The sultry conditions of a Clare Valley summer are generally warm to hot, dry days with refreshingly cool nights. These are critical for slow, even ripening. Cabernet, Merlot and Shiraz are harvested throughout the cool of night and early morning, followed by de-stemming to fermenters where a warm, temperature controlled vinification ensues. Upon completion, the wine is transferred to a combination of new and prior use American and French oak hogsheads for malolactic. The components are then racked and returned to oak for an average of twelve months maturation. Alcohol 14.0%
 
Vibrant red with a youthful purple hue. The wine exudes a fully lifted, complex nose with aromas of blackcurrant, plum and mint. More savoury characters of dried herb with spice, cedar and chocolate add to the overall charm of it's endearing claret persona. Luscious assorted berry flavours throughout the palate while spice, liquorice and dark chocolate characters add complexity. Whilst rich in texture, Eight Acres offers a soft, round middle palate with long elegant tannins and a velvety, persistent finish.

In South Australia, the best sites for growing wine grapes were originally sold off in eighty acre lots. Bill Taylor planted his first eighty acres of vine to some of the best Terra rossa soils within the Clare Valley circa 1969, naming his original block the Eighty Acres.

Taylors can draw on stocks of the finest fruit, having established some of the best Clare Valley vineyards. There are a myriad of aspects and soil types here which translate into well integrated yet complex wines. Parcels of Chardonnay are vinfied alongside a much smaller component of Viognier, all sourced from Taylor estate vineyards in the Clare Valley and a specialized grower in the Adelaide Hills. Grapes are picked throughout the cool of night to ensure delicate varietal flavours are retained. Berries are de-stemmed and gently pressed. Each parcel is separately tank fermented to varietal specific yeast strains. Parcels are assembled post fermentation and bottled after minimal filtration. Alcohol 13.5%

Western Australia makes the most distinctive and stylish Semillon Sauvignon wines, arguably Australia's finest. Fruit is sourced from a select group of choice growers in some of the most conspicuous viticultyral precincts. Grapes are harvested throughout the cool of night to capture and retain as much of the crisp regional characters as possible. Bunches are destemmed and the grapes lightly pressed. Vinifications are carried out in fermenters at low temperature, upon completion, components are trialled and assembled into a bright, fruit driven Semillon Sauvignon blend with classically dry yet fruit forward regional styling. A minimal filtration is employed just prior to bottling. Alcohol 13.5%
 
Pale straw with a green hue. Pungent aromas of gooseberry accompanied by grass and briar wood notes combined with hints of tropical fruits. Exotic fruit flavours of lychee, dragon fruit and spice along with classic lemon peel and herb notes. The palate is well balanced, crisp and refreshing, a pure acid line and mineral character to the finish. Blissful with chillied crab or whiting almondine.

Eighty Acres are the world's first ever 100% carbon neutral range of wines, based upon an ISO 14044 compliant Life Cycle Assessment which accurately measures carbon dioxide emissions at every step in the product lifestyle. Eighty Acres is a splendid range of wines that are approachable upon release, accesssible to all, and refreshingly down to earth. Shiraz and Viognier is picked at night and early in the morning to retain the fresh varietal flavours. The berries are destemmed, the juices are pressed out to a mix of vinimatic and static fermenters. A warm, controlled co-fermentation of Shiraz and Viognier is carried out after inoculation by select yeast strains that highlight varietal characteristics. The wine is filled to a selection of American oak barrels for malolactic. Upon completion, all components are assembled and treated to minimal filtration prior to bottling. Alcohol 14.0%
 
Medium deep red with purple hues. An intense aroma of lifted spice and dark blood plums along with subtle apricot. Underlying aromas of vanilla, and cherries dipped in dark chocolate add to the complexity. Eighty Acres is medium bodied and juicy in texture. It has a delicacy and displays sweet, concentrated fruit flavours of juicy plums and blackberry, along with subtle spicy apricot. Integrated and balanced with an enjoyable persistence to the finish.

