There are very few vineyards which take sparkling wine so seriously as to plant Pinot Meunier, the third grape variety in the holy trinity of the noble Methode Champenoise. Fruit is selectively whole bunch pressed for creamyness and complexity, mollified by malolactic, stirred for palate richness and filled to sediments bottle for three full years yeast lees maturation. Brimming with brioche, apricots and apple flan, its largess of indulgent fruit charactors and beguling perfumes, undulate and evolve along a long, fine bead of crunchy stonefruit flavours, creme fondant and crisp minerality.

The Bay of Fires vineyards normally experience a growing season quite similar to Reims, Burgundy and Alsace. Roughly equal proportions of Pinot Noir and Chardonnay, with a smaller component of Pinot Meunier, are hand picked and whole bunch pressed, to ensure freshness and elegance of structure. After fining, the individual batches are vinified on light grape solids and treated to malolactic on primary ferment lees. Once clarified, the wines are assembled to style and prepared for tirage. Extended maturation on yeast lees builds additional complexity and depth of character, while the expedition liqueur and inclusion of aged reserve wines contributes to the overall depth and dimension of palate.
 
Crystal clear, persistent bead, light straw gold hue. A very complex wine exhibiting toast, lanolin and sea brine characters, honeycomb, yoghurt and oyster. The palate is finely structured, long, powerful and complex. Multiple layers of oyster shell, truffle and apricot brandy build in this intriguing wine. A great depth of character from extended ageing, retaining freshness and vibrancy. A solid, natural acid backbone, biscuit and citrus follow the palate all the way to a crisp, dry finish.

Sparkling Shiraz is synonymous with Great Western, and contemporary tastes have presented a great opportunity for Great Western to refine the style. The winemaking team discovered that certain blocks yielded fruit which would lend themselves exceptionally well to sparkling Shiraz, forming a wine that spoke of place and was characteristic of Great Western. Grapes are picked early, inoculated and vinified in traditional fermenting vats, without receiving any oak treatment whatsoeverl, achieving a wine with medium body which retains freshness and intensity even as it ages. The goal is to ensure that the finished wine defines Great Western, retains good balance, elegance and refinement.

Enthused by a consuming desire to make great wine, Andrew Nugent honed his craft as viticulturalist and winemaker amongst the vines of McLaren Vale before returning to the Adelaide Hills, where he established his very own wineworks at Woodside. Hand crafted from fruit grown to mineral rich soils above the historic Bird in Hand gold mine, a pure Pinot Noir with superb effervescence, dominated by red berry characters, adorned by a lift of stonefruits and floral.

Andrew Nugent established vineyards and olive groves on his property along Bird in Hand Road at Woodside in the Adelaide Hills. The road itself was named after the eponymous gold mine which operated during the 1850s. Four hundred metres above sea level, the vineyards face north and boast deep, well drained red earth, formed from metamorphic rock. Pinot Noir is harvested throughout the chill of early morning to capture and retain vibrant fruit character. Each parcel of grapes is separately vinified to maintain the distinctive, lively qualities of Adelaide Hills Pinot Noir. Parcels are assembled before completion of their secondary fermentation and treatment to liqueur dosage.
 
Delicate blush colour, attractive sparkle, refined pink mousse. Strawberry, guava and cherry aromas are accompanied by a floral lift. Clean, vibrant strawberry flavours are enhanced by the very fine, persistent bead. Creamy textures, showing a finesse of style and good depth of flavour, the fruit sweetness is balanced by crisp acid and long, clean finish. To be enjoyed whilst young and gently chilled, the perfect aperitif or celebratory drink.

What's any special occasion without Bleasdale? Effusive and generous, Bleasdale's effervescent red gives so much more. A richly flavoured sparkler, the poly vintage Bleasdale is assembled from barrels of maturing Shiraz across several years, topped up with liqueur de tirage and treated to a secondary ferment in own bottle. An evocative palate and nose, fruits steeped in liqueur, mint and ribena, supported by a length of luscious coconut/ carob oak and toothsome, cherry ripe tannins.

The historic Bleasdale cellars, constructed from eucalyptus beams and limestone blocks, house a massive red gum lever press, which fifth generation winemaker Michael Potts still uses once a year to make a very limited release wine. While the Bleasdale wineworks are steeped in tradition and local folklore, the estate has installed the latest technology, still maintaining the founding philosophy of producing honest, consistent and reliable wines. From time to time, the Bleasdale team draw on stocks of maturing wines with the requisite qualities to construct a luscious Sparkling Shiraz. The complete course of methode traditionelle is followed by a term of bottle age beneath the Bleasdale cellars.
 
Dark purple red, a persistent mousse. Complex cherry liqueur perfume, maraschino and chocolate torte, rancio, cocoa oak and pepper notes. Rich bramble berries on the highly textural palate, red fruits, cherries and vibrantly spiced plum, chocolatety oak and supple tannins lead to a long, memorable finish. A suoerb aperitif wine, easily matched with seasoned kebabs, duckling and pork or chocolate desserts.

The production of Methode traditionelle has been an essential part of the winemaking at Blue Pyrenees for many years, the original raison d'être. Established 1963 by the Champagne houses of Charles Heidsieck and Krug, an adherence to the transcendent French influence of the founders is central. In 1992, the Blue Pyrenees team decided to experiment with hand picking their fruit, under floodlights, in the middle of the night. The results were amazing, a most memorable vintage of outstanding quality, Midnight Cuvée was born.

Although hand picked fruit is often most desirable for the production of premium quality juices, day time temperatures in Australia can mean that the grapes will often be quite warm when received into the press after a day's picking. Nowadays the Blue Pyrenees team select the best fruit parcels, whilst still on the vine, to be separated out from the rest and picked at night by hand to generate the juices which will become Midnight Cuvee. Although very laborious and time consuming, the rewards are evident in the glass. Midnight Cuvée is made entirely from estate grown fruit, predominantly Chardonnay for elegance and refinement, with a touch of Pinot Noir. Alcohol 12.5%
 
Brilliant pale straw hues, a fine gentle bead. The aroma is delicate and complex, yeast autolysis characters of freshly baked bread complimented by citrus fruits and hazelnut. The bright, green apple flavoured palate exhibits a fine acid backbone which enhances the fresh doughy yeast notes and fine refreshing effervescence. A wine of great elegance, balance and finesse, a long and clean, lingering finish.
