Regular assessments leading up to vintage ensure that grapes are picked when flavours are most intense and the balance ideal. Sauvignon Blanc is harvested during the cool of the night and crushed with open rollers to minimise phenolic and colour extraction. The biggest challenge is to ensure that the fresh flavours and remarkable structure of juices are retained throughout the winemaking. Several yeast strains are used based on their ability to highlight varietal flavours and enhance palate structure. Free run and pressings are vinified, some on skins, in a combination of tank and large French oak casks. Wines are racked on lees after the completion of ferment and stored cool prior to assembling.
 
Pale, icy green hue. Fragrant citrus blossom, passionfruit and spicy guava. Instantly mouth filling with rich pear, fleshy lime and spicy lemongrass penetrating the mid palate. Crisp acid adds exuberance and persistence whilst providing balance and freshness.

Annies Lane can boast a long and distinguished history of conspicuous winemaking which dates back to 1863. There really was an Annie who lived long ago and vines have been cultivated on both sides of her eponymous boulevard for a century and a half. To this day, mother nature continues to deliver a bounty of the finest fruit to Annie's Lane every year. Harvests of Adelaide Hills Sauvignon Blanc and Clare Valley Semillon are grown to perfection in the vineyard before being fashioned into a refreshing and stylish wine at the Annies Lane wineworks.

Semillon and Sauvignon Blanc is sourced from premium vineyards in the Adelaide Hills and Valley Clare. Sites are harvested with a view to capturing crisp varietal flavours and preserving good levels of refreshing acidity. Grapes are sorted into bins and sent to the press, crushed, drained and treated to a settling period which refreshes varietal characters and freshness of fruit. The most delicate free run juices are retained and transferred to fermenters for a cool, temperature controlled vinification. Annies Lane is bottled promptly after completion following a racking for clarification, light fining and filtration.
 
Pale green hues. The nose shows the chalk aromas and steely tang of Semillon mingling with the fresh lifted tropical fruit and snow pea characters of Sauvignon Blanc. Vibrant flavours of grass and straw, a fine minerality, intense fruit characters come through on the palate, tight and elegant with a refreshingly dry finish. An unassuming young winegrower took his chances in 1997 with the re-emerging viticultural precinct of Adelaide Hills. Andrew Nugent planted vines and an olive grove on a hundred acres of land along Bird in Hand Road at Woodside. His efforts have since claimed a staggering list of awards for excellence on the international wine show circuit. Bird In Hand's preoccupations with growing and crafting the finest quality Adelaide Hills Sauvignon Blanc have earned the highly prestigious George Mackey nomination for most outstanding exported wine.

A hand crafted wine made from fruit grown to the mineral rich soils above historic Bird in Hand gold mine. The Adelaide Hills are renowned for Sauvignon Blanc. Four hundred metres above sea level, the Bird In Hand vineyards face north and boast deep, well drained red earth, formed from metamorphic rock. Batches of the purest free run juices pressed from choice parcels of Sauvignon Blanc are individually tank fermented at cooler temperatures to retain fresh, lively fruit characters and crisp varietal definition. Although the Adelaide Hills do provide an unfair edge in terms of quality, it's always a thrill for the Bird In Hand team to taste the fruit of their endeavours in the finished wine.
 
Very light staw colour. Nose exhibits trademark varietal definition, greenery and herbaceousness, bouquets of passionfruit and kiwi, scents of grapefruits and citrus. Citrus flavours, honeydew and tropical fruits, especially passion and grapefruits, honey dew and melons with a touch of brisk minerality. The palate is fresh and intense, expressing the signature Adelaide Hills style, finishing long, lively and crisp, striking the perfect balance between intensity and elegance. A wine to be enjoyed chilled alongside grilled whiting or crustacea, white meat dumplings or Al fresco, immediately upon release whilst zesty, vital and young.
Black Chook Sauvignon Blanc 2012

Black Chook is a collaboration between maestro Ben Riggs and Tony Parkinson, proprietor of the salubrious Penny's Hill. Grapes are sourced from the Tomich property at Woodside in Onkaparinga Valley, a family owned and operated vineyard which yields the quality of fruit which has brought Adelaide Hills such renown. A vital Sauvignon Blanc that's fresh, beautiful to the taste and as invigorating as the cool Hills from whence it came, the idyllic growing conditions at Woodside deliver a gorgeous wine with crisp mineral textures and revitalizing palate.

The Galvanized Wine Group is a mob of Aussies with plenty of passion and good creds. The intrepid Ben Riggs makes the wines but all stakeholders, growers and staff get in on the act. To make a Black Chook, selection of site is central to the finished style of wine. The Tomich vineyard yields fruit with exceptional quality and balance. The unequivocally cool climate, very old, low to moderately fertile podsolic over schitz quartz soils yield outstanding Sauvignon Blanc. Parcels of grapes from Block J and Block L are destemmed straight into the press. A regimen of skin contact is employed to extract maximum flavours before inoculation and a low temperature controlled tank fermentation.
 
Light, bright straw colour. Freshly cut spring grass and sage on the nose, paired nicely with citrus and a touch of passionfruit sweetness to the mid palate. Call this a wine of many adjectives, fragrant and full of flavour, redolent of fresh herbs and cool climate fruit, stimulating, just perfect with food.