Exclusively estate grown Riesling from vines up to twenty five years of age. Fruit is sourced from the Taylor family estate vineyard in the Clare Valley, a region renowned for Riesling. Grapes are picked at night to protect the delicate varietal characters. Minimal handling and filtration is employed, a portion of the fruit is whole bunch pressed whilst the remainder is destemmed and pressed. Only free run juices are retained, cold settled and transferred to tanks to be fermented at relatively cool temperatures using a specialist yeast stain, to preserve the distinctive regional/ varietal characters of the Riesling. Post fermentation the parcels are assembled, stabilized and fined. Alcohol 12.5%
 
A pale straw colour with subtle green highlights. Restrained floral aromas of orange blossom and rose petal, discernible regional and varietal aromas of lime zest appear, floral aromas reminiscent of spring blossoms. A fresh lemon lime flavoured palate with a crisp acid backbone. The finish has a subtle, pleasing minerally character. A sublime Clare Valley Riesling crafted to be enjoyed while young and fresh, it can be expected to develop wonderful toasted honey and rich lime characters. Try it with chicken stir fry or natural oysters.

The post modern style of Australian Sauvignon Blanc, effusive with aromatic herbaceous freshness and piquant tropical fruit on the bouquet, a generous palate and revitalizingly clean finish. Taylors have collated the ripest, most well endowed parcels of fruit from splendid vineyards close to home and others further afield in the prime viticultural precincts of Western Australia. Components have been treated to the most exacting vinification techiques, preserving the crisp expression of grapes in the vineyard for a wine that sings of spirited Sauvignon Blanc.

Sauvignon Blanc is harvested on the basis of taste and ripeness, in the middle of the night to retain the fresh fruit characteristics. Grapes are destemmed, pressed and cold soaked on skins in the presses for a day to increase precursor flavour extraction. Fermentation is carried out using a strain of yeast to highlight the varietal characters. The majority of the juices are vinified at 15°C to 17°C in fermentation vessels, a portion is treated to slightly higher temperatures which increases texture and encourages the development of punchy passionfruit characters. All components are assembled at the Clare Valley wineworks before bottling with minimal fining and filtration. Alcohol 12.1%
 
Pale straw with a green edged hue. Distinctly varietal in nature with fresh aromas of passionfruit, rockmelon and guava over a hint of cut grass. Taylor has a fresh and zippy palate with regional varietal flavours of passionfruit, guava and ruby grapefruit, filling the mouth with flavour and cleansing acidity. It closes to luscious lychee characters which leave the mouth fresh and revitalised for the next sip.
Taylors Estate Cabernet Sauvignon 2009

The inaugural vintage under the Taylor label was in 1973, it was Cabernet Sauvignon and it burst out of the starting blocks, winning gold medals at every national wine show. The Cabernet rich classics of Bordeaux had long held a fascination for the Taylor brothers. Producing wines of comparable quality within Australia prompted the family's foray into the industry. With this goal in mind, Taylor's vineyard was chosen for it's idyllic red brown loam over limestone soils, Terra rosa, and the cool climate of Clare Valley, renowned for the quality of Cabernet Sauvignon.

Taylor is crafted to express the solid fruit characters of Cabernet Sauvignon while also reflecting the profound influences of Clare Valley. Fruit is harvested only when the berries have reached optimum flavour and tannin ripeness. Vinification is carried out in the winery's original Potter fermenters, which allow for excellent control of skin maceration and extraction as the wine can be pumped over twice daily. Some parcels were left on skins for an additional fortnight to increase tannin structure. Parcels were pressed to French oak barrels for completion of primary fermentations and malolactic, followed by maturation for at least twelve months in a selection of new and seasoned French oak barrels. Deep red with a vibrant purple hue. Aroma of rich blackcurrant, subtle star anise spice and touch of eucalypt. French oak maturation is evident with subtle aromas of tobacco leaf, cedar and chocolate. A wine of great intensity, offers distinctive blackcurrant and cassis fruit flavours. Subtle oak characters of cedar, cigar box and spice. The tannins are elegant and fine, a hallmark of the varietal. The palate is well balanced, complex and fulfilling it lingers effortlessly on the finish.

Taylor's estate owned and managed vines are grown to rich Clare Valley Terra-rossa, brown loam over limestone soils. Grapes are harvested at night and delivered immediately to the winery. Bunches are completely whole berry pressed and chilled. After a short period to settle the juices, the majority of components are filled to a mix of seasoned and new French oak barrels for vinification through the action of cultured yeasts. The balance is treated to a course of wild yeast vinification in fermenters. All parcels are lees stirred throughout four months of activity. Upon completion, batches are assembled, stabilised and fined before bottling. Alcohol 12.5%

Gewurztraminer grows beautifully in the Clare Valley and Adelaide Hills, where clones of the varietal have taken very well to the soils and climes which are quite similar to growing conditions in Alsace, whence this spicey varietal originates. Fashioned to express the bold flavours and vibrant aromas of Gewurztraminer and also to reflect the location of vines.

