Rows 22 to 26 always yield something spectacular with each new vintage, the mix of Burgundian and new world clones are hand picked and separately vinified for release as an exquisite limited edition, only made in the finest vintage years.

Hoddles Creek was established with a view to selecting the most challenging terrains, to plant the type of vineyard which serves Pinot Noir best. The auspicious single block of original estate vines are characterized by moderate shoot length and small precious berries, they produce a mere 1.3 kilograms per planting. Fruit is all hand picked and crushed into fermenters for cold soak, a fifth are included as whole bunches for added structure and finer tannins. Batches are pumped over for optimal extraction. Upon completion, components are filled to a high proportion of new French oak barrels to begin a course of eighteen months maturation, bottled without any stabilization, unfiltered and unfined. Alcohol 13.2%
 
Dark raspberry hues. Potpourri and floral spice, sen sen and lamb over compotes and cherry ripe, whole bunch complexity and curls of rosey oak. Layered yet seamless palate of defined fraises de bois characters, dark jube and affable cherry acidity supported by a veneer of French cocoa oak and lingering length of plush velvet tannins.

Adam P. Marks visited France to witness first hand the traditional methods of breeding chickens, to acquire pastoral viticultural practices and learn ancient winemaking techniques. Marks returned to Australia inspired by the artisanal French approach to production which he acquired whilst in Bordeaux making wines on the Entre deux Mer. Grapes are hand picked, gently crushed and settled overnight before being pressed directly to new French oak hogsheads. Three weeks of wild indigenous ferment on full solids, while being treated to lees stirring battonage without any malolactic, is followed by assemblage and minimal fining to ensure maximum retention of primary fruit character.

The Yarra Valley has been known to offer idyllic growing conditions for Cabernet Sauvignon since the middle of the nineteenth century. Vines were first planted in 1838 and viticulture spread rapidly. The earliest wines were so good that they were exported throughout the British Empire and gained much critical acclaim, particularly for Cabernet. The area was rediscovered as terre superieure for Cabernet Sauvignon in the late 1960s when the region was re established. This cleanskin has been crafted by a notable Yarra Valley estate who probably never anticipated releasing it without a label. Oak maturation has enabled the wine to attain finer balance and complexity, whilst softening tannins and enhancing the fruit.
 
Deep cherry red hue. Aromas of sweet berries dominate the nose, varietal notes of violet and creme de cassis are matched by earth and herbaceousness, whisps of cocoa oak, the leafyness of tobacco and mint. Rich and full palate, it delivers varietal fruit, luscious black currant and cassis, the darkness of boysenberry, cosseted by clove oak and supported by firm tannins. Match with ripe cheese, rib steaks or game.

The earliest pioneers were quick to recognize the Yarra Valley's idyllic winegrowing potential. An immensely satisfying style of wine, the philosophy here was to produce a fine, recognizably Yarra Valley Shiraz, elegant and assertive with good varietal fruit. Much of the work is achieved in the vineyard, by growing the right grapes at the right sites around the Yarra Valley. Then, it's all about attaining balance and texture, allowing the fruit to express itself. A combination of vinification techniques were employed to add complexity. Inoculated and vinified to select yeasts, the parcels were fermented, racked and transferred to barrel for maturation in a combination of tight grained, finely coopered oak barrels.
 
A deep crimson colour. Lifted aromas of plum and cherry, blackcurrant and cassis, cigarbox and spice. Scents of fresh ground pepper, violet and thyme precede a full, fleshy mouthfeel with ripe but yielding tannins. Characters of blueberry and plum, espresso and peppercorn line the plush, velvetine palate. Careful use of oak has added complexity and infused cocoa/ vanilla/ spice characters without dominating the vibrant fruit. The winemaker has captured the splendour of synergy between Shiraz and the Yarra Valley. A wine of balance and integration to accompany all cuisine, can be cellared for further development, but is ideally served today with meats and game, pizza and pasta or tasty cheese.

Coldstream Hills were established in 1985 by James and Suzanne Halliday. From its initial vintage of 450 dozen, it has grown to become one of Australia's leading small wineries with a reputation that belies its size. Situated in the cool Yarra Valley, its steep, closely planted vineyards have become a signature of the region. So too have its wines, most notably a Pinot Noir which reflects a clime cooler than Bordeaux and warmer than Burgundy. Hand picked grapes from low yielding vineyards in Upper and Lower Yarra Valley are vinified to a variety of Burgundian handling techniques, including whole bunch fermentation and a term of age in a selection of choice French oak barrels. Medium red, vibrant purple hues. Fragrant cherry and blueberry fruit aromas with underlying gaminess and spice. Toasty oak adds further complexity to the wine's bouquet, but does not dominate. Vibrant fruit characters of cherry, strawberry and blueberry persist on the juicy palate alongside stalky savoury notes of game, leaf and spice.

Founded by the great James Halliday, Coldstream Hills is as fastidious today under the stewardship of it's highly respected winemakers, as it was in the halcyon days of the re-emerging Yarra Valley boutique wineries. Vintage conditions permitting, Coldstream Hills releases a Reserve in excruciatingly restricted quantities, assembled from the most exceptional barrels of elite Cabernet Sauvignon wine. The intensive handling of this robust Cuvee includes fermentation under new French oak, followed by extended maceration and ageing.

