Hanwood Estate 1913 Series Vermentino
Riverina

Harvested throughout the chill of night and early morning, Vermentino is picked later in the growing season to allow grapes to ripen fully and achieve optimal flavour profile. The gently crushed first run juices are cold settled to oak barrel for fermentation to completely dry, followe by eight months maturation on sedimentery yeast lees. Floral and lemon myrtle nose with subtle notes of spice and garden herbs. A soft, creamy, medium bodied style of fresh citrus and tropical fruits characters, delicately spiced, a great balance to the long and refreshing finish.

McWilliams Hanwood Classic Muscat
Riverina
A patiently matured, multi vineyard Muscat, vinified from Red Frontignac grapes and blended to an average age of five years. The fruit, picked extremely ripe to maintain the sweetness of the style, is sourced entirely from McWilliam's vineyards in the Riverina wine region of New South Wales. The warm and dry conditions are ideal for Fortifieds, enabling grapes to ripen superbly and to achieve great richness of flavour. Fermentation is arrested at the desired sweetness by the gradual addition of a high quality neutral Spirit, also made at the Hanwood wineworks.

Frontignac grapes are harvested at a minimum 14° baume of sugar ripeness, crushed into open fermenters and partially fermented on skins for a week and more to extract maximum colour and flavour. This gradual fortification of around two per cent alcohol per addition helps control fermentation and ensures seamless wine and fortification integration. To control the development of aged rancio characters and to keep the flavours fresh and balanced, batches are matured in larger oak barrels than those used for tawny ports, well seasoned oak, at least ten years of age. This allows the wine to slowly develop complexity without obvious oak flavours and characters. The final blend is cold stabilised and filtered prior to bottling.
 
Dark tobacco hues. Floral rose petal, caramel and allsorts, sticky date and complex fruit notes. Smooth and rich palate, developed Frontignac fruit notes, concentrated raisins, a considerable lusciousness from, mellow sweetness and intensity. A rich and luscious raisined palate with a silky smooth finish, Hanwood appeals to all wine enthusiasts because of its fresh fruit flavours. An astonishingly suitable accompaniement to many cuisines.

McWilliams Hanwood Classic Tawny
Riverina
McWilliam's can trump the market when it comes to offering quality Ports which are complex and mature, a deeply satisfying experience in Fine Old Tawny. Crafted from parcels of Mataro, Grenache and Shiraz, blended to an average age of five years. Harvest is generally later in the season, off choice vineyards in sunny Riverina, the added term on vine serving to fully ripen grapes and encourage luscious fruit sweetness. A lighter, fresher style of Tawny than McWilliam's Hanwood Ten Year Old, offering exquisite richness and complexity without overt oak.

Crafted by the most dedicated and accomplished fortified wine specialists. Fruit is harvested at above 14 baume, crushed into open fermenters, partially fermented on skins for between seven and ten days to extract maximum colour and flavour. Ferments are arrested at the desired sweetness by the gradual addition of a high quality neutral spirit, which is also distilled at McWilliam wineworks. This gradual fortification of around two per cent alcohol helps control the vinification, achieving a seamless fortification. Following the wine's clarification and filtration, batches are matured in small, old oak barrels for an average of five years. The final blend is then cold stabilised and filtered prior to bottling.
 
Brick red colour with amber hues. Rich rancio nose, walnuts and sweet tobacco, a concentration of fruit fragrances, cocoa and treacle notes. A lively fruit acidity wraps itself around the fine fruit richness, the palate is sweet to start, evolving into a beautifully drying, clean and persistent spirit finish. A superb mellowness throughout, derived from ageing in a selection of well seasoned, fine oak barrels.

McWilliams Hanwood Medium Dry
Riverina
Crafted in the old world way, according to the traditional flor solera system. Wines are secondarily fermented under unique Flor caps, yeasts which grow on top of the Apera, releasing aldehydes and infusing the Sherry with lifted, nutty characters. Clean and mellow, gracefully dry and pleasingly rancio, exquisite with a warm alcohol length of aromatic malt flavours and integrated aged oak. Superb as a chilled aperitif, the Amontillado Apera style is served on classical menus alongside aspic, game birds and the finest double consomme.

Golden colour, copper hues. A nutty, rancio bouquet, spices, bitter fruits and marmalade, ginger and almond notes. Lifted, vibrant rancio and pistachio nut flavours, citrus and ripe apple hints. Parcels of Muscadelle are harvested at naturally high levels of sugar, grapes are crushed, destemmed and cooled to 10C on the way to open fermentation vessels. Batches are pumped over twice daily during two days of cold soak. Yeasts are added for a slow vinification, followed by draining and press after a single Baume drop in sugar level. Juices are fortified with neutral grape Spirit to arrest the ferments, settled and racked off solids. Batches are heat and cold stabilised, coarse earth filtered and transferred to a collection of well seasoned oak barrels for up to thirty years maturation. Upon completion, the best barrels are determined and marked for inclusion into the final Show Reserve Muscat. Alcohol 18.5%
 
Rich deep brown tawny, khaki hues. Fresh lifted Muscat fruit aromas, festive raisin cake, baking spice and citrus peel over intense rancio oak notes. Richly intense, yet gently luscious and velvet smooth, pronounced Muscat flavours, a concentration of raisin and fruit mince tart characters. A big mouth coating finish, lingering immeasurably on a length of spiced, licorice toffee richness.

Australian Tawny is renowned throughout the world of wine for its engaging richness and remarkable complexity. Assembled from the last remaining barrels of old fortified Grenache, Touriga and Shiraz, McWilliams Show Reserve represents an indulgence in slow aged rancio flavours, raisins, dark chocolate and evocatively perfumed festive cakes. Twenty five years maturation means that the angels are constantly taking their share, as the extravagantly aged barrels are topped up every year by even more stocks of the most luscious Tawny wine.

