Watershed Awakening Cabernet Sauvignon 2008

Gold Medal & Trophies International Wine Challenge, Gold Medals Qantas Wine Show, Royal Adelaide & Sydney Royal. The Watershed label was designed by Roland Butcher and incorporates a purple room with a four paned window on the wall. Green vines can be seen looking out of the window, the main focus is a ray of light streaming through the glass and diffusing across the floor, symbolizing a human being's stream of consciousness - a creative but almost uncontrollable thought process, spurred on by small inspirations, an Awakening.

Watershed Vineyard is situated five kilometres south of Margaret River at the intersection of Darch Road and Bussell Highway. Bussell Highway is the major arterial road for traffic travelling to and from Margaret River township. The Watershed property enjoys extensive Bussell Highway frontage. Watershed's Stage 1 site spans across an immense area of the choicest land on Margaret River, the best eighty hectares has been established as a vineyard. Select parcels of Cabernet Sauvignon have been assembled to create the Awakening. Following the crush and inoculation, Awakening is vinified in a combination of fermenters, followed by eighteen months maturation in a mix of French oak barriques. Alcohol 13.5%
 
Deep scarlet colour. Complex aromas of liquorice, choc mint and black currant with hints of mocha. On the palate, the dense velvety texture is complemented by cigar box, black olive notes followed by fine silky tannins from extended ageing under fine French oak. Awakening is drinking beautifully upon release, an outstanding Margaret River to accompany grilled meats, game or lamb.

The founders of Watershed went to great lengths to appropriate some of the best Chardonnay growing soils around the Margaret River. An artisanal Burgundian style of winemaking infuses the palate with rich textures and lees complexity. Awakening is vinified exclusively from hand picked grapes grown to a select block of the Watershed estate vineyard. Inoculated by wild indigenous yeasts and completely barrel fermented in a selection of new and one year old French oak barriques for a wine of great complexity. Alcohol 13.5%
 
Straw and butter colour in the glass. Intense citrus aromas accompanied by notes of spice and roasted cashew. On the palate, the dense creamy texture is complemented by preserved lemon and mineral notes followed by a long spicy and biscuty finish.

The Watershed property is strategically placed, 4.8 km south of Margaret River at the intersection of Darch Road and Bussell Highway, the major arterial road for traffic travelling to and from the Margaret River township. The fortuitously positioned Watershed vineyards enjoy the influence of balmy maritime climes, growing conditions very like Bordeaux which contribute to the Medoc character of the Watershed Wine Project's Cabernet Merlot. The team are highly expert at Cabernet Merlot, having collected gold medal at Mundis Vini in Germany, the world's largest international wine show. Fruit is harvested to healthy levels of baume, crushed and vinified before eighteen months maturation in a selection of fine French oak barrels.
 
Deep scarlet colour. Aromas of dark berries, hints of mint, liquorice, chocolate on the nose. A rich palate showing vanilla notes and aromatically ripe plum flavours over a bed of velvety textures, supported by firm but flattering French cedar/ vanilla oak, all complimented by fine silky tannins which linger on the finish.

The Watershed property is situated five kilometres south of Margaret River at the intersection of Darch Road and the Bussell Highway, a major arterial to and from the precious vineyards gathered around Margaret River township. Considered to be one of the better microclimates and terroirs in the dress circle of the region, Watershed sits not far from the turn-off to Leeuwin and Voyager, two of the most distinguished vineyard sites in the district. A graduate of viticultural science at Charles Sturt University, Watershed's chief vintner and Shiraz specialist spent several years as vineyard manager at Xanadu Wines immediately following a two year stint at neighbouring Voyager Estate.
 
Brick red colour, purple hues. Complex aromas of dark berries and plum, liquorice with hints of coffee, spices and dark chocolate. On the palate the dense velvety texture is complemented by cinnamon spice and mocha notes from extended oak maturation. The rich fruit flavours and fine silky tannins make Senses an exceptional drink immediately upon release.

A watermelon coloured wine that's redolent with dried fruit aromas, piquant with spice from the backbone of good Shiraz, slightly tangy with impressions of iced tea from the refreshingly drying acids. As harmoniously pitched as it is complex, Shades is a Rosé that stands quite apart from others, crafted to a chewy Tavel styling, a brief contact with the skins develops the colour and infuses the palate with a lick of tannin. A luscious pink wine, flavoursome enough to stand on it's own and sophisticated enough for pairing off with fine gourmandise.

A mostly Shiraz wine with a smaller component of Merlot. The best vineyard sites around Margaret River's inner sanctum were selected by the Watershed estate's founders on the basis of soils and climactic aspects. Harvest of fruit is determined when the balance of flavour, acid and skin colours are optimal, the intention being to capture the essential elements of Margaret River's unique maritime influences, and to embody them in a rich and racey, deeply flavoured Rosé wine. Following the harvest, components are crushed and steeped on skins to acquire the depth of colour. After inoculation and fermentation, the separate batches are assembled into the finished wine. Alcohol 14.0%
 
A beautiful light garnet rose colour. Bouquets are complex, strawberries with lifted plum and violet, lifted aromas of strawberries and cream. A vibrantly fruit driven palate completed by subtle hints of raspberry on the fresh soft finish. An awesome food wine, suited to barbeques, asian and Al fresco cuisines.

