Bimbadgen Estate Botrytis Semillon 375ml 2010

Botrytis affected Semillon makes much of the world's great and most flavourful wines. Bimbadgen have taken the time to find the ideal site in Australia with a rare confluence of sunshine and soil, optimal rainfalls and balmy clime, that unique alchemy of environmental conditions necessary for the rampant growth of the fungus Botrytis Cinerea. Out of the finest vintages, a wonderful dessert wine is made from the fruit, complex and earthy with subtle charry, nutty oak balanced by citrus peel and straw, candied fruit and a touch of nettle on the finish.

Semillon is harvested from Myall Road vineyard near Griffith, closely cropped to deliver no more than moderate yields. The site was established with cutting edge laser levelling techniques and trellising design, tailor made for premium dessert wines. Following the crush and an overnight cold soak on skins, the unclarified Semillon juices are inoculated through the action of wild and cultured yeasts for a long, slow vinification. Ferments are treated to a variety of temperature fluctuations and exposure to oak. Some components are rack and returned into quality new French oak for ferments, others are filled to barrel for a term of maturation. Two thirds of the wine remains in contact with yeast lees until bottling.
 
Luminous, vibrant pale gold colour. Aromatic and clean, with citrus fruit and fresh hay, dried apricot and lemon spice, marmalade and creme brulee. Medium bodied, luscious palate with creamy apricot kernel and marmalade flavours. Rich fruit sweetness is well balanced by zingy fruit acids. Bimbadgen should be enjoyed now but it offers wonderful ageing potential over several years.

Cookoothama means fertile land, an approachable accord of Merlot and Cabernet Sauvignon from fruit grown to a special site at Darlington Point on the Riverina. Employing the best of old world viticultural practices and new world technology, Nugan Estate charge their devoted team with the pleasant task of making wine of the highest order. The two hands on the label represent the people who have lived and cultivated soils which lie along the banks of Murrumbidgee River, transforming it into the salubrious property it is today.

The Nugan estate property has been called Cookoothama since the 1800s. The vineyard is protected from rainfall variation by a fully integrated drip irrigation system, which includes four bores and five licences to pump from the Murrumbidgee River flowing along the southern border of the property. Cabernet Sauvignon and Merlot are harvested from Cookoothama Vineyard throughout the cool of night and delivered in small batches to the winery. Grapes are crushed, inoculated and pumped over in traditional style to avoid the extraction of bitter tannins. Components are then transferred to a combination of seasoned and new French and American oak barrels for maturation prior to the final assemblage. Alcohol 14.0%
 
Deep red with youthful purple hue. Aromas of plum and blackberry, infused by hints of spice, herbs and dark chocolate. Concentrated flavours of red berry fruits, mocha and spice over ripe silky tannins and well integrated oak. Cookoothama makes a great food wine that's versatile enough to compliment a wide range of cuisines, casseroles and meats.
De Bortoli Black Noble 500ml

De Bortoli hold an extensive collection of barrel aged wines. Stocks of fortified and botrytised Semillon are drawn on from time to time to assemble into a wickedly decadent wine of rare opulence. Black Noble has most notably claimed Gold and Silver at the prestigious London International. Created by Darren De Bortoli, it is an inspiration from a 1930s wine made by Vittorio De Bortoli. Black Noble is extraordinarily unique and has been compared to the great wines of Jerez.

De Bortoli are universally acknowledged to have made a great contribution to the pantheon of Noble dessert wines. A very short vinification is applied to harvests of Semillon at rich baumes of 20 to 22, followed by fortification with a neutral grape spirit to arrest ferments. Black Noble is then clarified, a touch of brandy spirit is added for further complexity before ransfer to seasoned oak barriques which have previously aged Noble One. Alcohol 17.5%
 
Amber colour with olive green hues. Hints of toffee and coffee with raisins and mandarin peel. Unique and delicious, rich raisin and dried date fruit with hints of citrus peel, toffee and caramel flavours. Concentrated and viscous with lingering aged complexity. Unassailable as Australia's most eminent dessert wine, Noble One created an international sensation when it was released, it has become one of the most renowned marques in new world wine. Bespoke blocks of Semillon, grown to mature De Bortoli estate vineyards, are watched each year, as the vagaries of vintage determine whether conditions are present to Botrytise the grapes. The making of Noble One is never rushed, each vine represents an individual harvest, as the optimal day of picking may vary greatly from block to block and row to row.