Sauvignon Blanc from the Deanery and Martin Hill Vineyard are supplemented by superb harvests from Lobethal and Piccadilly. After de-stemming and crushing, the chilled must, skins, seed and juices are pressed. Cold juices flow away to tank and are ettled by gravity into insulated tanks before racking onto Petaluma's chosen yeasts for vinification. The wine was fermented cool, 12°C to 15°C until very near complete dryness, achieving the correct balance of fruit and acid that gives Bridgewater Mill it's style and mouth watering freshness. The finished wine was cold settled to clarity before racking and a gentle filtration to bottle, capturing all the fragile, vibrant Sauvignon Blanc characters.
 
Pale straw colour. Intense varietal aromas of fresh, ripe tropical fruits with exotic herbaceous characters and great minerality. Gooseberry and slatey bouquets, wafts of lychee and bean, florid elements and fine herbs. The palate has substantial flavour and texture and finishes with crisp mineral dryness. Punchy fruit on the palate and on the nose, the vegetable and floral aromatics are integral to it's universal appeal. The dry, tangy finish makes it innately suitable to cheeses and seafood.

Originally destined to be labelled and branded by a notable Adelaide Hills estate, Sauvignon Blanc is sourced from good vineyards at Woodside. Grapes are hand selected and picked throughout the early hours of morning to enhance flavour and minimise oxidation. Whole bunches are destemmed in small batches, without crushing and gently pressed. The free run juices are fermented to dry, individual parcels are trialled and tested for suitability, those most worthy for inclusion are assembled into the finished wine, to be bottled immediately after vinification, unfined and with minimal filtration to capture and retain the essence of Adelaide Hills.

The stump jump plough worked so well in McLaren Vale that it was adopted worldwide in the late 19th century because of its ability to ride over stumps and gnarled roots. A mix of varietals which have proved themselves to be a popular blend right from the very first release. Fruit is picked at different levels of ripeness from a network of good vineyards. Grapes are gently destemmed and crushed through the Demoisy crusher, lightly basket pressed, the free run and pressed juices are separated, run off to refrigerated tanks where they are slowly fermented to dryness. Some parcels are treated to partial fermentation on skins. Bottled without any oak maturation to retain vital expressions of good fruit off the vine. Approx 13.0%
 
Light citrus green hue. A wine with a wonderful fresh pale appearance matched with a quite expressive, fruity, dry aroma. The nose is initially dominated by Riesling notes of crisp florals, citrus and lime. Expressions of cut grass, passionfruit and sweet tropical fruit from the Sauvblanc emerge. Spices, musk and freshly cut flower stems are in the background with notes of passionfruit, almond kernels and nectarine stones. The palate is very fresh and tight. It is quite light due to its youth but there is a moderate level of restrained fruit intensity and ripeness balanced with lovely crunchy acidity which keeps the finish in check.

Grant Burge has selected harvests of Sauvignon Blanc from splendid Eden Valley vineyards on the basis of vibrancy and retention classic fruit profile. Fruit is crushed, the free run juices drained from skins and cold settled in small batches for two days. Two months of a slow, cool vinification in temperature controlled fermenters serves to maximise the retention of fresh varietal flavours. A small portion of Semillon is matured in seasoned French oak and left on yeast lees to impart additional texture, infuse richness and achieve the perfect balance.
 
Lemon green hue. Lifted aromas of citrus and melon, delicately interwoven with subtle herbaceous notes. The palate is fresh and lively, ripe tropical fruit flavours, zesty lime and a soft creamy lemon curd finish. The time spent by Semillon on lees has rounded the palate, adding an extra dimension to the wine. 5th Generation is best enjoyed young, the perfect match to fresh fishes and crustacea.

Always a wine of limited production and suitably high demand, fashioned from the distinguished vineyard of Dennis and Val Kraft at Tanunda, which consistently delivers an impeccable quality of fruit with balance and definition. Vines are fully mature and well into their fourth decade, they perform magnificently every vintage, yielding a big, exotic tropical fruit style of Sauvignon Blanc with firm structure. In some years, a component of Adelaide Hills fruit is included, to enhance the refinement of Barossa Valley with a dollop of cool climate steelyness and vegetal.

Fruit is harvested throughout the cool of night, grapes from the distinguished Kraft vineyard always ripen fully to develop vibrant varietal characters while maintaining fine and clean, natural acidity. Following the crush and draining through tank press, the free-run juices are cold settled forty eight hours before being racked off gross lees. Separate batches are then transferred to tank for fermentation, whilst a small percentage can be barrel fermented in new French oak for complexity. Ferments are carried out at low temperatures to ensure freshness and crispness. Batches are assembled to express the outstanding varietal characters and exquisite balance of fruit grown to Kraft Vineyard.
 
Pale golden hue. Vibrant green melon, fresh tropical fruit and subtle passionfruit aromas, complimented by delicate floral. The palate is round with crisp fruit flavours, grapefruit, honeydew melons and varietally characteristic green herbaceous tones. Thomas Hardy left Devon at the age of twenty and immigrated to the colony of South Australia, where he established a winery on the banks of Adelaide's River Torrens in 1853. For over 150 years, Hardy has crafted some of Australia's best known and most popular wines. Hardy's retain sites in unique regions that are highly trained for specific styles of wine. This scrumptuous wine is a tribute to the nearby historic Lenswood Coralinga homestead and surrounding apple orchards. The vineyard has a steep north to east facing slope, and the vines here grow vigorously, flowering generously and in general setting healthy crops. At 550 metres, Lenswood enjoys higher rainfall and humidity at the right time of year, cooler temperatures to retain high natural acidity and still enough sunshine to fully ripen grapes. Fermented in tank and bottled post vintage, unaged and unoaked to preserve the wine's superior fruit characters. Pale yellow green hue. Sweet, delicate floral aromas of passionfruit, gooseberry and tropical fruits are punctuated by notes of fejoa and white currant.
