The Ruggeri wineworks remain family owned and operated, a tradition which predates the nineteenth century, the estate cellars were established somewhat later in 1950, essentially for the production of superior quality Prosecco wines. Glera is the grape of choice, a tradition which dates back millennia, it makes astonishingly satisfying effervescents of seamlessness and style. Ruggeri make Prosecco and little else, particularly for palates of discerning taste, elegant, flowery and intense, the frizzante of choice alongside white meats and refined Al fresco fare.

From an exclusive parcel of vine on the Dolomitic ridges of Treviso, in the prestigious precincts of upper Valdobbiadene hills, salubrious terroirs which are so similar to the calcerous limestone slopes of Côté champagne. The vineyards here are classified as Superiore, the husbandry and harvest are all done by hand, yields are minimal but these are the finest sparkling wines in the world. Prosecco Superiore are marked by their excellence and finesse, Giustino B is defined by its vivid fruit, extra dry on the palate, in true adults only styling.

The Bisol family have been at the heart of Treviso viticulture since records were kept, their name appears on the earliest cartography, within the illustrious DOCG Superiore di Cartizze itself. A strictly delineated provenance, Ruggeri Quartese is sourced off vines planted to auspicious hillsides between Conegliano and Valdobbiadene, such challenging terrains mean that everything must be done manually, plantings are all managed by hand, bunches are picked and sorted one at a time, achieving limited release Prosecco of the highest standard.

Rymill wineworks were established 1974 but the heritage goes back to the founding of Coonawarra as a fruit colony in 1890. The distinguished and enduring estate vines are treated to a naturally organic, chemical free husbandry, for a quality of wine which speaks for itself. Rymill's auspiciously slow ripening vineyards may be essential to the famous Coonawarra Cabernet, they are also well disposed to yield harvests of Chardonnay, Pinot and Meuniere for the realization of richly flavoured sparkling wines with regional identity and a real sense of place. The traditional old world practice of fermenting in own bottle achieves beautiful texture, creates a delicate bead and contributes to the luxurious mouthfeel.
 
Pale straw hue with a copper tinge. Beautifully perfumed with complex aromas of white roses, sweet hazelnut and red delicious apples over a vibrant background of fresh cut limes and zesty lemon. Fresh, crisp flavours of citrus fruits and apples linger at the finish alongside notes of pear and freshly baked brioche.

Treated to the timeless Methode Traditionelle, fermented in own bottle and reposed for an extended term on fine sedimentery yeast lees, its exquisite, creamy mousse presages an overture of cherry, biscuit and boulangerie citron confit characters, a moreish palate which continues to unravel creamy layers of complexity, but at her heart, she is clean, revitalizing and crisp.

Sparkling red wines have been a Schild family tradition from the very beginning, the luscious dark berry flavours and elegant tannins of Lyndoch grown Shiraz, make a deeply indulgent effervescent wine that's the ideal match to dressed game or richly liqueured desserts.

The Schild Estate vineyards sprout Shiraz grown to vines planted by the earliest Barossa settlers. Slightly cooler than its northern neighbour, the southern end of the Barossa Valley is perfect for growing Shiraz vines capable of providing lush, generous fruit, ideal for the production of sparkling Shiraz. A single vineyard wine from a small parcel on the estate Aherns vineyard near Lyndoch, harvested in mid March each year, destemmed and left on skins over several days for extraction. Juices are vinified in open top fermenters and allowed to develop for a year in seasoned French and American oak hogsheads. The wine is then put through a secondary fermentation and doseaged prior to bottling.
 
Dark cherry red, persistent mousse. Rich and inviting aromas of blackberry, dark plums, cherries, chocolate and licorice. Vibrant berry fruits and pepper spice are supported by a soft tannin structure with balanced acid and sweetness giving the wine a fine bead and creamy, elegant mouthfeel. Schild is an ultra fine example of a uniquely Australian winestyle, the finish is fresh, plush and lingering.
Segura Viudas Aria Brut

The Segura Viudas wineworks at Penedes date back to the 11th century. An ancient watchtower of diverse architectural styles, Gothic, Visigothic and Romanesque, it was converted circa 13th century into a stately manor for the purpose of managing local agriculture and viticulture. At the end of the 19th century, the region became self aware of it's potential and applied Methode champenoise to the local grape varieties. Aria Brut Nature is a mature wine with heady mousse, beguilling aromas and satisfyingly, cleansing finish.

From it's earliest days, the remarkable appeal of Segura Viudas drove an unprecedented demand that exhausted the limited production of the ancient tower at Penedes. Today, Aria Brut Nature is enjoyed everywhere around the globe. An assemblage of Macabeo, Xarelo-lo and Parellada grapes, inoculated to unique strains of yeast which have developed at the Segura Viudas cellars over the centuries. A controlled fermentation at low temperatures, remaining in contact with yeast sediments and musts, enhancing the complexity and infusing the wine with vivacious characters. Segura Viudas has been treated to an extended maturation, between two and three years within it's own bottle. Alcohol 11.5%
 
Straw yellow in colour, greenish hints, a good mousse and fine, persistent bubbles. Aromas of lemon and rind, citrus and pith, dried florals. The bouquet offers handsome aged characters, mustyness and toast, macadamia and dates. A hint of sweetness to the palate, crisp green apple flavours, compotes and grapefruit, nuances of quince and of fig, a mouthfeel of sorbet. Finishes long, crisp and food friendly.
