Coonawarra
There's a whiff of fame here and it carries on to the palate, the drying finish continuing the impression that this is unlikely to make old bones. Plums, cedar, lots of peppery spice, and then that dark, bloody, gamey character.

Katnook Estate wines take their name from the domain where they are grown and made, limited release editions of great intensity of flavour, made with fastidious attention to detail. Shiraz for this wine was selected from distinguished sites at the estate's vineyards. The 2004 vintage started with an average spring and near perfect flowering. Cool and dry conditions in summer contributed to one of the latest harvests on record. Fruit was picked at optimal ripeness with excellent varietal definition, generous flavours and fine balance. Harvested mid April to mid May pH 3.4 Acidity 6.5g/L Alcohol 14% Winemaker Wayne Stehbens.
 
A smooth and soft, oak and fruit driven Shiraz, minty aromas, bouquets of spicey plums, leather and raspberry. A supple, fine-grained palate offering restrained flavours of small black and red berries, plums and cedary vanilla and chocolate oak.

Distinguished Langtons Classification. The consummate Cabernet, one of Australia's icon wines. John Riddoch brewed up Coonawarra's second vintage in 1896 under a woolshed which now ages barrels of Katnook Cabernet. The original Coonawarra Fruit Colony itself was headquartered in a limestone building which now serves as the Katnook cellar door. Vines have been trained over the course of decades to extract maximum flavour from the long slow Coonawarra ripening, achieving harvests of Cabernet with ripe generous flavours and fine lingering tannins.

Coonawarra produces Cabernet wines with attractive ripe fruit flavours, generous palate structures and soft tannins. Katnook is home of the finest Coonawarra Cabernet, it's vineyards, planted to prime Terra Rossa soils comprise two hundred hectares at the heart of this comparatively small and remote region, affording Katnook full licence to collate and assemble parcels of the finest fruit. Batch vinification takes place in closed static fermenters with regular pumping over. Upon completion, parcels are macerated for a week or two before transfer into a selection of seasoned and new 225 litre French and American oak barriques for eighteen months maturation. Alcohol 13.5%
 
Deep, very dark plum colour with purple edge. A complex array of ripe fruit and sweet oak maturation aromas. Dark plums and blackberry, mulberry and cassis combine with subtle sweet vanillin and notes of chocolaty oak. A richly layered palate of dark berry fruits and evolving aged characters. Dark plum and black currant highlight the generous palate structure, combined with subtle sweet oak flavours and rich chocolaty notes. Fine lingering tannins complement the rich fruit flavours. To accompany the timeless combination of aged beef, potato and vegetables, all drizzled with a reduction of red wine glace de viande.

Katnook have accumulated many awards over the years, receiving the coveted Jimmy Watson in 1986. Katnook Shiraz displays exemplary varietal character, sound palate structure with a subtle richness, excellent colour and fine soft tannins. Fruit is picked at optimal ripeness, having developed excellent varietal definition, generous flavours and fine balance between natural sugars, acidity and tannins. The subtle oak lets the fruit speak for itself, It's delicious notes of spice and pepper give away its cool Coonawarra origins whilst adding to the complexity. Matured eighteen months in a combination of new and seasoned Fench and American 225 litre oak barriques and 300 litre hogsheads. Alcohol 13.5%
 
Very deep dark plum red with bright purple tinges. Attractive raspberry fruit highlighted by subtle sweet oak maturation notes. Intricate levels of complexity with light licorice, spicy plum and black pepper enhanced by the vanillin and chocolatey oak. Richly layered with ripe fruit, complex spice and oak. Appealing raspberry and plum fruit with underlying licorice and sweet spices are combined with vanilla and chocolaty oak maturation notes. Fine grained tannins enhance the lingering savoury fruit flavours.

Vintage 2000 was ideal, slightly above average temperatures and very dry conditions. An early bud burst with a cool spring was followed by above average temperatures during summer and veraison. Fine conditions through out the harvest period, allowing fruit to be picked at optimum maturity, and without any disease pressures. Yields were slightly below average, the wines display very good varietal flavours with good ripeness and good palate depth. Following a small batch vinification, Odyssey was treated to an extended maturation over forty months in predominantly small oak 225 litre barriques of which approx 65% were new French oak and 35% were new American oak barrels. Alcohol 14.5%

Attractive dusty plum and mulberry fruits with subtle black olive tones are enticingly laced with sweet tobacco leaf and vanilla bean with chocolaty and mocha oak matured aromas. A profusion of rich fruit, sweet oak and oak maturation flavours are smoothly combined in this generous & appealing palate structure. Odyssey defines archetypal Coonawarra Cabernet Sauvignon, produced from the region's distinctive Terra rossa soils and crafted with the luxury of great attention to detail. This multi award winning wine has a string of international trophies to its name including Best Australian Red and the Frescobaldi Trophy for Best Vintage Red Wine, awarded twice, at the UK International Wine & Spirit Competition. Following a small batch viinification, Odyssey was treated to an extended maturation for three years in small oak 225 litre barriques of which approximately 40% were new French and 42% were new American oak barrels. Other barrels were second fill and predominantly French oak. Alcohol 14.0%

