Black Chook is a collaboration between maestro Ben Riggs and Tony Parkinson, proprietor of the salubrious Penny's Hill. Grapes are sourced from the Tomich property at Woodside in Onkaparinga Valley, a family owned and operated vineyard which yields the quality of fruit which has brought Adelaide Hills such renown. A vital Sauvignon Blanc that's fresh, beautiful to the taste and as invigorating as the cool Hills from whence it came, the idyllic growing conditions at Woodside deliver a gorgeous wine with crisp mineral textures and revitalizing palate.

The Galvanized Wine Group is a mob of Aussies with plenty of passion and good creds. The intrepid Ben Riggs makes the wines but all stakeholders, growers and staff get in on the act. To make a Black Chook, selection of site is central to the finished style of wine. The Tomich vineyard yields fruit with exceptional quality and balance. The unequivocally cool climate, very old, low to moderately fertile podsolic over schitz quartz soils yield outstanding Sauvignon Blanc. Parcels of grapes from Block J and Block L are destemmed straight into the press. A regimen of skin contact is employed to extract maximum flavours before inoculation and controlled, low temperature fermentation.
 
Light, bright straw colour. Freshly cut spring grass and sage on the nose, paired nicely with citrus and a touch of passionfruit sweetness to the mid palate. Call this a wine of many adjectives, fragrant and full of flavour, redolent of fresh herbs and cool climate fruit, stimulating, just perfect with food.

Adelaide Hills are but an hour's drive from Bleasdale but the style of Chardonnay grown to the cool ripening aspects of elevated, undulating hillsides is a world away from that grown to the Bleasdale property at Langhorne Creek. The Adelaide Hills style is distinctly crisper and more aromatic, one could say it even tastes chilled at room temperature. An extravagant course of barrel ferments, wild yeast vinification and lees exposure makes a richly textured Chardonnay wine with good colour, savoury vanillan aromatics and solid palate structure.

Bleasdale are the nation's most enduring family operated winery, established 1858 when Frank Potts planted his vines on the banks of Bremer River. He named his property after Reverend John Ignatius Bleasdale who advocated a sober, wine drinking community to the exclusion of hard spirits. A sound business case indeed. Sauvignon Blanc grapes are hand picked from choice Adelaide Hills sites and gently whole bunch pressed directly to French oak barrels. Fermentations are inititated by wild indigenous yeasts from the vineyard still present on the skins, followed by a regimen of lees stirring battonage and nine months maturation before bottling.
 
Light straw yellow colour. The big, steely nose displays complex aroma of stonefruits and citrus, almond, tapioca and meal. A creamy palate with layers of melon, nectarine and golden delicious flavours, a touch of biscuit and lemon/ almond notes before a crisp, drying and savoury fruit filled finish. A revitalizing style for contemporary palates, the Chardonnay of choice to enjoy alongside prawns or shitake chicken tortelli.

What fine Pinot Gris that Adelaide Hills can make. Crisp mountain breezes meander around the veritable maze of sub valleys and undulating hillsides, stimulating the vines and enhancing exotic citrus nut varietal characters in the grapes. Bleasdale have taken their pick of fruit from the finest vineyards planted to loamy, low fertility sands which are ideal for Pinot Gris. After a quick trek back to the Bleasdale wineworks, fruit is treated to a prompt vinification and early bottling to retain the vitally luminous expression of Adelaide Hills Pinot Gris.

Bleasdale have been central to Langhorne Creek viticulture for a century and a half, but the estate's association with Adelaide dates back to 1836 when migrant Frank Potts began colonial life as a boat builder. Parcels of Pinot Gris, picked by hand off good Adelaide Hills vineyards, are selected by Bleasdale on the basis of vine maturity and fruit ripeness, consistency of quality and good character. Grapes are whole bunch pressed into a combination of fermenters and seasoned French oak puncheons for a brisk vinification and course of lees stirring battonage, followed by a brief spell of maturation. A timely bottling captures and locks in all the fresh, brightly lit, pear and spice characters of Pinot Gris.
 
Pale light straw hue. Nutty spice and dainty orange blossom nose over supple hints of barrel ferment, lemon, apples and pear. A well rounded palate, generous with stonefruit flavours while exhibiting fine balance between green vegetable characters, ripeness and crisp acidity. The delicate Bleasdale shows all the spice and perfume expected of slowly ripened Pinot Gris. A stylish aperitif alongside nibbles and oysters, a very good match to poultry and rice vermicelli.

