A slightly Chardonnay dominant cuvée with the balance in Pinot Noir, all hand picked off vines grown to a site made famous as one of the first sightings of a tasmanian tiger Thylacinus cynocephalus. Tigers are long gone but the Frogmore Creek property at Campania in Coal River Valley yields some of the finest sparkling wine grapes of the district. 42° South is given the full luxury treatment, an extended ageing on lees extracts exceptional richness from sediments, to be followed by disgorgement and doseage in true Methode traditionelle.

The Campania property has over a hundred acres are under vine, all are planted to blocks purposely selected for the suitability to each grape variety. There are twenty seven individual blocks, each situated on very different altitudes. All were established with northerly aspects, allowing vines to receive the greatest possible sunlight. Chardonnay and Pinot Noir grapes are whole bunch pressed to retain delicacy. Fruit is treated to a clean primary ferment prior to racking off lees, followed by stabilisation and clarification. Base wines are assembled and bottle aged for a minimum eighteen months on lees before disgorge and tirage with minimal dosage to retain complexity yet revitalise the palate. Alcohol 12.5%

The spectacular success of Aramis can be traced back to the terroir of a unique site. Vines are all low yielding and planted on their own rootstock, to some of the world's oldest mineral rich soils, under the most temperate of Mediterranean climes. Only the choicest parcels of fruit are considered for vinification under the Aramis label and the most exacting principles are employed throughout the winemaking process. An uncompromising attention to detail amongst the vines during the growing season, thinning and plucking by hand, is followed by fastidious sorting of berries at vintage. A selection of the finest oak barrels are utilized to mellow and integrate the firm McLaren Vale Syrah tannins. Alcohol 14.5%
 
Deep purple with a refined bead. Dark chocolate, anise and vanilla/ cedar bouquet with hints of blackberries and spice. A solid palate with chewy tannins, densely packed with ripe dark cherry fruit flavours, mocha and complex spice. The sweetness of the fruit is balanced by ripe acids which bring the wine to a long and lingering finish.

Parcels of Chardonnay grapes with a slightly larger component of Pinot Noir are hand picked from the most prestigious vineyards within the comprehensive Hardy viticultural portfolio in Tasmania. Following a gentle whole bunch press and fining, individual batches are vinified on light grape solids before the completion of malolactic on primary ferment lees. Once clarified, the base wines are judiciously assembled to style and prepared for secondary fermentation in bottle. Extended maturation on yeast lees builds further complexity and depth of character into the wine. A traditional expedition dosage completes the process, adding the last components of complexity and ensuring precise palate balance. Alcohol 12.4%

Choice parcels of fruit from superior vineyards around the Glenora and Pipers River districts, grown especially for sparkling wines, are hand picked and whole bunch pressed to ensure freshness and elegance of structure. After fining, the individual batches are vinified on light grape solids and treated to malolactic fermentation on primary ferment lees. Once clarified, the wines are judiciously assembled to style and prepared for tirage. Extended maturation on yeast lees has built additional complexity and depth of character. The expedition liqueur completes the traditional method process and contributes the final touches of complexity, achieving a balanced, generous palate.

Making outstanding Shiraz has been somewhat of a specialty at Balgownie ever since vines were established. The winemaking team's commitment to sustainable vineyard management practices, limited irrigation, compost and mulching regimens continue to yield harvest of the healthiest, small but intensely flavoured grapes. Batches of Shiraz are treated to a term of maceration for the extraction of colour, tannins and flavour. A controlled vinfication is followed by twelve months maturation in a combination of new and seasoned French oak barrels before assembling into the final wine, to be initiated for secondary fermentation in bottle in the manner of Methode traditionelle. A brilliant deep ruby red with creamy purple/ pink mousse. Attractive rich raspberry and spice aromas. The palate offers delicious flavours of red and black berries, currants, cherries and plum supported by French cocoa vanilla oak, lively tannins and elegant spice. The Bellussi Spumante sparkling wine obtained from the Prosecco grape, which comes exclusively from the restricted DOC Area of Conegliano - Valdobbiadene. The hilly, clay ridden limestone of the region, together with a cool Mediterranean microclimate and unique exposure to the sun gives this wine a rare structural elegance and a remarkably refined bouquet, further enhanced by a careful sparkling process using the Charmat method. A sparkling white wine obtained from the Prosecco grape using the Charmat method in autoclave. This spumante is the epitome of Prosecco, where the harmony of its elegant body is accompanied by a delicate bouquet. The freshness and fragrance of this wine, together with a fine and persistent perlage, make it ideal for any occasion. Harvest is from 20th September to 10th October according to the vintage. The wine is fermented before a light pressing yielding a 70% maximum output. Best enjoyed within one year of production and up to two years. Acidity 6g/L Alcohol 11.5% Sugar 15g/l.
 
Straw yellow with greenish hints and limey gold robes. Nose of apple and green tea mint, papaya and tropical stonefruits. Lemon citrus honey nuances prepare the palate for a slightly sweetened introduction, awash with characteristic Mediterranean mousse. Effervescence is plentiful but not overwhelming and the natural fruit sweetness is uncloying and perfectly offset by it's charmingly old world acidity. There is a late arrival of dark forest berries and soily Blackforest woody characters that surprise the palate with a charming and unexpected complexity. A vivacious wine, and perfectly suited to both light or rich cuisines.