Ripe dark berries, hints of dusty mulberry and spicy plums with subtle vanilla, mocha and chocolate oak flavours are richly interwoven. An exceptional Coonawarra winner from a small vineyard site that consistently produces outstanding Shiraz. The 2003 Coonawarra season saw just below average temperatures and was generally mild and dry with yields being disappointingly low, however quality is very good. The combination of very low yields with a mild and dry ripening period has produced wines rich in varietal fruit flavours with soft tannins. Matured for approximately thirty months in a combination of 37% French and 64% American mostly small 225 litre oak barriques. Of these barrels, approximately 36% were new French oak and 42% were new American barrels. A Shiraz of exceptional character that can be cellared long term, ten to twenty years.
 
Dense, deep crimson plum in colour. A rich combination of ripe fruit and oak maturation aromas. Attractive raspberry and plum with sweet licorice and anis spices. Bold, ripe, thick and chocolatey, with a delicious smear raspberry, arrays of chocolate-box assortment flavours, subtle sweet vanillin and light toasted and roast coffee beans oak maturation notes adds to the alluring fruit aromas.

Prodigy is fashioned exclusively from grapes showing an outstanding depth of concentration. An iconic, world class Shiraz style which captures the essence of Coonawarra, parcels are harvested across sections of the vineyard which consistently produce intense flavours and fine tannins. Treated to a small batch fermentation, the extended time in barrel is integral to Prodigy's complexity and style. Only the best barrels are included in the final assembly. Matured for twenty four months in French (30%) and American (70%) small 225 litre oak barriques. Of these barrels, 25% were new French and 43% were new American barrels. The older barrels were mostly American barriques. Alcohol 14.0%

Founder's Block is a natural progression for Katnook. The wines are genuinely focused on contemporary palates and lifestyle, honest, fruit driven and harmonious. Founder's Block may be for some an introduction to Katnook Estate, also for many Katnook's devotees, their informal drinking wines. Parcels of Cabernet grapes are vinified into an approachable young wine, brimming with Coonawarra character. Deep ruby red with purple tinges. An intense nose of blackcurrant and red fruits with lifted mint characters. A small amount of oak maturation lends deft notes of toast and sweet spice to the bouquet. The well structured palate expresses sweet berry fruit and light oak flavours. Ripe dark berries, plum and dusty mulberry characters abound with a hint of regional mint highlighting the lush palate flavours. Fine grained soft tannins add to the attractive lingering fruit.

John Riddoch established the seminal Coonawarra Fruit Colony at his property on the orginal Katnook estate in 1890, founding one of the world's great winegrowing districts. The Merlot for today's Founder's Block is sourced from vines grown on sites right around the original property, to slightly more recent plantings. An attractive medium bodied wine with an enticing nose of plum and red currants, eloquent aromas with earthy, savoury notes, nice smokey oak flavours and supple tannins. A plush, well rounded palate, just what you want from good Merlot.

The idyllic growing conditions which surround Coonawarra's terra rosa soils translate into full bodied, refreshing red wines of vigour and deep varietal complexion. Charged with the aim of retaining the clear regional characters, the Katnook team endeavours to vinify the grapes as plainly as possible, allowing the rich Merlot fruit to speak for itself. Crafted to be an informal drinking but lively unwooded white wine, with tantalizing regional aromas and flavours of gooseberries underscored with floral highlights and a citrus tang. Harvested late February to early March,this vintage will be remembered for the severe spring frosts that devastated vineyards across Coonawarra and reduced yields. Ideal warm and dry conditions through veraison, combined with low yields contributed to an earlier than usual start to harvest of Sauvignon Blanc. The low yields and ideal season produced excellent quality grapes that produced wines with intense varietal aromas and flavours. Alcohol 13.2% Winemaker Wayne Stehbens.

A rounded, elegant mid palate finishing with soft fine grained tannins. Lamb and Shiraz are hard to separate, match Founders Block with a ragout, couscous or tagine.

The aim behind Riddoch wines is to capture the essential characteristics of Coonawarra in a harmonious, early drinking, forward fruit style priced for regular enjoyment. There are seven wines in the range; Sauvignon Blanc, Chardonnay, Cabernet Sauvignon, Shiraz, Cabernet Shiraz, Cabernet Merlot and a Sparkling Shiraz. The grapes for all are selectively harvested to give the winemaker an array of flavours and characters for blending.

Faldo wines were launched in 2000 and named in honour of legendary golfer Nick Faldo. They are made entirely from estate grown fruit. The winemaking team is headed by Tony Milanowski. The aim behind Faldo wines is to capture the essential characteristics of Coonawarra in a harmonious, early drinking, forward fruit style priced for regular enjoyment. There are three wines in the range: Sauvignon Blanc, Cabernet Sauvignon and Shiraz.
