Kellermeister Dry Grown Shiraz 2008
Barossa
A big Shiraz wine from from fruit grown to some of the oldest Barossa vineyards, tended by a number of dedicated growers. Contributing sites in the Hoffnungsthal Valley at the Barossa's south are characterized by low fertility, grey brown loam soils over clay. Ebenezer is blessed by richer, ferrous, red sandy loam over clay soils. The final wine displays spicy peppery aromas and luscious berry flavours balanced by toasty new oak aromatics. Velvety and voluptuous with rich tannin, it complements the finest faire. Classic Barossa Shiraz the Kellermeister way.

Contributing sites in the Eden Valley are marked by grey to brown loamy sands and subsoils derived from weathered schist rock. Fruit is hand picked, destemmed and crushed, inoculated with Prisse de Mousse yeast, chilled and held cold for two or three days in headed down 4.5t fermenters. Vinification begins and is maintained below 25°C rising to 30°C towards the end, during which aerobic pumpovers occur thrice daily for several days before the fermented must is pressed off at 0%5° to 1° Beaume. The wine is racked to hogsheads for completion of malolactic, racked again and matured for thirty months in Troncais, Troncais/ Jupilles and Nevers French oak hogsheads. Alcohol 14.9%
 
Dark crimson red hue. Black fruit aromas of dark cherry, black diamond plum, mulberry, dark bitter chocolate, aniseed and briar, complex savoury characters and lifted smoky cedar oak. A full bodied wine with an even weighted palate. Very fine and firm chewy tannins, the integrated acid provides structure, length and persistence.

Kellermeister Wines is a small family owned estate nestled in the Barossa's Lyndoch Hills, founded in 1979 by Ralph and Val Jones. Ralph Jones was national marketing manager for Orlando Wines for fifteen years, prior to starting his own operation. Winemaker Trevor Jones excels at things dessert wine. Trevor's most recent successes came from the highly respected reviewer Wine Advocate Robert Parker, who awarded two perfect 100 point scores (never before assigned by Parker) for Trevor's Old Barossa Tokay and Barossa Liqueur Shiraz Tawny. These were recently followed by Boutique Wines of Australia Best Riesling, won by Trevor's Eden Valley Riesling. Alcohol 18.5%
 
Deep colour. Bouquets of rancio and ribena, rich dark chocolate and plum, figures of cherry and leafy mint. Gorgeous texture, it slides round the tongue and slips through the teeth, complexities of nutella and hazelnut, confection like violet crumble and nutella, seamless expressions of cookies and fruit, it's all raisin and gateaux. Sip Sable through a topping of cream, it's divine in warmer weather when served chilled or on the rocks.

Sensationally oaked, crafted from exclusive parcels of Wild Witch Vineyard fruit, this redolent sparkler displays virile spice and cherry aromas with developed fruit characters of chocolate and earth. A richly flavoured and complex wine with soft tannins and a length of sweet berry fruit, warm rounded mouthfeel and lingering finish. Serve with crisp duck on caramelized root vegetables.

For forty years, Kellermeister have been selecting grapes from a rich tapestry of vineyards throughout the Barossa and Eden Valleys. From old shiraz vines that line the winding road, to the rugged Wild Witch block nestled in the Lyndoch hills, each vineyard offers it's own unique characteristics. Kellermeister make a limited production, small batch effervescent red wine, fashioned from fruit grown to fifty year old vines on the superlative Wild Witch site, planted to sandy loam soils over ironstone rock, trained to single cordon and catch wire, closely cropped to a mere 1½ tons per acre. Some of the components to this enticing cuvée have spent up to fifteen years maturing in seasoned oak hogsheads. Approx 14.8%
 
Opaque black crimson purple colour, a fine bead with ravishing purple mousse. Ripe dark cherry and mulberry, ripe plum and whole black pepper, mocha, aniseed and seasoned oak aromas. Flavours of ripe plum and raspberry, cherry jam and spice persist. An elegant even fine grain tannin structure is superbly balanced by a tirage of barrel aged vintage Shiraz. The palate leads to a long and persistent finish.

Kellermeister excel at all things in dessert wine. It is a challenge for winemakers to capture the ambrosia of botrytised fruit, an event that is almost exclusively controlled by the vagaries at vintage. But Ralph and Val Jones are at an advantage, handcrafting wines in their boutique winery nestled in the hills of the beautiful Barossa Valley for a very long time now. It all began in the late 1970s as Ralph and Val sat with gum boots on, ankle deep in water, labouring tirelessly into the late evenings together. Over many cold winter's nights, in a small tin shed perched above the valley floor, they laboured - kept warm only by the glow of the love they shared and the fire that was their dream for Kellermeister. Approx 11.5%
 