Sparkling Shiraz is synonymous with Great Western, and contemporary tastes have presented a great opportunity for Great Western to refine the style. The winemaking team discovered that certain blocks yielded fruit which would lend themselves exceptionally well to sparkling Shiraz, forming a wine that spoke of place and was characteristic of Great Western. Grapes are picked early, inoculated and vinified in traditional fermenting vats, without receiving any oak treatment whatsoeverl, achieving a wine with medium body which retains freshness and intensity even as it ages. Andrew Nugent grew up next door to the ancient Penfold winery at Magill in Adelaide Hills. Enthused by a consuming desire to make great wine, he honed his craft as viticulturalist and winemaker amongst the vines of McLaren Vale before returning to the Adelaide Hills where he established his very own wineworks at Woodside. Hand crafted from fruit grown to mineral rich soils above the historic Bird in Hand gold mine, a pure Pinot Noir with superb effervescence, dominated by red berry characters, adorned by a lift of stonefruits and floral.

Andrew Nugent established vineyards and olive groves on his property along Bird in Hand Road at Woodside in the Adelaide Hills. The road itself was named after the eponymous gold mine which operated during the 1850s. Four hundred metres above sea level, the vineyards face north and boast deep, well drained red earth, formed from metamorphic rock. Pinot Noir is harvested throughout the chill of early morning to capture and retain vibrant fruit character. Each parcel of grapes is separately tank fermented to maintain the distinctive, lively qualities of Adelaide Hills Pinot Noir. Parcels are assembled before completion of their secondary fermentation and treatment to liqueur dosage.
 
Delicate blush colour, an attractive sparkle with refined pink mousse. Strawberry, guava and cherry aromas are accompanied by a floral lift. Clean, vibrant strawberry flavours are enhanced by the very fine, persistent bead. Creamy textures, showing a finesse of style and good depth of flavour, the fruit sweetness is balanced by crisp acid and long, clean finish. Blue Pyrenees Midnight Cuvee

The production of Methode traditionelle sparkling wines has been an integral part of the winemaking at Blue Pyrenees for many years. Established in 1963 by the Champagne houses of Krug and Charles Heidsieck, an adherence to the stylish French influence of the founders is central. In 1992, the team at Blue Pyrenees decided to experiment with hand picking fruit in the middle of the night, under floodlights, to optimize fruit condition and temperature. The results were amazing, crisp and clean juices of outstanding quality. The Midnight Cuvee was born.

Although hand picked fruit is often most desirable for the production of premium quality juices, day time temperatures in Australia can mean that hand picked fruit is often quite warm when received into the press after a day's picking. Nowadays the Blue Pyrenees team select the best fruit parcels, whilst still on the vine, to be separated out from the rest and picked at night by hand to generate the juices that will become the Midnight Cuvee. Although very laborious and time consuming, the rewards are evident in the glass. The Blue Pyrenees Estate Midnight Cuvee is made entirely from estate grown fruit, predominantly Chardonnay with a touch of Pinot Noir. Approx 12.7%
 
A brilliant pale straw with a fine bead of gentle bubbles. The aroma is delicate and complex with the yeast autolysis character of freshly baked bread complimented by citrus fruits and hazelnuts. The bright, green apple flavoured palate exhibits a fine acid backbone which enhances the fresh doughy yeast notes and fine refreshing effervescence. A wine of great elegance, balance and finesse, with a long and clean, lingering finish.

The essential Victorian Methode traditionelle, from vines surrounded by the blue hued Pyrenees, so named for their beauty and similarity to the range bordering France with Spain. French eccentricity was the genesis of Blue Pyrenees Estate and remains central to the winemaking philosophy. Entrepreneur Francois Henri was so inspired by the picturesque blue hills that he commissioned a painting which has since become the famous label. A cépage of the holy trinity, Chardonnay, Pinot Noir and a healthy tranche of Pinot Meunier.

Established in 1963 as Château Remy by the Champagne houses of Heidsieck and Krug, the Blue Pyrenees style has evolved into a unique wine that captures the perfect balance between new world technology and old world tradition. Following considerable development and experimentation, the inaugural release was in 1982, the rest as they say is history. The winemaking team assembles the finest components of Pinot Chardonnay into a harmonious whole that represents excellence in expression and styling. Inoculated by strains of yeast native to Champagne, the judicious use of small amounts of reserve wine adds complexity and maturity whilst maintaining consistency from year to year. Alcohol 12.8%
 
Brilliant straw yellow with a green hue, a fine and persistent bead. Complex aromas of baker's dough, freshly baked biscuits and nougat after an extended ageing on yeast lees. Subtle hints of lemon and confection give an overall impression of freshness and vitality. Concentrated yeast autolysis characters and grapefruit flavours. The lively palate is driven by a fresh acidity, which lingers harmoniously with the aged complexity. A component of Pinot Meunier adds complexity to the final cuvée. The wine completely coats the palate and leaves an ample feeling of beautiful ripe fruit lingering in the mouth.
