To make consistently good Blanc de Blancs, it is necessary to use good grapes every time. The strength of a House such as Billecart-Salmon lies in experience, but also in the quality of fruit. The Blanc des Millénaires Brut Vintage by Charles Heidsieck is a Blanc de Blancs made solely from Chardonnay, produced in very small quantities and only in years of exceptional quality. To make this Blanc de Blancs, Charles Heidsieck retained only five vineyards from the Côte des Blancs known for their capacity to evolve and mature. The Blanc des Millénaires is aged in contact with the lees for a minimum of 10 years, producing an impeccably accomplished quality wine. A superior Champagne which is both subtle and intense.

A fine gold, deep straw yellow colour, a nice cordon for a very brilliant wine. Floral first impression with violet aromas followed by smooth, fruity nuances of apricot and quince preserve. A touch of fresh fig followed by a warm finish marked by cappuccino cream and liquorice, the finish develops between hazelnut and lavender, honey and quince. An elegant and distinguished wine, with distinct freshness, cellared at the Heidsieck caves at Reims, pure nectar after almost two decades of maturity.

Clover Hill's been producing pure varietal sparkling Chardonnay for many years. Assembled from a selection of elite Cuvées, matured on yeast lees for four years, followed by twelve months of ageing under cork prior to release. Disgorged with an addition of reserve wine, the doseage is prepared from components of Clover Hill reposing in oaken foudres.

Located along the Pipers River of northeast Tasmania, Clover Hill was established in the eighties as a dedicated sparkling wine estate, planted solely to the traditional varietals, Chardonnay, Pinot Noir and Pinot Meunier. The sixty six hectare property overlooking Bass Strait has a similar climate to the Champagne region of France. Vines are close spaced and planted on deep, red volcanic soil in a frost-free amphitheatre, orientated north/south to maximise sunlight exposure. Clover Hill's commitment to creating Australia's finest sparkling wines has been recognized as Tasmanian Vineyard of the Year, and on more than one occasion as Winestate's Australasian Sparkling Wine of the Year.
 
Vibrant light straw in colour with a persistent fine bead and gentle foaming mousse. An assortment of fresh summer fruits, melon and citrus, pawpaw and pear. Instances of warm nutty yeast and developed almond/ toast characters, complex and elegant yet remarkably integrated. Slight savouriness. An early pioneer and innovator, the House of Ruinart remains to this day the most exclusive of Champagnes. Ruinart was the first Champagne estate to acquire it's own crayères for the purpose of ageing wine, the only ones to be classed as a historic monument. The depth of the pits and the chalk from which they are made provide perfect thermal stability and optimum humidity. The constant low temperature leads to a slow prise de mousse, an effervescence of incomparable quality. The fermenting wines are aged and riddled over a period of weeks, constantly turned to release the lees sediments. After disgorgement and liqueur doseage, they are returned to the crayères for several more years of maturation.

Chardonnay is harvested throughout the cooler parts of day to preserve the quality and freshness of juices. Grapes from each site are pressed and separately vinified in temperature controlled fermenters to ensure the unique characteristics of each parcel is retained. Fourteen individual Chardonnay Cuvées are selected on the basis of subtle yet concentrated varietal flavour, balanced structure and generous palate length, all essential for the delicate and elegant Blanc de Blancs style. Following tirage and a secondary fermentation, Chandon spends over forty months ageing on sedimentery yeast lees, an essential part of the Méthode Traditionnelle process. Alcohol 12.5%

Gold Medals, International Wine Challenge France, and the Prix d'Excellence. The most modern state of the art winery in Champagne, Nicolas Feuillatte sources grapes from 4800 winegrowers dedicated to the highest quality, from over 1,200 acres among the Premier and Grands Cru vineyards of Champagne. Through the course of winemaking, almost 400 clear wines are analysed, commented upon and criticised, one by one, at the rate of twelve samples per session. After determining the aromatic and organoleptic characteristics of each wine, the blend for the final cuvée is decided. A secondary fermentation in the bottle, with a mixture of liqueur and yeast, known as the liqueur de tirage.
 
Subtle pale green hue, with fine and abundant bubbles. Magnificent bouquets, broad strokes of butter, lime tropical fruit, brioche and sun-swept meadows. The Chardonnay gives off mineral aromas, such as the chalk on which it thrives, it gratifies with exotic flavours including hints of flowers such as May blossom and acacia. There are some more subtle scents too, like citrus fruit, pear or even lime blossom. Palate is immense, majestic, harmonious, complex, green apple, dried figs, honeysuckle, pure dry mountain pine and the mineral backbone of the Côte des Blancs' chalky vineyard. Full-bodied, superb as an aperitif, this Cuvée harmonizes beautifully with the finest oysters, or elegant desserts like lemon tart.

Chardonnay vines trained to yield fruit specifically for the vinification of sparkling wines are grown on ancient alluvial river terraces, producing grapes full of concentrated, pure varietal flavours along with a natural zesty acidity, ideal for the creation of super premium sparklers. Two acres of Chardonnay were established at Scotchmans Hill in 1982. The winemaking team have since developed intimate knowledge of local soils and terroirs further afield which can yield the quality fruit expected of Scotchmans Hill. Grapes are sourced from good vineyards in the King Valley and Geelong. Exclusively free run juices are treated to a cool fermentation in tank at 12°C over a period of two weeks. The wine remains on gross lees for five months to infuse the palate with complexity and build structure. Following a fining and stabilization, secondary fermentation is initiated by the traditional Charmat method, achieving a vibrant effervescence before bottling under pressure. Alcohol 12.0%

The Wolf Blass winery is located at the epicentre of the Australian wine industry, and has produced some of Australia's most favourite wines. The Eaglehawk range are full of fresh fruit flavours, crafted from the very best grapes Australia has to offer. 100% Chardonnay grapes ares sourced from excellent sites across southeast Australia. The winemaking team work closely with the viticulturalists and carry out periodic checks in the vineyard to inspect progress of the vines. Following the pressing and fermentations, components were assembled into a distinctly flavoursome Cuvée with fine fruit characteristics and a touch of pleasantly tangy tropical acid at the finish.
