Dolcetto is a unique Italian grape which hails from the mountain sides of Piedmont. Grown to high country Victorian vineyards by the Brown Brothers, it's establishing a following beyond all expectations. Blended with Syrah and served slightly chilled, it makes a sensational, slightly spritzy aperitif and all occasion refresher. A versatile partner to a wide range of foods including paella or cajun fish, this lively wine offers a generous palate with ripe summer berry characters, a savvy touch of residual sweetness and delightful frizzante finish.

Dolcetto translates into little sweet one, although the Italians generally make dry red wines from the variety. Brown Brothers, attracted to its vibrant red colour and attractive flavours of ripe summer berries, has opted to blend the precocious Dolcetto with a component of Syrah to produce a youthful, distinctively fruit driven wine. Parcels of Dolcetto and Shiraz grapes are harvested from highly specialized vineyards at ripe levels of baume sugar levels. Parcels are treated to a brisk, temperature controlled vinification, arrested just before palate dryness to retain a little natural sweetness and petulant carbon dioxide, to be bottled immediately upon completion. Alcohol 10.5%
 
Bright magenta colour. Prominent cherry and berry aromas, lifted bouquets of red jubes, blackcurrant, red berries and hints of spice. A silky, juicy palate full of fresh summer berries and depth of flavour, Shiraz contributes length and ensures that the wine is not cloying. Natural grape sweetness is balanced by frizzante mouthfeel and refreshing, lively finish. A match to sweet desserts and savoury cuisine, nibbles, fresh fruit and cheese.

Shiraz and Grenache are erstwhile mates which are often paired for fashioning into a well structured, Rhone styled red. Gapsted retain some of the finest Dolcetto vineyards in Australia, the name of the grape is Italian for sweet, it makes a delicious match with Shiraz and Grenache, textural, seamless and soft, with a titillating sprinkle of spice. An amazing refresher when served slightly chilled, revitalizing as aperitif, the red wine of choice to accompany pork fennel sausages and applesauce, mozzarella lasagne or mushroom gruyere pie.

The cool, high country environmentals of Gapsted vineyards permit grapes to develop ripe natural sugars, rich esters and an intensity of lifted flavours, while retaining crisp, refreshing acidity. The undulating, elevated aspects, cool Alpine breezes and ample snow runoffs in the Spring, all play a role in defining the Bushranger's solid structure, balance and poise. Softer morning sunlight stimulates intense fruit characters in the grapes. By shielding vines from afternoon sun through the use of canopy management systems, the protection of delicate flavours is assured. Intensive vineyard management combined with cool nights stimulate vines to yield harvests of flavourful, fully ripened fruit.

Enter Dolcetto, one of the most exciting and flavourful Italian varietals. Dolcetto makes luscious, chewy wines with characteristic black cherry, prune and licorice flavours. Grant Burge fine tunes Dolcetto to a wonderful contemporary styling, a pleasantly petulant light red that's irresistible when served chilled alongside salt and pepper squid, pizza and tapas or Al fresco.

Dolcetto is sourced from good vineyards in the Barossa and Limestone Coast. Grant Burge include only those parcels which can best display the engaging varietal characteristics of the Dolcetto grape to create a wine that's refreshingly fruit driven yet appealingly complex and well balanced. Bunches are destemmed and lightly crushed to retain primary fruit flavours, components are kept separate throughout the winemaking process. Juices are vinified at 20�C to retain vibrant fruit flavours, the fermentations are stopped early to retain natural sweetness. Upon completion the wine is immediately bottled in order to retain carbon dioxide, a natural by product of the fermentation, to be slightly frizzante.
 
Vibrant red with purple hues, a reflection of the bright fruit characters indicative of the style. Aromas of black cherries and red liquorice leap from the glass and follow through on to the palate, supported by plum and sweet spice, cinnamon and nutmeg. This fresh, lively and dangerously easy to drink Dolcetto is slightly sweet, but with enough fine grape tannins for balance and to deliver a refreshing finish. Best served slightly chilled as an aperitif or matched with spicy cuisine.
Prunotto Dolcetto DAlba DOC 2014

The key to the enduring succes of Prunotto has been selection of site, the vineyards themselves have always been central to the quality of wine. Dolcetto means little sweetie, named for its fruitiness, it makes a structured wine of dimensional savouryness and judicious tannins when grown to the bucolic surrounds of Alba. An assemblage of fruit picked off elite vineyards in the ancient townships of Treiso and Barbaresco, Alba and Monforte d’Alba, a mouth filling red wine with substantive palate to match mushroom and meatball recipes, grills or braised game.

Sero Syrah Dolcetto
King Valley
From the King Valley in Victoria's high country, a good deal of pruning and thinning of Syrah and Dolcetto vines, together with some hand picking and selection of fruit. Cane cutting techniques have shrivelled the berries, concentrating the sugars and bittersweet grape tannins, whilst still on the vine. A wine of explosive Dolcetto characters with flavours akin to the shed dried styles of Italy's Veneto region, De Bortoli have achieved, an exciting fresh red, fully Euro in styling with the emphasis on fruit, suppleness and food friendliness.

Sero is a family of food oriented wines in classic European traditions, fruit driven and completely unoaked. Made without the use of oak, Drought conditions led to an earlier vintage than previous years. Dry weather and warm sunny days with low crop levels produced wines with great concentration of flavour. Fruit from low yielding vineyards and suitable flavour profiles was selected specially for this wine. Lifted raspberry and cherry fruit characters were identified in the vineyard and were preserved throughout the wine making process with a cool soak of crushed fruit on skins to extract delicate flavour and colour, followed by a cool fermentation and pressing mid ferment to retain natural fruit sweetness. Alcohol 9.5%
 
Vibrant purple hues. Lifted plum and raspberry aromas, violet and meats, citrus and brandied fruits. Characters stretch onto the palate, almond and of spice, chocolateyness grips the multi dimensional fruit. A length of briar tannins in support, it's a lovely wine with a soft, fruit driven finish.

Stephendale Dolcetto Syrah
And how popular are we? A refreshing red blend demonstrating the affinity between the fruity Dolcetto and a Rhonesque handling of Shiraz. Warburn Estate has created a fashionable Cuvee that's just so quaffable, immediately approachable and handsomely flavoured. Everyone seems to love this distinctive wine, it exhibits dashing plum and chocolate bouquets, and descends onto the palate with characters of fruit cake, ribena and spice. Perfect on summer nights and relaxed luncheons, it really comes into it's own with your favourite foods.

The grapes are sourced from premium vineyards, selected by the winemakers on the basis of vibrant fruit offering characters which are innately suited to the style. The refreshing qualities of the finished wine begin at the vineyard as the best batches of grapes destined are identified. The Shiraz must exhibit smooth tannins, while the expressions of the unique Dolcetto grape are preserved throughout the winemaking process. The fruit was harvested and brought to the winery for cold maceration, to extract the vital colour and flavour profiles. Following inoculation to select yeasts and vinification, the batches are trialled and marked for inclusion before ultimate assembly into the final wine.
 
Deep rich hue. Nose of rich sweet plums and blueberries, peppery spice from the Syrah. A great quality of this wine is the lusciousness of fruit, as punctuated by the refreshing acidity of the affable Dolcetto. The lingering fruit clings and refreshes, there's a depth and vibrancy to this wine that makes it sensational with good food, maybe even chocolate.
