By maintaining optimal balance between contemporary and traditionalist winemaking techniques, Amberley Estate have remained true to their original vision of making wines solely from fruit grown to superior Margaret River vineyards. A selection of cultured yeasts and closely managed ferments achieve a soft yet complex, elegantly fruit driven Chenin Blanc, designed to complement today's eclectic cuisines. Following the crush, grapes are pressed and the juices are inoculated. In order to enhance the varietal aromas, Chimney Brush is vinified in controlled fermenters to retain vitality and freshness. The emphasis at all stages of handling is to preserve the natural qualities of Margaret River Chenin Blanc.
 
Bright, light straw hues. Clean, fresh aromas of green apple and pear, underlying hints of honeysuckle and toasty notes add complexity. Off dry palate with a crisp acidity that refreshes the middle and back palate, intensity of fruit offering juicy characters of Fuji apples, apple blossoms and lime, concluding with attractive honey notes right at the finish.

The winemaking at Amberley is driven by a philosophy of sourcing the highest quality fruit to produce contemporary styles for modern tastes. Such a promise has ensured Amberley can capture and retain the refreshing qualities of the Moscato style. Harvests from choice vineyards which can best display the requisite ripe fuit and juicy grape characters are treated to a combination of modern and traditional vinification techniques, infusing the wine with a slight effervescence for vitality and textural charm. Ferments are arrested when the optimal balance is achieved, retaining natural fruit sugars and all the exciting ripe Moscato grape flavours. Alcohol 7.0%
 
Light straw in colour with green hues. Bouquet shows lifted, heady, floral tones of honeysuckle and fresh Muscat aromas. The palate is light with flavours of sweet honeydew melon and tropical fruits. The Amberley Estate property was primarily the subject of a detailed soil, climate and aspect analysis before any planting of vines. One can catch a glimpse of Geographe Bay through the valley at the centre of Amberley Estate, protected from westerly winds by towering Jarrahs and steep slopes. The choicest parcels of Sauvignon Blanc are selected from the estate vineyards along Margaret River, harvested throughout the cool of night to maximise freshness. A gentle handling in the winery ensures the bright, vibrant fruit flavours are retained. Juices are racked and vinified in controlled fermenters at cooler temperatures. Upon completion, components are held on lees to enrich the palate while enhancing texture and complexity. The final wine is then assembled, fined and stabilised for bottling.

One can glimpse the blue waters of Geographe Bay through the valley which runs along the centre of Amberley Estate. An advantage of such a fortuitous location is the moderating influence of the bay's maritime breeze on the hot easterly winds which blow during the height of summer. Secret Lane is fashioned exclusively from estate grown Margaret River fruit. A mostly Semillon wine with a smaller component of Sauvignon Blanc, delivering a fully integrated palate with steely but elegant flavours, good structure, balance and poise.

The classically dry and blissfully aromatic white from Amberley Estate vineyards on Margaret River. Ripe, fully compatible parcels of Semillon and Sauvignon Blanc grapes are selected, promptly harvested throughout the cool of night to capture and retain freshness. Gentle handling in the winery serves to preserve the bright, vibrant flavours of grapes ripening in the vineyard. Following the crush and inoculation to choice yeasts, juices are racked and vinified at cooler temperatures in controlled fermenters. Upon completion, parcels are kept for a term on sedimentery lees to enrich the palate while enhancing texture and complexity, followed by assemblage and light fining into bottle.

Hailed at inaugural release by industry savant James Halliday as the nation's finest Chardonnay, Ashbrook is crafted from harvests of Old Chardonnay Mendoza clone, picked off parcels of forty year old vine and assembled with a small block of Clones 3 and 5 transplanted from neighbouring Leeuwin Estate. The long, balmy ripening seasons at Wilyabrup encourage development of the most intense varietal characters, a big boned, dimensional Chardonnay, enhanced through a course of new French oak ferments and extended term on lees.

Ashbrook are the archetypal Margaret River boutique winemaking estate. The dedicated team strive to achieve perfect balance between parcels of the highest quality Chardonnay and treatments in fine French oak. Ultimately the wine remains essentially driven by fruit, maintaining sound structue and clear definition. Grapes are picked fully ripe and in excellent condition, displaying attractive varietal characters. Half the wine is fermented and matured in new French oak barriques over the course of several months without any battonage or malolactic treatments, preserving the distinctive expression of Margaret River and highlighting the primary fruit characters of solidly structured west coast Chardonnay. Originally a native of Portugal, Margaret River has cordially received and given sanctuary to the wayward Verdelho grape, to make it, it's very own. Small wonder, as the maritime climes and sultry Indian Ocean breezes stimulate the vines with ideal conditions to ripen fully and develop maximum fruit flavour. Ashbrook is one of the oldest producers in Margaret River and has been fashioning Verdelho wines of some import for over a quarter of a century. The vineyard is now fully mature and yielding harvests of the finest Verdelho in the land.

