Taltarni Cabernet Merlot Verdot

Made exclusively of Sauvignon Blanc, the trick is to set aside a few parcels of grape for extended skin maceration, infusing just the right amount of tannin complexity. Taltarni's great legacy is deeply rooted in the unique combination of low yielding gravelly loam soils of its vineyards and the temperate climate of the Pyrenees, producing wines hallmarked by eloquent regional charm. Crafted exclusively from harvests of estate grown fruit, picked off a canon of western districts sites, where the vines are old and ruddy, precious and parched. Bunches are destemmed into small open top fermenters for eight days vinification. Upon completion, batches are treated to a traditional basket pressing into a selection of seasoned and new French oak barriques for malolactic and eighteen months maturation.

Identifying the right proportions for each wine and assembling the finest parcels are a labour of love for the Taltarni team. The final wine represents flawless balance and impeccable structure while delivering the requisite voluptuousness, richness and full bodied profile that is distinctly Pyrenees. Grapes are harvested to optimal flavour development and balance of ripe tannins. Batches are kept separate, destemmed and crushed to fermenters for vinification on skins over the course of two or three weeks, followed by an old fashioned basket press into a high proportion of new French oak barriques. After completion of malolactic, components are assembled and returned to barrel for eighteen months. Alcohol 14.1%

Taltarni Sparkling Shiraz

There are few marques, better placed than Taltarni to create the ultimate indulgence in sparkling burgundy. Shiraz is crushed into small open top fermenters for a week of vinification, hand plunged, regularly pumped over and gently pressed into French oak barriques for a term of age. Its fragrant blackcurrant mousse precedes an edifying spice and chocolate palate, muscular Pyrenees tannins and a sheath of dusky oak balance the indulgent sweetness of fruit. A moreish purple wine to match with fruit dressed poultry, cherry duckling or the traditional festive pud.

Taltarni was one of Australia's first wineries to get serious about quality sparkling and is still setting the benchmarks after three decades. Taltarni has continued the evolution, introducing an amazingly well crafted T Series everyday sparkler. The focus has moved to cool climate grapes, and to this end Taltarni is well endowed with exceptional quality fruit, nurtured exclusively for sparkling wines, grown to vineyards in Victoria's splendid Pyrenees and Macedon Ranges. An assemblage of Chardonnay, Pinot Noir and Meunier of current vintage with a third of reserve wines matured in tank and older French oak barrels, achieving a luxurious wine that's almost too good for everyday enjoyment.

At a latitude of 37ňö, the Pyrenees Ranges lie in a perfect climatic band for growing white varietal grapes. Sauvignon Blanc is harvested at night to maximize freshness, through separate pickings, early for fresh, zesty citrus characters and slightly later for blackcurrant passionfruit flavours. Fruit is whole bunch pressed for optimal skin contact, batches are fermented at lower temperatures to optimise fragrant aromatics. Components are aged on sedimentery yeast lees while treated to regular battonage, infusing eleganca and subtle complexity. A short term of age in seasoned oak is followed by assemblage into the finished wine, stabilized and filtered prior to bottling. Alcohol 13.2%

Shiraz is a varietal with which Taltarni has excelled from the very start, no real mystery as it's grown to some of Victoria's best purpose built vineyards. By applying traditional winemaking with modern Australian viticulture, T-Series can create a deeply coloured and generously flavoured, soundly structured wine. Just perfect with steak or old world style meat Ragu, its vibrant assortment of juicy, cool ripened plum and spiced fruit flavours, are framed by a length of supportive, amicable tannins and supple, integrated oak.

The Pyrenees are an outstanding winegrowing region recognized internationally for world class Shiraz. Warm days and cool nights mean Taltarni's vineyards enjoy a rare confluence of climatic conditions which enable production of robust reds, most notably the Shiraz. Grapes are gently crushed to extract a measure of fresh flavours while releasing softer tannins, a component of whole bunches are included for complexity, musts are treated to a term of cold soak for optimal extraction of colour and tannin. Fruit is vinified for a week or more on skins to a small batch style in traditional open top fermenters, followed by completion of malolactic and a year or more in a selection of French and American oak.
 
Deep plum red hue. Luscious bramble, plum and white pepper fragrances are complimented by spices and mocha oak notes. The palate is well structured, layered with soft plummy fruit flavours, raspberry and a hint of toasty cigar box from the oak, seasoned by cool climate spice. A truly varietal Shiraz wine supported by fine tannins and brimming with the fine complexity for which Taltarni are renowned.

The noble cépage of Chardonnay, Pinot Noir and Meunier, finished with the inclusion of parcels from Tasmania's prestigious Clover Hill vineyard, a vintage sparkling of amazing textures and immeasurable palate length. Since inaugural release in 1978, each bottle of Taltarni Brut has been fermented and matured on yeast lees according to Methode traditionelle. Taltarni were one of the founding wineries in the new age of the Pyrenees. The original sixty acres of vines were planted by David Hohnen, who later went on to found Cape Mentelle. John Goelet selected Taltarni Vineyards after a worldwide search of the finest winegrowing regions. The chosen site, with its red clay, quartz and sandy loam soils and cool continental climate is idyllic for the production of premium quality sparkling wines. The aim within the vineyard is to increase fruit concentration and flavour intensity whilst retaining superb length and balance of natural acidity. Taltarni is fermented in its own bottle and matured on yeast lees, achieving a final complex and sophisticated sparkling wine style.

