Salitage Pemberton Chardonnay 2007

A fruit driven style supported by subtle oak, crafted by one of the Pemberton region's most conspicuous estates. Salitage retain traditional winemaking techniques, delivering complexity of aroma and flavour through clonal diversity, lees contact and barrel fermentation. A style suited to those looking for full aromaticness and presence of palate in a Chardonnay.

Elevated ironstone gravel soils and cool, even ripening temperatures contribute to a Chardonnay of great structural complexity and intense fruit flavours. A mix of five clones are harvested off estate vines. A quarter of the fruit is whole bunch pressed and the balance is destemmed prior to pressing. Cold settled clarified juices are fermented as separate clonal batches. The wine is completely barrel fermented in a combination of new and seasoned French oak barriques from select Burgundy cooperages. Following fermentation the wine was sulphured to prevent any malolactic. Salitage remained in barrel on yeast lees for ten months before assemblage, sterile filtration and bottling. Alcohol 13.5%
 
Mid straw in colour. The nose exhibits fruit aromas of citrus, stone fruits and melon, with oak spice and mealy characters derived from the barrel fermentation and lees contact. The palate is generous in flavour, underpinned by grapefruit acid. The finish shows understated oak and excellent fruit flavour and length.
Treehouse Pinot Noir 2009

The entry level Pinot Noir by one of Pemberton's grand estates. There really is a treehouse and it's the grandchildren's play area, set within the forests of Salitage.

John Horgan established Salitage after tours of duty at Robert Mondavi and Premier Cru Domaine de la Pousse D'or. Pinot Noir is collated from choice Pemberton vineyards, each site is picked and separately handled. Parcels are treated to small batch, whole berry vinification in fermenters, employing twice daily pumpovers using the rack and return method. Fermentation temperatures peak at 30°C and last for up to ten days. Upon achieving dryness the wine is drained and pressed off to tank, allowed to settle, before being transferred to seasoned French oak barriques for the completion of natural malolactic. The final wine is assembled and prepared for bottling after a light filtration.
 
Medium intensity, plum red colour. Aromatics of wild strawberry, red cherry, hints of white pepper and wood spice. Cherry flavours with a fleshy and textured palate lead to a soft balanced finish. The wine shows pleasing complexity, length of flavour with lovely moderated oak tannins. A balanced and approachable young Pinot offering excellent early drinking with a wide range of food styles. Due to the minimal handing during vinification, a small deposit is expected, the winemakers recommend decanting prior to serving.

A pure varietal by one of Margaret River's finest, exhibiting vibrant fruit flavours with crisp acidity and lingering finish. Extended resting on lees has contributed mouthfeel and enticing complexity.

The Salitage winery has been designed with a minimalist approach, from the handling of the fruit throughout the entire vinification process, to produce wines which have structural complexity and intense flavours. Treehouse wines are made in the Salitage winery using estate grown fruit, complimented by parcels grown to adjacent vineyards around Pemberton. Treehouse is crafted around a backbone of Semillon, fashioned into a fully rounded cuvée by the addition of Sauvignon Blanc. Harvested grapes are pressed batch by batch, the cold settled clarified juice are tank fermented for a fortnight at 15°C to 25°C. Following vinification the remains on yeast for four months before racking and bottling.
 
Pale straw in colour. A range of tropical fruit aromas, pear, gooseberries and passionfruit with flinty notes and subtle herbal undertones. The palate is fruit driven and nicely weighted, exhibiting mineral accents and clean varietal fruit. A touch of tropical, mineral and green vegetable characters, soft acidity and long flavoursome finish. Light, fresh and crisp, to be served lightly chilled, as the vibrant fruit coupled with zesty acid make a refreshing aperitif style.

John and Jenny Horgan entered the fine wine business more than two decades ago as pioneers in the fledgling Margaret River region. In the late 70's John worked and studied under the guidance of Robert Mondavi in Oakville, California and in 1985 purchased an equity in the famous Premier Cru winery, Domaine de la Pousse D'or in the Cote D'or region of Burgundy.

This collective experience, spanning 25 years in Australia, USA, and France led to the establishment of Salitage at Pemberton, Western Australia

The Salitage winery has been designed with a minimalist approach to both juice and wine handling. Elevated fermenters, spanning three levels in the winery, enable the winemaker to move the wine under its own weight.

Salitage is a family winery producing 25,000 cases per year. Salitage use French oak Barriques exclusively for the barrel maturation of wines. Traditional wine making methods have been retained and these are complimented by the technological advances in modern day plant and equipment.

Discerning wine drinkers are increasingly looking to regionality, they want to know the source of the grapes, soil types and the climatic conditions that prevail in particular viticultural regions.

Salitage are proud to introduce the Treehouse Brand and commend these outstanding wines to you for your enjoyment. The Treehouse label was named after the Grandchildren's Treehouse which is now surrounded by the luxurious Salitage Suites. Treehouse wines are made in the Salitage winery by winemaker Patrick Coutts using Salitage fruit which is complimented with some other varieties grown in adjacent vineyards around Pemberton.
