Sourced exclusively from Shaw + Smith's picturesque Lenswood property on Adelaide Hills, established 1999, a great amount of work on the ground has significantly enhanced the virtues of a truly amazing Chardonnay vineyard. Hand picked grapes are whole bunch pressed into a high proportion of new 500 Litres French oak puncheons for a rich course of barrel ferments and term of maturation on gross sedimentery lees. An exquisite, fine boned Chardonnay in new world Burgundian styling, so highly articulate of an exceptional vineyard site.

Vibrant pale straw. Wonderfully aromatic nose, matchstick and flint over a purity of varietal punch, grapefruits and melba peach. M3 Chardonnay is sourced exclusively from a single site, the Shaw+Smith M3 property at Woodside, named after the three partners in the vineyard, brothers Michael and Matthew Hill Smith, along with cousin Martin Shaw. M3 is a major refinement in styling, a serious attempt to produce an exceptional Chardonnay with the capacity to age gracefully. A sophisticated, barrel fermented wine with pure fruit character and restrained oak, exhibiting great elegance and exquisite length. A must for all enthusiasts of stately white wine.

Shaw+Smith's M3 Vineyard consistently yields the most remarkable quality of Chardonnay, a continuity of harvests at every vintage, spectacular grapes offering great concentration of flavour and exhibiting splendid purity of varietal fruit. At an altitude of 420 metres, the close planted, low yielding vines are grown to sandy loam soils over red yellow clay with some shale. M3 is an assemblage of the respected I10V1 clone and the exciting new Bernard clones from Burgundy. Grapes are hand picked and whole bunch pressed prior to barrel fermentation and maturation in French oak. Wild indigenous yeasts ferment batches to dry, followed by partial malolactic, nine months maturation and sedimentery lees battonage.
 
Paler hues than most Chardonnay. M3 opens slightly austere, offering restrained fruit and a hint of honeysuckle before revealing a palate of great length. White stone fruit flavours and savoury, toasted nuts complexity around a solid core of fruit, the oak is beautifully handled. Elegantly structured with a long and fine, bone dry finish. A superior single vineyard wine of power and sophistication.

The wine which launched Sauvignon Blanc, Shaw + Smith and Adelaide Hills as a unique and distinctive genre of wine, defined by its moreish pink grapefruit lustre, lavender perfumery, concentration of clean fruits and vegetable crispness, its gorgeous mineral texture. The enduring excellence of Shaw + Smith begins in the vineyard, the pick of crop from estate parcels at Lenswood and Balhannah, fruit must be immaculate, hand sorted to retain nothing but the cleanest grapes. With each new vintage, Shaw and Smith set a higher benchmark in new world Sauvignon Blanc.

Tapanappa Piccadilly Valley Chardonnay

Tapanappa are a joint venture of elite peerage, a vinous concord between Petaluma's Brian Croser, Champagne Bollinger and Chateau Lynch Bages. Brian Croser selected the Piccadilly Valley at the centre of the Adelaide Hills in 1978 because it provided the best terroirs in which to grow Chardonnay for Petaluma and for Croser sparkling. Grapes are all hand picked and destemmed into a high proportion of new French Vosges oak barriques for ferment through the action of home yeasts over the course of a cool Piccadilly Valley autumn. Ripe peaches, quince and fig, marzipan and vanilla oak complement the fresh fruit.

Tapanappa Tiers Vineyard Chardonnay

Tiers is a mere three hectares of intensively managed, closely planted, historically significant Chardonnay vines. The growing seasons at Piccadilly are uncannily similar to the microclimes of Burgundy and Dijon. Tiers Vineyard was the first site planted in the region since the nineteenth century and is at the centre of the Piccadilly Valley, at 450 metres, near the Petaluma wineworks and Brian Croser's home. The Chardonnay vines on Tiers Vineyard were derived from an old Davis California clone, originally imported from Mersault during the 1880s. A mere 300 dozen are produced.