Wander through the rolling and elevated aspects of Adelaide Hills at vintage and you'll find the Bleasdale team hard at work, timing the pick of the crop and collating the choicest parcels from the finest vineyards. They spare no expense in determining those parcels can best deliver a juicy and revitalizing style. Sauvignon Blanc has established its own style here, translating into crisp and vibrant wines with steely acidity, puckering fruit flavours and splendid clean finish. Fruit is crushed and chilled on skins for several hours of optimal extraction. The exclusively fee run juices are fermented to dryness, followed by several weeks of regular lees stirring battonage on light solids.

Cape Barren Funky Goose Gruner Veltliner

A derivative of Traminer, Savignin and Pinot Noir, Grüner Veltliner was only recently reconsidered as a consequential table wine when it outclassed all comers at a prestigious international competition, against the great growths of Burgundy. Grüner Veltliner is the favourite tipple amongst the bohemian habitants and twilight denizens of Vienna, an animated style of appeal and panache, its piquant white pepper spice and nashi crispness, resolves on a long mineral finish, leaving the palate clean, revitalized and refreshed.

Cape Barren Native Goose Chardonnay
Adelaide Hills
The generously proportioned, big boned, leesy French oak genre, Dijon Bernard Clones 76 and 95, harvested off fully mature vines, thirty years of age at Charleston in the Adelaide Hills. Grapes are destemmed and pressed for vinification on gross solids before transfer to French oak hogsheads for completion of ferments, in the old world way. Treated to lees stirring and partial malolactic for textural opulence and palate richness, its creamy grapefruit nougat palate will appeal to enthusiasts of the medium to full bodied white meat styles of Chardonnay.

Chain Of Ponds Black Thursday Sauvignon Blanc

Black Thursday Vineyard played a role in extinguishing some nasty bushfires which threatened the Adelaide hamlets of Kuitpo and Gumeracha. Cheers were raised and there were many thanks given, but nothing could save chilled bottles of Chain of Ponds Sauvignon Blanc from the tired and thirsty firefighters. Consider this drink to be something quite the opposite of a parched and arid flame, think of green grass, iced kiwi fruit, cool cucumber and asparagus. A great match to the freshest sashimi or traditional Coquilles St Jacques.

Sauvignon Blanc is sourced from several fine vineyards around Gumeracha, Kenton Valley and Kuitpo. Two parcels are picked early in the season to maximise herbaceousness, apple and cucumber notes. The balance were picked to a schedule which would maximise natural acid, tropical flavours and mild citrus characters. Grapes arrive at dawn and are treated to an air bag press, keeping the free runs separate. Parcels are inoculated to a selection of yeasts and separately fermented. Batches were held on yeast lees for two months to enhance mouthfeel, the best components were assembled into the finished wine and bottled early, unwooded and unoaked, to retain vibrant freshness.
 
Pale straw with green hues. Freshly cut tropical melon nose with nuances of passionfruit, crisp apple and freshly squeezed lime juice. Hints of gooseberry, box tree and cucumber. Lush fruit driven palate, lively and refreshing, exhibiting balanced tropical fruits and citrus along with crisp freshly chilled apple and cucumber notes. Well balanced linear acidity lifts the fruit sweetness and gives a mouth watering finish of great length and flavour persistence.

You'll see plenty of olive trees alongside the d'Arenberg roadsides, flourishing among the vines. McLaren Vale is littered with olive groves which were planted by the first settlers. While neighbouring table grape growers consider olive trees a nuisance, local winemakers are thankful for the bittersweet nuances which the tiny green stonefruits impart to the wine. Chester Osborn determines the critical time of picking his Chardonnay, which is treated to wild ferments and lees stirring, for a rich textural wine with savoury aromas and good palate complexity.

McLaren Vale makes buxom, fleshy white varietal wines of structure and balance. The Adelaide Hills yield a brisk style of Chardonnay with penetrating fruit characters and crisp stonefruit acidity. Under the insistence of chief winemaker Chester Osborn, each components is separately handled. Parcels are crushed and cold soaked on skins at 2C for a day prior to basket pressing, gentle extraction of juices are critical to retain delicate fruit characters. Batches are fermented and matured in a mixture of French and American oak for seven months, bottled immediately upon completion for optimal retention of fresh, natural acidity, so integral to the balance and longevity of the wine.
 
Pale straw hues. Attractive array of nectarine and granny smith, vanilla, spice and mildly roasted nuts. The palate has an initial hit of creaminess, quite strong in stone fruit and white flowers. Mid palate reverts to a more streamline shape as seaspray and nutty nuances emerge. The finish is long and dry, with just a whisper of vanillan, a lovely modern style of Chardonnay.
