To make consistently good Blanc de Blancs, it is necessary to use good grapes every time. The strength of a House such as Billecart-Salmon lies in experience, but also in the quality of fruit. Billecart-Salmon rejects grapes that do not meet the most stringent standards. This extreme determination to provide quintessential quality gives Billecart-Salmon it's status of noblesse. The House of Billecart-Salmon seeks genuine excellence, as contributing vineyards are classified according to the quality of fruit they produce, the best vineyards are ranked as 100% of échelle des crus all the way down to 80%. Very few Houses can make a claim like Billecart-Salmon, that the quality of the grapes sourced, average at above 95%

Billecart Salmon is one of the last familial Houses of Champagne, all the wines are marked by the seal of excellence. The story begins with the wedding of Nicolas François Billecart and Elisabeth Salmon. The marriage lead to the founding of the distinguished Champagne House of Billecart-Salmon, established in 1818 at Mareuil-sur-Aÿ. Champagne Billecart Salmon fashions the most exquisite wines from choice parcels of fruit grown to twenty five acres of distinguished sites around its headquarters in the village of Mareuil-sur-Ay. Unlike many better known marques, the noble House of Billecart Salmon has elected to remain small in size and limit their production, focussing on quality and consistency over quantity. A cooler, temperature controlled fermentation, inoculated to finely aromatic yeasts, serves to preserve the freshness in the final wine and infuse the bouquet with the most exquisite expressions. Billecart-Salmon evokes the cult of the grape, the noblesse of Champagne, pleasure, finesse, and the notion of splendour. Billecart-Salmon aims for excellence, it manifests itself through the harmonious balance of impressions, and of flavours. On the strength of it's traditions, Billecart-Salmon has chosen to ferment the Grande crus selected by the cellar master Francois Domi, in small Burgundy casks that have already seen several wines. The bottles are then aged in an extensive network of cellars hewn deep into the chalk, dating from the 17th to 19th centuries. Here the temperature is constant, relatively low at around 12° C, encouraging the production of the fine effervescence. Alcohol 12%

Nicholas and Elizabeth reclaimed the coat of arms of their ancestor Pierre Billecart, a councilor to the King of France. A tribute to the co-founder Elisabeth Salmon, this Cuvée is fashioned from an equal blend of Pinot Noir and Chardonnay (vinified as white wine) to which some Pinot Noir from Mareuil-sur-Aÿ (vinified as a red wine) has been added. Billecart-Salmon operates approximately thirty hectares of it's own estate vineyards, but the bulk of the grapes arrive from a total area of a hundred and forty hectares, grown by some of Chapmagne's most ancient winegrowing families.
