A fine gold, deep straw yellow colour, a nice cordon for a very brilliant wine. Floral first impression with violet aromas followed by smooth, fruity nuances of apricot and quince preserve. A touch of fresh fig followed by a warm finish marked by cappuccino cream and liquorice, the finish develops between hazelnut and lavender, honey and quince. An elegant and distinguished wine, with distinct freshness, cellared at the Heidsieck caves at Reims, pure nectar after almost two decades of maturity.

Located along the Pipers River of northeast Tasmania, Clover Hill was established in the eighties as a dedicated sparkling wine estate, planted solely to the traditional varietals, Chardonnay, Pinot Noir and Pinot Meunier. The sixty six hectare property overlooking Bass Strait has a similar climate to the Champagne region of France. Vines are close spaced and planted on deep, red volcanic soil in a frost-free amphitheatre, orientated north/south to maximise sunlight exposure.

Instances of warm nutty yeast and developed almond/ toast characters, complex and elegant yet remarkably integrated. Superior single site Sparkling Chardonnay from elite rows of vine on Delamere vineyard at Pipers Brook. Fruit is whole bunch pressed, indigenous yeast fermented and treated to full malolactic, followed by a wildly extravagant four years in bottle on fine sediments and reseal with less than 2 grams of liqueur tirage sweetness. A pretty and delicate nose of fruit blossoms, white peaches, uber ripe apple and a luxurious hint of oyster shell, rich and refined stonefruit characters across the palate, ripely picked orchard flavours, warm nutty notes and brioche toastyness.

An early pioneer and innovator, the House of Ruinart remains to this day the most exclusive of Champagnes. Ruinart was the first Champagne estate to acquire it's own crayeres for the purpose of ageing wine, the only ones to be classed as a historic monument. The depth of the pits and the chalk from which they are made provide perfect thermal stability and optimum humidity. The constant low temperature leads to a slow prise de mousse, an effervescence of incomparable quality. The fermenting wines are aged and riddled over a period of weeks, constantly turned to release the lees sediments. After disgorgement and liqueur doseage, they are returned to the crayeres for several more years of maturation.

Chardonnay is harvested throughout the cooler parts of day to preserve the quality and freshness of juices. Grapes from each site are pressed and separately vinified in temperature controlled fermenters to ensure the unique characteristics of each parcel is retained. Fifteen individual Chardonnay Cuvée are selected on the basis of subtle yet concentrated varietal flavour, balanced structure and generous palate length, all essential for the delicate and elegant Blanc de Blancs style. Following tirage and a secondary fermentation, essential parts of the Methode traditionnelle process, Chandon spends over forty months ageing on sedimentery yeast lees.
 
Bright pale gold hues, fine mousse, persistent bead. Freshly roasted chestnut and warm baked bread aromas are complemented by subtle stone fruit and lemon zest nose. A soft, voluptuous front palate, fine, crisp acidity providing the structural backbone, citrus and white peaches excite, toasty, nutty yeast autolysis notes delivering richness and creaminess, building to a crescendo, before tapering off, right through to the long and flinty, mineral finish.

The Heemskerk Vineyard was established in 1975 at the very heart of Pipers Brook, the finest sparkling wine terroir in Australia and the birthplace of Jansz. In 1986, Heemskerk was joined by the esteemed Louis Roederer of Champagne in their pursuit of the definitive Australian sparkling wine. The pick of Heemskerk parcels, are individually crafted and assembled into the nation's finest effervescent Chardonnay. Bunches are individually hand sorted and destemmed, treated to the full compliment of Champenoise Methode Traditionelle, vinified on gross sediments and sent to the Jansz cellars for an extended term of maturation in own bottle on yeast lees before the ultimate disgorgement, doseage and reseal.

Through the course of winemaking, almost 400 clear wines are analysed, commented upon and criticised, one by one, at the rate of twelve samples per session. After determining the characteristics of each wine, the blend for the final cuvee is decided. A secondary fermentation in the bottle, with a mixture of liqueur and yeast, known as the liqueur de tirage.

Oyster Bay takes its name from the local bay at the tip of New Zealand's majestic South Island. Oyster Bay's reputation has been built from vines grown in Marlborough's central Wairau Valley and the North Island's salubrious Hawkes Bay region, both are now recognised as being among the great wine growing regions of the world. Chardonnay vines trained to yield fruit specifically for the vinification of sparkling wines are grown on ancient alluvial river terraces, producing grapes full of concentrated, pure varietal flavours along with a natural zesty acidity, ideal for the creation of super premium sparklers. Fruit is harvested early, crushed and inoculated with neutral yeasts to accentuate the Chardonnay varietal character.
