Alta had a clear vision from day one, to showcase the Adelaide Hills as Australia's premiere cool climate wine region. Emphasis was placed on a careful selection of site, grape variety and controlled yields of the highest quality hand picked fruit. Alta was adamant that the Adelaide Hills would make a very good Pinot Grigio wine and have now made sure there's no doubt about it. Alta is fashioned to the Italian style, relying heavily on the varietal characters and naturally high acid levels in the grapes at harvest to provide aromatics and structure.

Regular vineyard assessments leading up to harvest ensure that fruit is harvested when the flavours are at their optimal intensity. Grapes are hand picked just prior to any decline of natural acid levels and treated to a whole bunch press ensuring the retention of soft juices that are vibrant in colour and low in phenolics. A complimentary strain of yeast is selected for its ability to highlight primary fruit flavours while enhancing palate structure. A cool tank vinification achieves a pristine wine with great depth of flavour. In keeping with the true Grigio style, Alta is filtered and retained in fermenters until the final assemblage, completely unwooded and unoaked.
 
Vibrant pale yellow hue. Highly aromatic with spring blossom and fresh corella pear fragrances, spiced grapefruit and citrus blossom. A tightly structured palate expressing an excellent purity of fruit. Rich lemon and spiced pear flavours concentrate through the mid palate and linger through to a dry savoury finish. Exhibits great structure and will suit everything from white meats to Al fresco, a fine match to chilli infused and Asian inspired crustacea.

Individual parcels are chosen for their strong varietal intensity and regional expression, each contributes its own character to the finished wine. Regular assessments leading up to vintage ensure that grapes are picked when flavours are most intense and the balance ideal. Sauvignon Blanc is harvested during the cool of the night and crushed with open rollers to minimise phenolic and colour extraction. The biggest challenge is to ensure that the fresh flavours and remarkable structure of juices are retained throughout the winemaking. Several yeast strains are used based on their ability to highlight varietal flavours and enhance palate structure. Free run and pressings are vinified, some on skins, in a combination of tank and large French oak casks. Wines are racked on lees after the completion of ferment and stored cool prior to assembling.
 
Pale, icy green hue. Fragrant citrus blossom, passionfruit and spicy guava. Instantly mouth filling with rich pear, fleshy lime and spicy lemongrass penetrating the mid palate. Crisp acid adds exuberance and persistence whilst providing balance and freshness.

An unassuming young winegrower took his chances in 1997 with the re-emerging viticultural precinct of Adelaide Hills. Andrew Nugent planted vines and an olive grove on a hundred acres of land along Bird in Hand Road at Woodside. His efforts have since claimed a staggering list of awards for excellence on the international wine show circuit. Bird In Hand's preoccupations with growing and crafting the finest quality Adelaide Hills Sauvignon Blanc have earned the highly prestigious George Mackey nomination for most outstanding exported wine.

A hand crafted wine made from fruit grown to the mineral rich soils above historic Bird in Hand gold mine. The Adelaide Hills are renowned for Sauvignon Blanc. Four hundred metres above sea level, the Bird In Hand vineyards face north and boast deep, well drained red earth, formed from metamorphic rock. Batches of the purest free run juices pressed from choice parcels of Sauvignon Blanc are individually tank fermented at cooler temperatures to retain fresh, lively fruit characters and crisp varietal definition. Although the Adelaide Hills do provide an unfair edge in terms of quality, it's always a thrill for the Bird In Hand team to taste the fruit of their endeavours in the finished wine.
 
Very light staw colour. Nose exhibits trademark varietal definition, greenery and herbaceousness, bouquets of passionfruit and kiwi, scents of grapefruits and citrus. Citrus flavours, honeydew and tropical fruits, especially passion and grapefruits, honey dew and melons with a touch of brisk minerality. The palate is fresh and intense, expressing the signature Adelaide Hills style, finishing long, lively and crisp, striking the perfect balance between intensity and elegance. A wine to be enjoyed chilled alongside grilled whiting or crustacea, white meat dumplings or Al fresco, immediately upon release whilst zesty, vital and young.
Black Chook Sauvignon Blanc 2011

Black Chook is a collaboration between winemaking maestro Ben Riggs and Tony Parkinson, proprietor of the salubrious Penny's Hill. Grapes are sourced from the Tomich's property at Woodside in the Onkaparinga Valley, a family owned and operated vineyard which yields the quality of fruit that's made Adelaide Hills renowned. A vital Sauvignon Blanc that's fresh, beautiful to the taste and as invigorating as the cool Hills from whence it came, the idyllic growing conditions at Woodside deliver a gorgeous wine with crisp mineral textures and revitalizingly flavourful palate.