Traminer grapes fare very well when grown to the highly favourable climes of Clare Valley, developing mild spices and nut, orange, lychee and citrus blossom characters. An exclusively estate grown wine, fruit is harvested in the cool of night, gently de-stemmed and whole berry pressed as quickly as possible to retain freshness. The pure free run juices are cold settled and transferred to tank for a controlled low temperatures fermentation, inoculated by a specialist yeast to enhance varietal expression. Upon completion, components are assembled, stabilised and fined. Minimal handling and filtration is employed throughout vinification to ensure the delicate varietal characters are protected. A very pale straw colour with subtle green hue at the edge. Lifted aromas of rosewater and lychees with a touch of spice and lemon zest. The palate delivers equally pleasing flavours of fresh lemon juice, rosewater and a touch of spice. Taylor exhibits great delicacy with a mouthwatering acidity on the back palate which delivers a crisp, clean finish. Crafted for immediate enjoyment, but lovers of the luscious honeyed fruit complexities so distinctive in an aged Gewürztraminer will not be disappointed if set aside for development.
Taylors Estate Merlot 2012

Taylor know from good Clare Valley Merlot, the family's initial interest in establishing their own label was primarily driven by a love of the great Bordeaux growths, many of which include a component of Merlot as the secret ingredient. Valley Clare is renowned for it's influence on the noble red grapes, infusing the wines with characters of blueberry and mint. Vinified exclusively from estate grown fruit, those parcels which are most worthy of a pure Merlot wine are sourced solely from the precious Lodden and St Andrew blocks on the Taylor family property.

The Taylor's vineyard team identify parcels which can best express the charm and grace of a pure Clare Valley Merlot. The aim is to produce a wine which displays a rich middle palate with good fleshy fruit and silky mouthfeel. Grapes are destemmed without crushing and sent to fermenters for inoculation by choice yeasts and a quick yet gentle vinification to enhance fruit character while retaining distinct regional varietal expression. Upon completion the wine is pressed and treated to malolactic. Components are racked to a mixture of new and seasoned French and American oak barrels for a year before the final assemblage and minimal filtration. Alcohol 14.0%
 
Deep red with an intense purple hue. Distinct aromas of Japanese satsuma plum and ripe cherries abound with secondary spice, cigar box characters evident along with subtle creamy chocolate. Medium to full bodied with rich plum and cherry fruit flavours balanced by undertones of creamy chocolate, spice and subtle savouryness. The tannins are fine grained and supple, acids are well balanced, the palate shows persistence and has a desirable, brioche texture through the middle.

The Adelaide Hills lends itself very well to the aromatic white varietals such as Pinot Gris, by virtue of a cool climate, maze of mesoclimes and elevated aspects. The Clare Valley is also highly regarded for the quality of Pinot Gris. Parcels are harvested from the Taylor's Victoria block and selected from choice sites across the Adelaide Hills.

Pinot Gris is hand harvested at ripe levels of baumes between 12.2° and 12.5°, to a timetable based around flavour development and ripeness, throughout the cool of the night to retain the fresh fruit characteristics. The grapes were whole bunch pressed before quickly chilling the juices to 4°C, protecting the delicate aroma precursors from oxidation, followed by twenty four hours settling. Fermentation is conducted at cool to warm temperatures in tank, using a strain of yeast that lifts varietal characters. Rested on yeast lees for ten days to achieve a wine with lovely mid palate texture. The utmost care is taken throughout the winemaking process to retain regional and varietal expression. Alcohol 11.7%
 
A pale straw with a slight green tinge to the edge. Exuding distinctly lifted varietal aromas of nashi pear, baked apple and spice. The overall bouquet is fresh, clean and very enticing. Crafted in the French style, Taylor offers an elegant palate displaying regional varietal definition of pear and spicy baked apple. There is great balance throughout, the flavours are delicate and finish on a pleasant soft and gentle note. To be enjoyed whilst young and fresh with a walnut and goats cheese tart or fresh fishes.

