshingly crisp Sauvignon Blanc and zesty Rose. Taltarni also produces wines under it's Fiddleback, Lalla Gully and Clover Hill portfolios.

Twenty years after Taltarni's conception, Red Earth Nominees crossed Bass Strait where, after a further two year search, purchased and established the Clover Hill Vineyard in northeast Tasmania. Near Lebrina, this 163 acre (66 hectare) property, which enjoys a remarkable vista over Bass Strait, has been especially tailored for premium sparkling wine production. Chardonnay, pinot noir and pinot meunier grapes all thrive in it's rich, well-drained soils and cool climate. More recently, in 1998, Taltarni's third vineyard was acquired and developed, Lalla Gully, just a few minutes drive from Clover Hill. Lalla Gully is a picture perfect speciality vineyard growing cool climate chardonnay, sauvignon blanc and pinot meunier.
