A fine gold, deep straw yellow colour, a nice cordon for a very brilliant wine. Floral first impression with violet aromas followed by smooth, fruity nuances of apricot and quince preserve. A touch of fresh fig followed by a warm finish marked by cappuccino cream and liquorice, the finish develops between hazelnut and lavender, honey and quince. An elegant and distinguished wine, with distinct freshness, cellared at the Heidsieck caves at Reims, pure nectar after almost two decades of maturity.

Clover Hill's been producing pure varietal sparkling Chardonnay for many years. Assembled from a selection of elite Cuvees, matured on yeast lees for four years, followed by twelve months of ageing under cork prior to release. Disgorged with an addition of reserve wine, the doseage is prepared from components of Clover Hill reposing in oaken foudres. Clover Hill is the essential Australian Blanc de Blanc sparkling with a crisp profile of fruit, exceptional length and lasting flavours.

Located along the Pipers River of northeast Tasmania, Clover Hill was established in the eighties as a dedicated sparkling wine estate, planted solely to the traditional varietals, Chardonnay, Pinot Noir and Pinot Meunier. The sixty six hectare property overlooking Bass Strait has a similar climate to the Champagne region of France. Vines are close spaced and planted on deep, red volcanic soil in a frost-free amphitheatre, orientated north/south to maximise sunlight exposure.
 
Vibrant light straw, a persistent fine bead. An assortment of fresh summer fruits, melon and citrus, pawpaw and pear. Instances of warm nutty yeast and developed almond/ toast characters, complex and elegant yet remarkably integrated. Superior single site Sparkling Chardonnay from elite rows of vine on Delamere vineyard at Pipers Brook. Fruit is whole bunch pressed, indigenous yeast fermented and treated to full malolactic, followed by a wildly extravagant four years in bottle on fine sediments and reseal with less than 2 grams of liqueur tirage sweetness. A pretty and delicate nose of fruit blossoms, white peaches, uber ripe apple and a luxurious hint of oyster shell, rich and refined stonefruit characters across the palate, ripely picked orchard flavours, warm nutty notes and brioche toastyness.

An early pioneer and innovator, the House of Ruinart remains to this day the most exclusive of Champagnes. Ruinart was the first Champagne estate to acquire it's own crayeres for the purpose of ageing wine, the only ones to be classed as a historic monument. The depth of the pits and the chalk from which they are made provide perfect thermal stability and optimum humidity. The constant low temperature leads to a slow prise de mousse, an effervescence of incomparable quality. The fermenting wines are aged and riddled over a period of weeks, constantly turned to release the lees sediments. After disgorgement and liqueur doseage, they are returned to the crayeres for several more years of maturation.
 
Deep golden, lingering effervescence. Soft aromas are followed by hints of reine claude plum, peaches and pears.
