Bellussi Prosecco Sparkling Bianco
Italian Spumante
The Bellussi Spumante sparkling wine obtained from the Prosecco grape, which comes exclusively from the restricted DOC Area of Conegliano - Valdobbiadene. The hilly, clay ridden limestone of the region, together with a cool Mediterranean microclimate and unique exposure to the sun gives this wine a rare structural elegance and a remarkably refined bouquet, further enhanced by a careful sparkling process using the Charmat method. A grand aperitif, table or dessert wine that is also greatly enjoyed at any festive occasion.

A sparkling white wine obtained from the Prosecco grape using the Charmat method in autoclave. This spumante is the epitome of Prosecco, where the harmony of its elegant body is accompanied by a delicate bouquet. The freshness and fragrance of this wine, together with a fine and persistent perlage, make it ideal for any occasion. Harvest is from 20th September to 10th October according to the vintage. The wine is fermented before a light pressing yielding a 70% maximum output. Best enjoyed within one year of production and up to two years. Acidity 6g/L Alcohol 11.5% Sugar 15g/l.
 
Straw yellow with greenish hints and limey gold robes. Nose of apple and green tea mint, papaya and tropical stonefruits. Lemon citrus honey nuances prepare the palate for a slightly sweetened introduction, awash with characteristic Mediterranean mousse. Effervescence is plentiful but not overwhelming and the natural fruit sweetness is uncloying and perfectly offset by it's charmingly old world acidity. There is a late arrival of dark forest berries and soily Blackforest woody characters that surprise the palate with a charming and unexpected complexity. A vivacious wine, and perfectly suited to both light or rich cuisines.
Brown Brothers Zibibbo Rosa
Zibibbo Rosa is an exciting new addition to the Brown Brothers range. Zibibbo means raisin, a synonym for the Muscat of Alexandria grape. The Romans are believed to have given the grape its name as they found its distinctive aroma akin to that of musk, and hence called it Moscato. A deliciously refined pink Sparkler which is slightly drier than it's sibling pale Zibibbo, while still sharing its deliciously fruity style. Rosa is a beautiful pale pink colour, showing lifted aromas of strawberries and summer fruits, and certainly best enjoyed now.

Zibibbo Rosa is fashioned predominantly from a clone of Muscat of Alexandria, a deliciously plump and juicy grape which can produce an amazingly wide range of wine styles, depending on the unique clone, cultivation, harvesting and method of winecraft. If harvested early, it produces delicate, perfumed, crisp, dry white table wines but if left to hang on the vines several weeks longer it produces rich flavoursome dessert wines. These grapes were harvested from early February through to late April at healthy levels of baumé ranging from 11.5 to 13.0% Tank fermented like it's stylistically Italian counterparts, and bottled soon after the secondary fermentation was completed with an alcohol of 8.0%, a pH of 3.1 and acid level of 6.1g/L.
 
Viticultural experts have identified at least 200 different members of the Muscat family and several of these different clones have been cultivated in Australia for as long as grapes have been grown here. Zibibbo Rosa is a seriously aromatic sparkling wine, which announces it's arrival through a burst of effervescence and room-filling bouquets. Brown Brothers have pioneered and developed many of Australia's distinctive styles of wine. They have been fashioning wines from Muscat for generations and are amongst the nation's most adroit handlers of this eclectic varietal. Viticultural experts have identified at least two hundred different members of the Muscat family. Several clones have been cultivated in Australia for as long as grapes have been grown here. Zibibbo is made predominantly from Muscat of Alexandria grapes, harvested to ripe and healthy levels of natural fruit sugars. Zibibbo is tank fermented in the manner of it's Italian counterparts and bottled soon after the secondary fermentation is completed with an alcohol of 6.0%

Australia has borrowed Prosecco from the Italians. Prosecco comes from grapes you probably never heard of (Prosecco mostly, but can also contain Verdiso and splashes of Pinot Bianco or Pinot Grigio). Cuttings have been planted in the King Valley in Victoria, where the Dal Zotto family have produced Australia's first sparkling Prosecco.
 
Brilliant straw yellow, enlivened by its perlage, strands of tiny bubbles. It's aromatic quality is fresh and rich, fruity aromas of apple and pear with a hint of citrus fruit which fades into the floral bouquet. In the mouth it is soft, yet at the same time dry thanks to its good acidity. This wine from the Dal Zotto family is austere, subtly flavoured and has a finish as dry as a wind-blown leaf.

Chardonnay, Pinot Noir and Meunier are sourced from a range of cool climate viticultural sites, including Strathbogie, Upper Goulburn, King and Yarra Valleys. Grapes are gently pressed and vinified separately. When the primary and malolactic fermentations are complete, components are settled and stabilised for assemblage. A component of reserve wines from previous vintages are included, enhancing the complexity and structure. A small amount of sugar and cultured yeast is added before the wine is bottled and sealed under a crown seal for fermentation in bottle. After ageing on yeast for a minimum of thirty months, the bottles are riddled and disgorged before disgorgement and dosage liqueur. Alcohol 12.5%
 
Pale gold straw, creamy, persistent mousse. A sweeter, richer but balanced sparkler fashioned to the French Cuvée Doux. Chile is considered one of the best viticultural regions in the world. Natural geographical barriers have protected it from the arrival of Phylloxera and other aphids. The absence of these threats allows the Fresita Vina Manquehue winery and all Chilean producers to use the very minimum of chemical protection for the vines, leaving them to grow in the most natural conditions possible. Vina Manquehue received the initial selected French vines especially brought to Chile by the Rabat family in 1927. The technology applied to the management and production of vineyards has evolved with the years, and today the vineyard has a large, modern infra-structure that allows it to guarantee the quality of each wine.
 
The colour and appearance is a fresh dark pink. There is a unique effervescence that is fine and creamy, the sparkling fizz of this luxurious extends to into the air above the glass and remains salmon pink until burst. The nose is very rich, citrussy, honey-like. There are beautiful bouquets of praline, almond, stone fruits especially peaches and wisps of white chocolate. Harvested at the zenith of Canada's crisp winter, the grapes are naturally frozen on the vine and picked when the temperature drops to -10°C. The removal of ice crystals from frozen grapes during pressing concentrates the juice, achieving the rich and alluring nectar known as Icewine.