Climatic conditions are perfect for the vines during a Clare Valley summer, generally warm to hot and dry days with cool nights. This is critical for slow, even ripening and provides wonderful intense varietal characters in the Shiraz. Fruit is harvested throughout the cool of evening. Following primary tank fermentation, grapes are treated to a pneumatic bag press with all pressings returned to add palate weight and texture. The wine is transferred to a combination of new French oak and water bent American barrels for the completion of secondary malolactic ferments. Taylor is matured in American oak for twelve months followed by egg white fining, minimal filtration and bottling. Alcohol 13.9%
 
Deep red colour with ruby red hues. Vibrant and lifted with aromas of plum, blackcurrant and dark cherry along with black olives and a touch of oak derived spice and subtle chocolate. The palate is rich, luscious and round with intense, perfectly ripened fruit characters. Roasted coffee bean and subtle spice characters complement the generous fruit flavours. Medium to full bodied with a soft mid palate and supple tannins, a well balanced structure with great texture, good length and lashings of fruit on the finish. The wine offers a silky, seamless texture and real persistence. Taylor's splendid efforts at Shiraz are always ready to drink upon release, but put an extra bottle away for the future, as they age superbly.

Situated at the very heart of South Australia’s beautiful Clare Valley, Taylors has become one of Australia’s best loved and most trusted wineries

The tale of Taylors winemaking goes back a few years – three generations in fact, and all began with Bill Taylor Senior, and his love of a certain Bordeaux wine. Originally wine merchants in Sydney, a passion for wine was all part of being a Taylor, and in particular, for the famous French Clarets such as Chateau Mouton Rothschild in Bordeaux’s Medoc region. It was this long held fascination for these wines which inspired the family’s foray into winemaking, and provides the inspiration and winemaking philosophy behind all Taylors winemaking today – to produce premium wines of exceptional and comparable quality in Australia.

Taylors

The winegrowing region known as the Clare Valley is situated 137 km due north of Adelaide. It was named by Irish settlers for its great beauty and its resemblance to the lovely green County Clare in Ireland. The valley incorporates four main river systems and stretches for 30 to 35 kilometres in width. There are five sub-regions within the valley, proceeding south from the northern end, Clare, Sevenhill, Watervale, Polish Hill River and Auburn.

In 1969, Bill Taylor Snr., along with his sons John and Bill, purchased a holding of 178 hectares by the Wakefield River in Auburn and planted Cabernet Sauvignon. The site was carefully chosen for the red brown loam over limestone soils (called terra rossa) and the cool climate of the Clare Valley, known to be excellent for Cabernet Sauvignon. That year they planted their very first Cabernet vines, and never looked back.

Wine lovers today know they can trust Taylors to deliver superb quality table wines year after year- the family spare no expense or effort to ensure just that. Indeed, Taylors took little time in proving that the dream wasn’t just pie in the sky – in 1973 they tentatively entered their inaugural vintage of Taylors Cabernet Sauvignon into the respected Royal Adelaide Wine Show – and were delighted to win the prestigious Montgomery Trophy for best red wine in the show!

The family always knew there was something in the soil. During the initial excavation of the vineyard dam, Bill and his sons were amazed to uncover the fossilised remains of tiny seahorses - confirmation that the area had in fact once been the bed of an ancient inland sea. The Taylors thought this to be a lucky omen and testimony that the terra rossa soils were indeed fertile, and with thoughts firmly fixed on the successful future of Taylors Wines, the family adopted the three seahorses as the company insignia. Today those seahorses are found on Taylors wine labels all over the world.

The Taylor family vineyard and winery is one of the first that visitors encounter as they enter the valley from Adelaide. Each sub-region has its own geographic and climate characteristics. Some of the vineyards are quite elevated - the Taylor family vineyard is located 350 metres above sea level, and although the general climate could be described as Mediterranean, each small area is subject to its own micro-climate. Many wines from the Clare Valley exhibit distinct cool climate characteristics and intense varietal fruit flavours. The site enjoys warm to hot days and cool evenings during the ripening period. Vintage usually takes place around March each year. The vines are grown in rich terra-rossa (brown loam over limestone) soils.

Winemakers have been attracted to the Clare Valley since as early as 1840. Today the soils and microclimates surrounding the Taylor Vineyards are considered the most exciting area for winegrowing. Producing the quality wines that Taylors are renowned for year after year is definitely a team effort.