Hand picked grapes are de-stemmed, crushed and chilled to 2C on the way to an air bag press. Cold juices are gravitated away and only light pressings are added back. After two days of cold settling, the clear juices are racked to a high proportion of new French Vosges oak barriques for a long cool vinification under the estate cellars. Upon completion of ferments, the barriques are topped up, treated to partial malolactic and matured ten months on gross lees. In the spring, barrels are slightly sulphured, followed by rack and return for clarification and bottling.
 
Rich straw hues. Varietal bouquet of ripe peach and melon, subtle marzipan and brioche characters are derived from the malolactic, yeast lees contact and refined French oak. A consistent terroir feature of Tiers Chardonnay are its substantial textures, effusive palate, undulating flavours and mouth filling savoury finish. Tiers unravels a cornucopia of spiced honey and toasted brulee characters as it evolves in the glass.

An estate harvest of Burgundian clones Chardonnay, finished to a style of the most sophisticated balance between bold varietal fruit and subtle savoury complexities. Grapes are destemmed and gently pressed, the slightly cloudy juices are racked directly to seasoned and new French oak barriques for a traditional, old world ferment. Batches are stirred weekly over the course of nine months maturation before assemblage. Truly a magnificent wine made in small batches for those who delight in the richness and exquisite balance of judiciously oaked Adelaide Hills Chardonnay.

Wicks Estate take Sauvignon Blanc very previously. Heading up the winemaking team is long time family friend Tim Knappstein. After many years experience with Sauvignon Blanc, Knappstein made a move to the Adelaide Hills where he played a major role in pioneering it as a premiere cool climate region. Knappstein's efforts are set to further Wicks Estate's reputation as one of the icon producers of Sauvignon Blanc in the Adelaide Hills. A charmingly perfumed effort maintaining the punch and lifted varietal character of the finest Sauvignon Blanc.

Throughout the growing season, the team monitor grapes reaching full ripeness. Fruit is harvested in the cool early mornings to capture and retain all the characteristics of premium Sauvignon Blanc displaying a wonderful array of flavours, ranging from sweet tropical fruits through to the fine crisp expression of snow peas. Parcels are individually destemmed and crushed, chilled and treated to a gentle airbag pressing with the free run fractions kept separate to highlight the quality of fruit. All fermentations are run cool, with strict temperature control enabling the retention of freshness and vitality. After extensive trials, the final wine is assembled on the basis of flavour profile and outstanding varietal character.
 
Light citrus straw in colour. An enticing bouquet of lemongrass and tropical fruits backed by greener vegetable elements. A fine textural mouthfeel with crisp minerality, pure and refreshing. Aromas of tropical fruits and attractive varietal flavours are balanced by an elegant, lively palate finishing clean and crisp. Match with fresh king george whiting.

Wirra Wirra patriarch Greg Trott venerated cricket as the most noble of pursuits. He even built his very own concrete pitch at the family farm to emulate his heroes. Trotty aspired to wearing the famous baggy green cap of the national team, even if only to carry the drinks as twelfth man. It's a certainty that if the drinks tray offered Wirra Wirra, Trott would have been warmly welcomed as an essential member of the team. Wirra Wirra treat the selection of their fruit with the greatest of zeal, sourcing a parcel of the most exquisite Chardonnay from a precious site at Lenswood in the Adelaide Hills. Grapes are all hand picked and whole bunch pressed, the free run juices are filled to French oak for an exclusively wild, indigenous yeast fermentation. All barrels are tasted weekly while treated to a course of lees stirring battonage to infuse complexity and encourage malolactic. Barrels are sulphured on lees at various stages throughout a term of maturation in a high proportion of new Seguin Moreau and Mercurey Burgundy coopered oak barrels, to capture and preserve excellence of Adelaide Hills fruit character.
 
Vibrant gold with green hue. Bouquet offers up lifted white peach and nectarine fruits, lemon rind and flint. The fruit is complexed by lemon curd, aromatic cedar and cashew notes. The palate reveals a lovely intensity of nectarine and citrus fruit characters, lemon curd and cedar. A complex balance between the fresh stone fruits, bright acid and wonderful creamy texture.
