Pepperjack Barossa Cabernet Sauvignon 2011

Pepperjack are an honest representation of the Barossa's rich viticultural heritage, enjoyed equally as much outside of Australia as they are at home. The winemaking team have respect for traditional winemaking techniques, are dynamic, imaginative and highly attuned to modern tastes. Pepperjack delivers the very best attributes of modern Barossa Cabernet, vibrance, structure and elegance. Fruit from vineyards on the Barossa Valley floor contributes body and weight, while sophistication is derived from parcels sourced in the cooler Eden Valley.

Traditional winemaking works hand in hand with the most sophisticated techniques, as applied by two of the Barossa's finest, Saltram Estate and maestro Nigel Dolan (his father made Pepperjack too) Maximum use is made of soaking and plunging to extract intense colours and firm tannins. Parcels are handled separately to develop the individual personality before assembling. After crushing, juices are vinified in traditional, small batch open fermenters, then pressed off skins into prior use French and American oak for a year. The extended use of seasoned oak has softened the tannins whilst preserving prominence of the fruit, achieving a delicious, forward drinking Cabernet Sauvignon.
 
Plum red colour. Ripe dark berry fruits, black currants, plums and hints of spice, mint with a touch of varietal leaf. The palate is rich and flavoursome, full of plush dark fruit characters over soft talc chalky tannins, showing a generous length and balance. Enjoy Pepperjack with mint and rosemary infused roasts.

The winemaking team are conscious of modern tastes and are creating wines that reflect the purest expression of Barossa. The fruit for Pepperjack is sourced from superb vineyards yielding grapes with generous fruit characters, definitive varietal flavours, fine tannin structure and good depth of colour. A reliable and immensely satisfying table red, offering gentle spice and rich Shiraz fruit flavour, just perfect for cosy dinners.

Saltram's Nigel Dolan, who crafts the Pepperjack and is also responsible for the icon Metala, enjoys an outstanding reputation as one of Australia's salient winemakers. Dolan has won numerous accolades in his career, most notably he is a dual winner of Australia's most prestigious Jimmy Watson Trophy. Choice Barossa vineyards, some of which carry great distinction, are source of the ripe Shiraz grapes which are at the core of Pepperjack. All parcels are treated to a separate vinification for up to a fortnight in traditional open top fermenters before being gently pressed and transferred to a combination of new and prior use French and American oak barrels for a year's maturation prior to assemblage.
 
Rich dark red, deep purple hue. Pepperjack displays aromas of wild berries, cherry and plums supported by spices and mocha/ dark chocolate oak. Rich round and soft with rich red berries coming through on the palate, complexed by a savoury, meaty interest. Fine tannins, lots of weight, ample complexity and great length of flavour. Drink with char grilled steak, green peppercorn sauce and roast vegetables.

Pepperjack is a tribute to the rich heritage of Barossa Valley. Pepperjack's dynamic and imaginative team are masters of traditional winemaking practices. Conscious of modern styles and contemporary tastes, they have crafted a ripe, fruit driven Chardonnay, cannily treating separate components to various techniques. A vibrant peach, applejack and melon palate is brought forward into an immensely satisfying Chardonnay wine, endowed with the generous and enduring Pepperjack style.

An exclusively Barossa wine, from fruit grown predominantly in the Eden Valley sub-region, to give the wine fresh varietal flavour and a crisp but smooth palate. Following harvest, parcels are pressed and dejuiced to fermenters, treated to a cool controlled vinification which captures all the crisp Eden Valley Chardonnay characters. Some ferments are initiated by wild indigenous yeasts under quality French oak, a practice which achieves a luxurious Chardonnay wine of lively complexity and exceptional depth of palate. Components are trialled and assembled into the finished wine.
 
Soft straw yellow hue. Vibrant aromas of fresh citrus and mealyness and nut from oak and wild yeast ferments. Grapefruit and biscuit on the palate, orchard fruit, melons and pear, smokiness and mealiness. Excellent length of flavour. Serve chilled, and enjoy while young and fresh, alonside chargrilled chicken dressed with wild mushroom, saffron and jus.

The Dolan name is an icon of Barossa winemaking. Nigel Dolan is the current Chief Winemaker at Saltram wines, a position also held by his late father Brian Dolan from 1954 to 1959. Nigel, who is also responsible for the irrepressible Metala, enjoys an outstanding reputation as one of Australia's finest winemakers. Nigel has won numerous accolades in his career, three times winner of the coveted Stodart Trophy, and most notably as a dual winner of Australia’s most prestigious prize, the Jimmy Watson Trophy in 1992, and most recently in 2003 for the 2002 The Eighth Maker Shiraz.

Pepperjack

Nigel Dolan's Pepperjack label has an interesting spin, staking a simultaneous claim on Barossa heritage, traditional winemaking techniques and modern style. Sourced from a collection of old Shiraz vines across the Barossa Valley floor and the cooler Eden Valley, with the balance from a mix of other SA regions, the Pepperjack Shiraz reflects the very best attributes of modern Barossa Shiraz - vibrancy, richness and generosity. Generally, the Pepperjack vineyards deliver terrific fruit definition due to the impeccable standards of the winemakers and the selected grape growers. Ruby red with purple hues, the Shiraz displays aromas of wild berries, cherries and plums supported by characteristic spice and pepper. The palate portrays concentrated, sweet plum and berry fruit characters and with careful cellaring this Shiraz will continue to improve over the next five to eight years.

The Pepperjack Cabernet Sauvignon reflects the very best attributes of modern Barossa Cabernet - vibrancy, body and elegance. The Barossa Valley floor contributes body (or weight), while elegance is derived from the cooler Eden Valley. Deep plum red in colour and displaying aromas of blackberries, blackcurrants and spice with a touch of mint and cedar, this Cabernet will reward medium term cellaring over five to eight year.