The Galvanized Wine Group is a mob of Aussies with plenty of passion and good creds. The intrepid Ben Riggs makes the wines but all stakeholders, growers and staff get in on the act. To make a Black Chook, selection of site is central to the finished style of wine. The Tomich vineyard yields fruit with exceptional quality and balance. The unequivocally cool climate, very old, low to moderately fertile podsolic over schitz quartz soils yield outstanding Sauvignon Blanc. Parcels of grapes from Block J and Block L are destemmed straight into the press. A regimen of skin contact is employed to extract maximum flavours before inoculation and a low temperature controlled tank fermentation. Alcohol 13.0%
 
Light, bright straw colour. Freshly cut spring grass and sage on the nose, paired nicely with citrus and a touch of passionfruit sweetness to the mid palate. Call this a wine of many adjectives, fragrant and full of flavour, redolent of fresh herbs and cool climate fruit, stimulating, just perfect with food.
Bleasdale Adelaide Hills Chardonnay 2012

Adelaide Hills are but an hour's drive from Bleasdale but the style of Chardonnay grown to the cool ripening aspects of elevated, undulating hillsides is a world away from that grown to the Bleasdale property at Langhorne Creek. The Adelaide Hills style is distinctly crisper and more aromatic, one could say it even tastes chilled at room temperature. An extravagant course of barrel ferments, wild yeast vinification and lees exposure makes a richly textured Chardonnay wine with good colour, savoury vanillan aromatics and solid palate structure.

Bleasdale is Australia's most enduring family operated wineries, tracing it's establishment to 1858 when Frank Potts planted his vines on the banks of Bremer River. He named his property after Reverend John Ignatius Bleasdale who advocated a sober, wine drinking community to the exclusion of hard spirits. A sound business case indeed. Sauvignon Blanc grapes are hand picked from choice Adelaide Hills sites and gently whole bunch pressed directly to French oak barrels. Fermentations are inititated by wild indigenous yeasts from the vineyard still present on the skins, followed by a regimen of lees stirring battonage and nine months maturation before bottling. Light straw yellow colour. The big, steely nose displays complex aroma of stonefruits and citrus, almond, tapioca and meal. A creamy palate with layers of melon, nectarine and golden delicious flavours, a touch of biscuit and lemon/ almond notes before a crisp, drying and savoury fruit filled finish. A revitalizing style for contemporary palates, the Chardonnay of choice to enjoy alongside prawns or shitake chicken tortelli.

After a quick trek back to the Bleasdale wineworks, fruit is treated to a prompt vinification and early bottling to retain the vitally luminous expression of Adelaide Hills Pinot Gris.

Bleasdale have been central to Langhorne Creek viticulture for a century and a half, but the estate's association with Adelaide dates back to 1836 when migrant Frank Potts began colonial life as a boat builder. Parcels of Pinot Gris, picked by hand off good Adelaide Hills vineyards, are selected by Bleasdale on the basis of vine maturity and fruit ripeness, consistency of quality and good character. Grapes are whole bunch pressed into a combination of fermenters and seasoned French oak puncheons for a brisk vinification and a course of lees stirring battonage, followed by a small amount of maturation. A timely bottling captures and locks in all the fresh, brightly lit, pear and spice characters of Pinot Gris. Alcohol 13.0%
 
Pale light straw hue. Nutty spice and dainty orange blossom nose over supple hints of barrel ferment, lemon, apples and pear. A well rounded palate, generous with stonefruit flavours while exhibiting fine balance between green vegetable characters, ripeness and crisp acidity. The delicate Bleasdale shows all the spice and perfume expected of slowly ripened Pinot Gris. A stylish aperitif alongside nibbles and oysters, a very good match to poultry and rice vermicelli.

Located in Balhannah, Lenswood, Forreston and the Piccadilly Valley, the hand tended Bridgewater Mill Vineyards are all over fifteen years old. Dominated by varietal fruit, complex and layered through careful vineyard selection and purposeful winemaking techniques, to best express a focused regional wine.

Premium Chardonnay fruit from the warmer fringes to the coolest valleys on a variety of soil types. Grapes are hand picked from mid March to early April and delivered to the nearby Petaluma winery in Piccadilly. The best parcels are chilled and whole bunch pressed, whilst the remainder are crushed, de-stemmed and chilled on their way to the press. The fresh juices are settled by gravity to insulated tanks and racked relatively clean after ten days. Seeded with Petaluma's select yeast culture, fermentation in a combination of French oak barriques and steel tanks. With the exception of all whole bunch parcels, the Chardonnay underwent malolactic with lees stirring whilst maturing for a further four months in barrique.
 
A mid yellow colour, green tinge. The wine displays citrus and white stone fruit aromas with subtle yeast characters and integrated nutty oak. Virile aromas of clove and apple strudel, some anise and white pepper. On the palate with some recognizeble features of nashi pair and mastika, vanillan and cashew, toastyness and grainy, oatmeal expressions. Appealing, and eminently suited to Al fresco dining.

