Buller Fine Old Muscat

Time is an essential element in the making of fine quality fortified wines. To create the rich and complex flavours of Buller Fine Old Muscat, the wines in this blend have had to spend years slowly maturing in old oak casks. Fully matured when released and ready for immediate consumption. Gracefully maturated in old oak hogsheads. Alcohol 18.
 
Colour and appearance of the Buller Fine Old Muscat is a mid reddish brown showing amber hues. Aroma and nose is milky, nutty, with perfumed raisin-fruit bouquet. Initial sweetness on the palate, then raisiny flavours linger to reveal hints of toffee. Underlying structure of tannin and well integrated spirit. Finish is long and the raisin flavours return and linger in the mouth.
Buller Fine Old Tawny

Blessed with a sunny climate, good soils and ample water, the Buller vineyards at Beverford, nestled within the Swan Hill region, produce the richest, nut and citrus flavoured Old Tawny wines which can rival the finest in Victoria. A generously flavoured Old Port in the traditional style, Buller is endowed with great complexity. Sweet fruit and beautifully integrated oak combine to display all the developed characters of long term ageing. Along with the slow transformation in colour from bright ruby to deep tawny, have arrived the most exquisite changes of flavour.

The magnificent Buller cellars house stocks of ageing vintage wines which have been fortified and set aside for selection and inclusion into Fine Old Tokays which are endowed with the rich expression of Rutherglen. The region is blessed by a sunny climate, good soils and ample water, it enjoys the added security of managed irrigation, an insurance against the dry years. It is an ideal place to grow fruit of all types and has become a major contributor to the Australian winegrowing industry. As well as grapes from the Buller's own vineyard, fruit is collected from growers throughout the region, some of whom have supplied Buller for three generations. Maturation in a selection of fine, old oak hogsheads. Alcohol 18.0%
 
A deep mahogany/ tawny in colour. Bouquet of rich fruit cake with a touch of rancio. Complex rich spicy fruit flavours, hints of cherry syrup and sweet tobacco. Good palate length leading to a smooth finish with notes of rancio.

The wines of Buller are the result of four generations experience growing the most superlative fruit and vinifying the most resplendent examplars of Rutherglen. Name for the sleepy hamlet at the heart of the Swan Hill winegrowing region, Beverford is a range of wines fashioned for contemporary Australian palates. An immensely satisfying, generous Old Tokay with a profoundly fruit driven palate and lusciously aged rancio characters. The older material in the blend provides weight and depth of flavour, the younger wines contribute freshness and vigour.

Matriarch Valerie Buller is still actively involved in the running of the business - her background as one of the first ever female wines sales reps in Australia equipping her with a formidable business mind. Valerie Buller also built the beautiful bird park that is a key feature at the winery. Buller Wines has two cellar doors, one at Calliope in Rutherglen and the other at the Beverford winery near Swan Hill. A dark amber colour with orange brown tints. Sweet toffee and malt aromas before a smooth textured palate with toffee, malt and caramel sweetness, hints of butterscotch and orange peel. Good length and weight of palate lead onto a warming spirit finish.
Deakin Estate Cabernet Sauvignon

Alfred Deakin was Australia's second Prime Minister, he held the office three times in the first decade of Federation. Deakin was a patriot and visionary who understood the importance of a scientific approach to Australian land management. Deakin left his mark on the Murray Darling basin by importing the expertise of California's Chaffey Brothers to prepare the vast inland valley for a century of state of the art agriculture. Deakin Estate Cabernet is a fully approachable and satisfying early syle, brimming with luscious bramble cherry fruit.

Harvested from the warm and sunny Deakin Estate vineyard at Red Cliffs near Mildura. Grapes are vinified in sweeping arm potter fermenters followed by malolactic. Close attention is paid to maintaining mild temperatures and gentle maceration, so that the tannin extractions can be perfectly judged and managed. After a year of maturation to soften and infuse supple oak character, the better components are selected for inclusion into the final wine. Blending and fining trials are undertaken to arrive at the optimal assemblage.
 
Deep red colour. Intense blackcurrant and blueberry aromas, cigar box and a touch of cinnamon. Heaps of berry fruit flavours on the palate, pliant tannins that bounce along with you, joined by a warm and creamy vanillan finish. Deakin Cabernet cries out for a grilled steak, it would also go beautifully with traditional Italian, pasta and meatballs or cacciatore with mushroom olive.
Deakin Estate Merlot

The Deakin Estate range of wines was launched in the 1990s as a limited release. Since then the estate's bountiful vineyards have delivered world class wines that are being extremely well received internationally. The sun and rich soils of the Murray River Valley yield fully flavoured, easy drinking and intensely satisfying Merlot wines. Deakin Estate exhibits all the cherry/plum fruit flavours and soft tannins that's expected of good Merlot.

Deakin Estate was planted to premium wine grapes which were sold to other wineries until the 1980s. By the time the Deakin Estate range was launched in the 1990s, some of the vines had achieved considerable age, whilst newer vines were being planted. Deakin Estate's efforts are focused on producing fruit of the highest quality and expressive wines brimming with flavour and varietal character. The sunny microclimate and rich soils yield robust Merlot fruit, rich with varietal plummyness and soft tannins. The grapes are handled gently to extract the softest tannins, the juices are put through a slow maturation process to infuse the wine with warm oak complexity.
 