Watershed is one of the few major estates in Margaret River with a capacity for the collation of the very finest Semillon and Sauvignon Blanc. Watershed's viticulturalists were responsible for the single largest initial vineyard planting in the region. With well over a hundred hectares under vine, Watershed is able to isolate the best sites for white grapes, resources which dwarf some of the region's largest boutique vineyards. Following a harvest determined by optimal levels of ripeness and the perfect ratios of fruit sugars to acid, Semillon and Sauvignon Blanc are crushed and inoculated, fermented in tank at controlled temperatures, before assembling into a classically fruit driven dry white. Alcohol 12.5%
 
Pale straw in the glass. Aromas of lime blossoms, lychees and gooseberry, intense citrus, grapefruit and guava aromas complemented by the grassy Semillon. On the palate, Shades is fresh and vibrant exhibiting luscious passionfruit characters, tropical fruit flavours leading to a crisp lingering finish. This quenching Margaret River white is deliciously ready to be enjoyed now, excellent in it's youth, a suitable companion to good food, particularly fried fishes or Asian.

Situated right at the heart of the grand Margaret River estates, a stone's throw away from the superior vineyards of Leeuwin and Voyager Estates, Redgate, Xanadu and Cape Mentelle, the Watershed sites were selected after extensive tests confirmed the existence of soils ideally suited to the production of exceptional wine grapes. The ever present maritime breezes allow the vines to maintain a stable temperature around the otherwise warm Margaret River climate. Cabernet Sauvignon, Merlot and Shiraz grapes are crushed and inoculated, vinified and matured under a combination of finely grained oak barrels, to soften the tannins and infuse complexity whilst preserving the fruit driven core. Alcohol 13.6%
 
Deep scarlet colour. Intense aromas of blackberry, strawberries and plum with hints of herb and vanilla notes. On the palate, the sweet berry and chocolate flavours are completed by a soft round texture finishing with fine velvety tannins. Enjoy with chorizo or lamb.

The philosophy at Watershed has always been to produce fine, distinctively regional wines that are elegant and assertive with glorious fruit flavours. Awards or triumphs at national and international wine competitions have always been a second priority but have eventuated nonetheless. The growing conditions around Watershed's vineyards, right at the atrium of the dynamic Margaret River appellation, are considered ideal for the production of exuberant Chardonnay wines. Grapes are harvested to healthy levels of baume, exhibiting excellent concentration and clean acids. To retain all the natural assertiveness and intensity of flavour, Shades is completely cool tank fermented, unwooded and unoaked. Approx 13.0%

Watershed

Watershed Premium Wines is one of the few major producers in Margaret River to have the capacity to satisfy the international wine market demand, responsible for the single largest initial vineyard planting in the region. With 117 hectares under vine, in the vintage 2006 Watershed crushed around 950 tonnes with a future expectation of 2400 tonnes, around eight times as much as the region’s largest boutique vineyards. 60% of vines are currently made up of red varietals, 40% being white varietals. There are currently 1,200 vine rows on the Stage 1 property – measuring 270km, the distance between Margaret River and Perth!

The Watershed vineyard is situated 4.8 km south of Margaret River at the intersection of Darch Road and Bussell Highway, Margaret River. The Bussell Highway is the major arterial road for traffic travelling to and from the Margaret River township. The Watershed vineyard has extensive Bussell Highway frontage, which contributes significantly to the profile and cellar door sales of the Margaret River Watershed Premium Wine Project. Watershed's Stage 1 vineyard comprises a total area of 127.2901 hectares, of which 79.9 hectares has been established as a vineyard. The 130,209 vines were hand planted in August/September 2001.

The Watershed vineyard is in the dress circle of Margaret River being on the Bussell Highway at the turn-off to Leeuwin and Voyager Estates, the two most visited wineries in Margaret River. In March 2004 Watershed purchased it's Stage 2 vineyard over the road from it's exisiting site. In September 2004 33.3 hectares were planted giving Watershed a total of 117.45 hectares under vine. The stage 1 dam was constructed in April 2000 at an initial cost of approximately $240,000. The dam was subsequently expanded to a water storage capacity of 201 megalitres during the first quarter of 2001 at an additional cost of approximately $110,000. Despite Margaret River receiving well below average rainfall last winter the dam overflowed again in August 2006.

Watershed's 2004 Shiraz and 2004 Cabernet Sauvignon Merlot both collected Gold Medals at Mundis Vini in Germany, the world’s largest international wine show. The 2004 Shiraz had already won gold medals at the 2007 Sydney International Wine Competition and the 2007 Royal Sydney Wine Show in addition to silver medals at the 2007 Decanter World Wine Awards and the 2006 WA Qantas Wine Show. The 2004 Cabernet Sauvignon Merlot had already collected a silver at the 2006 Mundus Vini Wine Show.

As well as Margaret River’s traditional varieties of Chardonnay and Cabernet Sauvignon, some alternative varietals have been planted, such as Zinfandel, Sangiovese and Viognier. The first vintage grapes were sourced from several growers in the Margaret River region, off vines between 7 to 20 years in age. The first release wines in 2002 were produced by then wine making consultant, John Wade, at a contract winery in Margaret River. The second vintage in 2003 sourced grapes from contract growers and, for the first time, fruit from the Watershed vineyard was processed at the Watershed winery by the Winemaker.

In December 2004 the first of the reserve style range was released with the 2004 Awakening Sauvignon Blanc, followed shortly by the 2004 Awakening Chardonnay and the 2003 Awakening Cabernet Sauvignon. Now onto their second vintages, these flagship wines have recieved a host of accolades and awards. In February 2005 the 2004 Viognier was released, becoming the first wine to be produced from 100% Watershed fruit. Now onto its second vintage, it has also been accompanied by the 2004 Zinfandel (since sold out) as fully estate grown wines.

Watershed's 2006 Unoaked Chardonnay collected a Gold Medal at the 2007 Perth Royal Wine Show. This followed prior success when it collected a Gold Medal at the Royal Queensland Wine Show and the 2006 Margaret River Wine Show when it received the highest score in the 2006 Chardonnay class. Another great example of the outstanding quality of Watershed's premium wines at super affordable pricing.