Sauvignon Blanc from the Deanery and Martin Hill Vineyard are supplemented by superb harvests from Lobethal and Piccadilly. After de-stemming and crushing, the chilled must, skins, seed and juices are pressed. Cold juices flow away to tank and are ettled by gravity into insulated tanks before racking onto Petaluma's chosen yeasts for vinification. The wine was fermented cool, 12°C to 15°C until very near complete dryness, achieving the correct balance of fruit and acid that gives Bridgewater Mill it's style and mouth watering freshness. The finished wine was cold settled to clarity before racking and a gentle filtration to bottle, capturing all the fragile, vibrant Sauvignon Blanc characters.
 
Pale straw colour. Intense varietal aromas of fresh, ripe tropical fruits with exotic herbaceous characters and great minerality. Gooseberry and slatey bouquets, wafts of lychee and bean, florid elements and fine herbs. The palate has substantial flavour and texture and finishes with crisp mineral dryness. Punchy fruit on the palate and on the nose, the vegetable and floral aromatics are integral to it's universal appeal. The dry, tangy finish makes it innately suitable to cheeses and seafood.

Pinot Grigio from the Adelaide Hills sub region of Mt Torrens, vines are planted to sandy loam soils scattered with ironstone gravel and quartzite. The underlying principle is to achieve a healthy balanced vineyard, neither vigorous nor stressed. Grapes are hand harvested and promptly delivered to the winery. Skin contact and maceration is kept to a minimum, avoiding any undesirable colour and phenolics. Whole berries are loaded into the membrane press on a delicate cycle, free run juices are isolated at 558 litres per tonne. A slow gradual cool ferment is then followed by eight months on yeast lees to encourage the integration of fruit flavours and a fine, textured palate. Alcohol 13.0%
 
Light yellow with green tinges. Alluring aromas of floral and pinenut, lemon preserve and apricot over a scent of calico. Displays guava, lychees and nashi pear flavours underpinned by a lingering, spicy, grainy and minerally palate. Fashioned to a drier style of Grigio, in combination with the textural mouthfeel, showcases the supple nuances of the grape as well as ensuring that the wine can be enjoyed in partnership with all good food.

Originally destined to be labelled and branded by a notable Adelaide Hills estate, Sauvignon Blanc is sourced from good vineyards at Woodside. Grapes are hand selected and picked throughout the early hours of morning to enhance flavour and minimise oxidation. Whole bunches are destemmed in small batches, without crushing and gently pressed. The free run juices are fermented to dry, individual parcels are trialled and tested for suitability, those most worthy for inclusion are assembled into the finished wine, to be bottled immediately after vinification, unfined and with minimal filtration to capture and retain the essence of Adelaide Hills.
 
Bright straw with distinct green edges. Intense bouquet, snow pea and green bean, a lively herbaceousness, guava, citrus and sherbet fragrances. The clean and pure succulent fruit and vegetable qualities continue, as crisp apple acids, gooseberries and bean provide complexity. Lemongrass and a touch of mineral, greenery and herbaceousness over a core of luscious tropical fruit flavours. Seamlessness between the tang of acidity and tightly knit fruit, well structured in the definable style of Adelaide Hills. This fresh and vibrant wine offers rich textures and long flavours, finishing pleasant, persistent and clean. A good choice with grilled seafood or chicken caesar.

Like its Rhone Valley siblings, Adelaide Hills Viognier is a wine that drinks well on release, evolving as it grows in complexity. Named after a site which lies at the bottom of a gully in McLaren Vale, the Last Ditch was originally planted to a small block of Doradillo vines during the 19th century. In 1995 the site became repopulated by Viognier. Last Ditch is a salubrious wine which receives the very best barrels of d'Arenberg Viognier, it simply blossoms on the palate and continues to linger.

A mostly Adelaide Hills wine, from fruit grown to the higher elevations which suit Viognier, around a backbone of good, estate grown McLaren Vale fruit. Parcels are vinified separately to retain regional highlights before assembling just prior to bottling. Grapes are passed through a gentle Demoisy rubber tooth crusher before being basket pressed to a method developed at d'Arenberg for the purpose of avoiding oxidisation. After cold settling for three days, juices are racked off gross lees to well used French oak barriques. A third of the barrels begin a wild yeast vinificaion, all are fermented on lees until dry. After nine months, the best barrels are selected for inclusion into the Last Ditch. Alcohol 13.1%
 
A brilliant green/ gold hue. An inviting perfumed bouquet of flowers and blossom. The palate returns to focus on the characteristic stone fruits, nectarine and apricot, orange peel and lemon zest. There is a nice medium weight to the linear palate with very fine textural tannins which carry a savoury almond kernel character. As it evolves, stone fruit flavours will become more prominent. The Last Ditch will pair well with a range of foods, most notably spicy Asian dishes containing chilli and ginger.
