Established 1971, Mount Mary is a single vineyard estate, one of the first to be planted during the resurgence of interest in Yarra Valley wines. John and Marli Middleton became obsessed with the great French growths after visits to Burgundy and Bordeaux. They resolved to find a very special Yarra Valley site with a view to emulating the statuesque French styles. The topical cépage of Grenache and Mourverdre, Cinsault and Shiraz, matured sixteen months in an eclectic mix of good French oak, a slightly more fruit forward, earlier drinking style of Mt Mary.

Exceptional Langtons Classification. The low yielding, unirrigated vines at Mount Mary Vineyard are planted to grey sandy clay loams over broken shale soils. The percentage of each varietal included into Quintet every year is determined largely by the vagaries of vintage, factors such as fruit set and quality of harvest. An extravagantly rich cepage of Cabernet and Merlot, Malbec, Verdot and Cabernet Franc, Quintet exhibits an uncanny balance which drinks beautifully, a slight alcohol lift on finish will see it through for many years to come.

$16699each $2003DOZEN EACH DOZEN Grapes are hand picked and lightly crushed, destemmed and vinified in a mix of closed and open top fermenters for up to ten days while being treated to frequent pumpovers. Upon completion of malolactic and lees settling, the wine is transferred into a selection of new and seasoned oak barriques and larger format 1500L oak casks for a year, followed by a racking into seasoned barriques for a further ten months.

Deeply coloured, dark purple red. Lots of bright fruit, complex, a tighter, more savoury wine, earthy aromas and cedar are punctuated by raspberry notes. The palate is structured and linear, offering good weight of fruit, ripe red berry flavours and tobacco characters. A Yarra Valley of richness and length, firm tannins but very much in balance.

The Abbey Vineyard at Tarrawarra, on the corner of Old Healesville Rd and Houghtons Lane, is a specialized, low yielding site which delivers a harvest of the most exquisite Pinot Noir. The choice clone MV6 was planted here in 1993 to highly mineral Humevale silt stones, which contribute to the generosity and balance within the fruit, ultimately the character of the final wine. A stately Yarra Valley Pinot noir of elegance, poise and finesse, endowed with sophisticated perfumes, power and control.

$4199each $503DOZEN EACH DOZEN De Bortoli are all about a more sustainable approach to viticulture, essentially to produce wines with a sense of place. The focus is on a move towards biological farming. There's also an increasing focus on single vineyard wines. The gentle northeast facing slope across the road from Tarrawarra Abbey is a wonderful, early ripening site, though markedly cooler than much of Yarra Valley, it sires an exquisitely aromatic wine. Grapes are all hand picked and hand sorted to ensure that only the finest fruit is included. Batches are treated to plunges and remontage throughout three wekks of ferment, followed by ten months maturation on fine lees in a mix of seasoned and new oak casks.

Bright scarlet with darker robes. Very pretty black cherry fruit, complex, slightly rustic nose, mocha and spice with hints of strawberry and clove. The palate is powerful with spice, earth and red fruit flavours that build in texture, followed by an elegant finish with with fine powdery tannins.

Outstanding quality fruit makes exceptional wine, it remains essential however for the process to work with nature and to allow the wine to evolve at its own pace. Pinot Noir is the most articulate of all, it speaks unabashedly about its provenance and place. Lusatia Park makes an intensely fragrant Pinot Noir, all the winemaker need do is let the fruit repose until ready, unworked and unhurried, moved slowly by gravity. A beguiling wine of humbling candor, velvet textured, radiant, fragrant of bouquet garni, fruits of the forest and fresh planed curls of stalky cedar spice.

Sir Paz produce award winning red on red wines, crafted from red grapes planted to Terra rossa soil. Formerly a chestnut tree grove, the elevated site is perfectly suited to vines, as the grapes experience cool conditions, ripening slowly for maximum flavour development. A racy Victorian accord of Merlot and Shiraz with sophisticated oak handling, a wine of style and character, worthy of a place in any cellar.

$3099each $371DOZEN EACH DOZEN The most valuable part of Yarra Valley for vines is a unique belt of volcanic Terra rossa soil, which encourages vines to yield grapes of extraordinary character. Sir Paz Estate is situated at the very heart of this belt. Whilst the property is meticulously maintained by a highly professional and dedicated team, the most significant feature of the Sir Paz vineyard are its rich soils. Grapes are hand picked at different times, depending on the particular section of vineyard, to be immediately crushed, minimizing any oxidation. Six weeks of extended maceration and transfer to a selection of older French hogshead integrates the fruit while gently taming the tannins.

Redgum brick in colour. Red cherry and white pepper nose, bouquets of dried flower and smoky oak, cherries and plum. An engaging, savoury palate supported by a solid tannic backbone, ferrous elements and a light dressing ov vanilla oak, persisting on a long clean finish of mulberry, cherry florals and fresh Shiraz/ Merlot spice.