Coldstream Hills Reserve Cabernet is in most years, entirely based on fruit from a 3.6-acre block on the home vineyard planted. 2005 began with good rains early in the season and bud burst was followed by great flowering and fruit set. The summer was wet and cool, allowing the vines to thrive. The rains stopped in January and perfect conditions followed, in fact some of the best on record. The vines ripened quickly with the fruit showing great colour, intense flavour, good structure and excellent natural acid levels. This wine was matured for fifteen months in a combination of new and prior use French barriques, resulting in a fine balance of oak against elegant cool climate fruit. Alcohol 14.0%
 
Dark medium red with purple hues. Aromas of dark chocolate, blueberry and toasty French oak;, the nose shows classic cool climate characters of blackcurrant and dark cherry with underlying cedaryness. Toasty oak harmoniously provides background complexity, the tongue is greeted by blackcurrant and dark cherry fruit flavours with toasty violin like strokes of fine milky wood, vanillan and cocoa, essences of dark brooding liqueurs and dark chocolate. Medium bodied yet excitingly complex and flavoursome, the fine yet persistent Cabernesque tannins go to great lengths engaging the fruit, stylish and elegant, Coldstream Hills is an excellent example of Lower Yarra Valley Cabernet from a mild vintage.

De Bortoli Melba Reserve Cabernet 2012

A superb accord of elite parcels Cabernet Sauvignon from the oldest De Bortoli blocks in Yarra Valley. Fruit is sourced from two estate vineyards, suitably named Old Hill and Old Back, both established 1971. A beguiling overture of seductive dark Cabernet fragrances and fragrant jube berry flavours over fine integrated tannins. Like her eponymous opera star, Melba is conspicuous for her alluring perfumes, exceptional taste and intense crescendos, before an exquisite, memorable finish.

Vines are cane pruned to twenty bunches each and shoot thinned at the ten to fifteen centimetre stage so that there are no more than fifteen per planting. Grapes are hand picked into 8kg buckets and transported to the Dixon Road wineworks. Fruit is destemmed, crushed and tipped into six tonnes open fermenters. The musts are treated to a natural fermentation on skins at a minimum temperatures of 25┬░C, followed by a spell of three weeks maceration. Batches are pressed, settled overnight and gravity filled to a selection of seasoned and new fine oak casks where they mature for a year or more at a very temperate 16┬░C.
 
Bright crimson red with traces of garnet. Fragrant seductive varietal aromas with a nuance of cigar box and leaf, rich and complex nose, leafiness and blueberry over a background of sweet earth and cedary oak. Full fleshy texture, sweet black and red fruit flavours with complex notes of dusty earth, leaf and dried herbs, fine grain, well integrated tannins before a long harmonious finish. Vines at Section A8 of Dixons Creek are strategically planted in a north to south row orientation. All grapes are hand picked throughout the cool of morning into 8kg buckets and transported to the estate wineworks. Fruit is hand sorted as a combination of whole bunches and whole berries are gravity tipped into open fermenters. Fruit is vinified through the action of wild indigenous yeasts, while treated to a regimen of foot plunging and hand remontage to gently extract colour and flavour. After three weeks of maceration and ferment, musts are pressed and settled before gravity filling to a combination of 500L oak puncheons and larger format 2300L casks for malolactic and a year's maturation. Alcohol 13.0%
 
Medium garnet red colour. Fragrant and aromatic, brightly detailed, perfumed characters, wild strawberries and graphite, minerals and cherry spice. A fine, plump and structured palate, brimming with dark berry flavours, smokeyness and pepper spice, supported by a whisper of seasoned oak and textural, grainy tannins. Many of the vineyards which have contributed fruit for the most memorable vintages of De Bortoli Pinot Noir, are now bearing fully mature vines twenty to thirty years of age. The finest of these sites are yielding harvests with a distinctive expression of site and a real sense of place. De Bortoli have treated the pick of the crop to a course of traditional winery yeast open ferments and judicious French oak maturation, to achieve a Villages style of provincial Pinot Noir, brimming with varietal virtue and old world pastoral grace.

Predominantly older plantings MV6 clone, with younger plantings of 777, all hand picked off fully mature vines up to twenty five years of age, grown to estate vineyards at Dixons Creek, The Abbey, Emu and Ponderosa. Components are chosen for their irresistible Yarra Valley charm, selected for their capacity to contribute elegant aromatics and good palate weight. A combination of whole berries and whole bunches are filled to a mix of traditional open top and small static fermenters, for two or three weeks of maceration and vinification. Upon completion, batches are pressed, settled overnight and gently transferred by gravity to a selection of French oak casks for a course of maturation.

A superb construct of Yarra Valley Cabernet Sauvignon, crafted from three estate parcels of fully mature, low yielding vines, planted 1987 to 1991 at Dixon's Creek. A highly regional expression of Cabernet, exhibiting profound varietal definition, bursting with dark bramble berry flavours, seasoned by a dusting of cedar and garnish of bushvine leaf. The Victorian of choice to accompany dry aged sirloin with grilled marrow, truffled mash and morelles.

Vines are all cane pruned to twenty five bunches per vine, further shoot thinned at the 10cm to 15cm stage to eighteen bunches per vine. The hand picked berries are placed in 8kg buckets and transported promptly to the De Bortoli wineworks. Bunches are destemmed, crushed and tipped into fourteen tonnes fermenters. Upon completion of ferments, batches are kept at a minimum of 25C and left on skins for two to three weeks. Batches are pressed, settled overnight and gravity filled to a selection of oak casks for a year's maturation at 16C. Components are then racked and gently aerated every three to four months throughout the course of age.

Garnet red colour. Brightly lit, detailed and perfumed bouquet, graphite and mineral notes. Medium bodied and dry, a finely aromatic, plump palate, seasoned by white pepper notes and exhibiting whole bunch ferment characters, supported by a length of grainy tannins and mere veneer of cedar oak. A match to spicy, country style pork bangers and root vegetable mash, drizzled with truffle oil.
