Billecart Salmon is one of the last familial Houses of Champagne, all the wines are marked by the seal of excellence. The story begins with the wedding of Nicolas François Billecart and Elisabeth Salmon. The marriage lead to the founding of the distinguished Champagne House of Billecart-Salmon, established 1818 at Mareuil-sur-Aÿ. Two centuries later, the seventh generation of the family still manages the company and oversees the crafting of each individual bottle, maintaining the legend of the Spirit of Champagne. The original love of the founders, lives on through the devoted viticulture, a philosophy which has been cultivated around three principal values, elegance, balance and finesse.

Honeyed in colour, distinct for the finesse of its slowly rising bubbles and persistent mousse. Honeyed bouquet, maturation has not robbed it of an amazing floral freshness, Billecart Salmon exhibits lovely aromas of pink stonefruits, boulanger and brioche. Evolved, candied citrus, almonds, nougat and Nice biscuit, exemplary for its sophistication, generous in its elocution of Champagne richness, refined for its lasting impressions of cherry ripeness and juicy pear.

Champagne Billecart Salmon fashions the most exquisite wines from choice parcels of fruit grown to twenty five acres of distinguished sites around its headquarters in the village of Mareuil-sur-Ay. Unlike many better known marques, the noble House of Billecart Salmon has elected to remain small in size and limit their production, focussing on quality and consistency over quantity. A cooler, temperature controlled fermentation, inoculated to finely aromatic yeasts, serves to preserve the freshness in the final wine and infuse the bouquet with the most exquisite expressions. Various components are treated to lees batonnage, malolactic fermentation and a spell in Burgundian oak barrels.

Maturation has not robbed it of an amazing floral freshness, it exhibits lovely aromas of ripe pear. Billecart-Salmon evokes the cult of the grape, the noblesse of Champagne, pleasure, finesse, and the notion of splendour. Billecart-Salmon aims for excellence, it manifests itself through the harmonious balance of impressions, and of flavours. On the strength of it's traditions, Billecart-Salmon has chosen to ferment the Grande crus selected by the cellar master Francois Domi, in small Burgundy casks that have already seen several wines. The bottles are then aged in an extensive network of cellars hewn deep into the chalk, dating from the 17th to 19th centuries. Here the temperature is constant, relatively low at around 12C, encouraging the production of fine effervescence.

Delights the eye with the harmony of its gold hue and supreme finesse of mousse. It then surprises with a complex, expressive nose, a mix of ripe fruit and toasty flavours. The attack is fine and distinguished, gradually allowing all the power and vivacity to excite the tongue. Delicate and genteel, yet forceful and intensely flavoured, long and lingering, with creamyness and toastyness, the remarkably long and clinging palate showing a fine, grainy texture. Power and finesse make Grande Cuvee a perfectly balanced wine. As a partner to life's most special occasions, Grande Cuvee will nurture the bond and enshrine the moment.

The passion for the vine is visible in the gardens surrounding the Billecart-Salmon Chateau, designed by Charles Rolland Bilecart in the 1920s. It grows the humble rose Chasselas, a lowly table grape grafted from vines originally planted by the estate's founder. Beyond the Billecart-Salmon name lies a patronage of high art and a respect for the land, qualities which drive the House's demand for quality, and the determination to craft exceptional objects. The utilization of modern Cuverie and small coopered burgundy casks are all part of the winemaking process. Much more than a superior Champagne, Billecart-Salmon expresses a style that can only be described as finesse, balance and grace.

Crafted and released only in oustanding vintages, receiving the most intimate handling by a seventh generation maker of fine Champagne. To enable Clos Saint-Hilaire to realize it's potential as a single Cru wine, Billecart-Salmon has elected to omit the liqueur doseage usually applied to Champagne. This has heightened the masculinity of the wine and focused the fruit to express a tiny but elite Pinot Noir vineyard. This rare Cuvee, hallmarked by the characters of chalky and alluvial soils, stands boldly on the complexity of its aromas and dominance of fruit, as combined with a surprising freshness for such an aged wine. To be reserved for the most special company and the most memorable moments.

An exclusive assemblage of Grands Crus and Premiers Crus, the first fermentation of La Grande Annee is always carried out in oak barrel, a process unique to the winemaking traditions of Champagne. Bollinger makes use of well seasoned, prior use barrels, five years of age and more, to avoid any obvious new oak influence or unwanted tannins. La Grande Annee ages under the Bollinger cellars for at least six years. After a manual disgorgement, La Grande Annee is treated to a small liqueur dosage of 7 g/L to 9 g/L, before resting a minimum of three months prior to release. This short respite permits the wine to digest it's liqueur d'expedition and recover perfect balance.

Shimmering golden hue, the finest bead and most delicate effervescence, its delicate blush and old gold hue are a sign of maturity. Bouquet shows creamy oak barrel, toasted bread and brandied fruit, notes of exotic spice, rhubarb and stone fruit. A palate of remarkable structure and length, magically retaining its freshness.
