Antonio Carpene was the first winemaker to fashion a quality Veneto Prosecco in the traditional Charmat sparkling process. Founded in 1868, Carpene Malvolti have been crafting the finest effervescent wines from grapes harvested off mature vines planted to the beautiful verdant hillsides of Veneto. The rolling lanscapes at 200 to 300 metres above sea level in the historic DOCG districts of Conegliano and Valdobbiadene are blessed by excellent exposure to sun and the most favourable ripening conditions. A unique winegrowing terroir within a romantic and idyllic pastoral environment, breathtaking vistas and steep slopes covered by vineyards, so special that it has been nominated for World Heritage listing.
 
Straw yellow colour, greenish tinge and fine mousse. Gentle, fruity bouquet with ripe expressions of apple. Fruit forward palate in an extra dry aromatic style, kept soft and dry by delicate acidity, finishing on a pleasant apple aftertaste. An ultra fine perlage, persistent, conveying a lively and elegant mouthfeel. Excellent as aperitif or as a base for cocktails, matches perfectly with light Mediterranean cuisine.

There are a mere hundred hectares of Glera vineyards, stretching out between the undulating landscapes San Pietro di Barbozza, Santo Stefano and Saccolworthy, worthy of the moniker Superiore di Cartizze. The soils here are mineral rich and marine, they vary considerably from sandstone to alluvial clays, all share a providence for yielding the world's most toothsome sparkling wine. Grapes are encouraged to ripen fully, harvested late in the season and vinified to the local Conegliano Valdobbiadene method.
 
Straw yellow hues, regal mousse. Rich floral notes of acacia and rose, golden delicious and pink grapefruit, oerfumed and suave. Well rounded palate, brimming with soft pastel characters, redolent with the freshness of fruit ripening in the orchard, creamyness, textural throughout, a wine of impeccable balance, generosity of flavour and extended length.

Parcels of Chardonnay and Pinot Noir are all hand picked off superior vines. Fruit is chilled and whole bunch pressed, retaining only the finest free run juices and minimizing phenolics. Components are treated to a variety of vinification techniques for added complexity, structure and richness, malolactic ferments and long term maturation in seasoned French oak barriques. A course of regular, non-oxidative, lees stirring battonage is employed to develop luxurious mouthfeel and texture. An extravagant term of several years repose on yeast lees is followed by the traditional disgorgement, dosage and reseal.

A coterie of small pickings, Kerner, Riesling and Traminer, grown to the eminent Fechner Brothers vineyard at Moculta. Batches are vinified as one and finished to a juicily dry, indigenously ferment style, a mere six hundred bottled of vintage, naturally effervescent and audaciously unfined, for those who like their sparkling to be both, Brut et Sauvage.

Charles Melton Sparkling Shiraz Cabernet Grenache

A mostly Shiraz Cuvee sourced from six of the Melton's best dry grown, old vine blocks. Charlie was one of the first to recognize the value and tradition of the Barossa's old vineyard Shiraz, Cabernet and Grenache. At a time when others were pulling out some wonderful old rootstock to plant more fashionable varieties, Charlie was convincing farmers to keep their historic vineyards. He belongs to a small group of dedicated vignerons who fought to retain the viticultural heritage of Barossa Valley. Two years in oak, followed by liqueur dosage tirage and a further four years on lees.

The fruit is mostly hand harvested at healthy levels of ripe, natural sugar baume range to give richness with a degree of freshness and acidity for the base wine. Grapes are fully destemmed through the crusher into fermenters, for vinification on skins at moderate temperatures for several days, treated to a regimen of pumpovers twice daily. At close to dryness, batches are drained, pressed and returned to the free run. Components are filled to a selection of predominantly French Never and Vosges or American oak barriques for a year on gross sediments. The wine is then tiraged and left on lees for twenty months before degorgement and expedition liqueur.
 
Deep dark, cherry purple. An elegant, complex bouquet, rich spicy, multi dimensional redolence, mintyness, dark currants and festive pudding fruits. A complex, aromatically opulent cornucopia of flavour, bushels of fruit and classic autolysis within a glorious effervescence of the finest bubble. The wonders of liquering dosage and bottle age, modulating the degree of sweetness, in the tradition of the memorable Great Westerns which evolved for decades.

Established 1920 by Eugene Chevalier, who chose a location amongst the finest vineyards at the heart of southern Burgundy. Chevalier de France Blanc de Blancs starts with a selection of Chardonnay, Colombard and Ugni Blanc, from the Nuits-Saint-Georges. A delightfully fresh and delicate sparkling wine with a charming touch of fruitiness, Brut without being austere. Fruity aromas, a light body and an elegant style, the finish is lingering and clean.

Several times a week, the cellar master at Chevalier de France applies a propeller to gently swirl the fermenting batches of wine. This ensures contact with the sedimentery lees, contributing mouthfeel and infusing toasty bread characters. This process continues for several months, followed by bottling and an extended term of remuage, degorgement and reseal under Liqueur de dosage. A true methode traditionnelle crafted from the pick of Burgundian fruit.
 
Light golden hues, lustre and bead. Marigolds and brioche, a beautiful almondine honey fragrance. Lifted characters of creme caramel, clover, guava and mints. A palate of fresh bakery delights, marmalades and jam, more brioche, fruit danish and a a slight acid at the finish that recalls veined cheese and teal leaf.

With a similar climate and landscape to Piemonte and Tuscany in Italy, long summer days enable the grapes to achieve genuine flavour ripeness which gives lovely fruit richness to the wines, while cool nights allow elegant cool climate characters to emerge. La Zona are designed to drink any day, at any time, for any occasion. Crafted to the true Methode traditionelle which ensures richness of palate and fullness of texture, La Zona has been treated to a second fermentation within it's own bottle.
 
Pale straw coloured with green hues, a lovely bead and fine mousse. Nose of melons and citrus, green apples, almond and honey. The front palate bursts with dry, delicately flavoured bubbles. A crisp but not overly acid palate supports the bubbles through to the finish. A great aperitivo and ideal accompaniment to oysters, scallops, and crab. Drink young and fresh.
