Kirrihill Clare Valley Cabernet Sauvignon 2011

Exclusively Clare Valley Cabernet from sites in the northern districts, selected on the basis of consistency and compatibility of fruit characters. A parcel was picked from the KS1 Vineyard to the northeast of Clare township and from the high altitude Stanway family Kalimpa property at Armagh.

Great wines begin in the vineyard. Super premium wines can only be made with super premium fruit. Kirrihill works closely with the growers to ensure the fruit meets the standards required to make the highest quality wine. Parcels are all picked and vinified separately in open top fermenters with regular pumpovers and drain and returns to maximise the extraction of colour, flavour and tannins from the skins. The batches are pressed off and aged in a combination of French and American oak for a term of twelve months to soften the tannins and enhance complexity. Parcels are then assembled into the finished wine, with the aim being to achieve a balance of terroir, structure and elegance. Approx 14.0%
 
A vibrant deep red colour. Classic Clare Cabernet characters of blackcurrant and crushed violet on the nose with enticing cedary notes. The palate is chock full of plum, mulberry and dark cherry. A rich, full bodied wine whose fruit characters are balanced by delicious chocolate oak, velvety tannins and a long, satisfying finish.

Kirrihill processes fruit for some of the most recognizable wine brands in Australia, as well as smaller local producers who are behind some of the Clare Valley's most praiseworthy efforts. Kirrihill retains the best fruit for their own label. To create a full bodied style, Shiraz grapes were selected from three distinct subregions of the Clare Valley, the Edwards family Ballingarry property in Armagh to the northwest of the town of Clare, the Tullymore vineyard to the northeast and the Schobers Road vineyard in Auburn at the southern end of the Valley.

Kirrihill works closely with the best growers to ensure the fruit meets standards required for the highest quality wines. The parcels are all picked and vinified separately in open top fermenters with regular pumpovers and drain and returns to maximise the extraction of colour, flavour and tannins from the skins. The resultant wines are pressed off and aged in French oak for several months to enhance complexity and soften the tannins. Batches are then assembled to achieve a balance of flavour, characters and structure across the individual components. The objective being to create a wine which can best demonstrate the classic expression of the finest Clare Valley Shiraz.
 
A deep red colour with purple tints. An enticing nose, hints of black pepper and berry fruits are complemented by the lithe cedary notes from the oak. The palate is chock full of sweet blackberry and plum fruit flavours with hints of chocolate and exotic spice supported by well integrated oak and framed by elegant tannins.
Kirrihill Estates Slate Creek Riesling 2012

From the highly specialized Stanway family property at Watervale in the Clare Valley. Such is the quality of fruit from this superlative site, that it presents a profound Riesling experience when isolated for bottling into a pure, single vineyard wine. Luxurious mineral, talc and bright citrus characters feature prominently.

Sourced from thirty five year old vines at one of Watervale's best sites, the Stanway family's Slate Creek Vineyard Cuasin na Sleina planted in the 1970s along a northeast southwest orientation to deep, red clay loam over limestone soils with pockets of slate at 350 metres above sea level. Grapes are harvested throughout the cool of night, each block being picked and processed separately, delivered promptly to the winery and crushed, destemmed and chilled prior to a gentle pressing. The free run juices are cool fermented followed by racking and stabilisation prior to a light filtration and bottling. The wine is handled as expeditiously as possible to retain Riesling's essential fruit character and elegance.
 
Pale straw with tinges of green. A gentle swirl reveals aromas of lime, lemon and blossom on the nose. The palate will reward those with a penchant for an elegant and refined Riesling, lime juice and lemon zest are complemented by mineral and slate characters. At the riper end of the spectrum, with generous flavours giving immediate drinkability. As is expected of this style, the finish is crisp and fresh with great length of flavour. Enjoy with whiting, scallops and guinea fowl.

Kirrihill Estates Tullymore Cabernet Sauvignon 2010

The state of art Kirrihill operation places an emphasis on environmentally sound practices, recycling waste water and grape marc into organic mulch for the vineyards. Cutting edge trellising technology provides the perfect balance of shade and sunlight. Vines are planted to a north south orientation on red clay loam over limestone soils at 450 metres above sea level. Grapes are cold soaked for five days, warmed up and vinified in open top fermenters with daily pumpovers to maximise extractions. The must is pressed off and the wine transferred to new and second use French and American oak barrels for maturation. Parcels are rigorously selected to ensure that only the best are included into the final assemblage.

Kirrihill Estates Tullymore Vineyard Shiraz 2010

From fruit grown to the superlative Tullymore property, just east of Township Clare. Vines are planted on red clay loam over limestone soils at 450 metres above sea level, fruit is harvested as separate parcels according to flavour ripeness. Two distinct mesoclimes on the east and west end of the property create a wine that's layered with flavour and complexity.

The majority of components are treated to a nine day maceration or cold soak, concentrating the ripe berry fruit characters, followed by vinification in closed top fermenters. The balance is vinified at different temperatures or run off for a course of concentration. Regular pumpovers maximize colour, flavour and tannin extraction from skins. Ferments are pressed off to a selection of new and second use French and American oak hogsheads for malolactic and a term of maturation. Rigorous barrel selection ensures that only the highest quality components are included into the finished wine.
 
Deep purple in the glass. A nose reminiscent of black and blue berry fruit, mocha and vanillin oak. The seductive palate is rich and intense with plum, black cassis fruit with hints of chocolate, liquorice and earthy exotic spices. Cedary oak is evident but well integrated and the finish is smooth and persistent. Drinks marvelously upon release and will develop handsomely.

"The winery was established in 1999 to capitalise on the opportunities for contract processing that arose as a result of the unprecedented level of vineyard development in the prior five years. Vineyard expansion had outstripped the processing capability of the industry, which created the demand leading to the construction of the winery ready for the 2000 vintage.

Cutting edge trellising technology such as Vertical Shoot Positioning provides the perfect balance of shade and sunlight, resulting in grapes with intense colour and flavour. The latest vineyard water management and irrigation methods, such as deficit regulated irrigation practices, are also utilised to increase flavour concentration and assist in the production of award-winning wines.

At the gateway to the Clare township, Kirrihill have created a haven for those who want to indulge in the partnering of quality food and wine. The winery's cellar door, nestled among gum trees and overlooking the surrounding vines and countryside, provides the perfect introduction to a range of super premium wines. The traditional cellar door tasting can be followed by anything from a great coffee to a sumptuous meal in the adjoining restaurant, Salt n Vines Bar and Bistro. Kirrihill Wines has grown exports to 36% of total production from a standing start just two years ago. Kirrihill's Grant Norman said Kirrihill saw an amazing growth in demand internationally over the past 12 months. “Our success in wine shows around the country and regular press reviews have led to overseas distributors to the Kirrihill doorstep. Most of them are looking for a strong Clare producer and we give them exactly what they are looking for!”
