The small eight acre site is located south of the Great Dividing Range alongside Grampians National Park. The vineyard is planted to granite soils over sandstone, vines are cane pruned and grapes are hand picked with help from the local Moyston Willaura Football Netball Club. Rutherford is an exclusively estate grown and bottled wine vinified from hand sorted Shiraz grapes and treated to the full regimen of Methode traditionelle, followed by twelve months maturation in a selection of well seasoned French oak barrels, before a further two years resting in bottle on sedimentery lees.

Dark ruby colour, persistent purple mousse. Red and black berry bouquets with an overlay of white pepper. A full and flavoursome, mouth filling palate, medium bodied and elegent, exhibiting soft mouth feel with peppery spice undertones. Surely the most generous and effusive style of aperitif wine, without peer as conversation starter, a bliss alongside chocolate and cherry desserts.

The final word in luxury Sparkling by the House of Burge, a slightly larger percentage of Pinot Noir to Chardonnay, assembled from the superior sparkling wine vineyards at Pipers Brook. Grapes are all hand picked and sorted, chilled and whole bunch pressed, treated to the full Methode Traditionnelle and tiraged for optimal effervescence, before sending to cellar in own bottle for an extravagant eight years. A final addition of Liqueurs d'Expedition imparts even greater complexity and introduces the ultimate indulgence of toothsome, palate richness.

From high altitude vineyards that produce the most intensely aromatic Pinot Noir and Chardonnay. Grant Burge is a true Methode Traditionelle, a wine of great elegance and finesse that is also balanced with flavour and drinkability. Made from fruit grown in the Eden Valley, much of it on Burge's own Summers Hill vineyard. The grapes produced here have delicate, yet quite intense flavours, as well as the natural acidity and lean, elegant flavours that are required to make high-quality sparkling wine in the tradition of Champagne.

$3599each $431DOZEN EACH DOZEN Exclusively hand picked fruit, placed into 200 kilogram crates in order to minimise damage to the berries and extraction of red colour from the skins. The crate are stacked into refrigerated rooms and cooled to 4C for maximum flavour retention. Grapes are gently whole bunch pressed, a process that extracts a very fine and delicate juice. Juice are clarified and fermented at controlled temperatures. The percentage of Pinot Noir has gradually been increased to give greater depth of flavour, it now sits at eighty percent. The final assemblage spends twenty seven to thirty months on tirage before disgorging and liqueuring to full Methode Traditionelle.

Tinged with copper hues, a fine effervescence and pure bead. Delightful biscuit nose combined with ripe strawberry, peaches and an apricot nougat aroma. On the tongue are plenty of honey and biscuit characters, strawberry and cherry from the Pinot, peach lemon and quince from the Chardonnay. Rich and generous, vital fruit expressions are heightened by the creamy mouthfeel and a dry, acid finish.

$2999each $359DOZEN EACH DOZEN Merlot lends itself ideally to wines of this style, intense fruit flavours and soft structure carry through to the finished wine following its secondary fermentation. Grapes are sourced from the Wilgha vineyard, a site which continually produces fruit with highly perfumed qualities, excellent structure and generous, fully ripe tannins. Fruit is picked at ripe Baumes, crushed and vinified on skins for six days in Potter fermenters. This base wine is then matured in a mixture of French and American oaks of varying ages for eighteen months. Secondary fermentation is induced by the addition of yeast and sugar, infusing a fine persistent bead, integrated toasty qualities and generous mouthfeel.