Taltarni Vintage Rose

Tache is a French word meaning stained, the rare method used by Taltarni to fashion their sparkling Rose. The moniker Brut Tache can also be read as a metaphor for hard yakka, a reference to the effort required to grow quality grapes and make good wine. Taltarni assemble their finest fruit, picked off vineyards dedicated to yielding grapes exclusively for superior sparkling wines. Cuvée Rosé's pretty pink hue and elegant complexity are achieved by adding a dash of red liqueur to the tirage wine at disgorgement.

Taltarni became known for producing extraordinary sparkling wines very early on in their history. The estate's highly specialised vineyards in the Pyrenees contribute the backbone of fruit for Brut Tache. An assemblage of the holy trinity varietals, Chardonnay, Pinot Noir and Meunier, are drawn from mature vineyards, mainly in the premiere viticultural precincts of Victoria and Tasmania. Taltarni focus on encouraging full development of fruit, good varietal definition and refreshing natural acidity. Fermented in its own bottle and matured on yeast lees according to true Methode traditionalle, Cuvée Rosé is a sophisticated wine with mouth filling berry flavours that's simply beautiful to behold.

The rebirth of Taltarni Vineyards in 1972 was something of a renaissance for the Pyrenees, a winegrowing region that had slipped into a nadir after a vticultural history which dates back to the mid nineteenth century. Today, the Taltarni Estate's fundamental philosophy is to produce distinctive, well-balanced premium varietal wines with recognizable regionality and estate styling.

Taltarni

Founding father, Yorkshireman Edwin Makereth, a farmer and miner, first planted vines around Avoca in 1887. His adviser was an Italian viticultural expert, Romeo Bragato, who claimed that Avoca was better suited to winegrowing than most other districts in the colony. He particularly noted the area's good drainage, and advised the planting of shiraz, pinot noir, mataro and verdelho. Romeo Bragato endeavoured to encourage other farmers to establish vineyards in the area.

The depression of the thirties, World War II and the wool boom of the forties eventually saw the demise of the fledgling local wine industry, and Avoca almost lost its viticultural heritage. In the early 1960s, ex-schoolteacher turned earth moving contractor, Walter Henning combined forces with some Ballarat businessmen and began the search for land to plant a vineyard. They hired a plane and flew all around the Pyrenees, looking for a suitable site. Finally they settled on the Moonambel area.

The current 1700 acre site, which Walter Henning was to baptize Taltarni, became one of the founding wineries of the new age of the Pyrenees. The original sixty acres of vines were developed by David Hohnen, who later went on to found Cape Mentelle in Margaret River. After seeing Taltarni through it's natal period, Walter Henning passed the estate onto John Goelet (and Red Earth Nominees Pty Ltd) shortly thereafter in 1972.

John Goelet selected Taltarni Vineyards after a worldwide search of the finest wine growing regions. The chosen site, with its red clay, quartz and sandy loam soils and cool Continental climate, was destined to produce premium quality, internationally acclaimed wines. In 1976, viticulturalist David Hohnen handed the reins to Dominique Portet, whose brother, Bernard helped find the vineyard on behalf of John Goelet. Bernard Portet had previously operated John Goelet's Napa Valley vineyard, Clos du Val. The dedication and energy of this formidable team carved Taltarni's early growth and international success.

From the outset there was a strong French influence, no more evident than in the vineyards which were planted to the classic Franco grapes. Taltarni has consolidated on a strong international reputation for its portfolio of premium wines, especially the long-living red wines, sensational Methode Champenoise styles and varietal sauvignon blanc (originally labelled as Fume Blanc).

There are now 326 acres of cabernet sauvignon, cabernet franc, merlot, pinot noir, shiraz and sauvignon blanc under vine at the Taltarni Estate, with additional plantings of chardonnay, malbec and most recently, sangiovese. The current portfolio features two superb sparklings, Taltarni Brut and Brut Tache, a range of mature vine premium estate grown reds, as well as the refreshingly crisp Sauvignon Blanc and zesty Rose. Taltarni also produces wines under it's Fiddleback, Lalla Gully and Clover Hill portfolios.

Twenty years after Taltarni's conception, Red Earth Nominees crossed Bass Strait where, after a further two year search, purchased and established the Clover Hill Vineyard in northeast Tasmania. Near Lebrina, this 163 acre (66 hectare) property, which enjoys a remarkable vista over Bass Strait, has been especially tailored for premium sparkling wine production. Chardonnay, pinot noir and pinot meunier grapes all thrive in it's rich, well-drained soils and cool climate. More recently, in 1998, Taltarni's third vineyard was acquired and developed, Lalla Gully, just a few minutes drive from Clover Hill. Lalla Gully is a picture perfect speciality vineyard growing cool climate chardonnay, sauvignon blanc and pinot meunier.