Verdelho first came to prominence in the early days of West Australian viticulture when the patriarch of Swan Valley winemakers, Jack Mann, saw the potential of the variety for making fresh, lively table wines which are immediately approachable yet age gracefully. The development of Margaret River saw Verdelho planted to cooler environs, encouraging the grape to develop fully its unique character. Ashbrook's Old Block was established 1976 to cuttings sourced from the oldest vineyard in Swan Valley. A second parcel was planted 1987 and became known as Verdelho over the creek. It yields outstanding fruit, vinified completely unoaked, to express the exquisite varietal charm. Alcohol 14.6%

Sourced from choice vineyards, Breathing Space puts a focus on capturing the intense Margaret River regionality while retaining eloquence of fruit character. The highly favourable mesoclimes are further tempered by prevailing winds from the Indian Ocean which deliver excellent ripening conditions throughout the growing season. Hand picked throughout the cool of early morning, whole bunches are treated to a gentle press for extraction of the purest free run juices. The inclusion of light solids in the ferments contributes texture, aromaticness and complexity. After several months ageing on yeast lees, components are assembled and bottled unfined. Brilliant pale straw with a light green hue. Ripe aromas of lychee and pear, paw paw and apple gala, mango and tropical fruits. Time spent on yeast lees has added white bread notes, barrel ferments in large format French oak has infused luxurious complexities. A richly flavoured palate brimming with lychee and pear, ripe apples and stonefruit, which continue on to a long, dry and refreshing finish.

A zesty upfront palate of citrus and ripe orchard characters is followed by green vegetable and herbaceousness, over a backdrop of complex muted nettle and green pea notes. A wine of controlled power and finesse, nectarine and white peach flavours, ginger and lemon citrus are completed by hazelnut and brioche notes derived from barrel ferments. Brookland Valley's vineyards are closely planted as the lie of land flows down the valley, from sun drenched north facing slopes to gentle flats along the banks of the Willyabrup Brook. After adopting a technology driven approach to viticulture, the quality of all Brookland Valley's white wines have improved dramatically. Parcels Semillon and Sauvignon Blanc harvested from choice sites, are cold pressed to capture the intensity and retain freshness. Juices are vinified in controlled fermenters to preserve the crisp and crunchy characters of the vineyard. After a spell of extended lees contact to infuse depth and complexity, components are assembled into the definitively classic and dry, Margaret River white. Alcohol 12.5%
 
Pale straw hue with tinges of green. Fresh and punchy nose, light herbaceous characters are complemented by notes of freshly cut hay, braced with citrus blossom. A soft and vibrant mouthfeel, juicy acidity, crisp and lush tropical fruit flavours dominate, passionfruits and a squeeze of fresh lime. Herbaceousness finishes back of the palate, a fresh and fine acidity adds persistence and depth.

Cape Mentelle Brooks Chardonnay 2010

Brooks takes its name from the Chapman Brook Vineyard, established 1994 in the cooler southern half of Margaret River, a main source of Chardonnay for Cape Mentelle. This idyllic location, when combined with a restrained use of oak, best captures the freshness and vibrancy of Chardonnay, producing an appealing, generously flavoured fruit driven style, expressing pristine varietal characters, great concentration and intensity while exhibiting splendid balance.

Predominantly Mendoza or GinGin clone of Chardonnay, marked by a concentration of fruit characters and high natural acidity, is sourced from Chapman Brook Vineyard in the cooler Karridale sub-region. Most vines are cane pruned and vertical shoot positioned. Hand picked bunches are elevated into a membrane press. The pure free run juices are left to settle overnight before racking into Burgundian coopered French oak barriques for fermentation. Wines are treated to battonage and weekly top ups whilst maturing five months in barrel. Batches are individually assessed and those expressing a juicy, fruit driven flavour with restrained influence of oak are assembled into the final wine. Alcohol 13.0%
 
Pale straw colour with lime hues. Pear, white peach and lime rind feature on a complex nose, also exhibiting hints of soft nougat, sweet jasmine and sesame snap. Bright grapefruit, pear and lemon greet a delicately textured palate with subtle cashew and fluffy honeycomb present in the background. All elements are threaded together with lively and fresh citrus acidity. Will accompany crispy skinned chicken, goats curd pannacotta and celery hearts.
