Parcels of Semillon and Sauvignon Blanc are selected from five specialist growers. One is situated in the warmer region of Wilyabrup and the others at the southern end of Margaret River. The growers utilize traditional viticultural techniques of leaf plucking the fruiting zone and thinning to produce crops of less than three tonnes per acre. Such low cropped fruit is, in large part, the raison d'être for such a full flavoured wine. It is the maker's belief that good fruit should be treated gently and with minimal intervention. Bress is religiously handled in such a manner.

Marks visited France to witness first hand the traditional methods of breeding chickens, to acquire pastoral viticultural practices and learn ancient winemaking techniques. Marks returned to Australia inspired by the artisanal French approach to production which he acquired whilst in Bordeaux making wines on the Entre deux Mer. Parcels of hand pruned grapes are treated to the same, precious vinification techniques. These include a unique strain of yeast indigenous to Bordeaux. A Semillon component undergoing barrel fermentation in seasoned French oak hogsheads is then stirred to build richness in the mid palate. Following fermentation, the wine is settled, assembled and gently filtered.

Colour is a pale golden straw with youthful green tinge. Bress offers a complex array of fruit aromas, green skinned fruit, grapefruit, lemon and tropical characters. There are subtle oak aromas of char and spice. Fashioned to a very attractive spring and summer style of wine with flavours of lemon, grapefruit and tropicality. There is a textural mid palate richness from the partial barrel fermentation. A traditionally hand crafted wine, the finish is unctuous and well rounded.