Colour is a light amber, straw gold. A fresh, clean nose with expressions of dried fruits, especially apricot and pawpaw, candied elements of marmalade, lime and lemon citrus rinds, toasty vanilla and cashew, rancio and white chocolates. The palate is crisp and flavoursome with rich concentrated fruit and honeyed characters, roman nougat and dried fruit, walnuts and slightly drier characters of parched raisin, leather and gumleaf. Botrytised characters yes, but not an overly sweet or cloying wine, it's more reminiscent of a dried apricot, peach and pear ice cream. The palate may be rich, but it's well with a perfect tang of juicy acidity, everything in balance. A good drying citrus finish, a sound and satisfying dessert wine.
Kellermeister Virgin Chardonnay 2010
Barossa, Eden, Adelaide

An assemblage of four vineyard sites chosen for their unique capacity to construct a wine that is so much greater than the sum of parts. For twenty years, Kellermeister have been perfecting the Chardonnay, fashioned to be a chaste wine from exclusively free run juices. Virgin offers a great depth of fruit driven flavours with a touch of herbaceousness in wonderfully unoaked styling.

Inherent to the inclusion of grapes are considerations of clonal selection, soil type and climate. Each parcel is treated individually based on past experience with the vineyard or with a view to gain maximum complexity in the finished wine. The base is crushed and chilled, then held on skins for up to twenty four hours prior to gentle pressing using a Willmes membrane on low solids extraction cycle. Other parcels are hand harvested a little earlier, gently loaded into the presses and treated to battonage or malolactic. Parcels are inoculated with different yeasts, fermentation is carried out at lower temperatures for an extended period with regular tank rummage to enhance yeast autolysis until the final assembly.
 
Light straw gold in colour. A complex style displaying rich, ripe Chardonnay and stone fruit characters reminiscent of lychee and peach. The delicacy of hazelnuts, kiwi and tangerine, combined with subtle complexity brings to this wine it's renown and pedigree. There is an underlying richness from the time spent on lees and a subtle complexity of the malolactic ferment component. The finish is soft with a hint of fruit sweetness balanced by judicious acidity to leave a long, flavoursome finish. With its good structure and engaging comlexity, Virgin is an excellent match to white meats and fresh seafood.

A painstaking regimen of viticultural techniques and traditional hands-on vinification ensure that Wild Witch is completed to the most exacting standards. Created from the finest Shiraz grapes Kellermeister can source, silken in texture with a cryptic nose and brooding palate, lingering fruit and substantive tannins, Wild Witch is sealed under the best quality, hand selected, grade one cork to ensure extended cellaring potential.

Grapes are harvested fully ripe, at healthy levels of Baume, temperatures are adjusted at the crusher and yeasts are immediately added. Treated to a week or two on skins, the must is passed through a Willmes air bag press, the results are then added straight back into the free run juice. The wine is then transferred, while still fermenting, to a selection of mostly new oak barrels, drawing away the clear juice from the dead yeast lees, over a period of twenty four to thirty six months, during which the wine is racked several times. The distinctive peppery aromas of dry grown Shiraz, tamed after two and a half years in a combination of fine oak barrels remain opulent, complex and intense.
 
Dark red. Voluptuous spiced, licorice, plum aromas, generous yet refined bouquet. An elegant Shiraz of great finesse, expressing notes of cedar and red currant, pepper and blackberries. Flavours of earthy, spicy pepper, blackcurrant, mulberry, the wine has a rich tannin lift, extracted from the natural grape skins and new French oak treatment. When it is very young, there are spikes of flavour coming from the glass in all directions. You have a spike of wood in one direction and a spike of fruit in another, all characters arriving together to make the wine basically at it's best, somewhere in the vicinity of three to seven years of age. Wild Witch is an intense experience of Shiraz, memorable for it's individuality and grace.

A mostly Pinot Gris wine with a smaller proportion of Sauvignon Blanc, harvested from choice vines on the Adelaide Hills and Eden Valley, planted to grey and brown loam sands, trained to vertical shoot positioning. Adding to the character of each site are the personalities who actually care for the grapes, the team of dedicated and passionate local growers, who work tirelessly throughout the year to produce the exceptional fruit which is the life blood of Kellermeister. Vines are encouraged to achieve good flowering and fruit set, ultimately yielding small berries with very good flavour concentration. Steady ripening consummates the perfect balance of sugars and refreshing natural acidity to rein in the fruit.

Deep, bright red colour. A deliciously full bodied, ripe Shiraz displaying sweet blackberry jam fruit with hints of chocolate and spice. The subtle influence of French and American oak adds depth, giving the palate a rounder feel. Balanced acidity and soft, amiable yet chewy tannins, finishing persistent and long. Their aim was to produce wines of unique character - wines true to the German traditions of the Barossa Valley which was so richly influenced by the Silesian settlements of the 1840s. And so it was, through much love, sacrifice and hard work that Ralph and Val Jones brought their dream to life.

James classified Kellermeister with the highest possible winery rating - five bright red stars. This prestigious designation is only bestowed upon a handful of wineries across Australia in recognition of the consistent production of wines of exemplary quality and typicity - just the sort of wines that Kellermeister have been making for over 30 years. The only problem Kellermeister have, is that they're not sure how long they can keep their handiwork a secret.
