Billecart Salmon is one of the last familial Houses of Champagne, all the wines are marked by the seal of excellence. The story begins with the wedding of Nicolas François Billecart and Elisabeth Salmon. The marriage lead to the founding of the distinguished Champagne House of Billecart-Salmon, established in 1818 at Mareuil-sur-Aÿ. Two centuries later, the seventh generation of the family still manages the Champagne company and oversees the crafting of each individual bottle, maintaining the legend of the Spirit of Champagne. The original love of the founders, lives on through the devoted viticulture, and passionate winecraft, a philosophy which has been cultivated around three principal values, finesse, balance and elegance.

Champagne Billecart Salmon fashions the most exquisite wines from choice parcels of fruit grown to twenty five acres of distinguished sites around its headquarters in the village of Mareuil-sur-Ay. Unlike many better known marques, the noble House of Billecart Salmon has elected to remain small in size and limit their production, focussing on quality and consistency over quantity. A cooler, temperature controlled fermentation, inoculated to finely aromatic yeasts, serves to preserve the freshness in the final wine and infuse the bouquet with the most exquisite expressions. Various components are treated to lees batonnage, malolactic fermentation and a spell in Burgundian oak barrels.

Billecart-Salmon evokes the cult of the grape, the noblesse of Champagne, pleasure, finesse, and the notion of splendour. Billecart-Salmon aims for excellence, it manifests itself through the harmonious balance of impressions, and of flavours. On the strength of it's traditions, Billecart-Salmon has chosen to ferment the Grande crus selected by the cellar master Francois Domi, in small Burgundy casks that have already seen several wines. The bottles are then aged in an extensive network of cellars hewn deep into the chalk, dating from the 17th to 19th centuries. Here the temperature is constant, relatively low at around 12°C, encouraging the production of fine effervescence.

An exclusive assemblage of Grands Crus and Premiers Crus, the first fermentation of La Grande Année is always carried out in oak barrel, a process unique to the winemaking traditions of Champagne. Bollinger makes use of well seasoned, prior use barrels, five years of age and more, to avoid any obvious new oak influence or unwanted tannins. La Grande Année ages under the Bollinger cellars for at least six years. After a manual disgorgement, La Grande Année is treated to a small liqueur dosage of 7 g/L to 9 g/L, before resting a minimum of three months prior to release. This short respite permits the wine to digest it's liqueur d'expédition and recover perfect balance.

The first fermentation is done Cru by Cru, individual batches are kept separate, preserving the unique characters of the source vineyards. Bollinger is one of the very few Houses of Champagne to do some first fermentation in oak barrels. Bollinger uses small tanks to ferment its wines, improving the control of the fermentation process, enhancing the quality of wines in the Special Cuvée. Bollinger spends an exceptionally long time resting on it's sedimentery lees, contributing to the complexity. On average, the blend comprises 60% Pinot Noir, 25% Chardonnay and 15% Pinot Meunier. A further component of 5% to 10% reserve wines, from several different origins, all Grand and Premier Crus, all stored under cork.

An uncommon voyage of the senses .
 
Colour is unmatchable to any other wine, it posseses an unforgettable lustre, a tint that is golden straw-yellow and deep. An entrancing bead that persists, each burst emanates with the bouquets of this famous wine. The nose is delicate but fresh. In the beginning floral notes with violet, irises and lilac. On the palate there is a rush of giggly yeast, great swathes of of fresh from the oven hot baked brioche flavours, golden buttery thick with candy like oils. Nicholas and Elizabeth reclaimed the coat of arms of their ancestor Pierre Billecart, a councilor to the King of France. A tribute to the co-founder Elisabeth Salmon, this Cuvée is fashioned from an equal blend of Pinot Noir and Chardonnay, vinified as white wine, to which some Pinot Noir from Mareuil-sur-Aÿ, vinified as a red wine, has been added. Billecart-Salmon operates approximately thirty hectares of it's own estate vineyards, but the bulk of the grapes arrive from a total area of a hundred and forty hectares, grown by some of Chapmagne's most ancient winegrowing families. Cuvée Elisabeth Salmon stands out for its amazing coppery-pink glints, underscored by an outstanding string of pearls and a lasting but fine and delicate mousse.