Medium density plum/ red hue. Olive and coffee aromas combined with plums, blackcurrant and light cinnamon. The fruit extends onto the palate, there are meaty characters, prunes and preserves, sweet briar, touches of mint, cherries in syrup, and velvety brown tannins. It closes nicely with a soft leafyness, a suppleness that's brilliantly suited to polenta quail.
Deakin Estate Sauvignon Blanc

Established 1967, Deakin Estate sold their harvests until a winery was built in 1980. Many of the vines have now achieved considerable age, but the team's efforts remain focused on producing fruit of the highest quality and wines brimming with flavour. A brightly lit, fruit forward Sauvignon Blanc that's best enjoyed young for its zesty, youthful freshness. Classic food accompaniements are oysters and goat's cheese but shellfish and chicken asparagus would also be a great match.

Sauvignon Blanc is harvested from the Deakin Estate vineyard at Red Cliffs near Mildura in the sunny Murray Darling. The vignerons monitor their vines very closely throughout the ripening period, as the decision of when to pick is critical to the quality of the finished wine. The challenge is to fashion a Sauvignon Blanc that's herbaceous and just moving into the sub tropical characters, a brilliant, fresh and pungent place to be. Cold fermentations, a careful selection and finishing are all that follows, getting the time of picking just right is crucial and the rest comes naturally.
 
Pale straw with a fresh lime green tinge. A fully herbaceous nose with characters of fresh rocquet and coriander leaf, followed by lime and kiwifruit aromas. Delicious and savoury on the palate, Deakin Estate is decidedly fruity, light bodied and zingy, with lemongrass and lime, feijoa and kiwifruit. Generously flavoured zesty and styled, a brilliant match to Thai recipes featuring coriander seeds or kaffir lime.

A lively cépage of Black and Gordo Muscat grown to the Boulton and Duffy, Burge, Wall and Pratt Vineyards at Swan Hill. Early harvest is essential to arrive at a benign level of alcohol, a palate full of flavour, crispy citrus tang and natural fruit sweetness. A scrumptuous wine with an exotic mix of watermelon, musk and rose petal flavours, red apple, hubba bubba and pink ice cream. It's low in alcohol but a single bottle is unlikely to be enough because with a drink this good, there's no excuse for not sharing.

Black Muscat grapes are picked later than parcels of Gordo Muscat to allow for colour development. All fruit is harvested at night to modest sugar baumes, as flavour ripeness is achieved at lower sugar levels. Grapes are chilled and crushed, treated to six hours skin contact for optimal extraction of pink hues from the Black Muscat. Fruit is then pressed into fermenters and the juices inoculated for a long and cold vinification until full natural carbonation is reached and the optimum balance between sugar and alcohol is achieved. The finished wine is cold filtered and chill bottled at 0¬įC to retain freshness and effervescence, before sealing under crown cap to capture the effervescence. Alcohol 5.5%
 
Lipstick colour with salmon hue, a slight frizzante and delicate bead. Fruit tingle and sherbet, fairy floss and fresh fuzzy peach nose. Sticky, a real turkish delight, raspberry jelly, peach sherbet and rosewater palate, clean and crisp, makes the most wonderful apertif. Match with fresh pancakes and poached fruit or cheeses and muscadel.

Great things come in small packages, at only 375ml, tiny little Pink Moscato has become a great big phenomenon. Why? It's the very definition of fun, one of the few indulgences in life which can be relied upon to set the perfect mood, whatever the ocassion and whoever the company. A true Moscato fashioned from the pick of the most succulent Muscat Gordo and Muscat of Hamburg grapes, light in alcohol, fantastically fizzed, brimming with berries and summer fruits, rose petal perfumes and luscious turkish delights.

Giant Steps seek to make wine that is less overt and obvious than most. The aim is to acquire the best fruit possible, whatever the cost, because without great fruit there can be no great wine. All work is done by hand. Grapes are only picked when optimum flavour ripeness is matched by good natural acidity. Fruit is harvested at night, chilled and crushed, followed by eight hours skin contact to arrive at the gorgeous blushing pink colour. Parcels are pressed to tank and filtered bright before inoculation. Juices are fermented long and cold until full natural carbonation is reached and the balance between sugar and alcohol is achieved. The final wine is cold filtered at -1C to retain freshness and effervescence. Alcohol 5.5%
 
Pretty in pink with a slight petulance. Turkish delight, fruit tingle, sherbet, fairy floss, fresh fuzzy peach. Raspberry jelly, peach sherbet, rosewater. Clean and crisp. To accompany fresh pancakes and poached fruit, a cheese plate with muscadel raisins, or just on it's own as an elegant apertif.

Fashioned from the ripest Sunraysia harvests of Black and Gordo Muscat grapes, parcels of the most intensely flavoured grapes, picked only as they achieve comely, watermelon pink hues. Treated to a course of natural spritzy ferment for maximum titillation, Innocent Bystander blooms with a brilliant bouquet of fairy floss and musk, blackcurrant and juicy turkish delights. Its moreish pink palate of muscat berries and tropical punch, makes her the libation of choice alongside smart nibbles, relaxed brunches, fruity sorbets and creamy, cheesy desserts.