Parcels of Grenache, Touriga and Shiraz are harvested at suitably high levels of natural fruit sugar 15° to 16° Baume. Grapes are crushed and destemmed, pumped into open fermenters and vinified on skins for optimal extraction of colour and tannins. A neutral grape Brandy spirit is added to arrest ferments and retain a measure of palate sweetness. Batches are drained and pressed, settled, racked off solids and stabilised before filtering into French oak. As older wines are summoned, new wines are filled for ageing up to thirty years. Upon completion, individual barrels are assessed for inclusion, assembled with the best of the best, to create a fine Old Tawny that's second to none. Alcohol 18.5%
 
Deep brown amber, khaki hues. Lifted intense rancio and walnut spice, pistachio and vanilla oak characters exhibiting the excellence of a decades barrel aged Tawny. Extremely rich and full palate, viscous, raisins, dark chocolate and festive pudding, round and luscious, long fine tannins balanced by the ambrosial sweetness, resolving on a dry, savoury finish.

Riverina
Muscadelle are luscious and fruity in their delinquent youth, fortified with Brandy however and aged for a quarter century in old French oak casks, they evolve into a jewel of a wine that's worthy of the most wanton indulgence. Only the finest parcels can be earmarked for inclusion into the timeless Topaque Show Reserve style, only the best stocks will survive the final cull. Intensified in flavour over the course of decades, as barrels are topped up annually to atone for the angels share, the final word in complex, toothsome elixirs and opaque palate richness.

One of McWilliam's great contributions to the atlas of wine, is a heritage of very old vineyards which are source of the most revered Tokay in the new world. Muscadelle is harvested at approximately 16° Baume, grapes are crushed and destemmed, pumped into open fermenters and held at 10C for a day. Parcels are vinified on skins for optimal extraction of luscious Muscadelle flavours, batches are drained, pressed and fortified with neutral Brandy, retaining a measure of natural fruit sweetness. Upon completion, batches are settled and racked, stabilised and filtered into a collection of well seasoned French oak barrels for up to thirty years. Alcohol 18.5%

Tempus Two is the culmination of Lisa McGuigan's dream to create a world class tourism experience within an ultra premium winemaking estate. Tempus Two have broken the tradition with their tantalizing editions of dessert wine, sealing the precious liquid within hand blown bottles of Italian glass, which have claimed conspicuous design awards. Botrytis Cinerea Noble Rot is a fungal infection which causes dehydration and concentration of juices within the infected grape. There was much debate at Tempus Two about which style to produce from the intensely sweet Griffith Semillon. Natural sugar levels were heightened and grapes harvested late to enhance the intense flavours. Alcohol 10.0%

Pinot Noir is often referred to as the noblest of all grape varietals, the essential ingredient to the finest Champagne and great growths of Burgundy. Trentham Estate is vinified from four different clones, grapes of varying colour and tannin, a diverse range of natural fruit flavours, contributing complexity and weight to the final wine. Picked off the finest blocks of Pinot Noir, bunches are destemmed, pumped through a chiller into fermenters and cold soaked for a day or two at 5âÂC. Batches are inoculated, vinified for five days on skins and pressed for a course of maturation, a component is sent for a term in French oak barrels before assemblage into the finished wine.
 
Bright scarlet colour. A delicate, lifted aroma displaying strawberry and red cherry fruits, mocha and vanilla. The berry characters continue on to the palate, supported by light licorice tannins and subtle oak. The flavours linger on a long, delicate, fruit and spice driven finish. Enjoy with tomato pasta or Asian style chicken, duckling or Atlantic salmon.

Trentham has three separate vineyards of Sauvignon Blanc, an older site planted in the early 1990s and two younger blocks of select clonal stock. The older site is low yielding, producing wines with more body. The younger vineyards produce wines with more varietal lift and definition. Vintage is determined by ripeness, healthy acids and the desired levels of baume. Immediately following harvest, grapes are destemmed and crushed. The musts are chilled and moved through the press for a term of cold settling, clarified juices are cold fermented with a select yeast over a course of three weeks. Upon completion, batches are treated to a relaxed settle before racking and assemblage into the final wine.
 
Light straw hues. Lifted aromas, dry flintiness and light herbaceous hints, tropicals, passionfruit and lychee. Great depth of palate, gooseberries and lychee, guavas and lime, within a crisp, crystal mouthfeel. Best enjoyed in its youth, to fully appreciate the evocative, fresh fruit flavours, serve chilled alongside seafood and white meat salads. Turkey makes the perfect match.

Nebbiolo is the king of northwest Italian red wine grapes, the signature of Piedmont and Lombardy. In the vineyard, Nebbiolo looks unimpressive, characterised by almost wild canopy growth, the berries range in colour from light to deep red. Grapes mature late in the season with low sugar and high acid levels. Following the harvest, fruit is crushed and transferred to tank for inoculation and eight days of vinification. Ferments are pumped over regularly to maintain consistent temperatures and to aid extraction from skins. Upon completion the batches are pressed into old French oak barrels for eighteen months maturation, before assembling into the final wine, stabilizing and clarification.
 
A light hue of red. Lifted fresh rose petal and cherry aromas follow to the palate. Flavours are supported by hints of leather, black olive and a touch of savoury before a long but delicate finish. A great match with Italian cuisine, it will not dominate but marry beautifully with the robust flavours. Try with capelli d'angela, sugo di pomodoro and meatballs, bellissimo.
