Pepperjack are designed from the vineyard to the bottle, to be rich, bold red wines. Choice parcels of Shiraz exhibiting a concentration of flavour are assembled, red berries and rich plums, savoury notes and ripe tannins. Crafted to a combination of traditional old world winemaking methods and modern vinification techniques, fruit is treated to a course of maceration for optimal extraction of tannins and colour, followed by a week or two of ferment and transfer to a selection of French and American oak barrels for malolactic and fifteen months maturation. The individual components are separately aged and the candidate barrels are determined through a staged selection process.
 
Rich red colour with dark purple rim. Nose of rich concentrated red and blue fruits, dark chocolate and rich mocha notes with hints of spice and cedary oak. The palate is rich and plush with good structure, a concentrated layer of berry fruit flavours and judicious oak, balanced by fine tannins to give length and power while finishing soft and full of flavour.

The Pepperjack team are conscious of modern tastes and are creating wines for aspirants of great gastronomy and better beef. Fruit is sourced from superb vineyards yielding grapes with generous fruit character, definitive varietal flavour, fine tannin structure and an innate affinity to steak. The pick of McLaren Vale's harvests have been assembled into an intense style of Shiraz to balance the richness of juicy Scotch Fillet.

Choice McLaren Vale vineyards, some of which carry great distinction, are source of the opulent Shiraz grapes which are at the core of Pepperjack. Traditional winemaking works hand in hand with the most sophisticated techniques, as applied by the Barossa's most accomplished team of Shiraz specialists. Maximum use is made of soaking and plunging to extract intense colours and firm tannins. All parcels are treated to a separate vinification for up to a fortnight in traditional open top fermenters, before being gently pressed and transferred to a combination of new and prior use French and American oak barrels for fifteen months maturation prior to assemblage.
 
Rich dark red, deep purple hue. Pepperjack displays aromas of wild berries, cherry and plums supported by spices and mocha/ dark chocolate oak. Rich round and soft with rich red berries coming through on the palate, complexed by a savoury, meaty interest. Fine tannins, lots of weight, ample complexity and great length of flavour. Drink with char grilled Scotch Fillet, green peppercorn sauce and roast root vegetable.

The Dolan name is an icon of Barossa winemaking. Nigel Dolan is the current Chief Winemaker at Saltram wines, a position also held by his father Brian Dolan from 1954 to 1959. Nigel, who is also responsible for the irrepressible Metala, enjoys an outstanding reputation as one of Australia's finest winemakers. Nigel has won numerous accolades in his career, three times winner of the coveted Stodart Trophy, and most notably as a dual winner of Australia’s most prestigious prize, the Jimmy Watson Trophy in 1992, and most recently in 2003 for the 2002 The Eighth Maker Shiraz.

Generally, the Pepperjack vineyards deliver terrific fruit definition due to the impeccable standards of the winemakers and the selected grape growers. Ruby red with purple hues, the Shiraz displays aromas of wild berries, cherries and plums supported by characteristic spice and pepper. The palate portrays concentrated, sweet plum and berry fruit characters and with careful cellaring this Shiraz will continue to improve over the next five to eight years.

The Pepperjack Cabernet Sauvignon reflects the very best attributes of modern Barossa Cabernet - vibrancy, body and elegance. The Barossa Valley floor contributes body (or weight), while elegance is derived from the cooler Eden Valley. Deep plum red in colour and displaying aromas of blackberries, blackcurrants and spice with a touch of mint and cedar, this Cabernet will reward medium term cellaring over five to eight year. Whilst the Barossa component dominates the flavour, the elegance and freshness of the wine is truly appealing.
