Patricia is the culmination of Brown Brothers commitment to excellence in viticulture and oenology. A slow and painstaking selection of fruit from the finest blocks of vine is followed by the utmost care throughout vinification, aimed at maximizing palate structure and achieving true elegance. A Pinot Noir dominated wine, from grapes grown to the high altitude Whitlands vineyard, crafted with strict adherence to traditional Methode Champeniose. A splendid effort, complex and rich with toasty fruit and yeast characters, Patricia is intended to impress.

The climate at Whitlands is ideal for retaining the type of acidity so essential to this style of wine. The property sits at eight hundred metres above sea level in the sub alpine area at the top end of the King Valley. Fruit is hand picked and whole bunch pressed through an air bag. Grapes are treated gently to yield a scant five hundred litres of juice per tonne, minimising the impact of harsher compounds from skins. Base wines are treated to full malolactic for complexity. The secondary ferments are deliberately extended to produce a fine bead, then rested an extravagant five years on lees to develop further complexity. Patricia is then disgorged and liqueured, to true Methode traditionelle.
 
Light straw colour with fine persistent bead. Llifted nose with a rich yeast autolysis character and hints of citrus and apple. The palate is full bodied, complex and rich with prominent lemon/ lime flavours and a bready character which lingers. The mouthfeel is creamy and elegant before a crisp, dry finish and with refreshing acidity. This complex and rich sparkling wine deserves to be accompanied by the finest faire, hors d'oeuvres or scallops, souffle or brie.

For many years, Gary Farr followed up every vintage at Bannockburn with a tour of duty at Burgundy's Domaine Dujac. He believed Australian technology to be superior but was greatly inspired by the traditional practices of French vignerons. Farr brought home the ancient technique of pigeage, throwing whole bunches into large, open vats and immersing his body into the wine to break up any hot spots. A weighty Pinot wine, Farrside combines density and precision with a capacity to endure and evolve.

Gary Farr planted Pinot Noir clones 114 and 115, 113 and 667, 777 and MV6 in 2001. The Farside Vineyard's black volcanic soils yield a cogent, masculine Pinot wine.Vines on the northeast facing slopes of Farrside are grown to a thin layer of rich volcanic soils over limestone, planted east to west so that grapes receive some cover from the sun. Farrside makes wines of greater structure, tannin and savouriness. Farr chose his ground carefully, to compare favourably alongside some of the finest Pinot Noir growing terroirs in the world. A patient man, Farr aspired to owning the seven hectare property for a very long time but it's owner resisted all temptation to part with the land for over twenty years.
 
Deep crimson red colour. A rich, full nose exhibiting floral Pinot characters and powerful berry fruits which build and develop as the wine breathes. The palate offers sweetness of fruit with overtones of minerality enhanced by toasty oak. Fine tannins and great structure are a trademark of Farr, fine texture and savouriness complete the gem.

The By Farr vineyards are planted to a mixture of Pinot Noir rootstock and clones. The aspect of the vineyard is north to northeast and quite undulating. The soil is volcanic loam over limestone, in some sites the limestone dominates the loam, well drained and of low fertility. They compare well with the best sites for Pinot Noir anywhere in the world. Farr applies techniques he learned in France, whole bunches with stalks fermented in large, open, cylindrical vats. The traditional process requires him to immerse his body into the wine and to break up the hot spots which occurr in this uneven and ancient form of vinculture. This method called pigeage is practised in the production of the great burgundies.

Parcels of Chardonnay and Pinot Noir are all hand picked off superior vines. Fruit is chilled and whole bunch pressed, retaining only the finest free run juices and minimizing phenolics. Components are treated to a variety of vinification techniques for added complexity, structure and richness, malolactic ferments and long term maturation in seasoned French oak barriques. A course of regular, non-oxidative, lees stirring battonage is employed to develop luxurious mouthfeel and texture. An extravagant term of several years repose on yeast lees is followed by the traditional disgorgement, dosage and reseal.

Sounds of White demands Leading with its ripe red nose of forest berries, raspberry and cola notes, her palate is silken and elegant, such powerful fruit notes, all framed by ripe tannins and flattering oak, resolving on a long, technicolor, peacock tail finish.

Sound of White Vineyard is fortuitously planted to a north facing hillside of heavy, clay rich soils. Pinot Noir is anything but predictable, as it grows in the vineyard and throughout vinification, it is a variety with many personalities, often choosing to do the opposite of what we expect. With a challenge like that, who isn't intrigued? Grapes are all hand picked and destemmed into an open top fermenter, cold soaked for a week to initiate a natural wild yeast vinification. Following a peak of 30C and ten days cold maceration on skins, batches are filled to a mix of seasoned and new French oak barriques for malolactic and a year's maturation.