Darren De Bortoli capitalized on the potential of his Riverina property to become affected by Botrytis cinerea or Noble Rot, a fortuitous confluence of sunshine and light rains, mildew and early morning mists. Candidate vineyards are assessed to determine the optimum harvest time for each parcel of fruit based on sugar content and the degree of botrytis. Each parcel is individually harvested and handled. Vinifications can last from three weeks to three months, as long as it takes. When ferments are complete, batches are clarified, stabilised and filtered. Most components are matured in a combination of new and one year old French oak barriques for a year, a portion remains unoaked. Alcohol 10.4%

Deen De Bortoli had always enjoyed the famous noble rot styles of Europe and wanted to make his own. He believed that the conditions in Griffith were favourable to the experiment. Riverina autumns often see long, dry, warm days interspersed with a sprinkling of showers and heavy morning dews, ideal for producing Botrytised grapes. Semillon is picked off vineyards which have been the source of Noble One for many years, remarkable for their consistency to achieve a balance of sweetness, clean acids and luscious flavour. Each parcel is separately harvested and vinified over the course of one to three months, most components are treated to a term of maturation in French oak barriques.

De Bortoli retain an extensive collection of aged wines maturing in barrel, a rich endowment assembled over many years from estate vineyards, De Bortoli have also acquired precious heirloom stocks from grand estates further afield. Liqueur Muscat is a classic Australian style of rich, fortified wine. This trophy winning effort is bursting with concentrated flavours of raisins and figs, laden with luxurious aged rancio notes. The Bilbul wineworks at Riverina, famous for the iconic Noble One, also produces world class fortified wines like Show Liqueur Muscat, enjoyed by enthusiasts around the world. The region enjoys a warm Mediterranean climate with winter dominant rainfall. The sandy loam soils vary from red sandy earths to brown clay loams. Muscat grapes are left on the vines to become very ripe before harvesting at heightened natural sugar levels of 16° to 18° baume. Once harvested the fruit is crushed, partially fermented and fortified on skins to further extract the floral and aromatic flavours. The wine is pressed off skins and transferred to barrels for an extended maturation before the final assemblage. Alcohol 18.0%
 
Nut brown colour with slight green hue. Intense aromas of raisin, fig and spice with underlying floral notes. A rich and luscious palate exploding with rich flavours of raisin, figs, dates, toffee and caramel. Sweetness balanced by vanillin oak notes makes for a lovely lingering finish. Aged in old oak barrels, designed to enjoy as soon as it's opened, will also keep for several more years in bottle.
Deen Vat 1 Durif 2015

Durif has been grown in the Riverina for many years, where it produces strong heady wines with good colour, excellent tannins and exciting varietal fruit characters. A native of the Valley Rhone with a susceptibility to rot under inhospitably cooler climes, De Bortoli's Durif is grown to sunny vineyards in the Riverina which favour the grape and stimulate the development of piquant flavours. A medium bodied yet intensely flavoured red wine with upfront Durif complexity, supported by firm tannins and supple oak.

De Bortoli have much experience with Durif and retain some of finest Riverina vineyards, especially trained to yield this unique grape variety. Dry weather and warm sunny days with low crop levels achieve wines of balance and intensity. Fruit is selected by the winemakers themselves on the basis of bold varietal flavour and complete physiological ripeness, components are handled in small parcels. Following harvest and the crush, the musts are treated to a cold soak before being vinified for a week on skins at temperatures between 22C and 25C. Following completion of ferments and malolactic, batches are filled to oak for a judicious course of maturation. Alcohol 14.5%

The fortuitous climes around the broad expanse of De Bortoli's salubrious Riverina vineyards, consistently deliver harvests of optimal ripeness, fruit of exemplary varietal expression. Choice parcels of Sauvignon Blanc are gently pressed to retain freshness without any unwanted phenolics. Juices are clarified and fermented at warmer temperatures on gross solids, a third of components are vinified in seasoned French oak barriques. Light straw colour with lovely green hues. A clean, fragrant, slightly grassy aroma with underlying tropical characteristics. The fresh grassy aromas and gooseberry flavours are wonderfully balanced with fantastic texture and length. A vibrant palate with delicacy, balanced fruit and a good acidity. Deen Vat 4 Petit Verdot 2015

De Bortoli have the winning touch with the more obscure and esoteric varietal grapes, by virtue of an impeccable attention to detail and consuming passion to make good wine. Petit Verdot is a thick skinned, late ripening grape, which is often included in Bordeaux styled reds. It thrives under the warmth of the Riverina sun and produces a solid wine with rich bramble flavours and swarthy tannins. A match to sauced lamb and flavoursome, juicy casseroled meat dishes.

Petit Verdot was probably brought to France by the Romans, it is mostly employed nowadays to add stiffness and complex tannins to Cabernet blends. Petit Verdot takes very well to the Riverina, where it translates into a fruity, flavoursome meat and three veg style of wine. The De Bortoli team work closely with viticulturists as the grapes ripen on the vine. Each individual parcel is selected on the basis of exemplary flavour profile and fully developed tannins. Grapes are cold soaked on skins at 10°C for a day to gently extract flavours. Musts are warmly fermented for a week or more at 22°C to 25°C, followed by a term of age in a mix of maturation vats and oak barriques. Alcohol 14.0%
 
A deep purple with crimson red hues. Black berries and cherry nose, hints of violet over supple chocolate and mocha fragrances. Each year, the award winning team singles out the most appropriate parcels of Semillon, where the best conditions exist to let grapes hang on the vine until they have been affected sufficiently by Botrytis cinerea. The desired levels of noble rot are achieved through a painstaking course of hand pickings over a period of several weeks, performed ceremoniously each vintage around the shortened daytimes of a winter solstice.

It has taken decades to establish and cultivate Australia's finest Botrytis affected vineyards, De Bortoli are now custodians of one of the world's great endowments ‌in dessert wine viticulture. Grapes are harvested through a schedule of individual pickings, determined by the progress of berries as they become affected by Noble Rot. Fruit is brought to the Bilbul wineworks in timely fashion, crushed and fermented at temperatures between 13°C and 15°C over a period of four to eight weeks. Batches from each vineyard are separately handled, some components are treated to oak vinification or maturation, a sizeable portion remains refreshingly unwooded. Alcohol 10.5%

Deen De Bortoli created his Vat Series with the idea of fashioning a range of delicious, full flavoured wines that are immediately approachable upon release and accessible to all. Vat 6 is constructed to be an early drinking Verdelho with a bit of palate weight and fine complexity. All care is taken in the vineyard to encourage the development of distinctive varietal characters in the grapes. Verdelho is sourced off several choice blocks along the Riverina near Griffith. The winemakers seek fruit with flavour intensity and good acid structure for this style of wine. Juices are cold settled and racked to fermentation at warm to moderate temperatures, adding richness to the fresh fruit characters. A component is vinified in seasoned French oak barriques, achieving fullness and complexity, palate weight and mouthfeel. The finished wine spends ten months on yeast lees to soften the palate and infuse creamy textures. Alcohol 13.5%

Plant a six inch nail in this soil, water it, and in a year you will have a crowbar. So said John James McWilliam when he arrived at Hanwood in 1913. The development of Riverina as a major wine producing area was primarily due to the foresight of the McWilliam family. Rich, fertile soils and warm temperatures make Riverina ideally suited to viticulture. Chardonnay is harvested throughout the cool of night, crushed and settled. A combination of French oak vinification and controlled fermenters retains vitality and abundant fruit character, a course of malolactic and a term of several months repose on sedimentery lees infuses texture and richness into the finished wine. Alcohol 13.5%
 
Medium straw, greenish hues. A lively, complex wine with white peach, guava and passionfruit expressions combining with creamy butterscotch of the oak. The essences carry through with ripe peach and nectarine, background oak characters of vanilla and butterscotch provide complexity while an acid backbone contributes structure. The finish is long, flavoursome and soft.
